本发明公开了一种芸豆方便食品及其制备方法,所述芸豆方便食品包括下述重量份的原料:芸豆提取物40份、玉米粉12份、藕粉7份、玫瑰花瓣2份、魔芋粉8份、牛肉粒4份、青萝卜5份、青菜心5份、醋2份、盐2份、橄榄油4份。本发明的有益效果为:本发明所述一种芸豆方便食品所含各原料相互作用,即为机体提供了丰富的营养成分,满足机体的营养需求,帮助机体肠道内废物的排出,增加机体的免疫机能,且食用后使人具有一种饱腹感,能减少食物的摄入量,而且可以有效阻止机体对热量、脂肪的吸收,从而达到科学、健康的减肥目的。

本发明涉及食品技术领域,具体涉及一种芸豆方便食品及其制备方法。
背景技术
随着现今经济的发展,人们生活水平的提高,物质条件极大的丰富着我们的说活,尤其是各类衍生了高糖高热量的食物,同时因为当代人对营养的不合理摄入再加上体力劳动和运动量的减少,导致肥胖症的发生率在逐年上升。现今,世界卫生组织已经将肥胖定义为一种疾病,而不是简单的体重过重。许多研究者发现,肥胖与心血管疾病、糖尿病、高血压、血脂异常等多种疾病密切相关,并且肥胖的程度与病死率亦密切相关,肥胖不仅影响形体美,对人类健康也造成了巨大的威胁。
当前市场上的减肥药和减肥方法很多,就减肥方法而言有以下几类:腹泻减肥法,其主要为减去水分和蛋白质等营养,脂肪并未减掉,长期使用极易造成新陈代谢紊乱,引发内分泌失调;节食减肥法靠毅力控制食欲难以持久,而且损坏健康加速衰老,极易出现心理问题。西药减肥,只适用于某些病理性肥胖群体,虽然减肥效果明显,但毒副作用大,长期服用会引起血压升高、心律失常、心脏疾病,新陈代谢功能紊乱,因此,一种健康养生的减肥方法,成为市场的需求。
发明内容
本发明的目的是提供一种具有减肥作用的芸豆方便食品及其制备方法。
一种芸豆方便食品,包括下述重量份的原料:芸豆提取物30-50份、玉米粉10-15份、藕粉5-8份、玫瑰花瓣1-3份、魔芋粉5-10份、牛肉粒3-5份、青萝卜3-8份、青菜心3-8份、醋1-3份、盐1-3份、橄榄油3-5份。
进一步地,所述芸豆方便食品,包括下述重量份的原料:芸豆提取物40份、玉米粉12份、藕粉7份、玫瑰花瓣2份、魔芋粉8份、牛肉粒4份、青萝卜5份、青菜心5份、醋2份、盐2份、橄榄油4份。
芸豆提取物中所含主要成分为芸豆蛋白、α-淀粉酶抑制剂、α-葡萄糖苷酶抑制剂、皂苷和矿物质等,具有提高肌肤新陈代谢的作用,所含膳食纤维能降低脂肪的吸收功能,促进脂肪代谢,具有减肥的功效,而α-淀粉酶抑制剂能有效阻断高淀粉类食物中淀粉的分解,阻断大部分淀粉热量的摄取,减少人体最大的脂肪来源,且α-淀粉酶抑制剂使经胃肠道排出体外,不经过血液循环,所以食用不会产生负面影响。
玉米粉含有丰富的营养素,大量的卵磷脂、亚油酸、谷物醇、维生素E等具有降血压、降血脂、抗动脉硬化、预防肠癌、美容养颜、延缓衰老等多种保健功效。
藕粉具有通便止泻、健脾开胃的功效,其含有丰富的粘液蛋白和膳食纤维,能与人体内胆酸盐,食物中的胆固醇及甘油三酯结合,使其从粪便中排除,从而减少脂类的吸收。此外,莲藕散发出一种独特的清香,营养价值很高,富含铁、钙等微量元素,植物蛋白质、维生素及淀粉含量也很丰富,有明显的补益气血,增强人体免疫力的作用。
玫瑰花瓣含有多种微量元素,维生素C含量高,有理气、活血、收敛等作用。
魔芋粉中含有16种氨基酸、10种矿物质,丰富的膳食纤维,多种维生素,魔芋多糖,是低热量,低脂肪,高纤维的代表食物之一。魔芋中含有的膳食纤维有助于肠胃蠕动,使肠道内的毒害物质排出体外,促进排便;其含有的魔芋多糖物质有着非常强大的膨胀力,被人体摄入后会填充肠胃,形成一种饱腹感,减少食物的摄入,抑制肠胃对于胆固醇的吸收,促进胆固醇的排出,且其含有的水溶性纤维,会抑制肠胃对于糖类物质的吸收,从而降低饭后的血糖值。
牛肉粒含有丰富的蛋白质、氨基酸,其肌氨酸的含量比任何其他食品都高,对增强肌肉,增强力量特别有效;牛肉中含有的维生素B6可帮助机体增强免疫力,促进蛋白质的新陈代谢和合成。
青萝卜所含的热量比较少、纤维素较多,吃后易产生饱胀感,其能诱导人体自身产生干扰素,增加机体的免疫力,并能抑制癌细胞的生长,对防癌、抗癌有重要的作用。此外,萝卜中含有的芥子油和精纤维可促进胃肠的蠕动,有助于体内废物排出。
青菜心中含有丰富的维生素、胡萝卜素、钙、铁等营养成分,其含有的粗纤维可促进大肠蠕动,增加大肠内毒素的排出;青菜心还可促进皮肤细胞代谢,防止皮肤粗糙及色素沉着,使皮肤亮洁,延缓衰老。
所述一种芸豆方便食品的制备方法,包括以下步骤:
(1)制备芸豆提取物;
(2)将青萝卜、青菜心进行榨汁,过滤除去滤渣,滤液备用;
(3)将所得滤液和醋加入芸豆粉中混合搅拌均匀,得混合物,干燥混合物,粉碎得混合粉;
(4)将混合粉、玉米粉、藕粉、玫瑰花瓣、魔芋粉、牛肉粒、盐混合搅拌均匀,然后滴加橄榄油,进行冷冻干燥,待干燥完毕进行杀菌得所述一种芸豆方便食品。
进一步地,步骤(3)中,所述干燥的温度为40-50℃,干燥的时间为1-2h。
进一步地,步骤(4)中,所述牛肉粒的粒径为3-5mm;所述冷冻干燥的温度为:-25℃至-40℃,冷冻干燥的时间为15-24h。
进一步地,步骤(4)中,所述杀菌为微波杀菌;微波杀菌的温度为:40-50℃,杀菌时间为5-6min。
进一步地,步骤(1)中,所述芸豆提取物的制备方法,包括以下步骤:
a、用水浸泡芸豆,待浸泡完毕,干燥,粉碎,得芸豆粉;
b、将芸豆粉溶于水中,并调节溶液的pH为酸性,在加热的条件下进行水提,然后将溶液进行离心处理,取上清液并浓缩,干燥得芸豆提取物。调节pH时可以选用盐酸进行调节。
进一步地,步骤a中,浸泡所用水的温度为5-10℃,浸泡时间为10-12h。
进一步地,步骤b中,芸豆粉与水的重量比为:1:20-1:40,溶液的pH为3-5,加热提取的温度为40-50℃。
进一步地,步b中,所述干燥的温度为40-50℃,干燥的时间为6-8h。
本发明的有益效果为:本发明所述一种芸豆方便食品所含芸豆提取物能阻断高淀粉类食物中淀粉的分解,阻断淀粉热量的吸收,减少人体内脂肪来源,藕粉能减少人体对脂肪的吸收,玉米粉、魔芋粉、牛肉粒能为人体提供丰富的营养成分、满足人体对营养的需求,且魔芋粉和青萝卜能增加机体的饱腹感,减少人体对事物的摄取,而芸豆方便食品中所含原料含有丰富的膳食纤维能促进肠胃的蠕动,帮助体内废物的排出。
本发明所述一种芸豆方便食品所含各原料相互作用,即为机体提供了丰富的营养成分,满足机体的营养需求,帮助机体肠道内废物的排出,增加其免疫机能,且食用后使人具有一种饱腹感,能减少食物的摄入,而且可以有效阻止机体对热量、脂肪的吸收,从而达到科学、健康的减肥目的。
具体实施方式
实施例1
一种芸豆方便食品,包括下述重量份的原料:芸豆提取物30g、玉米粉10g、藕粉5g、玫瑰花瓣1g、魔芋粉5g、牛肉粒3g、青萝卜3g、青菜心3g、醋1g、盐1g、橄榄油3g。
所述芸豆方便食品的制备方法,包括以下步骤:
(1)制备芸豆提取物;
(2)将青萝卜、青菜心进行榨汁,过滤除去滤渣,滤液备用;
(3)将所得滤液和醋加入芸豆粉中混合搅拌均匀,得混合物,干燥混合物,粉碎得混合粉;
(4)将混合粉、玉米粉、藕粉、玫瑰花瓣、魔芋粉、牛肉粒、盐混合搅拌均匀,然后滴加橄榄油,进行冷冻干燥,待干燥完毕进行杀菌得所述一种芸豆方便食品。
实施例2
一种芸豆方便食品,包括下述重量份的原料:芸豆提取物35g、玉米粉12g、藕粉6g、玫瑰花瓣1g、魔芋粉6g、牛肉粒4g、青萝卜4g、青菜心4g、醋1g、盐1.5g、橄榄油3.5g。
所述芸豆方便食品的制备方法,包括以下步骤:
(1)制备芸豆提取物;
1.1、用温度为5℃的水浸泡芸豆12h,待浸泡完毕,干燥,粉碎,得芸豆粉;
1.2、将芸豆粉溶于水中,且芸豆粉与水的重量比为:1:20,调节溶液的pH为3,在加热温度为40℃的条件下进行水提,然后将溶液进行离心处理,取上清液并浓缩,将浓缩物在温度为40℃的条件下干燥8h得芸豆提取物。
(2)将青萝卜、青菜心进行榨汁,过滤除去滤渣,滤液备用;
(3)将所得滤液和醋加入芸豆粉中混合搅拌均匀,得混合物,在40℃的条件下干燥混合物2h,粉碎得混合粉;
(4)将混合粉、玉米粉、藕粉、玫瑰花瓣、魔芋粉、粒径为3mm的牛肉粒、盐混合搅拌均匀,然后滴加橄榄油,在温度为-25℃的条件下冷冻干燥15h,待干燥完毕,微波杀菌5min,且微波杀菌的温度控制为40℃,待杀菌完毕,得所述一种芸豆方便食品。
实施例3
一种芸豆方便食品,包括下述重量份的原料:芸豆提取物40g、玉米粉12g、藕粉7g、玫瑰花瓣2g、魔芋粉8g、牛肉粒4g、青萝卜5g、青菜心5g、醋2g、盐2g、橄榄油4g。
所述芸豆方便食品的制备方法,包括以下步骤:
(1)制备芸豆提取物;
1.1、用温度为7℃的水浸泡芸豆11h,待浸泡完毕,干燥,粉碎,得芸豆粉;
1.2、将芸豆粉溶于水中,且芸豆粉与水的重量比为:1:25,使用盐酸调节溶液的pH为3,在加热温度为43℃的条件下进行水提,然后将溶液进行离心处理,取上清液并浓缩,将浓缩物在温度为43℃的条件下干燥7h得芸豆提取物。
(2)将青萝卜、青菜心进行榨汁,过滤除去滤渣,滤液备用;
(3)将所得滤液和醋加入芸豆粉中混合搅拌均匀,得混合物,在43℃的条件下干燥混合物1.2h,粉碎得混合粉;
(4)将混合粉、玉米粉、藕粉、玫瑰花瓣、魔芋粉、粒径为3mm的牛肉粒、盐混合搅拌均匀,然后滴加橄榄油,在温度为-30℃的条件下冷冻干燥20h,待干燥完毕,微波杀菌5min,且微波杀菌的温度控制为43℃,待杀菌完毕,得所述一种芸豆方便食品。
实施例4
一种芸豆方便食品,包括下述重量份的原料:芸豆提取物45g、玉米粉14g、藕粉7g、玫瑰花瓣2g、魔芋粉9g、牛肉粒3g、青萝卜7g、青菜心7g、醋1g、盐2g、橄榄油4g。
所述芸豆方便食品的制备方法,包括以下步骤:
(1)制备芸豆提取物;
1.1、用温度为9℃的水浸泡芸豆11h,待浸泡完毕,干燥,粉碎,得芸豆粉;
1.2、将芸豆粉溶于水中,且芸豆粉与水的重量比为:1:35,调节溶液的pH为4,在加热温度为48℃的条件下进行水提,然后将溶液进行离心处理,取上清液并浓缩,将浓缩物在温度为48℃的条件下干燥7h得芸豆提取物。
(2)将青萝卜、青菜心进行榨汁,过滤除去滤渣,滤液备用;
(3)将所得滤液和醋加入芸豆粉中混合搅拌均匀,得混合物,在48℃的条件下干燥混合物1h,粉碎得混合粉;
(4)将混合粉、玉米粉、藕粉、玫瑰花瓣、魔芋粉、粒径为3mm的牛肉粒、盐混合搅拌均匀,然后滴加橄榄油,在温度为-38℃的条件下冷冻干燥22h,待干燥完毕,微波杀菌5min,且微波杀菌的温度控制为48℃,待杀菌完毕,得所述一种芸豆方便食品。
实施例5
一种芸豆方便食品,包括下述重量份的原料:芸豆提取物50g、玉米粉15g、藕粉8g、玫瑰花瓣3g、魔芋粉10g、牛肉粒5g、青萝卜8g、青菜心8g、醋3g、盐3g、橄榄油5g。
所述芸豆方便食品的制备方法,包括以下步骤:
(1)制备芸豆提取物;
1.1、用温度为10℃的水浸泡芸豆12h,待浸泡完毕,干燥,粉碎,得芸豆粉;
1.2、将芸豆粉溶于水中,且芸豆粉与水的重量比为:1:40,调节溶液的pH为5,在加热温度为50℃的条件下进行水提,然后将溶液进行离心处理,取上清液并浓缩,将浓缩物在温度为50℃的条件下干燥8h得芸豆提取物。
(2)将青萝卜、青菜心进行榨汁,过滤除去滤渣,滤液备用;
(3)将所得滤液和醋加入芸豆粉中混合搅拌均匀,得混合物,在50℃的条件下干燥混合物2h,粉碎得混合粉;
(4)将混合粉、玉米粉、藕粉、玫瑰花瓣、魔芋粉、粒径为5mm的牛肉粒、盐混合搅拌均匀,然后滴加橄榄油,在温度为-40℃的条件下冷冻干燥24h,待干燥完毕,微波杀菌6min,且微波杀菌的温度控制为50℃,待杀菌完毕,得所述一种芸豆方便食品。
对比例1
对比例1所述芸豆方便食品,原料中不含青萝卜和青菜心,其余原料及制备方法均与实施例3相同。
对比例2
对比例2所述芸豆方便食品,原料中不含魔芋粉和青萝卜,其余原料及制备方法均与实施例3相同。
对比例3
对比例3所述芸豆方便食品,在制备芸豆提取物时,提取液的pH为7,其余操作均与实施例3相同。
本发明实施例1-5与对比例1-3所示芸豆方便食品在减肥方面的效果研究:
1、减肥实验
取135只5周龄肥胖雄性小鼠(体重基本一致),随机分为9组,实施例1-5组、对比例1-3组,对照组,实施例1-5组对应饲喂本发明实施例1-5所述芸豆方便食品,对比例1-3组对应饲喂对比例1-3所述芸豆方便食品,对照组饲喂正常小鼠饲料(由江苏省协同医药生物工程有限责任公司提供),每天投喂一次食物,投放量相同,动物自由饮食,待小鼠长至7周龄时称量小鼠的体重,在实验期间,实验小鼠的生活环境均一致;观察分析其减肥结果,如表1所示:

从表1可以看出:本发明实施例1-5所述芸豆方便食品在保证小鼠体征正常的情况下,可有效降低小鼠的体重,对比例1-3虽也能控制小鼠的体重,在一定程度上降低小鼠的体重,但其效果不如本发明实施例1-5所述芸豆方便食品的减肥效果。
对比例1所述芸豆方便食品,因原料中不含青萝卜和青菜心,青萝卜和青菜心可以消除胀气,加速肠道的蠕动,促进体内废物的排出,即青萝卜和青菜心的加入使肠胃更舒畅,且可加快体内废物的排出。
对比例2所述芸豆方便食品,因原料中不含魔芋粉和青萝卜,魔芋粉和青萝卜具有饱腹的作用,魔芋粉和青萝卜的加入可以减少食物的摄入量。
对比例3所述芸豆方便食品,因在制取芸豆提取物时,提取液的pH为7,造成芸豆提取物的量减少,有效成分α-淀粉酶抑制剂的量减少,造成食用同样的食物,而体内的脂肪来源量增加,从而其减肥效果不如本发明所述芸豆方便食品。
2、小鼠耐力实验研究
将7周龄大的上述实验小鼠,投入相同条件的水中,记录自游泳开始至头部全部沉入水中10s后不能浮出水面的时间,作为小鼠的游泳时间,求每组的平均值,并记录,结果如表2所示:

从表2可以看出,由本发明所述芸豆方便食品喂养的小鼠,其耐力更强,即由本发明所述芸豆方便食品喂养的小鼠,体力更好。
本发明不局限于上述最佳实施方式,任何人在本发明的启示下都可得出其他各种形式的产品,但不论在其细节上作任何变化,凡是具有与本申请相同或相近似的技术方案,均落在本发明的保护范围之内。

1.一种芸豆方便食品,其特征在于,包括下述重量份的原料:芸豆提取物30-50份、玉米粉10-15份、藕粉5-8份、玫瑰花瓣1-3份、魔芋粉5-10份、牛肉粒3-5份、青萝卜3-8份、青菜心3-8份、醋1-3份、盐1-3份、橄榄油3-5份。
2.根据权利要求1所述一种芸豆方便食品,其特征在于,包括下述重量份的原料:芸豆提取物40份、玉米粉12份、藕粉7份、玫瑰花瓣2份、魔芋粉8份、牛肉粒4份、青萝卜5份、青菜心5份、醋2份、盐2份、橄榄油4份。
3.权利要求1-2之一所述一种芸豆方便食品的制备方法,其特征在于,包括以下步骤:
(1)制备芸豆提取物;
(2)将青萝卜、青菜心进行榨汁,过滤除去滤渣,滤液备用;
(3)将所得滤液和醋加入芸豆粉中混合搅拌均匀,得混合物,干燥混合物,粉碎得混合粉;
(4)将混合粉、玉米粉、藕粉、玫瑰花瓣、魔芋粉、牛肉粒、盐混合搅拌均匀,然后滴加橄榄油,进行冷冻干燥,待干燥完毕进行杀菌得所述一种芸豆方便食品。
4.根据权利要求3所述一种芸豆方便食品的制备方法,其特征在于,步骤(3)中,所述干燥的温度为40-50℃,干燥的时间为1-2h。
5.根据权利要求3所述一种芸豆方便食品的制备方法,其特征在于,步骤(4)中,所述牛肉粒的粒径为3-5mm;所述冷冻干燥的温度为:-25℃至-40℃,冷冻干燥的时间为15-24h。
6.根据权利要求3所述一种芸豆方便食品的制备方法,其特征在于,步骤(4)中,所述杀菌为微波杀菌;微波杀菌的温度为:40-50℃,杀菌时间为5-6min。
7.根据权利要求3所述一种芸豆方便食品的制备方法,其特征在于,步骤(1)中,所述芸豆提取物的制备方法,包括以下步骤:
a、用水浸泡芸豆,待浸泡完毕,干燥,粉碎,得芸豆粉;
