本发明涉及一种酒的制备方法。特别是一种苦丁茶保健酒的生产方法。
背景技术
随着人们对健康保健意识的增强,含有各种营养成份并具有保健功能的保健酒越来越为人们所重视,需求量日益增长。几千年来,中药一直是中华民族繁衍生存的健康保护神,人民群众相信中信,现代医学研究证明,中药中含有多种化学成分,可以分别起到调节免疫、活血瘀血、抗氧化、抗突变等功能,如何将中药成分中的保健功能与酒结合,为人民的健康服务,是一个极有意义的课题。
发明内容
本发明的目的在于提供一种苦丁茶保健酒的制备方法,加入含有保健功能的药材,有益人体健康。
本发明通过以下技术方案达到上述目的:
苦丁茶保健酒的制备方法,其特征在于,该方法包括下列步骤:
(1)、称取下列重量份的主料成分与中药保健成分:
主料成分:
主料成分:
糯米1000-1200、大米150-200、龙须菜10-12、花生壳10-12、辣椒叶10-12、山露菜10-12、余甘子10-12、泥胡菜10-12、香菇10-12、10-12、木贼10-12;
中药保健成分:
苦丁茶15-18、霸王花5-8、瓜萎叶3-5、甘蔗叶3-5、黄芥子3-5、淫羊藿5-8、沙棘5-8、田基黄1-3、洛神花3-5、山茶花3-5、岗梅根3-5、翠云草3-5、生地3-5、玫瑰茄3-5;
(2)、先将中药保健成分加水煎煮得到煎煮液,分离出药渣;
(3)、将主料成分加水蒸熟,放凉后,拌入0.1-0.5%酒曲,拌均,放入容器中密封发酵;发酵温度为20-28℃;
(4)、密封发酵3-4天后,加入中药煎煮液,搅匀、发酵;
(5)、10-15天后,加入食用酸,调PH值为6.5-6.8,继续发酵;
(6)、15-20天后,加入食用碱,调PH值为7.5-7.8,继续发酵;
(7)、15-20天后,调酒液PH值为中性,压榨得酒液,再经过精滤即得。
所述苦丁茶保健酒的制备方法,其特征在于,所述的食用酸为柠檬酸或盐酸、磷酸,所述的食用碱为碳酸氢钠或碳酸钠。
本发明的优点:
本发明采用野菜及中药保健成分为原料,具有清热解毒、益气活血、抗氧化、抗突变等功能,无副作用,长期饮用,有益健康,延年益寿。
本发明中苦丁具有清热解毒功能,同时能健脾益气,增强免疫,可以用于治疗病毒性疾病,适合于都市白领亚健康状态者饮用,可以预防疾病。
具体实施方式
苦丁茶保健酒的制备方法,该方法包括下列步骤:
(1)、称取下列重量份(10g)的主料成分与中药保健成分:
主料成分:
糯米1200、大米150、龙须菜12、花生壳12、辣椒叶12、山露菜12、余甘子10、泥胡菜12、香菇12、12、木贼12;
中药保健成分:
苦丁茶18、霸王花8、瓜萎叶3、甘蔗叶3、黄芥子3、淫羊藿8、沙棘5、田基黄1、洛神花5、山茶花5、岗梅根5、翠云草3、生地3、玫瑰茄3;
(2)、先将中药保健成分加水煎煮得到煎煮液,分离出药渣;
(3)、将主料成分加水蒸熟,放凉后,拌入0.1-0.5%酒曲,拌均,放入容器中密封发酵;发酵温度为20-28℃;
(4)、密封发酵3-4天后,加入中药煎煮液,搅匀、发酵;
(5)、10-15天后,加入食用酸,调PH值为6.5-6.8,继续发酵;
(6)、15-20天后,加入食用碱,调PH值为7.5-7.8,继续发酵;
(7)、15-20天后,调酒液PH值为中性,压榨得酒液,再经过精滤即得。
所述的食用酸为柠檬酸或盐酸、磷酸,所述的食用碱为碳酸氢钠或碳酸钠。
采用本发明所述方法制备的苦丁茶保健酒经检验,结果如下:
感官,样品无沉淀,气味及滋味正常。
甲醇,g/100ml,< 0.02
杂醇油 ( 以异丁醇与异戊醇计),g/100ml, 0.18
氰化物, mg/L < 0.15
铅( 以Pb 计),mg/L < 0.25
锰( 以Mn 计),mg/L < 0.49
以上项目检验结果符合国家蒸馏酒及配制酒卫生标准(GB2757-81)。

1.一种苦丁茶保健酒的制备方法,其特征在于,该方法包括下列步骤:
(1)、称取下列重量份的主料成分与中药保健成分:
主料成分:
糯米1000-1200、大米150-200、龙须菜10-12、花生壳10-12、辣椒叶10-12、山露菜10-12、余甘子10-12、泥胡菜10-12、香菇10-12、木贼10-12;
中药保健成分:
苦丁茶15-18、霸王花5-8、瓜萎叶3-5、甘蔗叶3-5、黄芥子3-5、淫羊藿5-8、沙棘5-8、田基黄1-3、洛神花3-5、山茶花3-5、岗梅根3-5、翠云草3-5、生地3-5、玫瑰茄3-5;
(2)、先将中药保健成分加水煎煮得到煎煮液,分离出药渣;
(3)、将主料成分加水蒸熟,放凉后,拌入0.1-0.5%酒曲,拌匀,放入容器中密封发酵;发酵温度为20-28℃;
(4)、密封发酵3-4天后,加入中药煎煮液,搅匀、发酵;
(5)、10-15天后,加入食用酸,调pH值为6.5-6.8,继续发酵;
(6)、15-20天后,加入食用碱,调pH值为7.5-7.8,继续发酵;
(7)、15-20天后,调酒液pH值为中性,压榨得酒液,再经过精滤即得。
2.根据权利要求1 所述苦丁茶保健酒的制备方法,其特征在于,所述的食用酸为柠檬酸或盐酸、磷酸,所述的食用碱为碳酸氢钠或碳酸钠。
