本发明公开了一种白萝卜米露饮料及制备方法,属于饮料领域。该白萝卜米露饮料由以下重量比的成份组成:白萝卜20‑25份,雪梨20‑25份,荸荠10‑15份,大米3‑6份,木糖醇1‑3份,蜂蜜1‑3份,丹桂5‑6份,含笑花0.2‑0.5份,紫苏1‑3份,决明子3‑4份,苦荞4‑5份,食用小苏打0.06‑0.08份,白糖10‑15份,水120份。本发明通过改进加工方法,克服白萝卜自身的辛辣味,添加丹桂、含笑花、紫苏、苦荞和决明子的提取物,可以改善饮料的口感和风味,本白萝卜米露饮料具有消食化滞,开胃健脾,润肺化痰的功效,可以适合不同年龄的人群饮用。

技术领域
本发明属于饮料领域,具体涉及一种白萝卜米露饮料及制备方法。
背景技术
萝卜是十分常见的十字花科类蔬菜作物,为药食两用的重要素材,现代营养学研究表明,萝卜营养丰富,含有丰富的碳水化合物和多种维生素,维生素C为抗氧化剂,能抑制黑色素合成,阻止脂肪氧化,防止脂肪沉积。萝卜性凉,昧辛甘,入肺、胃经,具有很强的行气功能,能消积滞、止咳化痰、除燥生津、清热解毒。萝卜还可增强肌体免疫力,能抑制癌细胞的生长,对防癌、抗癌有重要意义。常吃萝卜可降低血脂、软化血管、稳定血压,预防冠心病、动脉硬化、胆石症等疾病。因此,开发以白萝卜为主要原料的绿色健康饮品对提高农产品附加值具有重要意义。
饮料属于大众消费品,既可以用来解渴,也可以为人体补充营养。目前,市场上推出的各种类型绿色果蔬饮料逐渐受到人们的喜爱。然而,以白萝卜为原料的饮品比较少见,相关的白萝卜饮料的专利较少,如“一种白萝卜雪梨汁,申请号 201610698439.5”,该申请公开了一种白萝卜雪梨汁,但该申请所得成品未对萝卜进行处理,入口仍具有辛辣余味;又如“萝卜汁醋饮料及加工方法,申请号201310702576.8”,该申请公开了一种萝卜汁醋饮料及加工方法,将白萝卜汁和大米一起搅拌成泥状发酵成萝卜汁醋,应归属发酵饮料,该申请工艺复杂,对发酵技术要求较高。
本发明主要针对萝卜饮料加工过程中辛辣难以除去的技术难点,通过方法改进,达到基本消除辛辣味,同时,利用米露制作的技术,一方面进一步消除萝卜异味,另一方面可以丰富饮料的营养价值,且操作工艺简单。
发明内容
针对现有技术中存在的不足,本发明的目的在于提供一种白萝卜米露饮料及制备方法,此饮料富含维生素,具有清热降火、化痰止咳的作用,长期饮用,可以促进身体代谢机能,预防糖尿病之功效。
发明人通过大量试验,获得了一种白萝卜米露饮料,该饮料由以下重量比的原料制成:白萝卜20-25份,雪梨20-25份,荸荠10-15份,大米3-6份,木糖醇1-3份,蜂蜜1-3份,丹桂5-6份,含笑花0.2-0.5份,紫苏1-3份,决明子3-4份,苦荞 4-5份,食用小苏打0.06-0.08份,白糖10-15份,水120份。
一种白萝卜米露饮料的制备方法,其加工步骤如下:
(1)将白萝卜洗净切段,放入小苏打水浸泡10-15分钟,清洗后榨汁,然后用微波处理5-8分钟后,冷却备用;
(2)将雪梨、荸荠洗净,取果肉,榨汁备用;
(3)将丹桂、含笑花、决明子、苦荞和紫苏洗净,按比例混合后置于提取罐中,加8-10倍量的水提取,得提取液;
(4)将大米洗净后与提取液混合搅拌均匀,并加热进行糊化,最后用胶体磨循环处理至少两次,再用滗析机去除米渣得含芳香的米汁。
(5)将白萝卜汁、果汁与米汁调配混合后,再加入木糖醇、白糖和水进一步混合,经均质、脱气后灌装、灭菌、检验即为成品。
与现有技术相比,本发明具有以下优点:
(1)本发明采用小苏打水和微波处理,可以消除萝卜本身的辛辣味,在饮料制作过程中充分保证了萝卜既有的成分,有利于萝卜药用之功效。
(2)本发明采用萝卜汁与大米混合,大米富含蛋白质和维生素,蛋白质分解的游离氨基酸和多肽物质,既可丰富饮料的营养,同时可以抵消萝卜本身的辛辣异味,保证了萝卜饮料的口感。
(3)本发明在饮料中添加芳香物质,增加了饮料的风味。

以下通过实施例形式对本发明的上述内容再作进一步的详细说明,但不应将此理解为本发明上述主题的范围仅限于以下的实施例,凡基于本发明上述内容所实现的技术均属于本发明的范围。
实施例1
一种萝卜米露饮料,由以下重量比的原料调配制成:白萝卜20份,雪梨20份,荸荠10份,大米3份,木糖醇1份,蜂蜜1份,丹桂5份,含笑花0.2份,紫苏1份,决明子3份,苦荞 4份,白糖10份,水120份。
一种白萝卜米露饮料的制备方法,其加工步骤如下:
(1)将白萝卜洗净切段,放入0.1%(w/v)小苏打水浸泡10分钟,清洗后榨汁,然后用微波处理5分钟后,冷却备用;
(2)将雪梨、荸荠洗净,取果肉,榨汁备用;
(3)将丹桂、含笑花、决明子、苦荞和紫苏洗净,按比例混合后置于提取罐中,加8倍量的温水提取,得提取液;
(4)将大米洗净后与提取液混合搅拌均匀,并加热进行糊化,最后用胶体磨循环处理至少两次,再用滗析机去除米渣得含芳香的米汁。
(5)将白萝卜汁、果汁与米汁调配混合后,再加入木糖醇、白糖和水进一步混合,经均质、脱气后灌装、灭菌、检验即为成品。
实施例2
一种萝卜米露饮料,由以下重量比的原料调配制成:白萝卜25份,雪梨20份,荸荠15份,大米4份,木糖醇2份,蜂蜜1份,丹桂6份,含笑花0.3份,紫苏1份,决明子4份,苦荞5份,白糖10份,水120份。
一种白萝卜米露饮料的制备方法,其加工步骤如下:
(1)将白萝卜洗净切段,放入0.1%(w/v)小苏打水浸泡10分钟,清洗后榨汁,然后用微波处理6分钟后,冷却备用;
(2)将雪梨、荸荠洗净,取果肉,榨汁备用;
(3)将丹桂、含笑花、决明子、苦荞和紫苏洗净,按比例混合后置于提取罐中,加10倍量的水提取,得提取液;

(1)将白萝卜洗净切段,放入0.1%(w/v)小苏打水浸泡15分钟,清洗后榨汁,然后用微波处理6分钟后,冷却备用;

一种萝卜米露饮料,饮料中各组分及用量均与实施例1相同,其制备方法除步骤(1)外,在步骤(1)中萝卜仅经过小苏打水浸泡,没有进行微波处理,其余均同实施例1。
对比实施例3
一种萝卜米露饮料,饮料中各组分及用量均与实施例1相同,其制备方法除步骤(1)外,在步骤(1)中萝卜未经过小苏打水浸泡,仅进行微波处理,其余均同实施例1。
对比实施例4
一种萝卜米露饮料,饮料中各组分及用量均与实施例1相同,其制备方法除步骤(2)外(未加入梨汁),其余均同实施例1。
我们对实施例1-3及对比实施例1-4所制备的样品进行双盲感官品质评价,其结果如下:

1. 一种白萝卜米露饮料,其特征在于,该饮料由以下重量份原料制成:白萝卜20-25份,雪梨20-25份,荸荠10-15份,大米3-6份,木糖醇1-3份,蜂蜜1-3份,丹桂5-6份,含笑花0.2-0.5份,紫苏1-3份,决明子3-4份,苦荞 4-5份,食用小苏打0.06-0.08份,白糖10-15份,水120份。
2.一种白萝卜米露饮料的制备方法,其特征在于,该方法包括以下步骤:
(1)将白萝卜洗净切段,放入小苏打水浸泡10-15分钟,清洗后榨汁,然后用微波处理5-6分钟后,冷却备用;
(2)将雪梨、荸荠洗净,取果肉,榨汁备用;
(3)将丹桂、含笑花、决明子、苦荞和紫苏洗净,按比例混合后置于提取罐中,加8-10倍量的水提取,得提取液;
