本发明涉及一种有利于增强免疫、提高抵抗力的奶粉,其包括维生素A、维生素C、维生素E、B族维生素、钙、铁、锌、硒、N‑乙酰神经氨酸、乳铁蛋白、牛初乳粉、酵母β‑葡聚糖。本专利提供的奶粉通过为“皮肤黏膜”、“非特异性免疫”、“特异性免疫”三大免疫防线提供必需的营养素,增强免疫系统的强度,提高抵抗力。

技术领域
本发明涉及调制奶粉工业生产领域,特别涉及一种有利于增强、提高免疫抵抗力的奶粉及其生产方法,适用于生产发育关键期的儿童。
背景技术
从2003年的“非典”,到人感染高致病性禽流感、甲型H1N1流感,再到2019年的“新冠状病毒肺炎”,中国出现过多次之前未知传染性疾病,这些疾病发病人群有多有少,症状有轻有重,而影响发病及症状很重要的因素就是个体的免疫力。人体免疫力是抵抗未知疾病最有效的办法。对于儿童来说,由于免疫系统不成熟,又缺少对卫生和疾病知识的认知,所以抵御疾病的能力弱于成人,对未知疾病的抵抗能力更差,增强免疫系统,提供抵抗力,对儿童来说尤为重要。
儿童配方奶粉是儿童膳食结构中非常重要的营养补充食品,可以为儿童补充大量的优质蛋白及维生素和矿物质。目前市场上,飞鹤、伊利、圣元、贝因美等许多品牌都有儿童奶粉,这些儿童配方奶粉大都以补充蛋白质、维生素及矿物质为主,或添加DHA以促进大脑发育。但市场上很少有专业针对儿童免疫系统发育,提高儿童抵抗力的儿童配方奶粉。
人体为抵御细菌、病毒等有害物质入侵,在免疫系统上共有3道防线,分别是:
第一道防线
是由皮肤和黏膜构成的,他们不仅能够阻挡病原体侵入人体,而且它们的分泌物(如乳酸、脂肪酸、胃酸和酶等)还有杀菌的作用;呼吸道黏膜上有纤毛,可以清除异物。
第二道防线
非特异性免疫,是体液中的杀菌物质和吞噬细胞,包括体液和肠道中的乳铁蛋白、溶菌酶等杀菌物质和吞噬细胞、杀伤细胞、树突状细胞等免疫细胞。
这两道防线是人类在进化过程中逐渐建立起来的天然防御功能,特点是人人生来就有,不针对某一种特定的病原体,对多种病原体都有防御作用,因此叫做非特异性免疫(又称先天性免疫)。多数情况下,这两道防线可以防止病原体对机体的侵袭。
第三道防线
特异性免疫,主要由免疫器官(胸腺、淋巴结和脾脏等)和免疫细胞(淋巴细胞)组成,包括B淋巴细胞介导的体液免疫和T淋巴细胞介导的细胞免疫。
第三道防线是人体在出生以后逐渐建立起来的后天防御功能,特点是出生后才产生的,只针对某一特定的病原体或异物起作用,因而叫做特异性免疫(又称后天性免疫)。
本发明中涉及一种有利于增强、免疫提高儿童抵抗力的奶粉配方及相关技术生产方法,产品在补充儿童日常所需营养的基础上,针对现阶段儿童免疫系统的发育情况,在“皮肤黏膜”、“非特异性免疫”、“特异性免疫”三大免疫防线方面,针对性补充必需的营养素,增加免疫系统强度,提高免疫力。发明人经过不断的研究、实验,并经反复试作样品及改进后,终于创造出具有实用价值的本发明。
发明内容
本发明涉及一种有利于增强免疫、提高抵抗力的奶粉,其能够为三道免疫防线提供必需的营养支持,具体针对皮肤和粘膜防线、非特异性免疫防线和特异性免疫防线。
一方面,本发明涉及的有利于增强免疫、提高抵抗力的奶粉,包括维生素A、维生素C、维生素E、B族维生素、锌、N-乙酰神经氨酸(燕窝酸)、乳铁蛋白、牛初乳粉、酵母β-葡聚糖。
另一方面,本发明涉及的有利于增强免疫、提高抵抗力的奶粉,包括维生素A、维生素C、维生素E、维生素B1、维生素B2、维生素B6、维生素B12、锌、N-乙酰神经氨酸(燕窝酸)、乳铁蛋白、牛初乳粉、酵母β-葡聚糖。
另一方面,本发明涉及的有利于增强免疫、提高抵抗力的奶粉,由如下组分组成:
生牛乳和/或生羊乳或全脂牛和/或全脂羊奶粉、脱脂牛奶粉和/或脱脂羊奶粉、脱脂乳清粉、脱盐乳清粉、固体玉米糖浆、1,3-二油酸-2-棕榈酸甘油三酯、结晶果糖、低聚果糖、无水奶油、大豆分离蛋白、水解乳清蛋白粉、牛初乳粉、酵母β-葡聚糖、水解蛋黄粉、N-乙酰神经氨酸、二十二碳六烯酸(DHA)、乳铁蛋白、单,双甘油脂肪酸酯、维生素A(醋酸视黄酯)、维生素D(胆钙化醇)、维生素E(dl-α-醋酸生育酚)、维生素K(植物甲萘醌)、维生素B1(盐酸硫胺素)、维生素B2(核黄素)、维生素B6(盐酸吡哆醇)、维生素B12(氰钴胺)、维生素C(L-抗坏血酸钠)、烟酸(烟酰胺)、叶酸、泛酸、生物素、氯化胆碱、左旋肉碱、牛磺酸、硫酸亚铁、硫酸锌、亚硒酸钠。
优选地,所述水解乳清蛋白粉的添加量为1.0%-10%,所述牛初乳粉的添加量为0.1-0.3%,所述酵母β-葡聚糖的添加量为50-200毫克/100克,所述水解蛋黄粉的添加量为20-50毫克/100克,所述N-乙酰神经氨酸的添加量为10-50毫克/100克。
优选地,所述的有利于增强免疫、提高抵抗力的奶粉,其营养素的含量如下:
人体的三道免疫防线都和营养有密切的关系,并且各道免疫防线所需的营养素种类也不尽一样,本专利优势在于为三道免疫防线提供必需的营养支持。
第一道:皮肤和粘膜防线,添加维生素A、维生素C、维生素E、锌、N-乙酰神经氨酸(燕窝酸)等营养素,维持皮肤和粘膜健康,阻挡有害物质的入侵,减少对人体细胞、组织的损害。
(1)维生素A和维生素C可以维持皮肤的弹性,减少皮肤的损伤,维持皮肤和粘膜的完整和健康,阻挡细菌、病毒等有害物质的入侵。
(2)多数有害细菌会产生自由基,通过自由基的强氧化作用破坏皮肤和粘膜屏障,入侵人体。维生素A、维生素C、维生素E、锌等为抗氧化剂,可以有效的去除自由基,保护皮肤及粘膜健康。
(3)病毒入侵人体粘膜细胞是通过病毒表面的标识蛋白与细胞表面的标识蛋白上的N-乙酰神经氨酸特异性结合,进而入侵细胞内。病毒表面标识蛋白好比是一把钥匙,细胞表面标识蛋白好比一扇门,细胞表面标识蛋白上的N-乙酰神经氨酸好比一把锁,病毒可以通过打开N-乙酰神经氨酸这把锁,进而打开门进入细胞。本专利就是通过添加游离的N-乙酰神经氨酸,抢先与病毒的标识蛋白(钥匙)结合,从而使病毒无法与人体细胞结合,减少病毒的入侵,增强免疫提高抵抗力。
第二道:非特异性免疫防线,靠体液中的杀菌物质和吞噬细胞来非特异性的杀灭有害细菌及病毒。本专利配方中添加的乳铁蛋白,是人体肠道及体液中重要的杀菌、抗病毒物质。
乳铁蛋白能够结合铁元素,从而能够减少了细菌对铁这种必需元素的吸收,影响有害细菌的生长,并且可抵抗I型和II型单纯疱疹病毒、巨细胞病毒、人类免疫性缺陷病毒、丙肝炎病毒、汉坦病毒、轮状病毒、I型脊髓灰质炎病毒、人类呼吸道合胞病毒和鼠白血病病毒等多种病毒。
第三道:特异性免疫,包括体液免疫和细胞免疫。体液免疫由B细胞介导,对入侵有害物质,针对性的产生抗体,通过抗体与有害物质结合,灭活有害物质。细胞免疫由T细胞介导,通过免疫细胞的吞噬等作用杀死有害物质。
本专利配方添加牛初乳粉,其中牛初乳粉含有大量的免疫物质,特别是免疫球蛋白IgG(即抗体),可以增强体液免疫效果,提高抵抗力。
本专利配方添加酵母β-葡聚糖,能够刺激增强NK细胞、巨噬细胞等免疫细胞的吞噬活性,刺激释放白介素以增强机体防御有害物质的能力,继而可以有效提高人体免疫力。
本专利添加多种B族维生素,是抗体产生的必需营养素,是为B细胞、T细胞发挥正常功能必需的营养物质。
本专利提供的奶粉通过为“皮肤黏膜”、“非特异性免疫”、“特异性免疫”三大免疫防线提供必需的营养素,增强免疫系统的强度,提高抵抗力。

具体实施方式
本发明具体涉及有利于增强免疫、提高抵抗力的奶粉,其具体的制备工艺,采用干湿复合法工艺,流程示意图如图1所示,其包括如下步骤:
①生牛和/或羊乳或全脂牛和/或羊奶粉、脱脂牛和/或羊奶粉溶解及处理:按配方要求在第一贮奶罐中放入检验合格的生牛和/或羊乳,按配方要求加入全脂牛和/或羊奶粉、脱脂牛和/或羊奶粉,搅拌完全溶解溶;当不使用生牛/羊乳时,加入经处理过的纯净水;
②净化处理:将溶解好的奶液通过离心机分离,进行净化处理,导入第二贮奶罐中;
③主要辅料溶解:按照配方要求在第二贮奶罐中加入脱脂乳粉、乳清粉、脱盐乳清粉、固体玉米糖浆、结晶果糖、大豆分离蛋白、低聚果糖等主要辅料,搅拌完全溶解;
④加入油脂:按照配方要求,在第二贮奶罐中加入油脂原料;
⑤维生素及矿物质溶解:按照配方要求将维生素A、维生素D、维生素C、维生素E、维生素K、维生素B1、维生素B2、维生素B6、维生素B12、叶酸、烟酸、泛酸、生物素、牛磺酸、氯化胆碱、左旋肉碱及钙、铁、锌、硒及水解蛋黄粉加入溶解罐中,搅拌完全溶解后导入第二贮奶罐中;其中,可选地,所述的水解蛋黄粉也可以在如下的⑨步骤加入;
⑥杀菌:混合好的溶液(奶液),通过85℃-135℃的管道杀菌;
⑦均质:将杀菌后的奶液在10-14Mpa下均质;
⑧浓缩、干燥:首先进行减压浓缩,真空度45-85kPa,浓缩浓度16-27°Ba;进风温度为160-190℃,排风温度65-95℃,保证了配方奶粉在生产过程中,大部分蛋白质的生物活性及营养成分;最后进行流化床干燥,进风温度为35-100℃,流化速度为0.05-3.5m/s;
⑨其他原料加入:按照配方要求将二十二碳六烯酸(DHA)、N-乙酰神经氨酸、牛初乳粉、乳铁蛋白、酵母β-葡聚糖分别按1:10与半成品奶粉的比例混合均匀,加入干混机种搅拌20~40min;可选地,所述二十二碳六烯酸(DHA)、N-乙酰神经氨酸、牛初乳粉、乳铁蛋白、酵母β-葡聚糖在所述步骤⑤中加入;
⑩包装:将搅拌好的成品粉,在洁净车间灌装。
可选地,本发明涉及的奶粉制备工艺,采用干湿复合法工艺,流程示意图如图2所示,其包括如下步骤:
①脱包:将高油乳清粉(1,3-二油酸-2-棕榈酸甘油三酯、大豆油、无水奶油、磷脂、脱盐乳清粉等)、全脂牛/羊奶粉、脱脂牛/羊奶粉、乳清粉、大豆分离蛋白、固体玉米糖浆、结晶果糖、低聚果糖等原辅料脱去外包装,内包装经风淋、紫外杀菌进入洁净区原料暂放车间;
②小料称量:按照配方要求,将维生素、矿物质、牛磺酸、胆碱、左旋肉碱、低聚果糖、二十二碳六烯酸(DHA)、N-乙酰神经氨酸、牛初乳粉、乳铁蛋白、酵母β-葡聚糖、水解蛋黄粉等小料称量分包,并经包装表面杀菌后送入混合车间备用;
③小料混合1:将二十二碳六烯酸(DHA)、N-乙酰神经氨酸、牛初乳粉、乳铁蛋白、酵母β-葡聚糖分别按1:10与半成品奶粉的比例混合均匀;
④小料混合2:将低聚果糖与半成品奶粉按照1:10的比例混合均匀;
⑤原料混合:按照配方要求将维生素A、维生素D、维生素C、维生素E、维生素K、维生素B1、维生素B2、维生素B6、维生素B12、叶酸、烟酸、泛酸、生物素、牛磺酸、氯化胆碱、左旋肉碱及钙、铁、锌、硒及水解蛋黄粉及步骤③、步骤④的混合粉加入半成品奶粉中,加入干混机中搅拌20~40min;
⑥包装:将搅拌好的成品粉,在洁净车间灌装。

1.一种有利于增强免疫、提高抵抗力的奶粉,其包括维生素A、维生素C、维生素E、B族维生素、钙、铁、锌、硒、N-乙酰神经氨酸、乳铁蛋白、牛初乳粉、酵母β-葡聚糖。
2.根据权利要求1所述的有利于增强免疫、提高抵抗力的奶粉,其包括维生素A、维生素C、维生素E、维生素B1、维生素B2、维生素B6、维生素B12、烟酸、叶酸、泛酸、钙、铁、锌、硒、N-乙酰神经氨酸、乳铁蛋白、牛初乳粉、酵母β-葡聚糖。
3.根据权利要求1所述的有利于增强免疫、提高抵抗力的奶粉,其由如下组分组成:
生牛乳和/或生羊乳或全脂牛和/或全脂羊奶粉、脱脂牛奶粉和/或脱脂羊奶粉、乳清粉、脱盐乳清粉、固体玉米糖浆、1,3-二油酸-2-棕榈酸甘油三酯、结晶果糖、低聚果糖、无水奶油、大豆分离蛋白、水解乳清蛋白粉、牛初乳粉、酵母β-葡聚糖、水解蛋黄粉、N-乙酰神经氨酸、二十二碳六烯酸(DHA)、乳铁蛋白、单,双甘油脂肪酸酯、维生素A(醋酸视黄酯)、维生素D(胆钙化醇)、维生素E(dl-α-醋酸生育酚)、维生素K(植物甲萘醌)、维生素B1(盐酸硫胺素)、维生素B2(核黄素)、维生素B6(盐酸吡哆醇)、维生素B12(氰钴胺)、维生素C(L-抗坏血酸钠)、烟酸(烟酰胺)、叶酸、泛酸、生物素、氯化胆碱、左旋肉碱、牛磺酸、硫酸亚铁、硫酸锌、亚硒酸钠。

5.根据权利要求1-3任一项所述的有利于增强免疫、提高抵抗力的奶粉,其中,所述酵母β-葡聚糖的添加量为50-200毫克/100克。
6.根据权利要求1-3任一项所述的有利于增强免疫、提高抵抗力的奶粉,其中,所述N-乙酰神经氨酸的添加量为10-50毫克/100克。
7.根据权利要求3-6任一项所述的有利于增强免疫、提高抵抗力的奶粉,其中,所述水解乳清蛋白粉的添加量为1.0%-10%,所述水解蛋黄粉的添加量为20-50毫克/100克。
9.制备有利于增强免疫、提高抵抗力的奶粉的制备工艺,其包括如下步骤:
①生牛和/或羊乳或全脂牛和/或羊奶粉、脱脂牛和/或羊奶粉溶解及处理:按配方要求在第一贮奶罐中放入检验合格的生牛和/或羊乳,按配方要求加入全脂牛和/或羊奶粉、脱脂牛和/或羊奶粉,搅拌完全溶解溶;当不使用生牛/羊乳时,加入经处理过的纯净水;
②净化处理:将溶解好的奶液通过离心机分离,进行净化处理,导入第二贮奶罐中;
③主要辅料溶解:按照配方要求在第二贮奶罐中加入脱脂奶粉、乳清粉、脱盐乳清粉、固体玉米糖浆、结晶果糖、大豆分离蛋白、低聚果糖等主要辅料,搅拌完全溶解;
④加入油脂:按照配方要求,在第二贮奶罐中加入油脂原料;
⑤维生素及矿物质溶解:按照配方要求将维生素A、维生素D、维生素C、维生素E、维生素K、维生素B1、维生素B2、维生素B6、维生素B12、叶酸、烟酸、泛酸、生物素、牛磺酸、氯化胆碱、左旋肉碱及钙、铁、锌、硒及水解蛋黄粉加入溶解罐中,搅拌完全溶解后导入第二贮奶罐中;
⑥杀菌:混合好的溶液(奶液),通过85℃-135℃的管道杀菌;
⑦均质:将杀菌后的奶液在10-14Mpa下均质;

⑨其他原料加入:按照配方要求将二十二碳六烯酸(DHA)、N-乙酰神经氨酸、牛初乳粉、乳铁蛋白、酵母β-葡聚糖分别按1:10与半成品奶粉的比例混合均匀,加入干混机种搅拌20~40min;可选地,所述二十二碳六烯酸(DHA)、N-乙酰神经氨酸、牛初乳粉、乳铁蛋白、酵母β-葡聚糖在所述步骤⑤中加入;
⑩包装:将搅拌好的成品粉,在洁净车间灌装;
其中,可选地,所述的水解蛋黄粉也可以在⑨步骤加入。
10.制备有利于增强免疫、提高抵抗力的奶粉的制备工艺,其包括如下步骤:
①脱包:将高油乳清粉(1,3-二油酸-2-棕榈酸甘油三酯、大豆油、无水奶油、磷脂、脱盐乳清粉等)、全脂牛和/或羊奶粉、脱脂牛和/或羊奶粉、乳清粉、大豆分离蛋白、固体玉米糖浆、结晶果糖、低聚果糖等原辅料脱去外包装,内包装经风淋、紫外杀菌进入洁净区原料暂放车间;
②小料称量:按照配方要求,将维生素、矿物质、牛磺酸、胆碱、左旋肉碱、低聚果糖、二十二碳六烯酸、N-乙酰神经氨酸、牛初乳粉、乳铁蛋白、酵母β-葡聚糖、水解蛋黄粉小料称量分包,并经包装表面杀菌后送入混合车间备用;
③小料混合1:将二十二碳六烯酸、N-乙酰神经氨酸、牛初乳粉、乳铁蛋白、酵母β-葡聚糖分别按1:10与半成品奶粉的比例混合均匀;
④小料混合2:将低聚果糖与半成品奶粉按照1:10的比例混合均匀;
⑤原料混合:按照配方要求将维生素A、维生素D、维生素C、维生素E、维生素K、维生素B1、维生素B2、维生素B6、维生素B12、叶酸、烟酸、泛酸、生物素、牛磺酸、氯化胆碱、左旋肉碱及钙、铁、锌、硒及水解蛋黄粉及步骤③、步骤④的混合粉加入半成品奶粉中,加入干混机中搅拌20~40min;
⑥包装:将搅拌好的成品粉,在洁净车间灌装。
