(5)、在发酵的第6天或第7天,给发酵缸中加入水后搅拌均匀,水和米饭的加入重量比为6-7:5;
(6)、将发酵好的米酒进行蒸酒,收集冷凝液,得到米酒。

酒曲10克,稻谷粉30克,黄麻30克,法半夏10克,苍术30克,桔梗10克,桂枝30克,当归15克,肉桂6克,附子6克,白芷10克,陈皮6克,神曲1克,白芍15克,干姜10克,甘草10克。
一种米酒的制备方法:
(1)、将上述原料药混合后碾成粉末,得到原料药粉;
(2)、将原料药粉与10斤稻谷粉充分混合均匀,加一定量的水,混合成粘稠状,得到原料药粉混合物;
(3)、将原料药粉混合物按照一定重量,制成多个独立的酒曲丸,每个酒曲丸重量为10克;然后30℃烘干4小时备用;

(5)、在发酵的第7天,给发酵缸中加入水后搅拌均匀,水和米饭的加入重量比为7:5;
(6)、将发酵好的米酒进行蒸酒,收集冷凝液,得到度数52度米酒。
酒曲选用市售的安琪酒曲。

酒曲7克,稻谷粉30克,黄麻20克,法半夏10克,苍术20克,桔梗10克,桂枝20克,当归20克,肉桂10克,附子10克,白芷5克,陈皮10克,神曲1克,白芍20克,干姜10克,甘草15克。
制备方法如实施例1。

酒曲13克,稻谷粉20克,黄麻30克,法半夏5克,苍术30克,桔梗5克,桂枝30克,当归15克,肉桂5克,附子5克,白芷10克,陈皮5克,神曲2克,白芍15克,干姜15克,甘草10克。
制备方法如实施例1。

Claims (9)

1.一种米酒发酵用酒曲,包括以下重量份的组分:
酒曲5-15份,稻谷粉25-35份,黄麻25-35份,法半夏5-15份,苍术25-35份,桔梗5-15份,桂枝25-35份,当归10-20份,肉桂3-10份,附子3-10份,白芷5-15份,陈皮3-10份,神曲0.5-2.5份,白芍10-20份,干姜5-15份,甘草5-15份。
2.根据权利要求1所述的米酒发酵用酒曲,包括以下重量份的原料药:
酒曲7-13份,稻谷粉20-30份,黄麻20-30份,法半夏5-10份,苍术20-30份,桔梗5-10份,桂枝20-30份,当归15-20份,肉桂5-10份,附子5-10份,白芷5-10份,陈皮5-10份,神曲1-2份,白芍15-20份,干姜10-15份,甘草10-15份。
3.根据权利要求1或2所述的米酒发酵用酒曲,包括以下重量份的原料药:
酒曲10份,稻谷粉30份,黄麻30份,法半夏10份,苍术30份,桔梗10份,桂枝30份,当归15份,肉桂6份,附子6份,白芷10份,陈皮6份,神曲1份,白芍15份,干姜10份,甘草10份。
4.使用权利要求1-3任一项的米酒发酵用酒曲制备米酒的方法,其特征在于,包括以下步骤:
(1)、将原料药混合后碾成粉末,得到原料药粉;
(2)、将原料药粉再与稻谷粉充分混合均匀,加一定量的水,得到原料药粉混合物;
(3)、将原料药粉混合物按照一定重量,制成多个独立的酒曲,然后烘干备用;
(4)、给大米中加水,将米煮熟,将煮熟的米饭摊凉至23-26℃,加入酒曲,搅拌均匀后放入发酵缸进行发酵23-28天,得到发酵好的米酒,发酵温度25-35℃;
(5)、在发酵的第6天或第7天,给发酵缸中加入水后搅拌均匀,水和大米的加入重量比为6-7:5;
(6)、将发酵好的米酒进行蒸酒,收集冷凝液,得到米酒。
5.根据权利要求4所述的方法,其特征在于,所述步骤(2)中,所述原料药粉与稻谷粉的重量比为1:15-20。
6.根据权利要求5所述的方法,其特征在于,所述步骤(3)中,所述独立的酒曲为酒曲丸或酒曲饼,每个所述酒曲丸或酒曲饼的重量为10-15克。
7.根据权利要求6所述的方法,其特征在于,所述步骤(4)中,所述大米为普通大米和糯米的混合物,所述普通大米和糯米的重量比为45-50:3。
8.根据权利要求4所述的方法,其特征在于,所述酒曲与大米的重量比为3-4:500。
9.根据权利要求8所述的方法,其特征在于,所述步骤(4)中,所述大米与水的重量比为3-5:6,煮熟的时间为70-100分钟。
