本发明涉及一种固体饮料及其制备方法,具体涉及一种火龙果皮-葡甘聚糖复合微球塑身固体饮料及其制备方法,属于食品加工技术领域。
背景技术
随着人们生活水平的提高,肥胖症的患者人群急剧增加,目前已成为威胁人类健康的最重要疾病之一。肥胖症是一种由多种因素引起的慢性代谢性疾病,可诱发或加重高血压、高脂血症、冠心病、糖尿病、脂肪肝、呼吸系统疾病等诸多危害人体健康的疾病。目前,针对肥胖症的治疗,主要采取的方法有手术吸脂,药物减肥,溶脂针、饮用减肥茶等。然而这些方法的实际疗效大多并不尽如人意,如药物治疗的安全性,过度饮用减肥茶引起营养失调和腹泻等问题。与此同时,随着人们对身材的追求越来越高,对绿色健康、安全、有效、可服用长期的减肥塑身产品的需求却日益迫切。因此,亟待找到一种既具有减肥功效,同时富含多种营养成分的减肥塑身产品。
发明内容
鉴于上述现有技术的不足,本发明的目的在于提供一种绿色健康安全的火龙果皮-葡甘聚糖塑身固体饮料 ,本发明结合火龙果皮提取物和葡甘聚糖,利用葡甘聚糖特殊的凝胶特性和靶向释放特性,以此缓解花青素等大量火龙果提取物的寒凉性,减轻其对脾胃的侵害,从而避免了患者长期服用时可能产生的胃肠道不适等症状。
火龙果果皮是火龙果加工的主要副产物,其含有大量的果胶、花青素等活性功能成分,具有抗氧化、抗衰老、抗辐射、降血压血脂、增强血管弹性、解油腻、顺肠胃等多种生理活性功能。本发明的另一种主要原料--葡甘聚糖是一种从魔芋块茎中提取的可溶性的膳食纤维,具有特殊的凝胶特性、超强吸水性,能够靶向作用于结肠,释放活性物质。同时食用葡甘聚糖后易产生饱腹感,减少和延缓吸收葡萄糖,具有减肥、降血糖血脂、降胆固醇、抗脂肪肝和预防便秘等功能特性,安全无毒副作用。因此,以火龙果皮提取物(果胶、花青素等)、魔芋葡甘聚糖为原材料,可制成含糖量低,热量低,稳定性好,冲调性强,溶解性强,便于肠道消化吸收的塑身固体饮料。
本发明一种火龙果皮-葡甘聚糖复合微球塑身固体饮料的制备方法,其特征在于制备步骤如下:
(1)火龙果红色素提取:将火龙果果皮切碎、喷雾干燥,加乙醇后过滤,收集滤液,将滤液依次用聚乙二醇/硫酸铵双水相体系、三氯甲烷萃取,得火龙果红色素;
(2)塑身固体饮料原料及配方为:按重量份计,以葡甘聚糖粉80-100份、火龙果红色素50-90份为主要原料,辅助添加燕麦粉10-12份、葛根粉6-8份、山药粉6-8份,分别干燥至含水率为14%,粉碎过60目筛,制成固体原料;
(3)制备塑身固体饮料浓乳:取步骤(2)的固体原料和白术胶加入水中,预热至50-70℃,置离心除菌机中,均质、冷却,制成塑身固体饮料浓乳;
(4)高纯蒸汽喷射:取步骤(3)的塑身固体饮料浓乳经135-165℃高纯蒸汽喷射5s,冷却;
(5)冻干:将步骤(4)高纯蒸汽喷射处理后的塑身固体饮料浓乳,在-10~-110Pa压力、-10~-60℃的条件下冷冻,直至浓乳成粉末状,制成粗塑身固体饮料粉末;
(6)气体流化精准控水:将步骤(5)粗塑身固体饮料粉输入控水设备中,干空气入口温度为20-60℃,空气速度为3m/s,控制出口物料含水率为6%-10%,温度为20-30℃,得精准控水塑身固体饮料粉;
(7)微粒匀化加工:将步骤(6)精准控水塑身固体饮料粉输入微粒匀化装置中匀化,制得颗粒大小为1-3mm的微粒;
(8)包装: 收集步骤(7)的微粒,充氮包装。
其中,步骤(2)所述的配方:按重量份计,葡甘聚糖粉90份、火龙果红色素70份、燕麦粉11份、葛根粉7份、山药粉7份。
步骤(3)所述的制备固体饮料浓乳过程中,固体原料、白术胶和水的重量比为1:1:2。

本发明的优点:本发明制备的魔芋葡甘聚糖塑身固体饮料无论是食用性还是功能性,都具有明显优势。本发明的魔芋葡甘聚糖塑身固体饮料涉及的材料简单、取材方便、安全无毒副作用。本发明以天然高分子多糖魔芋葡甘聚糖为基料,相比于其它材料,其优势为低成本、易制备、低热量、低含糖量,易消化吸收,具有饱腹感。因此,以魔芋葡甘聚糖为塑身固体饮料的基料,以火龙果果皮提取的红色素和果胶为原料制备塑身固体饮料,在获得抗衰老等高性能产品的同时,还可以解决成本高、含糖量高、功能性差、冲调性差、溶解性差、不利于肠道消化吸收等缺点。本发明的魔芋葡甘聚糖塑身固体饮料与市售塑身固体饮料相关性能测试对比结果如表1所示。

经过以上对比测试,用本发明的魔芋葡甘聚糖塑身固体饮料各项性能优异,其指标均超过传统塑身固体饮料,可替代现有塑身固体饮料。
具体实施方式
下面结合具体实施例对本发明作进一步详细说明。
实施例1、一种魔芋葡甘聚糖塑身固体饮料及其制备方法,包括以下步骤:
(1)火龙果红色素提取:将火龙果果皮切碎、喷雾干燥,加乙醇后过滤,收集滤液,将滤液依次用聚乙二醇/硫酸铵双水相体系、三氯甲烷萃取,得火龙果红色素;
(2)塑身固体饮料原料及配方为:按重量份计,以葡甘聚糖粉80份、火龙果红色素50份为主要原料,辅助添加燕麦粉10份、葛根粉6份、山药粉6份、分别干燥至含水率为14%,粉碎过60目筛,制成固体原料;
(3)制备塑身固体饮料浓乳:取步骤(2)的固体原料和白术胶加入水中,预热至50℃,置离心除菌机中,均质、冷却,制成塑身固体饮料浓乳;所述固体原料、白术胶和水的重量比为1:1:2。
(4)高纯蒸汽喷射:取步骤(3)的塑身固体饮料浓乳经135-165℃高纯蒸汽喷射5s,冷却;所使用的喷射器为SZE型高纯蒸汽喷射器;
(5)冻干:将步骤(4)高纯蒸汽喷射处理后的塑身固体饮料浓乳,在-110Pa压力、-10℃的条件下冷冻,直至浓乳成粉末状,制成粗塑身固体饮料粉末;
(6)气体流化精准控水:将步骤(5)粗塑身固体饮料粉输入控水设备中,干空气入口温度为20℃,空气速度为3m/s,控制出口物料含水率为6%,温度为20℃,得精准控水塑身固体饮料粉;
(7)微粒匀化加工:将步骤(6)精准控水塑身固体饮料粉输入微粒匀化装置中匀化,制得颗粒大小为1-3mm的微粒,微粒呈针式微雪花状;
(8)包装: 收集步骤(7)的微粒,充氮包装。
实施例2 一种魔芋葡甘聚糖塑身固体饮料及其制备方法,包括以下步骤:
(1)火龙果红色素提取:参照实施例1步骤(1);
(2)塑身固体饮料原料及配方为:按重量份计,以葡甘聚糖粉90份、火龙果红色素70份为主要原料,辅助添加燕麦粉11份、葛根粉7份、山药粉7份、分别干燥至含水率为14%,粉碎过60目筛,制成固体原料;
(3)制备塑身固体饮料浓乳:取步骤(2)的固体原料和白术胶加入水中,预热至60℃,置离心除菌机中,均质、冷却,制成塑身固体饮料浓乳;所述固体原料、白术胶和水的重量比为1:1:2。
(4)高纯蒸汽喷射:取步骤(3)的塑身固体饮料浓乳经155℃高纯蒸汽喷射5s,冷却;所使用的喷射器为SZE型高纯蒸汽喷射器;
(5)冻干:将步骤(4)高纯蒸汽喷射处理后的塑身固体饮料浓乳,在-60Pa压力、-35℃的条件下冷冻,直至浓乳成粉末状,制成粗塑身固体饮料粉末;
(6)气体流化精准控水:将步骤(5)粗塑身固体饮料粉输入控水设备中,干空气入口温度为40℃,空气速度为3m/s,控制出口物料含水率为8%,温度为25℃,得精准控水塑身固体饮料粉;
(7)微粒匀化加工:将所述精准控水塑身固体饮料粉输入JN-10HC高压均质机中匀化,制得颗粒大小为1-3mm的微粒,微粒呈针式微雪花状;
(8)包装: 收集微粒,充氮包装。
实施例3 一种魔芋葡甘聚糖塑身固体饮料及其制备方法,包括以下步骤:
(1)火龙果红色素提取:参照实施例1步骤(1);
(2)塑身固体饮料原料及配方为:按重量份计,以葡甘聚糖粉100份、火龙果红色素90份为主要原料,辅助添加燕麦粉12份、葛根粉8份、山药粉8份、分别干燥至含水率14%,粉碎过60目筛,制成固体原料;
(3)制备塑身固体饮料浓乳:取步骤(2)的固体原料和白术胶加入水中,预热至70℃,置离心除菌机中,均质、冷却,制成塑身固体饮料浓乳;所述固体原料、白术胶和水的重量比为1:1:2。
(4)高纯蒸汽喷射:取步骤(3)的塑身固体饮料浓乳经165℃高纯蒸汽喷射5s,冷却;所使用的喷射器为SZE型高纯蒸汽喷射器;
(5)冻干:将步骤(4)高纯蒸汽喷射处理后的塑身固体饮料浓乳,在-110Pa压力、-60℃的条件下冷冻,直至浓乳成粉末状,制成粗塑身固体饮料粉末;
(6)气体流化精准控水:将步骤(5)粗塑身固体饮料粉输入控水设备中,干空气入口温度为60℃,空气速度为3m/s,控制出口物料含水率为10%,温度为30℃,得精准控水塑身固体饮料粉;
(7)微粒匀化加工:将所述精准控水塑身固体饮料粉输入JN-10HC高压均质机中均化,制备匀化微粒呈针式微雪花状,颗粒大小3mm;
(8)包装: 收集微粒,充氮包装。
以上所述仅为本发明的较佳实施例,凡依本发明申请专利范围所做的均等变化与修饰,皆应属本发明的涵盖范围。
Claims (4)
1.一种火龙果皮-葡甘聚糖复合微球塑身固体饮料的制备方法,其特征在于制备步骤如下:
(1)火龙果红色素提取:将火龙果果皮切碎、喷雾干燥,加乙醇后过滤,收集滤液,将滤液依次用聚乙二醇/硫酸铵双水相体系、三氯甲烷萃取,得火龙果红色素;
(2)塑身固体饮料原料及配方为:按重量份计,以葡甘聚糖粉80-100份、火龙果红色素50-90份为主要原料,辅助添加燕麦粉10-12份、葛根粉6-8份、山药粉6-8份,分别干燥至含水率为14%,粉碎过60目筛,制成固体原料;
(3)制备塑身固体饮料浓乳:取步骤(2)的固体原料和白术胶加入水中,预热至50-70℃,置离心除菌机中,均质、冷却,制成塑身固体饮料浓乳;
(4)高纯蒸汽喷射:取步骤(3)的塑身固体饮料浓乳经135-165℃高纯蒸汽喷射5s,冷却;
(5)冻干:将步骤(4)高纯蒸汽喷射处理后的塑身固体饮料浓乳,在-10~-110Pa压力、-10~-60℃的条件下冷冻,直至浓乳成粉末状,制成粗塑身固体饮料粉末;
(6)气体流化精准控水:将步骤(5)粗塑身固体饮料粉输入控水设备中,干空气入口温度为20-60℃,空气速度为3m/s,控制出口物料含水率为6%-10%,温度为20-30℃,得精准控水塑身固体饮料粉;
(7)微粒匀化加工:将步骤(6)精准控水塑身固体饮料粉输入微粒匀化装置中匀化,制得颗粒大小为1-3mm的微粒;
(8)包装: 收集步骤(7)的微粒,充氮包装。
2.根据权利要求1所述的一种火龙果皮-葡甘聚糖复合微球塑身固体饮料的制备方法,其特征在于步骤(2)所述的配方:按重量份计,葡甘聚糖粉90份、火龙果红色素70份、燕麦粉11份、葛根粉7份、山药粉7份。
3.根据权利要求1所述的一种火龙果皮-葡甘聚糖复合微球塑身固体饮料的制备方法,其特征在于步骤(3)所述的制备塑身固体饮料浓乳过程中,固体原料、白术胶和水的重量比为1:1:2。
4.由权利要求1-3所述的任一方法制备的火龙果皮-葡甘聚糖复合微球塑身固体饮料。
