Abstract
一种通过底部用热传导或电磁感应施加热能的

Description
本发明涉及一种从底部用热传导或电磁感应施加热能的锅形烹调和/或烹煮器具,该器具具有用于烹调和烹煮食物的水平方向呈圆形的容器,该容器包括用奥氏体钢作的容器外壳和容器底部、一个紧靠容器底部配置的用高导热率金属材料(例如铝合金或铜合金)作的金属板和一个金属板包套件。上述这种类型的烹调和/或烹煮器具也称作全炉型烹调和/或烹煮器具,特别设计于家庭使用。
已知的设计从底部用热传导施加热能的烹调和/或烹煮器具,包括一个用铝合金或铜合金作的金属板和一个用合适奥氏体钢合金作的钢板包套件。选择奥氏钢是由于它具有不腐蚀的特点。但是,奥氏体钢不是铁磁性的,这不利于用电磁感应来施加热能,因为这种钢板包套件只接受电阻加热。相比之下,铁磁性材料将通过电磁感应吸收大得多的热能,因为所谓的磁滞损耗将转换成热量。对于上述的锅形烹调和/或烹煮器具实施例,可以改进转换成热能的电磁转换功率。
为了在上述设计的所述烹调和/或烹煮器具上提高通过电磁感应施加的热量,已知使用了铁磁性板(DE86 30 655U)。铁磁性板包括一个奥氏体钢板包套件,或具有一个露出的底部。在后一种形式中,虽然通常使用了抗腐蚀性的铁磁性材料,但也可能发生腐蚀。包含奥氏体钢板包套件的板会干扰电磁感应的转换功率。
上述设计的烹调和/或烹煮器具已知在铁磁性钢板包套件的包套底部具有开孔,在该开孔中镶嵌该铁磁性钢板材料。
本发明的器具基于上述基本设计的锅形烹调和/或烹煮器具的技术问题,本发明的器具可以高效率吸收由电磁感应提供的热能,而且还适合于利用热传导供给热能,即可以将其放在火炉上。
为了解决该技术问题,本发明包括一个设计从底部通过热传导或电磁感应施加热能的锅形烹调和/或烹煮器具,该器具具有用于烹调和/或烹煮食物的水平方向呈圆形的容器,该容器包括用奥氏体钢作的容器外壳和容器底部、一个紧靠容器底部配置的用高热导率金属材料(例如铝合金或铜合金)作的金属板与一个金属板包套件,该烹调和/或烹煮器具有下列特征:
a)金属板包套件包括一个圆盘形的包套底部,在该包套底部的整个表面上设置了若干包套底部凹部;
b)包套底部填充片镶嵌在包套底部凹部中,包套底部由奥氏体钢板制作,包套底部填充片用铁磁性钢板制作;
而且包套底部和包套底部填充片金属相接地连接在金属板上,而金属板又连接在容器底部上。
一种锅形的烹调和/或烹煮器具提供了该问题的另一种解决办法,该器具被设计从底部用热传导或电磁感应施加热能,并具有一个用于烹调和/或烹煮食物的水平方向呈圆形的容器,该容器包括用奥氏体钢作的容器外壳和容器底部、一个紧靠容器底部配置的用高热导率金属材料(例如铝合金或铜合金)作的金属板与一个金属板包套件,该烹调和/或烹煮器具有下列特征:
a)金属板包套件包括一个圆盘形的包套底部,在该包套底部的整个表面上设置了若干包套底部凹部;
b)包套底部填充片镶嵌在包套底部凹部中,包套底部用铁磁性钢板制作,而包套底部填充片则用奥氏体钢板制作;
而且包套底部和包套底部填充片金属相接地连接在金属板上,而金属板又连接在容器底部上。
很明显,对于解决本发明技术问题的上述两种方案,如果可能,都应用抗腐蚀的铁磁性钢合金。
本发明基于这样一个意想不到的事实,即金属板包套件的包套底部的铁磁性区域以极高的功率吸收而被加热。虽然铁磁区域是一些岛状物或网状物,但是相对于包套底部和相对于包套填充片的几何比例都可以调整,从而可以达到金属板的极其均匀的加热,因而也就可以均匀加热容器底部以及烹或煮的食物。意外的是,在奥氏体材料和铁磁性材料之间的接触区域,特别是在包套底部凹部和包套底部填充片之间的间隙上或接缝处完全没有出现干扰腐蚀,当然,这些包套底部填充片是极严密地被嵌入的。包套底部凹部和镶嵌的包套底部填充片改变了金属板包套件和包套底部的热膨胀特性。本发明的特别有利之处是,这种改变可以调整而不降低由电磁感应产生的热传导的功率吸收,而且可以这样调整,使得在热传导期间,金属板包套件不产生任何的干扰形变,即不会发生轻微的鼓胀。此外所说的鼓胀是指轻微的鼓凸形变。对于不同的烹调和/或烹煮器具可以根据实验计算和确定各自的调整。
如果调整感应场使得围绕中心轴线产生旋转对称的电磁场并通过感应板发射电磁场,而且将烹调和/或烹煮器具放置在感应板上使其垂直的几何轴线基本准确地与电磁场的对称轴重合,则特别推荐本发明的烹调和烹煮器具的实施例。利用含有螺旋形的或扁平线圈的感应线圈可以容易产生这种方式的对称电磁场。在这些对称条件下,本发明的基本教导建议也将包套底部凹部和包套底部填充片形成对称形状。这可以用各种方式实现。包套底部凹部可以是10-20mm宽的圆弧形缺口,配置在两个沿径向配置的包套底部肋条之间,同时包套底部填充片也成圆弧形,镶嵌在弧形缺口中。推荐这样的设计,即在彼此成直角的方向设置四条从圆形的包套底部的圆心出发的包套底部肋条。但是也可以将包套底部凹部设计成由径向配置的包套底部肋条分开的扇形缺口,而且也将包套底部填充片成形为扇形,镶嵌在包套底部凹部的扇形缺口中。在这种情况下,推荐这样的设计,即限定在金属板边缘的扇形缺口具有半圆形,这种扇形缺口最好具有相等的尺寸。
作为本发明的一部分,金属板包套件可以由一块金属圆盘构成,但是也可以是一种膜片包套件(见DE41 25 115.6C2)。
如果考虑对不同的组件厚度进行特别的调整,则上述实施例是特别有利的。据此,容器及容器底部的金属厚度为0.7-1.0mm,金属板包套件的金属厚度为0.7mm或更小一些,铝合金形式的金属板的厚度为5-9mm。
根据本发明的烹调和/或烹煮器具主要和最好包括一个与该器具的水平支承面(即炉子)相比稍为凹进去的冷包套底部几何结构。这样,在包套底部冷的状态下,便只有烹调和/或烹煮器具的包套底部边缘靠在给定的水平支承板(即炉子)上。如果与烹调和/或烹煮器具有水平支承面相比,包套底部的冷的几何结构是稍为凹进去的,则本发明提出,容器底部的金属板厚度、包套底部的金属板厚度、金属板的厚度、包套底部凹部和包套底部填充片的形状均是抗形变的。抗形变意味着,在从底部施加热能期间,包套底部与支承面相比不会产生轻微的鼓凸形变,在热能传导期间也不会产生这种形变。形变会造成仅使烹调和/或烹煮器具的中心放在水平支承面(即炉子)上,因而造成烹调和/或烹煮器具发生摇晃,另外还不利于通过热传导进行热传递。
在本发明中,金属板可以以各种方式连接在容器底部和金属板包套件上。金属板包套件可以用特别的金属间连接方法连接在包套底部上,而对于膜片包套件的实施例,则连接在其膜片环上,包套填充片连接在金属板上,然后将金属板连接在容器底部上,但是也可以选择将金属板包套件钎焊在其包套底部上,对于具有膜片包套件的实施例,则钎焊在其包套底部和膜片环上,而包套填充片则钎焊在金属板上,然后金属板钎焊在容器底部上。
下面仅用一个实施例详细说明本发明。

在这些图中示出的锅形烹调和/或烹煮器具1被设计用热传导或电磁感应从底部施加热能。它包括一个烹煮食物的在水平面上呈圆形的容器2,该容器具有用奥氏体钢板作的容器外壳3和容器底部4、一个连接在容器底部上用高热导率金属板材料即铝合金或铜合金作的金属板5和一个金属板包套件(或包覆件)6。
金属板包套件6包括一个圆盘形包套底部7,在该底部的整个表面和/或辐射状部分上具有若干包套底部凹部8。包套底部填充片9镶嵌在包套底部凹部8中。此结构可以被设计为:包套底部7由奥氏体钢板制作,包套底部填充片9由铁磁性钢板制作,包套底部7和包套底部填充片9金属相接地连接在金属板5上,该金属板又连接在容器底部4上。然而这种结构也可设计为:包套底部7用铁磁性钢制作,包套底部填充片9由奥氏体钢板制作。此时,包套底部7和包套底部填充片9也是金属相接地连接在金属板5上,金属板5又连接在容器底部4上。
在本发明的范围中,包套底部填充片9可以具有完全不同的形式,即圆弧形的或三角形的水平凸块。推荐将包套底部填充片9作成圆弧形的和/或径向对称的形状。在本发明中,图1和图2所示的实施例是特别重要的。很明显,包套底部凹部8被设计为宽度10mm以上的圆弧形缺口,该圆弧形缺口配置在沿径向配置的包套底部肋条10之间,包套底部填充片9镶嵌在圆弧形缺口8中。该实施例示出四个彼此成直角的从圆形包套底部圆心11出发的包套底部肋条10。很清楚,在上述实施例中,包套底部凹部8和包套底部填充片9也可以是连续的圆形。
在图3所示的实施例中,包套底部凹部8被成形为扇形缺口,在形扇缺口之间径向配置包套底部肋条10。也作成扇形的包套底部填充片9被镶嵌在扇形凹部8中。同时,扇形缺口被限制为有半圆形部分对着金属板包套件6的边缘。扇形缺口8是等尺寸的。
应当明白,金属板包套件6如上所述可以是膜片包套件(Capsular covering)。金属板厚度相应于本专利权利要求10所述的厚度。容器底部4、金属板5和金属板包套件6的连接可以是金属间熔接或压力熔接。这一方面可以推荐DE41 25 115C2的实施例。但是也可以挑选用钎焊的方法连接上述部件。上述形变稳定性总是可以达到的。
Claims (13)
1、一种锅形的设计从底部用热传导或电磁感应施加热能的烹调和/或烹煮器具,该器具具有烹煮食物用的水平方向呈圆形的容器,该容器包括用奥氏体钢作的容器外壳和容器底部、一个紧靠容器底部配置的用高热导率金属材料作的金属板和一个金属板包套件,该烹调和/或烹煮器具具有以下特征:
a)金属板包套件包括一个圆盘形的包套底部,在该底部的整个表面上具有若干包套底部凹部;
b)包套底部填充片镶嵌在包套底部凹部中,包套底部用奥氏体钢板制作,包套底部填充片由铁磁性钢板制作;
并且包套底部和包套底部填充片金属相接地连接在金属板上,该金属板又连接在容器底部上。
2、一种锅形的设计从底部用热传导或电磁感应施加热能的烹调和/或烹煮器具,该器具具有烹煮食物用的水平方向呈圆形的容器,该容器包括用奥氏体钢作的容器外壳和容器底部、一个紧靠容器底部配置的用高热导体金属材料作的金属板和一个金属板包套件,该烹调和/或烹煮器具具有以下特征:
a)金属板包套件包括一个圆盘形的包套底部,在该底部的整个表面上具有若干包套底部凹部;
b)包套底部填充片镶嵌在包套底部凹部中,包套底部由铁磁性钢板制作,而包套底部填充片用奥氏体钢板制作,并且包套底部和包套底部填充片金属相接地连接在金属板上,该金属板又连接在容器底部上。
3、如权利要求1或2所述的烹调和/或烹煮器具,其特征是,包套底部凹部和包套底部填充片被设置为圆弧形的和/或径向对称的形状。
4、如权利要求1-3中任意一项所述的烹调和/或烹煮器具,其特征是,包套底部凹部呈宽度10-20mm的圆弧形缺口配置在沿径向配置的包套底部肋条之间,同样为圆弧形的包套底部填充片镶嵌在圆弧形凹部中。
5、如权利要求4所述的烹调和/或烹煮器具,其特征是,配置四个彼此成直角的从包套底部圆心出发的包套底部肋条。
6、如权利要求1-3中任意一项权利要求所述的烹调和/或烹煮器具,其特征是,包套底部凹部被成形为扇形缺口,在该扇形缺口间径向配置包套底部肋片,也为扇形的包套底部填充片被镶嵌在扇形凹部中。
7、如权利要求6所述的烹调和/或烹煮器具,其特征是,对着金属板包套件边缘的扇形缺口被限定为具有半圆形状。
8、如权利要求6或7所述的烹调和/或烹煮器具,其特征是,该扇形缺口具有相同的尺寸。
9、如权利要求1-8中任意一项所述的烹调和/或烹煮器具,其特征是,金属板包套件是一种膜片包套件。
10、如权利要求1-8中任意一项所述的烹调和/或烹煮器具,其特征是,容器和容器底部的金属厚度为0.7-1mm,金属板包套件的金属厚度约为0.7mm或更小,金属板的厚度为5-9mm。
11、如权利要求1-10中任意一项所述的烹调和/或烹煮器具,其特征是,包套底部与该器具的水平支承面相比,具有稍为凹进去的冷底部几何结构,容器底部的金属厚度、包套件的金属厚度、金属板的厚度、包套底部凹部和包套底部填充片的形状被配置成抗形变的。
