背景技术
乞丐鸡,又叫叫花鸡,又称常熟叫化鸡、艰鸡,是江苏常熟地区传统名菜。是把加工好的鸡用泥土和荷叶包。制作材料有新鲜嫩荷叶、黄泥、活土鸡等。叫化鸡的制法与周代“八珍”之一的“炮豚”相似,“炮豚“就是用粘土把乳猪包裹起,加以烧烤,然后再进一步加工而成的菜。其色泽枣红明亮,芳香扑鼻,板酥肉嫩,入口酥烂肥嫩,风味独特。相传,很早以前,有一个叫化子,沿途讨饭流落到常熟县的一个村庄。一日,他偶然得来一只鸡,欲宰杀煮食,可既无炊具,又没调料。他来到虞山脚下,将鸡杀死后去掉内脏,带毛涂上黄泥、柴草,把涂好的鸡置火中喂烤,待泥干鸡熟,剥去泥壳,鸡毛也随泥壳脱去,露出了的鸡肉。约100多年以前,常熟县城西北虞山胜地的”山景园”菜馆根据这个传说,去粗取精,精工效法创制此鸡。
现有的乞丐鸡制作方法均是将辅料填入腌制鸡肚内部,包裹然后进行烘烤的方式进行制作,这种方式容易导致制作的乞丐鸡未熟透,或者外焦内不熟,而且制作烘烤周期长,不易控制,辅料残留在鸡内部,不方便直接食用,不适合推广使用。且目前没有能够大批量生产乞丐鸡的设备,不能满足乞丐鸡的市场需求。
发明内容
本发明的目的在于提供一种传统乞丐鸡制作箱及乞丐鸡的制作方法,以解决上述背景技术中提出的问题。
为实现上述目的,本发明提供如下技术方案:
一种传统乞丐鸡制作箱,包括外柜体,所述外柜体的内部设有内炉体,内炉体的顶部设有铁锅,内炉体顶部与铁锅的接触处为圆弧形状,在外柜体的上侧设有上盖板,内炉体的底部四角处设有对内炉体进行支撑和限位的内炉支脚,内炉支脚底端与外柜体的底部内壁相接触,在内炉体的内部下侧设有木炭槽,木炭槽内部放置有木炭,在内炉体的内部中间位置固定有隔板,在外柜体的左侧外壁上安装有鼓风机,鼓风机通过进风管与外柜体上开设的通孔相连接,在内炉体的一侧外壁上开设有通风孔,通风孔与外柜体上的通孔对应设置且通风孔与通孔之间相连通,在外柜体的底部四角处都设有滚轮,外柜体四周外壁上都固定设有固定装置。

S1、选料:从市场上购买鲜活的青脚麻鸡作为原料,青脚麻鸡重量选用1.25-1.5kg;
S2、宰杀:将购买的鲜活的青脚麻鸡宰杀,并将青脚麻鸡上的毛拔出并清洗干净,备用;
S3、做造型:用刀背将鸡腿的骨头敲断,并将鸡爪上的爪钩剪断;
S4、腌制去腥:将S3中处理完成后的青脚麻鸡放入腌制的盆中,加入清水盖过鸡面,并加入青脚麻鸡重量3-5%的盐和青脚麻鸡重量6-8%的料酒,腌制8-9h;
S5、卤制:将S4中腌制完成的青脚麻鸡取出并清洗干净,放入锅中,并在锅中加入清水,清水盖过鸡面5-lOcm,并加入卤料,给锅加热,煮开后转小火卤煮0.5-1h,卤制九成熟,备用;
S6、冷却包裹:将步骤S5中卤完的青脚麻鸡出锅冷透,并用荷叶包裹卤完的青脚麻鸡,再用锡纸包裹一层;
S7、烘烤:先将铁锅中的土高温烧红,后取出一般烧红的土,将S6中包裹完成的鸡放入乞丐鸡制作箱的铁锅中,将取出的烧红的土覆盖在鸡上至覆盖完全为止,之后进行烘烤,烘烤至表皮金黄,再焖20-30min;
S8、取出乞丐鸡制作箱中的鸡,去除鸡身外的干土、锡纸、荷叶,即得乞丐鸡。
进一步的,所述步骤S2中青脚麻鸡拔毛时,采用80-90℃的热水,不断将青脚麻鸡在热水中进行翻转,烫2-3min,并快速捞起将毛拔除。
进一步的,所述步骤S5中,卤料为八角、桂皮、小茵香、良姜、草果、肉果、砂仁、白扣、丁香、香叶、陈皮、白芷的混合物。
进一步的,所述步骤S8中,将鸡放入乞丐鸡制作箱内的铁锅中,往铁锅内加入粘土,粘土充分包裹住鸡身,之后将木炭点燃,打开鼓风机对鸡进行烘烤,烘烤时间为40-60min。

2、无机保温棉层具有较好的保温效果,两层发泡陶瓷层设置在无机保温棉的外侧,能够保护无机保温棉不外露,增强了保温效果,发泡陶瓷层本身具有一定的保温效果,能够有效降低制作箱的热量散失,节能降耗。
3、通过设置节能器,新鲜风可以将空心不锈钢管内的旧风的热能回收,形成热新风进入进风口,热新风进入上盖板内部循环使用,大大的节约了电能,减少了升温的时间,提高了乞丐鸡制作箱的工作效率,采用空心不锈钢管,管损小、回收价值高且易于清洗,降低劳动强度。
4、滚轮使得乞丐鸡制作箱便于移动,无需人工搬运,便捷性高,使用乞丐鸡制作箱时,通过调整定位桩的高度,使其底端能够插在地面后旋紧相应的调节螺钉,即可使定位桩的位置得以固定,有效的防止了乞丐鸡制作箱出现滑动的情况,便于固定。
5、本发明的制备方法通过将青脚麻鸡先采用卤煮的方式进行卤制,可以充分的将卤料卤入青脚鸡内,保证入味,卤制完成后进行包裹烘烤,可以保证制作的乞丐鸡熟透,烘烤周期短,制作方法操作简单,同时辅料不在鸡内部残留,方便直接食用,适合广泛推广。

为了加深对本发明的理解,下面将结合实施例对本发明作进一步详述,以下实施例仅用于解释本发明,并不构成对本发明保护范围的限定。
请参阅图1-6,一种传统乞丐鸡制作箱,包括外柜体1,所述外柜体1的内部设有内炉体2,内炉体2的顶部设有铁锅3,内炉体2顶部与铁锅3的接触处为圆弧形状,在外柜体1的上侧设有上盖板4,内炉体2的底部四角处设有对内炉体进行支撑和限位的内炉支脚5,内炉支脚5底端与外柜体1的底部内壁相接触,在内炉体2的内部下侧设有木炭槽6,木炭槽6内部放置有木炭,在内炉体2的内部中间位置固定有隔板7,在外柜体1的左侧外壁上安装有鼓风机8,鼓风机8通过进风管9与外柜体1上开设的通孔相连接,在内炉体2的一侧外壁上开设有通风孔10,通风孔10与外柜体1上的通孔对应设置且通风孔10与通孔之间相连通,在外柜体1的底部四角处都设有滚轮18,外柜体1四周外壁上都固定设有固定装置14。
所述隔板7为均匀分布有多个通孔的网板。
所述外柜体1的外壁上对称设有一对外把手14,在内炉体2的外壁上对称设有一对内把手15,在上盖板4的顶部外壁上设有把柄16。
所述外柜体1为层状结构,层状结构由外之内分别包括设有氟碳涂层101、第一金属板102、第一发泡陶瓷层103、无机保温棉层104、第二发泡陶瓷层105和第二金属板106,所述金属板10由铁皮或钢板制成,发泡陶瓷板12的厚度为8mm,无机保温棉11的厚度为9mm,氟碳涂层15从外到内依次包括清漆层151、颜色面漆层152、底漆层153、铬化预处理层154,所述铬化预处理层154的厚度为0.02mm;无机保温棉层104具有较好的保温效果,两层发泡陶瓷层设置在无机保温棉的外侧,能够保护无机保温棉11不外露,增强了保温效果,发泡陶瓷层本身具有一定的保温效果,能够有效降低制作箱的热量散失,节能降耗,金属板完全将发泡陶瓷层和无机保温棉层包裹,提供了支撑骨架,提高了外柜体的强度,也保护了发泡陶瓷板和无机保温棉不会因挤压、吸水等因素改变,延长了外柜体使用寿命;由于在外侧还设有氟碳涂层,耐候性、耐热性、耐低温性、耐腐蚀性好,进一步延长了外柜体使用寿命。
所述上盖板4顶部左右两侧均开设有一组排风口11,每组排风口11为两个,在两个排风口11之间设有两个进风口12,每组排风口11的上侧均对应设有一个节能器13,节能器13包括节能器外壳131和节能器外壳131内部的空腔132,在节能器13的顶部左右设有两个新风口136,节能器的左右两端都设有入风口134,在节能器13的底部还设有两个出风口135,节能器13的两个出风口135对应与上盖板4上侧的两个进风口12连接,节能器13的两个新风口136与节能器13外部连通,节能器13的两个入风口134对应与上盖板4上侧的两个排风口11连接,在节能器13内部的空腔132内部水平设有多个空心不锈钢钢管133,空心不锈钢钢管133的两端都通过连通管137与节能两端的入风口134联通;上盖板4内部排出的热风进入空心不锈钢管133内,而新鲜风从新风口136进入节能器13的空腔132内,由于空心不锈钢管133导热性良好,新鲜风可以将空心不锈钢管133内的旧风的热能回收,形成热新风进入进风口12,热新风进入上盖板4内部循环使用,大大的节约了电能,减少了升温的时间,提高了乞丐鸡制作箱的工作效率,采用空心不锈钢管133,管损小、回收价值高且易于清洗,降低劳动强度。
所述固定装置14包括定位桩191、滑套192和调节螺钉193,滑套192固定安装在外柜体1的外侧壁上,定位桩191滑动设置在滑套192内部,调节螺钉193螺旋连接在滑套192的侧壁上,定位桩191底端呈倒圆锥状;滚轮18使得乞丐鸡制作箱便于移动,无需人工搬运,便捷性高,使用乞丐鸡制作箱时,通过调整定位桩191的高度,使其底端能够插在地面后旋紧相应的调节螺钉193,即可使定位桩191的位置得以固定,有效的防止了乞丐鸡制作箱出现滑动的情况,便于固定,保证了乞丐鸡制作箱的稳定工作。
本发明的一种传统乞丐鸡制作箱,以木炭作为燃料,污染小、符合环保要求,且木炭方便携带,加工过程中可采用鼓风机进行助燃,从而大大的缩短加工的时间,保留了我国几千年来制备传统乞丐鸡的方法,另外可适用于野外、家庭、酒店等环境使用,方便实用。
一种乞丐鸡的制作方法,具体包括以下步骤:
S1、选料:从市场上购买鲜活的青脚麻鸡作为原料,青脚麻鸡重量选用1.25-1.5kg;
S2、宰杀:将购买的鲜活的青脚麻鸡宰杀,并将青脚麻鸡上的毛拔出并清洗干净,备用;
S3、做造型:用刀背将鸡腿的骨头敲断,并将鸡爪上的爪钩剪断;
S4、腌制去腥:将S3中处理完成后的青脚麻鸡放入腌制的盆中,加入清水盖过鸡面,并加入青脚麻鸡重量3-5%的盐和青脚麻鸡重量6-8%的料酒,腌制8-9h;
S5、卤制:将S4中腌制完成的青脚麻鸡取出并清洗干净,放入锅中,并在锅中加入清水,清水盖过鸡面5-lOcm,并加入卤料,给锅加热,煮开后转小火卤煮0.5-1h,卤制九成熟,备用;
S6、冷却包裹:将步骤S5中卤完的青脚麻鸡出锅冷透,并用荷叶包裹卤完的青脚麻鸡,再用锡纸包裹一层;
S7、烘烤:先将铁锅中的土高温烧红,后取出一般烧红的土,将S6中包裹完成的鸡放入乞丐鸡制作箱的铁锅中,将取出的烧红的土覆盖在鸡上至覆盖完全为止,之后进行烘烤,烘烤至表皮金黄,再焖20-30min;
S8、取出乞丐鸡制作箱中的鸡,去除鸡身外的干土、锡纸、荷叶,即得乞丐鸡。
所述步骤S2中青脚麻鸡拔毛时,采用80-90℃的热水,不断将青脚麻鸡在热水中进行翻转,烫2-3min,并快速捞起将毛拔除。
所述步骤S5中,卤料为八角、桂皮、小茵香、良姜、草果、肉果、砂仁、白扣、丁香、香叶、陈皮、白芷的混合物。
所述步骤S8中,将鸡放入乞丐鸡制作箱内的铁锅中,往铁锅内加入粘土,粘土充分包裹住鸡身,之后将木炭点燃,打开鼓风机对鸡进行烘烤,烘烤时间为40-60min。
本发明的制备方法通过将青脚麻鸡先采用卤煮的方式进行卤制,可以充分的将卤料卤入青脚鸡内,保证入味,卤制完成后进行包裹烘烤,可以保证制作的乞丐鸡熟透,烘烤周期短,制作方法操作简单,同时辅料不在鸡内部残留,方便直接食用,适合广泛推广。

1.一种传统乞丐鸡制作箱,包括外柜体(1),其特征在于,所述外柜体(1)的内部设有内炉体(2),内炉体(2)的顶部设有铁锅(3),内炉体(2)顶部与铁锅(3)的接触处为圆弧形状,在外柜体(1)的上侧设有上盖板(4),内炉体(2)的底部四角处设有对内炉体进行支撑和限位的内炉支脚(5),内炉支脚(5)底端与外柜体(1)的底部内壁相接触,在内炉体(2)的内部下侧设有木炭槽(6),木炭槽(6)内部放置有木炭,在内炉体(2)的内部中间位置固定有隔板(7),在外柜体(1)的左侧外壁上安装有鼓风机(8),鼓风机(8)通过进风管(9)与外柜体(1)上开设的通孔相连接,在内炉体(2)的一侧外壁上开设有通风孔(10),通风孔(10)与外柜体(1)上的通孔对应设置且通风孔(10)与通孔之间相连通,在外柜体(1)的底部四角处都设有滚轮(18),外柜体(1)四周外壁上都固定设有固定装置(14)。
2.根据权利要求1所述的一种传统乞丐鸡制作箱,其特征在于,所述隔板(7)为均匀分布有多个通孔的网板。
3.根据权利要求1所述的一种传统乞丐鸡制作箱,其特征在于,所述外柜体(1)的外壁上对称设有一对外把手(14),在内炉体(2)的外壁上对称设有一对内把手(15),在上盖板(4)的顶部外壁上设有把柄(16)。
4.根据权利要求1所述的一种传统乞丐鸡制作箱,其特征在于,所述外柜体(1)为层状结构,层状结构由外之内分别包括设有氟碳涂层(101)、第一金属板(102)、第一发泡陶瓷层(103)、无机保温棉层(104)、第二发泡陶瓷层(105)和第二金属板(106),所述金属板(10)由铁皮或钢板制成,发泡陶瓷板12的厚度为8mm,无机保温棉11的厚度为9mm,氟碳涂层(15)从外到内依次包括清漆层(151)、颜色面漆层(152)、底漆层(153)、铬化预处理层(154),所述铬化预处理层(154)的厚度为0.02mm。
5.根据权利要求1所述的一种传统乞丐鸡制作箱,其特征在于,所述上盖板(4)顶部左右两侧均开设有一组排风口(11),每组排风口(11)为两个,在两个排风口(11)之间设有两个进风口(12),每组排风口(11)的上侧均对应设有一个节能器(13),节能器(13)包括节能器外壳(131)和节能器外壳(131)内部的空腔(132),在节能器(13)的顶部左右设有两个新风口(136),节能器的左右两端都设有入风口(134),在节能器(13)的底部还设有两个出风口(135),节能器(13)的两个出风口(135)对应与上盖板(4)上侧的两个进风口(12)连接,节能器(13)的两个新风口(136)与节能器(13)外部连通,节能器(13)的两个入风口(134)对应与上盖板(4)上侧的两个排风口(11)连接,在节能器(13)内部的空腔(132)内部水平设有多个空心不锈钢钢管(133),空心不锈钢钢管(133)的两端都通过连通管(137)与节能两端的入风口(134)联通。
6.根据权利要求1所述的一种传统乞丐鸡制作箱,其特征在于,所述固定装置(14)包括定位桩(191)、滑套(192)和调节螺钉(193),滑套(192)固定安装在外柜体(1)的外侧壁上,定位桩(191)滑动设置在滑套(192)内部,调节螺钉(193)螺旋连接在滑套(192)的侧壁上,定位桩(191)底端呈倒圆锥状。
7.一种乞丐鸡的制作方法,其特征在于,具体包括以下步骤:
S1、选料:从市场上购买鲜活的青脚麻鸡作为原料,青脚麻鸡重量选用1.25-1.5kg;
S2、宰杀:将购买的鲜活的青脚麻鸡宰杀,并将青脚麻鸡上的毛拔出并清洗干净,备用;
S3、做造型:用刀背将鸡腿的骨头敲断,并将鸡爪上的爪钩剪断;
S4、腌制去腥:将S3中处理完成后的青脚麻鸡放入腌制的盆中,加入清水盖过鸡面,并加入青脚麻鸡重量3-5%的盐和青脚麻鸡重量6-8%的料酒,腌制8-9h;
S5、卤制:将S4中腌制完成的青脚麻鸡取出并清洗干净,放入锅中,并在锅中加入清水,清水盖过鸡面5-lOcm,并加入卤料,给锅加热,煮开后转小火卤煮0.5-1h,卤制九成熟,备用;
S6、冷却包裹:将步骤S5中卤完的青脚麻鸡出锅冷透,并用荷叶包裹卤完的青脚麻鸡,再用锡纸包裹一层;
S7、烘烤:先将铁锅中的土高温烧红,后取出一般烧红的土,将S6中包裹完成的鸡放入乞丐鸡制作箱的铁锅中,将取出的烧红的土覆盖在鸡上至覆盖完全为止,之后进行烘烤,烘烤至表皮金黄,再焖20-30min;
S8、取出乞丐鸡制作箱中的鸡,去除鸡身外的干土、锡纸、荷叶,即得乞丐鸡。
8.根据权利要求7所述的一种乞丐鸡的制作方法,其特征在于,所述步骤S2中青脚麻鸡拔毛时,采用80-90℃的热水,不断将青脚麻鸡在热水中进行翻转,烫2-3min,并快速捞起将毛拔除。
9.根据权利要求7所述的一种乞丐鸡的制作方法,其特征在于,所述步骤S5中,卤料为八角、桂皮、小茵香、良姜、草果、肉果、砂仁、白扣、丁香、香叶、陈皮、白芷的混合物。
10.根据权利要求7所述的一种乞丐鸡的制作方法,其特征在于,所述步骤S8中,将鸡放入乞丐鸡制作箱内的铁锅中,往铁锅内加入粘土,粘土充分包裹住鸡身,之后将木炭点燃,打开鼓风机对鸡进行烘烤,烘烤时间为40-60min。
