背景技术
日益增多的证据表明定期消耗某些量的不饱和脂肪酸(如ω-3多不饱和脂肪酸)可提供各种健康益处。ω-3多不饱和脂肪酸的有利来源是鱼油。因此,许多营养组合物正被配制成含有鱼油以提供这些不饱和脂肪酸。然而,这些不饱和脂肪酸中的许多都易于氧化,这常常产生已被描述为鱼腥味、涂料味或另外为哈喇味的令人极不愉快的异味和气味。

正磷酸铁和/或焦磷酸铁包含于营养组合物中以为所述组合物提供营养铁强化。在具体实施方案中,所述营养组合物每237ml份量包含约6至60mg的正磷酸铁和/或焦磷酸铁。在另外的实施方案中,所述营养组合物每237ml份量包含约6至30mg或更具体地约6至20mg的正磷酸铁和/或焦磷酸铁。在具体实施方案中,正磷酸铁和/或焦磷酸铁以足以提供每237ml份量约1.8至18mg铁或更具体地约1.8至6mg铁的量包含于所述营养组合物中。提供铁强化,同时避免灰白色产品(例如,香草或香蕉风味的组合物)的不可接受的变色或通常与灰白色或浅色相关的其他风味。在营养组合物的另外实施方案中,所述组合物基本上不含可溶性铁组分,并且在更具体的实施方案中,所述组合物含有少于约1mg/kg的可溶性铁。
使用Hunter色标参数对营养组合物的抗变色性进行定量。Hunter色标是使用变量L、a和b的三变量标尺,其被开发用于定量颜色并以数字方式传达两种或多种材料之间的颜色差异。变量L的最大值是100,其表示完美反射的基底(例如,白色)。L的最小值是零并且对应于黑色。a值和b值没有特定的数值限制。a的正值表示红色,而a的负值表示绿色。b的正值表示黄色,并且b的负值表示蓝色。ΔE是与Hunter a、b和L值结合使用以为两种颜色(或一种颜色与标准物)之间的差异提供单个数值描述的数值。

在一个示例性实施方案中,液体营养组合物还可包含可改进液体营养组合物的物理、化学、美学或加工特性或充当另外的营养组分的一种或多种另外的组分。另外组分的非限制性实例包括防腐剂、乳化剂(例如,卵磷脂)、缓冲剂、甜味剂(包括人工甜味剂(例如糖精、阿斯巴甜、安赛蜜K、三氯蔗糖))、着色剂、调味剂、增稠剂、稳定剂等。

14.如权利要求1-13中任一项所述的液体营养组合物,其中所述蛋白质是选自由以下组成的组:乳清蛋白浓缩物、乳清蛋白分离物、乳清蛋白水解物、酸性酪蛋白、酪蛋白酸钠、酪蛋白酸钙、酪蛋白酸钾、酪蛋白水解物、乳蛋白浓缩物、乳蛋白分离物、乳蛋白水解物、脱脂奶粉、浓缩脱脂乳、大豆蛋白浓缩物、大豆蛋白分离物、大豆蛋白水解物、豌豆蛋白浓缩物、豌豆蛋白分离物、豌豆蛋白水解物、胶原蛋白、胶原蛋白分离物、大米蛋白、马铃薯蛋白、蚯蚓蛋白、昆虫蛋白以及它们的组合。
15.如权利要求1-14中任一项所述的液体营养组合物,其中所述碳水化合物是选自由以下组成的组:麦芽糖糊精、水解淀粉、葡萄糖聚合物、玉米糖浆、玉米糖浆固体、大米源性碳水化合物、蔗糖、葡萄糖、果糖、乳糖、高果糖玉米糖浆、蜂蜜、糖醇、异麦芽酮糖、舒可慢、普鲁兰多糖、马铃薯淀粉、玉米淀粉、低聚果糖、低聚半乳糖、燕麦纤维、大豆纤维、阿拉伯胶、羧甲基纤维素钠、甲基纤维素、瓜尔胶、结冷胶、刺槐豆胶、魔芋粉、羟丙基甲基纤维素、黄蓍胶、刺梧桐树胶、阿拉伯树胶、壳聚糖、阿拉伯半乳聚糖、葡甘露聚糖、黄原胶、海藻酸盐、果胶、低甲氧基果胶、高甲氧基果胶、谷类β-葡聚糖、角叉菜胶、洋车前子以及它们的组合。
16.如权利要求1-15中任一项所述的液体营养组合物,所述液体营养组合物还包含选自由以下组成的组的脂肪:椰子油、分馏椰子油、中链甘油三酯(MCT)油、芥花油、棕榈油、棕榈仁油、棕榈油精以及它们的组合。
17.如权利要求16所述的液体营养组合物,其中所述脂肪和所述可氧化鱼油占所述液体营养组合物的约0.5wt%至20wt%。
18.如权利要求1-17中任一项所述的液体营养组合物,所述液体营养组合物还包含至少一种选自由以下组成的组的抗氧化剂:抗坏血酸、棕榈酸抗坏血酸酯、棕榈酸视黄酯、生育酚、抗坏血酸盐、类胡萝卜素、油溶性迷迭香提取物以及它们的组合。
19.如权利要求1-18中任一项所述的液体营养组合物,其中所述液体营养组合物具有0.5kcal/mL至3kcal/mL的卡路里密度。
20.如权利要求1-15中任一项所述的液体营养组合物,其中所述液体营养组合物呈具有连续水相和不连续非水相的水性乳液形式。
21.一种减轻液体营养组合物中的变色和异味以及气味的方法,所述液体营养组合物具有灰白色颜色并且包含蛋白质、碳水化合物和含有ω-3多不饱和脂肪酸的可氧化鱼油,所述方法包括在所述组合物中包含迷迭香酸和包括正磷酸铁和/或焦磷酸铁的三价铁,其中所述组合物具有不小于68的Hunter L值。
