背景技术
陈皮为芸香科柑桔属植物橘及其栽培变种的干燥成熟果皮,作为一种传统中药材,气香 而味苦,具有驱除体内湿气,理气健脾,燥湿化痰等作用,主治脾胃不和,胸腹胀满,不思 饮食,咳嗽多痰等,属于药食同源物,安全性能好,应用范围广。自古就有“千年人参,百 年陈皮”的说法,特别是新会柑皮制成的陈皮即新会陈皮深受欢迎。新会陈皮散发芳香扑鼻 的香味,是其独有品质,且是传统的香料和调味佳品。如何把陈皮应用到各种食品中来发挥 其功效是近几年来的一个热点。
五指毛桃,属桑科植物,长在广东韶关和河源等地的深山里,因其叶子长的像五个手指, 果实成熟时像毛桃而得名。五指毛桃以根入药,能健脾补肺、行气利湿、舒筋活络。它既有 黄芪的益气健脾的功效,但又没有黄芪温热之性而十分适宜南方气候应用。广东人爱用来和 猪骨、鸡等煲汤,取其祛暑化湿之效。五指毛桃汤,带有椰子的清香,色如淡奶,因此五指 毛桃也有"五指牛奶"的别名。但如果仅仅将五指毛桃用于煲汤,大大限制了其使用范围和使 用价值,市场上还没有利用五指毛桃来进行加工零食等产品。因此,合理搭配辅助材料,制 成简单方便使用的产品,可以很好的提高五指毛桃使用价值。
果冻产品起源于国外,也称啫喱,是一种西方甜食用于替代水果使用。果冻呈半固体状, 外观晶莹,色泽鲜艳,口感软滑,由于其滑腻的口感,鲜艳的色彩外观备受现代人群喜欢。 传统果冻产品主要是以食用胶为主体,加入大量白砂糖,辅助加入柠檬酸、山梨酸钾、海藻 酸钠、日落黄、柠檬黄、亮蓝、诱惑红等多种食品添加剂进行调配而成,其加工食品本身的 营养价值并不大。其中白砂糖含量较高,占果冻比例16-25%,据统计,果冻中常用的食品添 加剂就有13种之多,过量的糖分的摄入及添加剂使用,已经成为传统果冻产品发展的一大障 碍。
近年来,随着人们生活水平的提高,人们对食品配料的来源及食品添加剂的使用提出更 高的要求,原来以温饱型为主体的休闲食品消费格局,逐渐向风味型、营养型、享受型甚至 功能型的方向转化。传统果冻中含有大量白砂糖以及各种添加剂,长期食用会对人身体造成 一定的伤害。而随着人们对食品安全的日益关注,食品添加剂在产品中出现的种类多少已经 成为广大消费者购买产品时一个重要的关注点。传统的果冻产品已经不再是当代人群的选择, 市场需要的是营养、健康、口味兼具的果冻食品。
发明内容
本发明的目的是为了解决上述现有技术的缺点和不足,提供一种陈皮保健果冻及其制备 方法。
一种陈皮保健果冻,由以下重量份的原料制成:陈皮浓缩液20-40份、五指毛桃浓缩液 10-20份、茯苓浓缩液10-20份、果粒2-3份、蜂蜜6-10份、罗汉果浓缩液3-5份和鱼胶粉3-7份。
本发明提供的陈皮保健果冻颜色黄亮鲜艳,是陈皮浓缩液特有的颜色,不需再添加人工 色素;其还融合了五指毛桃浓缩液、罗汉果浓缩液和蜂蜜的味道,使果冻口感独特;另外还 兼具有陈皮、五指毛桃和茯苓的功效,使该果冻适合肠胃不好的人群当做零食使用,有一定 的养胃功能。
优选地,所述的陈皮保健果冻由以下重量份的原料制成:陈皮浓缩液30份、五指毛桃浓 缩液15份、茯苓浓缩液15份、果粒2.5份、蜂蜜8份、罗汉果浓缩液4份和鱼胶粉5份。
进一步地,所述果粒为黄桃、芒果、火龙果等一种或多种水果切成2-3mm大小的颗粒混 合而成,所述陈皮浓缩液的原料为新会陈皮。
本发明还包括了一种陈皮保健果冻的制备方法,具体步骤如下:
(1)将自然晒干的陈皮清洗后,加入3-4倍的水,大火煮开后小火炖20-30分钟,冷却后过 滤,得到陈皮浓缩液;
(2)取五指毛桃加水煎煮2~3次,每次加5~8倍量水煎煮1~1.5小时,过滤后得到五指 毛桃浓缩液;
(3)将茯苓切成8~10mm见方的小块,加水煎煮2~3次,每次加5~8倍量水煎煮1~1.5 小时,过滤后得到茯苓浓缩液;
(4)挑选罗汉果鲜果,清洗干净,经水煮后捣碎,提取其果汁,将该果汁加入2倍的水,小 火煮20-30分钟得到罗汉果浓缩液;
(5)将所述重量份的五指毛桃浓缩液、茯苓浓缩液、罗汉果浓缩液、蜂蜜、果粒及一半重量 份的陈皮浓缩液混合,得到溶液1;
(6)将余下一半的陈皮浓缩液与鱼胶粉一边加热一边混合均匀,然后冷却至常温,得到溶液 2;
(7)将溶液1和溶液2混合,冷却成型,得到陈皮保健果冻。
进一步地,所述步骤(6)中余下一半的陈皮浓缩液与鱼胶粉混合过程中的加热温度为 40℃。
进一步地,所述步骤(7)具体为将溶液2一边搅拌一边加入到溶液1中,使溶液混合更 均匀。
进一步地,还包括步骤(8):将得到的陈皮保健果冻杀菌、密封包装。

1、本发明提供的陈皮保健果冻中添加了陈皮浓缩液:一方面陈皮的芳香气味使果冻具 有独特的风味;另一方面,陈皮浓缩液颜色黄亮鲜艳,能够在不添加人工色素的同时使果冻 看起来有食欲;进一步,陈皮可用于脾虚饮食减少、消化不良,以及恶心呕吐等症,在本发 明中加入陈皮可以调节肠胃、理气健脾、增进食欲、促进消化,适合肠胃消化不好的人群食 用。
2、本发明提供的陈皮保健果冻中添加了五指毛桃和茯苓浓缩液:五指毛桃浓缩液,带有 椰子的清香,色如淡奶,使果冻口味更加独特;其还具有健脾补肺、行气利湿、舒筋活络功 效。茯苓,味平、性甘,具有补益的作用,能够健脾养胃,对于食后腹胀、腹泻、大便长期 不成形有治疗效果。本发明融合了陈皮、五指毛桃和茯苓的功效,使得本发明的果冻具有养 胃功效,适合肠胃不好的人群食用。
3、本发明提供的陈皮保健果冻中添加了罗汉果浓缩液和蜂蜜:罗汉果含一种比蔗糖甜 300倍的甜味素,名为罗汉果甜甙,它不产生热量,所以是糖尿病、肥胖等不宜吃糖者的理 想替代甜味剂,该罗汉果甜甙味甜而纯正,无异味、回味感强、热稳定性好。蜂蜜在进入人 体胃肠道后不需转化就被直接吸收,不会积累而造成脂肪堆积,并且蜂蜜营养丰富,但甜度 不如蔗糖。本申请中将罗汉果和蜂蜜配合替代白砂糖制作,其甜味自然而纯正,符合当代人 对于低糖食品的追求,适合糖尿病等人群食用。
具体实施方式
实施例1
一种陈皮保健果冻,由以下重量份的原料制成:陈皮浓缩液20份、五指毛桃浓缩液10 份、茯苓浓缩液10份、果粒2份、蜂蜜6份、罗汉果浓缩液3份和鱼胶粉3份。
本实施例中,所述果粒为黄桃果粒,果粒大小为2mm;所述陈皮浓缩液原料为新会陈皮。
本实施例还包括一种陈皮保健果冻的制备方法,具体步骤如下:
(1)将自然晒干的陈皮清洗后,加入3-4倍的水,大火煮开后小火炖20-30分钟,冷却后过 滤,得到陈皮浓缩液;
(2)取五指毛桃加水煎煮2~3次,每次加5~8倍量水煎煮1~1.5小时,过滤后得到五指 毛桃浓缩液;
(3)将茯苓切成8~10mm见方的小块,加水煎煮2~3次,每次加5~8倍量水煎煮1~1.5 小时,过滤后得到茯苓浓缩液;
(4)挑选罗汉果鲜果,清洗干净,经水煮后捣碎,提取其果汁,将该果汁加入2倍的水,小 火煮20-30分钟得到罗汉果浓缩液;
(5)将所述重量份的五指毛桃浓缩液、茯苓浓缩液、罗汉果浓缩液、蜂蜜、果粒及一半重量 份的陈皮浓缩液混合,得到溶液1;
(6)将余下一半的陈皮浓缩液与鱼胶粉一边加热一边混合均匀,然后冷却至常温,得到溶液 2;
(7)将溶液1和溶液2混合,冷却成型,得到陈皮保健果冻。
(8)得到的果冻进行杀菌处理及密封包装。
实施例2
一种陈皮保健果冻,由以下重量份的原料制成:陈皮浓缩液30份、五指毛桃浓缩液15 份、茯苓浓缩液15份、果粒2.5份、蜂蜜8份、罗汉果浓缩液4份和鱼胶粉5份。
本实施例中,所述果粒为黄桃、芒果、火龙果的混合果粒,果粒大小为3mm;所述陈皮 浓缩液原料为新会陈皮。
本实施例还包括一种陈皮保健果冻的制备方法,具体步骤与实施例1相同。
实施例3
一种陈皮保健果冻,由以下重量份的原料制成:陈皮浓缩液40份、五指毛桃浓缩液20 份、茯苓浓缩液20份、果粒3份、蜂蜜10份、罗汉果浓缩液5份和鱼胶粉7份。
本实施例中,所述果粒为黄桃、芒果、火龙果、芦荟的混合果粒,果粒大小为3mm;所述陈皮浓缩液原料为新会陈皮。
本实施例还包括一种陈皮保健果冻的制备方法,具体步骤与实施例1相同。
以上实施例提供的陈皮保健果冻颜色黄亮鲜艳,是陈皮浓缩液特有的颜色,不需再添加 人工色素;其还融合了五指毛桃浓缩液、罗汉果浓缩液和蜂蜜的味道,使果冻口感独特;另 外还兼具有陈皮、五指毛桃和茯苓的功效,使该果冻适合肠胃不好的人群当做零食使用,有 一定的养胃功能。
本发明并不局限于上述实施方式,如果对本发明的各种改动或变形不脱离本发明的精神 和范围,倘若这些改动和变形属于本发明的权利要求和等同技术范围之内,则本发明也意图 包含这些改动和变形。
Claims (8)
1.一种陈皮保健果冻,其特征在于,由以下重量份的原料制成:陈皮浓缩液20-40份、五指毛桃浓缩液10-20份、茯苓浓缩液10-20份、果粒2-3份、蜂蜜6-10份、罗汉果浓缩液3-5份和鱼胶粉3-7份。
2.根据权利要求1所述的陈皮保健果冻,其特征在于,由以下重量份的原料制成:陈皮浓缩液30份、五指毛桃浓缩液15份、茯苓浓缩液15份、果粒2.5份、蜂蜜8份、罗汉果浓缩液4份和鱼胶粉5份。
3.根据权利要求1或2所述的陈皮保健果冻,其特征在于,所述果粒为黄桃、芒果、火龙果等一种或多种水果切成2-3mm大小的颗粒混合而成。
4.根据权利要求1或2所述的陈皮保健果冻,其特征在于,所述陈皮浓缩液的原料为新会陈皮。
5.一种如权利要求1所述的陈皮保健果冻的制备方法,其特征在于,具体步骤如下:
(1)将自然晒干的陈皮清洗后,加入3-4倍的水,大火煮开后小火炖20-30分钟,冷却后过滤,得到陈皮浓缩液;
(2)取五指毛桃加水煎煮2~3次,每次加5~8倍量水煎煮1~1.5小时,过滤后得到五指毛桃浓缩液;
(3)将茯苓切成8~10mm见方的小块,加水煎煮2~3次,每次加5~8倍量水煎煮1~1.5小时,过滤后得到茯苓浓缩液;
(4)挑选罗汉果鲜果,清洗干净,经水煮后捣碎,提取其果汁,将该果汁加入2倍的水,小火煮20-30分钟得到罗汉果浓缩液;
(5)将所述重量份的五指毛桃浓缩液、茯苓浓缩液、罗汉果浓缩液、蜂蜜、果粒及一半重量份的陈皮浓缩液混合,得到溶液1;
(6)将余下一半的陈皮浓缩液与鱼胶粉一边加热一边混合均匀,然后冷却至常温,得到溶液2;
(7)将溶液1和溶液2混合,冷却成型,得到陈皮保健果冻。
6.根据权利要求5所述的陈皮保健果冻保健果冻的制备方法,其特征在于,所述步骤(6)中余下一半的陈皮浓缩液与鱼胶粉混合过程中的加热温度为40℃。
7.根据权利要求5所述的陈皮保健果冻的制备方法,其特征在于,所述步骤(7)具体为将溶液2一边搅拌一边加入到溶液1中。
8.根据权利要求5所述的陈皮保健果冻的制备方法,其特征在于,还包括步骤(8):将得到的陈皮保健果冻杀菌、密封包装。
