Abstract
一种保健药膳羊肉汤,由羊肉、甘草、料酒、鸭血、苍术、厚朴、陈皮、干姜、大枣、西瓜皮、金银花、食盐制备而成,将其中甘草、料酒、鸭血放入羊肉与同等重量份的清水中,烧煮收干后仅取羊肉,用于除膻缓热;然后将苍术、厚朴、陈皮、西瓜皮、金银花、干姜、大枣放入清水中烧沸,再将羊肉切成小块放入烧煮,得到保健药膳羊肉汤;其有益效果是将羊肉首先用除膻缓热料进行除膻和缓解热性,打破了常规上在烹调时顺便除膻的习惯,特别是采用鸭血块吸收羊肉中的污物和膻味,可以有效清除羊肉异味;然后用苍术、厚朴、陈皮、西瓜皮、金银花、干姜、大枣共同熬煮,使羊肉汤具有温中散寒、补气行气的功效,长期食用后可强身健体,提高防病能力。

本发明涉及熟食制品领域,特别是一种具有温中散寒功效的保健药膳羊肉汤。
背景技术
羊肉是指羊身上的肉,古时称为羖肉、羝肉、羯肉,为全世界普遍的肉品之一。羊肉肉质与牛肉相似,但肉味较浓。羊肉较猪肉的肉质要细嫩,较猪肉和牛肉的脂肪、胆固醇含量少。李时珍在《本草纲目》中说:“羊肉能暖中补虚,补中益气,开胃健身,益肾气,养胆明目,治虚劳寒冷,五劳七伤”。它既能御风寒,又可补身体,对一般风寒咳嗽、慢性气管炎、虚寒哮喘、肾亏阳痿、腹部冷痛、体虚怕冷、腰膝酸软、面黄肌瘦、气血两亏、病后或产后身体虚亏等一切虚状均有治疗和补益效果,最适宜于冬季食用,故被称为冬令补品,深受人们欢迎。
由于羊肉有一股令人讨厌的羊膻怪味,故被一部分人所冷落。同时由于羊肉性热,吃多了容易上火,特别是热性体质的人不宜食用,无法享用羊肉美味。
药膳是在中医学、烹饪学和营养学理论指导下,严格按药膳配方,将中草药与某些具有药用价值的食物相配伍,采用独特的饮食烹调技术和现代科学方法制作而成的具有一定色、香、味、形的美味食品。既将药物作为食物,又将食物赋以药用,药借食力,食助药威,二者相辅相成,相得益彰;既具有较高的营养价值,又可防病治病、强身健体、提高生活质量。
发明内容
本发明所要解决的技术问题是根据羊肉的性味特性结合中草药通过特殊方法制作一种具有温中散寒功效的保健药膳,以便食用者强身健体,提高防病能力。
为解决上述技术问题,本发明所采用的技术方案是一种保健药膳羊肉汤,其制备过程中需使用到如下原材料:羊肉、甘草、料酒、鸭血、苍术、厚朴、陈皮、干姜、大枣、西瓜皮、金银花、食盐,以及食用时添加适量的葱段、辣椒、鲜姜、酱油等。
其中甘草、料酒、鸭血用于除膻缓热,以清除羊肉的膻味,同时适当缓和羊肉的热性,成为除膻缓热料,其作为中间辅助料使用。
其中苍术、厚朴、陈皮、西瓜皮、金银花、干姜、大枣用于协同羊肉祛湿补气,同时也作为调味开胃料使用。
上述原材料的重量配比为:主料:羊肉450-550份;除膻缓热料:甘草9-11份、料酒27-33份、鸭血块20-30份;祛湿补气料:苍术13-17份、厚朴9-11份、陈皮13-17份、干姜4-6份、大枣13-17份、西瓜皮13-17份、金银花9-11份;以及食盐7-9份和适量的水。
其优选重量配比为:羊肉500份;除膻缓热料:甘草10份、料酒30份、鸭血块25份、苍术15份、厚朴10份、陈皮15份、干姜5份、大枣15份、西瓜皮15份、金银花10份;以及食盐8份。
其中甘草、苍术、厚朴、陈皮、干姜、大枣、金银花均为从药材公司购入的中药饮片,料酒和食盐从普通市场购得,羊肉为山羊肉,鸭血块和西瓜皮经过特殊加工制得。
其中鸭血块的制作方法是将新鲜鸭血凝结后切块,然后置于零下10°到零下20°的环境中冷冻12-24小时,然后取出解冻,沥干,晾干,得到具有密集细孔的鸭血块。
其中西瓜皮的制作方法是将新鲜西瓜皮清除掉内表面的瓜肉和外表面的硬皮,得到中层皮肉,将中层皮肉晒干,得到干制后的西瓜皮,配伍中的西瓜皮为干制后的西瓜皮。
所述羊肉汤的制备方法包括如下步骤。
⑴将羊肉分切,放入同等重量份的清水中,并加入甘草、料酒、鸭血块,先用武火烧沸,再用文火烧煮,直到锅中见不到水份或液态物;取出羊肉块,清除甘草、鸭血块,得到除膻缓热后的羊肉;这样甘草和鸭血块可以消减膻味,鸭血块中的密集细孔还可吸收羊肉中的污物。
⑵将苍术、厚朴、陈皮、干姜、大枣、西瓜皮、金银花加入到15倍重量份的清水中,浸泡30-60min,然后用武火烧沸。
⑶将除膻缓热后的羊肉切成1-3cm的方块,得到羊肉块,将羊肉块放入到浸泡中的中草药中,并加入食盐,然后用文火熬煮1-2小时,得到保健药膳羊肉汤。
⑷将冷却后的羊肉汤计量均匀,按规格装入蒸煮袋,抽真空封口;然后在121℃温度下灭菌15分钟,再反压冷却至常温,将检验合格产品装箱入库。
⑸通过电子商务和物流进行远程运送,将包装好的清汤羊肉食品运送到外地;在食用时,打开蒸煮袋,取出清汤羊肉放入锅中,适当加入香葱、辣椒、鲜姜、酱油等调料,回锅加热烧沸即可食用;这样还可实现远程厨房功能。

甘草味甘,性平;补脾益气,润肺止咳,清热解毒,缓解止痛,缓和药性;用于脾胃虚弱,气短乏力,心悸怔忡,咳嗽痰少,热毒疮疡,药食中毒,脘腹急痛,四肢挛痛。
鸭血为家鸭的血液,味咸,性寒,能补血、解毒。用于失血血虚,或小儿白痢似鱼冻者,可以取鲜血趁热饮,或冲入热酒服。
本方案将甘草、料酒和鸭血共同作为除膻缓热料,也作为中间辅助料;用于消除羊肉异味,并缓解羊肉的热性性味;同时甘草和鸭血的余味还可制约苍术、厚朴、陈皮的温燥。
方中苍术苦辛温燥,“能彻上彻下,燥湿而宣化,芳香辟秽,胜四时不正之气。凡倦怠嗜卧,肢体酸软,胸膈满闷,甚至月真胀而舌浊厚腻者非茅术芳香猛烈不能开泄,而痰饮弥漫亦非此不化(《本草正义》)”,最善燥湿健脾,用为君药。
厚朴苦温行气,燥湿消痰,下气除满;用于湿滞伤中,脘痞吐泻,食积气滞,腹胀便秘,痰饮喘咳;可助苍术加强祛湿,用为臣药。
陈皮味苦、辛,性温;理气健脾,燥湿化痰;用于脘腹胀满,食少吐泻,咳嗽痰多;其协助厚朴下气降逆,散满消胀,利用陈皮、厚朴二药气味芳香,能辅助苍术醒脾调中,开启胃口,用为佐药。
西瓜皮,味甘、淡,性凉;归心、胃、膀胱经;清凉解利;清甘寒清润,具有清解暑热、滋养胃津之功,用于清暑除烦,解渴利尿。
金银花味甘,性寒;芳香疏散,善散肺经风热,清心、肺热毒,具有轻宣疏散之性;用于治疗外感风热,温病初起,身热、微恶风寒,头痛、口渴、咽喉肿痛,热毒痢疾。
西瓜皮和金银花能补能和,可制苍术、厚朴、陈皮之燥烈太过,使祛湿不伤脾胃;诸药相合共奏燥湿运脾,行气和胃之功;因此将西瓜皮和金银花作为使药。
干姜味辛,性热;温中散寒,回阳通脉,温肺化饮;用于脘腹冷痛,呕吐泄泻,肢冷脉微,寒饮喘咳。
大枣味甘,性温;补中益气,养血安神,缓和药性;用于脾胃虚弱,食少便溏,血虚萎黄,妇女脏躁,精神不安,睡眠不佳。
干姜、大枣共同调和脾胃,因此将干姜和大枣也作为使药。
本方案将苍术、厚朴、陈皮、西瓜皮、金银花、干姜、大枣共同作为祛湿补气料,同时也作为调味开胃料;将祛湿补气料与羊肉共同烹调,可使做出的羊肉汤具有温中散寒、补气行气的功效,食用后可强身健体,通过调节机体的整体状态,起到阻止病毒侵害人体的作用。
本发明的有益效果是将羊肉首先用除膻缓热料进行除膻和缓解热性,打破了常规上在烹调时顺便除膻的习惯,并为了适合更多人食用还进行了缓解热性的步骤,特别是采用鸭血块吸收羊肉中的污物和膻味,可以有效清除羊肉异味;然后用苍术、厚朴、陈皮、西瓜皮、金银花、干姜、大枣共同熬煮,使羊肉汤具有温中散寒、补气行气的功效,长期食用后可强身健体,提高防病能力。
具体实施方式
下面结合实施例对本发明作进一步说明,以下实施例旨在说明本发明而不是对本发明的进一步限定,不应以此限制本发明的保护范围。
实施例1。
制作一种保健药膳羊肉汤,首先从药材公司购入中药饮片甘草、苍术、厚朴、陈皮、干姜、大枣和金银花。从商场购入料酒和食盐。并制作鸭血块和西瓜皮。
取新鲜鸭血,将新鲜鸭血凝结,将凝结后的鸭血切成边长为1-2cm的小方块,然后置于零下10°到零下20°的冷冻室中冷冻12-24小时,然后取出,在常温中自然解冻,此时会有很多血水溢出,将血水沥干,再晾干,得到具有密集细孔的鸭血块。
为了加快凝结速度,可在新鲜鸭血中加入2-3‰重量份的食盐,并混匀,待凝结后再切块。
取新鲜西瓜皮清除掉内表面的瓜肉和外表面的硬皮,得到中层皮肉,将中层皮肉晒干,直到中层皮肉中的水分含量在12%以下,得到干制后的西瓜皮。
然后按照如下方法制备药膳羊肉汤。
⑴预备材料,其中:羊肉45kg、甘草0.9kg、料酒2.7kg、鸭血块2.0kg、苍术1.3kg、厚朴0.9kg、陈皮1.3kg、干姜0.4kg、大枣1.3kg、西瓜皮1.3kg、金银花0.9kg、食盐0.7kg、干椒0.7kg和适量清水。
⑵将羊肉分切成重量为300g的块状物,放入到大釜中,再加入45kg清水,然后加入甘草、料酒、鸭血块,先用武火烧沸,再用文火烧煮,直到锅中见不到液态流质物,然后停火,待冷却后取出羊肉块,清除附着在羊肉块上的甘草片和鸭血块,得到除膻缓热后的羊肉;此时水分和料酒已经烧干,得到的羊肉不用清洗。
⑶将苍术、厚朴、陈皮、干姜、大枣、西瓜皮、金银花投入到盛有7.4kg清水的大锅中,浸泡30min,然后用武火烧沸。
⑷将除膻缓热后的羊肉切成边长为1cm的小方块,得到羊肉块,将羊肉块放入到烧沸时的大锅中,并加入食盐和干椒,然后用文火熬煮1小时,得到保健药膳羊肉汤。
⑸将冷却后的羊肉汤计量均匀,按规格装入蒸煮袋,抽真空封口;然后在121℃温度下灭菌15分钟,再反压冷却至常温,将检验合格产品装箱入库。
⑹通过电子商务和物流进行远程运送,将包装好的清汤羊肉食品运送到外地;在食用时,打开蒸煮袋,取出清汤羊肉放入锅中,适当加入香葱、辣椒、鲜姜、酱油等调料,回锅加热烧沸即可食用;这样可实现远程厨房功能。

结果如下:第20天时,有20人食欲有所改善,疲劳感降低,睡眠状况及皮肤面色均有所改善,精神状态也有所改善。
第50天时,有25人食欲明显改善,疲劳感降低,睡眠状况及皮肤面色均明显改善,精神状态和性功能也明显改善。
志愿者食用时均表示没有闻到或尝到膻味和腥味,味觉肉香清爽绵醇,食欲良好。
实施例2。
制作一种保健药膳羊肉汤,获得原材料的方法与实施例相同。所述羊肉汤的制备方法包括如下步骤。
⑴预备原材料,其中:羊肉50kg;除膻缓热料:甘草1.0kg、料酒3.0kg、鸭血块2.5kg、苍术1.5kg、厚朴1.0kg、陈皮1.5kg、干姜0.5kg、大枣1.5kg、西瓜皮1.5kg、金银花1.0kg;以及食盐0.8kg、干椒0.8kg和适量清水。
⑵将羊肉分切成400g左右的块状物,放入到大釜中,再加入50kg清水,然后加入甘草、料酒、鸭血块,先用武火烧沸,再用文火烧煮,直到釜中见不到液态流质物,然后停火,待冷却后取出羊肉块,清除附着在羊肉块上的甘草片和鸭血块,得到除膻缓热后的羊肉。
⑶将苍术、厚朴、陈皮、干姜、大枣、西瓜皮、金银花投入到盛有8.5kg清水的大锅中,浸泡45min,然后用武火烧沸。
⑷将除膻缓热后的羊肉切成边长为2cm左右的方块,得到羊肉块,将羊肉块放入到烧沸时的大锅中,并加入食盐和干椒,然后用文火熬煮1.5小时,得到保健药膳羊肉汤。

⑴预备原材料,其中:羊肉55kg、甘草1.1kg、料酒3.3kg、鸭血块3.0kg、苍术1.7kg、厚朴1.1kg、陈皮1.7kg、干姜0.6kg、大枣1.7kg、西瓜皮1.7kg、金银花1.1kg、食盐0.9kg、干椒0.9kg和适量清水。
⑵将羊肉分切成500g的块状物,放入到大釜中,再倒入55kg清水,然后加入甘草、料酒、鸭血块,先用武火烧沸,再用文火烧煮,直到锅中见不到液态流质物,然后停火,待冷却后取出羊肉块,清除附着在羊肉块上的甘草片和鸭血块,得到除膻缓热后的羊肉;此时水分和料酒已经烧干,得到的羊肉不用清洗。
⑶将苍术、厚朴、陈皮、干姜、大枣、西瓜皮、金银花投入到盛有9.6kg清水的大锅中,浸泡60分钟,然后用武火烧沸。
⑷将除膻缓热后的羊肉切成边长为3cm的方块,得到羊肉块,将羊肉块放入到烧沸时的大锅中,并加入食盐和干椒,然后用文火熬煮2小时,得到保健药膳羊肉汤。

综上所述,本方案产品有效的清除了羊肉的膻味并缓和了羊肉的热性,并且使羊肉汤具有温中散寒、补气行气之功效,对食少纳差,脾胃虚寒,腰膝酸软,形体消瘦,肢体倦怠,神疲乏力的亚健康患者非常有利,长期食用后可强身健体,增强免疫力,缓解体力疲劳,提高防病能力,适合大量推广。
Claims (6)
1.一种保健药膳羊肉汤,其特征在于包括如下重量份的原材料:即主料:羊肉450-550份;除膻降热料:甘草9-11份、料酒27-33份、鸭血块20-30份;祛湿补气料:苍术13-17份、厚朴9-11份、陈皮13-17份、干姜4-6份、大枣13-17份、西瓜皮13-17份、金银花9-11份。
2.根据权利要求1所述的保健药膳羊肉汤,其特征在于包括如下重量份的原材料:羊肉500份、甘草10份、料酒30份、鸭血块25份、苍术15份、厚朴10份、陈皮15份、干姜5份、大枣15份、西瓜皮15份、金银花10份;以及食盐8份。
3.根据权利要求1或2所述的保健药膳羊肉汤,其特征在于其制备方法包括如下步骤:
⑴将羊肉分切,放入同等重量份的清水中,并加入甘草、料酒、鸭血块,先用武火烧沸,再用文火烧煮,直到锅中见不到水份或液态物,然后取出羊肉块,清除甘草片、鸭血块,得到除膻缓热后的羊肉;
⑵将苍术、厚朴、陈皮、干姜、大枣、西瓜皮、金银花加入到15倍重量份的清水中,浸泡30-60min,然后用武火烧沸;
⑶将除膻降热后的羊肉切成1-3cm的方块,得到羊肉块,将羊肉块放入到烧沸时的中草药中,并加入食盐,然后用文火熬煮1-2小时,得到保健药膳羊肉汤。
4.根据权利要求3所述的保健药膳羊肉汤,其特征在于所述鸭血块是将新鲜鸭血凝结后切块,然后置于零下10°到零下20°的环境中冷冻12-24小时,然后取出解冻,沥干,晾干,得到具有密集细孔的鸭血块。
5.根据权利要求4所述的保健药膳羊肉汤,其特征在于所述新鲜鸭血在凝结前加入了2-3‰重量份的食盐。
6.根据权利要求3所述的保健药膳羊肉汤,其特征在于所述西瓜皮是将新鲜西瓜皮清除掉内表面的瓜肉和外表面的硬皮,得到中层皮肉,将中层皮肉晒干,得到干制后的西瓜皮。
