本发明的目的是提供一种魔芋葡甘聚糖纤彩凉糕及其制备方法,其主要成分魔芋葡甘聚糖是膳食纤维中的优品,且具有热量较低、有饱腹感,且能减少和延缓葡萄糖的吸收,抑制脂肪酸的合成,能够预防心血管疾病,降低血糖水平,还有减肥等功效,辅以葛根粉、寒天粉、山药粉,提供了一种口感独特,颜色丰富,营养保健功能齐全,储存期长的魔芋葡甘聚糖纤彩凉糕。
为了实现上述目的,本发明的技术方案如下。
本发明的一种魔芋葡甘聚糖纤彩凉糕的制备方法,其特征在于制备步骤如下:
(1)制备水果汁:将橙子、番茄、红心火龙果、芒果分别榨汁并过滤,取各水果的滤汁,备用;
(2)制备山药及葛根混合液:按照质量份,取6-10份山药及葛根混合粉,溶解于10纯净水中,得山药及葛根混合液;所述山药及葛根混合粉中,山药与葛根的配比为1︰1;
(3)制备魔芋溶胶:在4-8份魔芋粉中加入200份沸水,混匀,得魔芋溶胶;
(4)制备混合魔芋液:将步骤(2)制备的山药及葛根混合液加入步骤(3)的魔芋溶胶中,随后加入30份寒天粉,混匀,得混合魔芋液;
(5)制备魔芋水果混合液:分别取步骤(1)的水果汁各20份,加入混合魔芋液中,分别搅拌均匀,获得含有不同水果汁的魔芋水果混合液;
(6)冷却定型:将步骤(5)的各种魔芋水果混合液,趁热倒入不同形状的模具中,各加入5份兰香子和3份爆爆蛋,冷却定型,获得不同形状、各具不同颜色的魔芋葡甘聚糖纤彩凉糕。

实施例1、一种魔芋葡甘聚糖纤彩凉糕的制备方法,包括以下步骤:
(1)制备水果汁:将橙子、番茄、红心火龙果、芒果分别榨汁并过滤,取各水果的滤汁,备用;
(2)制备山药及葛根混合液:称量6份山药及葛根混合粉,溶解于10份纯净水中,得山药及葛根混合液,所述山药及葛根混合粉中,山药与葛根的配比为1︰1;
(3)制备魔芋溶胶:在8份魔芋粉中加入200份沸水,混匀,得魔芋溶胶;

(2)制备山药及葛根混合液:按照质量份,取6-10份山药及葛根混合粉,溶解于10份纯净水中,得山药及葛根混合液;所述山药及葛根混合粉中,山药与葛根的配比为1︰1;
(3)制备魔芋溶胶:在4-8份魔芋粉中加入200份沸水,混匀,得魔芋溶胶;
(4)制备混合魔芋液:将步骤(2)制备的山药及葛根混合液加入步骤(3)的魔芋溶胶中,随后加入30份寒天粉,混匀,得混合魔芋液;
(5)制备魔芋水果混合液:分别取步骤(1)的水果汁各20份,加入混合魔芋液中,搅拌均匀,获得含有不同水果汁的魔芋水果混合液;
(6)冷却定型:将步骤(5)的各种魔芋水果混合液,趁热倒入不同形状的模具中,各加入5份兰香子和3份爆爆蛋,冷却定型,获得不同形状、各具不同颜色的魔芋葡甘聚糖纤彩凉糕。
2.根据权利要求1所述的一种魔芋葡甘聚糖纤彩凉糕的制备方法,其特征在于按照1:1的比例取8份山药及葛根混合粉,溶解于10份纯净水中。
3.根据权利要求1所述的一种魔芋葡甘聚糖纤彩凉糕及其制备方法,其特征在于所述在4-8份魔芋粉中加入200份沸水,混匀。
4.根据权利要求1所述的一种魔芋葡甘聚糖纤彩凉糕及其制备方法,其特征在于所述将制备的山药及葛根混合液体加入魔芋溶胶中,随后加入30份寒天粉搅拌使之混合均匀。
5.根据权利要求1所述的一种魔芋葡甘聚糖纤彩凉糕及其制备方法,其特征在于所述取20份水果汁加入混合魔芋液中,搅拌均匀,获得含有不同水果汁的魔芋水果混合液。
6.根据权利要求1所述的一种魔芋葡甘聚糖纤彩凉糕及其制备方法,其特征在于所述将每种魔芋水果混合液趁热倒入不同形状的模具中,添加5份兰香子及3份爆爆蛋,冷却定型,获得不同形状、不同颜色的凉糕。
7.由权利要求1-6所述的任一方法制备的魔芋葡甘聚糖纤彩凉糕。
