Abstract
本发明公开了一种用于健脑的亚麻营养食品及其制造方法,按照质量份数包括:23‑36份亚麻水溶粉,14‑22份蜂皇浆,6‑18份富含胱氨酸的谷物粉,2‑8份维生素B1,2‑8份维生素B12,2‑8份亚铁盐,20‑28份糊精,8‑16份抗氧化剂;本发明的配方能够增益亚麻的健脑效果,增强大脑记忆能力,全面改善脑功能,减缓脑萎缩,增加脑部容积,并能延缓衰老;本发明的方法根据营养物质的特质,最大程度的维持有效成分的活性。

技术领域
本发明涉及营养品领域,特别是一种用于健脑的亚麻营养食品及其制造方法。
背景技术
亚麻籽中粗蛋白、脂肪、总糖含量之和高达84.07%。亚麻籽蛋白质中氨基酸种类齐全,必需氨基酸含量高达5.16%,是一种营养价值较高的植物蛋白质。亚麻籽中含有大量多糖,多糖具有抗肿瘤、抗病毒、抗血栓及降血脂等作用。
亚麻籽油中α-亚麻酸含量可达53%,α-亚麻酸是人体必需脂肪酸,在人体内可转化为二十碳五烯酸(EPA)和二十二碳六烯酸(DHA),具有抗肿瘤、抗血栓、降血脂、营养脑细胞、调节神经等作用。
DHA—二十二碳六烯酸,占了人脑脂肪的10%,是大脑营养必不可少的多不饱和脂肪酸。DHA除了能阻止胆固醇在血管壁上的沉积、预防或减轻动脉粥样硬化和冠心病的发生外,更重要的是对大脑细胞有着极其重要的作用,对脑神经传导和突触的生长发育极为有利。
蜂王浆中存在含量丰富的乙酰胆碱,每100克蜂王浆含乙酰胆碱95.8毫克。乙酰胆碱不必经过体内合成就能直接被神经细胞吸收和利用,这对于有合成障碍的人更为有利,特别适用于身体衰弱者用来提高智力和记忆力。因此,经常服用蜂王浆可以提高脑内乙酰胆碱的含量,从而促进激活脑神经传导功能,提高信息传递速度,增强大脑记忆能力,全面改善脑功能,并能延缓衰老。
胱氨酸能促进细胞氧化还原功能,使肝脏功能旺盛,并能中和毒素、促进白细胞增生、阻止病原菌发育;维生素B1能抑制胆碱酯酶的活性,缺乏维生素B1时胆碱酯酶活性增强,乙酰胆碱水解加速,导致神经冲动传导障碍,影响胃肠、心肌功能。
为充分利用亚麻功效成分,提高亚麻在健脑方面的应用;本发明解决这样的问题。
发明内容
为解决现有技术的不足,本发明的目的在于提供一种用于健脑的亚麻营养食品及其制造方法,本发明寻找到一种配方能够增益亚麻的健脑效果,增强大脑记忆能力,减缓脑萎缩,增加脑部容积,全面改善脑功能,延缓衰老。
为了实现上述目标,本发明采用如下的技术方案:
用于健脑的亚麻营养食品,按照质量份数包括:23-36份亚麻水溶粉,14-22份蜂皇浆,6-18份富含胱氨酸的谷物粉,2-8份维生素B1,2-8份维生素B12,2-8份亚铁盐,20-28份糊精,8-16份抗氧化剂。
前述的用于健脑的亚麻营养食品,富含胱氨酸的谷物粉按照质量份数包括:3-9份黑米粉,3-9份黑豆粉。
前述的用于健脑的亚麻营养食品,富含胱氨酸的谷物粉按照质量份数包括:3-9份黄豆粉,3-9份燕麦粉。
前述的用于健脑的亚麻营养食品,还包括:4-10份红豆,3-9份薏米。
前述的用于健脑的亚麻营养食品,抗氧化剂包括:丁基羟基茴香醚,抗坏血酸。
前述的用于健脑的亚麻营养食品,丁基羟基茴香醚与抗坏血酸的质量比为1:2。
用于健脑的亚麻营养食品的制造方法,包括如下步骤:
步骤一,按照质量份数准备材料,质量份数如下:23-36份亚麻水溶粉,14-22份蜂皇浆冻干粉,6-18份富含胱氨酸的谷物粉,2-8份维生素B1,2-8份维生素B12,2-8份亚铁盐,20-28份糊精,8-16份抗氧化剂;
步骤二,先用蛋白酶将蜂皇浆冻干粉中的蛋白质水解为可溶物,再用糊精包埋蜂皇浆;
步骤三,将富含胱氨酸的谷物粉加水搅拌成混合浆液,在混合浆液中加入木瓜蛋白酶,进行酶解,酶解后灭酶;
步骤四,将包埋后的蜂皇浆和酶解后的混合浆液混合,再在混合物内加入亚麻水溶粉、维生素B1、维生素B12、亚铁盐、抗氧化剂,用水研磨,直至充分溶解,得到混合料液;
步骤五,把混合料液进行高压均质;
步骤六,将均质好的料液,浓缩后置于鼓风干燥箱中,干燥箱内温度设定为8-12℃,干燥24-48h后,成为营养粉,包装。

步骤三,将富含胱氨酸的谷物粉、红豆粉、薏米粉加水搅拌成混合浆液,在混合浆液中加入木瓜蛋白酶,进行酶解,酶解后灭酶;
步骤四,将包埋后的蜂皇浆和酶解后的混合浆液混合,再在混合物内加入亚麻水溶粉、维生素B1、维生素B12、亚铁盐、抗氧化剂,用水研磨,直至充分溶解,得到混合料液;
步骤五,把混合料液进行高压均质;
步骤六,将均质好的料液,浓缩后置于鼓风干燥箱中,干燥箱内温度设定为8-12℃,干燥24-48h后,成为营养粉,包装。
本发明的有益之处在于:
亚麻中的α-亚麻酸对脑神经传导和突触的生长发育具有增益效果;
蜂皇浆中的乙酰胆碱能够促进激活脑神经传导功能,提高信息传递速度,增强大脑记忆能力,全面改善脑功能;配合维生素B1能抑制胆碱酯酶的活性,增强自身合成乙酰胆碱的能力;
胱氨酸能够增加体内白细胞数量,阻止病原菌发育,增强体质和肝功能,但胱氨酸过多摄入容易引起结石,所以配合红豆和薏米,利尿避免结石风险;
亚铁盐与维生素B12配合,促进红细胞的发育和成熟,使肌体造血机能处于正常状态,维护神经系统健康,增大脑供氧能力;
这些配方能够增益亚麻的健脑效果,增强大脑记忆能力,减缓脑萎缩,增加脑部容积,全面改善脑功能,并能延缓衰老。
具体实施方式
以下结合具体实施例对本发明作具体的介绍。
用于健脑的亚麻营养食品,包括:按照质量份数包括:23-36份亚麻水溶粉,14-22份蜂皇浆,6-18份富含胱氨酸的谷物粉,2-8份维生素B1,2-8份维生素B12,2-8份亚铁盐,20-28份糊精,8-16份抗氧化剂。
作为一种实施例,富含胱氨酸的谷物粉按照质量份数包括:3-9份黑米粉,3-9份黑豆粉。作为另一种实施例,富含胱氨酸的谷物粉按照质量份数包括:3-9份黄豆粉,3-9份燕麦粉。只要是富含胱氨酸的谷物都可以应用于本发明。
抗氧化剂包括:丁基羟基茴香醚,抗坏血酸;作为一种优选,丁基羟基茴香醚与抗坏血酸的质量比为1:2。
制造方法,包括如下步骤:
步骤一,按照质量份数准备材料,质量份数如下:23-36份亚麻水溶粉,14-22份蜂皇浆冻干粉,6-18份富含胱氨酸的谷物粉,2-8份维生素B1,2-8份维生素B12,2-8份亚铁盐,20-28份糊精,8-16份抗氧化剂;
步骤二,先用蛋白酶将蜂皇浆冻干粉中的蛋白质水解为可溶物,再用糊精包埋蜂皇浆;
步骤三,将富含胱氨酸的谷物粉加水搅拌成混合浆液,在混合浆液中加入木瓜蛋白酶,进行酶解,酶解温度为50-60℃,酶解时间为120-160min,加酶量为4000-5000U/g,酶解后升温至80-100℃,恒温15-20min后灭酶;
步骤四,将包埋后的蜂皇浆和酶解后的混合浆液混合,再在混合物内加入亚麻水溶粉、维生素B1、维生素B12、亚铁盐、抗氧化剂,用水研磨,直至充分溶解,得到混合料液;
步骤五,把混合料液进行高压均质;压力为15-30Mpa;
步骤六,将均质好的料液,浓缩后置于鼓风干燥箱中,干燥箱内温度设定为8-12℃,干燥24-48h后,成为营养粉,包装。
胱氨酸能够增加体内白细胞数量,阻止病原菌发育,增强体质和肝功能,但胱氨酸过多摄入容易引起结石,所以配合红豆和薏米,利尿避免结石风险;作为一种实施例,用于健脑的亚麻营养食品,按照质量份数包括:23-36份亚麻水溶粉,14-22份蜂皇浆,6-18份富含胱氨酸的谷物粉,2-8份维生素B1,2-8份维生素B12,2-8份亚铁盐,20-28份糊精,8-16份抗氧化剂,4-10份红豆,3-9份薏米。
制造方法,包括如下步骤:
步骤一,按照质量份数准备材料,质量份数如下:23-36份亚麻水溶粉,14-22份蜂皇浆冻干粉,6-18份富含胱氨酸的谷物粉,2-8份维生素B1,2-8份维生素B12,2-8份亚铁盐,20-28份糊精,8-16份抗氧化剂,4-10份红豆粉,3-9份薏米粉;
步骤二,先用蛋白酶将蜂皇浆冻干粉中的蛋白质水解为可溶物,再用糊精包埋蜂皇浆;
步骤三,将富含胱氨酸的谷物粉、红豆粉、薏米粉加水搅拌成混合浆液,在混合浆液中加入木瓜蛋白酶,进行酶解,酶解温度为50-60℃,酶解时间为120-160min,加酶量为4000-5000U/g,酶解后升温至80-100℃,恒温15-20min后灭酶;

实验内容:
为了验证本发明的营养食品的效果,按照如下的配比制备出样品:
按照如下配方准备材料,质量份数如下:23-36份亚麻水溶粉,14-22份蜂皇浆冻干粉,6-18份富含胱氨酸的谷物粉,2-8份维生素B1,2-8份维生素B12,2-8份亚铁盐,20-28份糊精,8-16份抗氧化剂;
实施例1:23g亚麻水溶粉,14g蜂皇浆冻干粉,3.0g黑米粉,3.0g黑豆粉,8.0g维生素B1,8.0g维生素B12,8.0g硫酸亚铁,20g糊精,2.7g丁基羟基茴香醚,5.3g抗坏血酸;
实施例2:30g亚麻水溶粉,18g蜂皇浆冻干粉,6.0g黑米粉,6.0g黑豆粉,5.0g维生素B1,5.0g维生素B12,5.0g硫酸亚铁,24g糊精,4.0g丁基羟基茴香醚,8.0g抗坏血酸;
实施例3:36g亚麻水溶粉,22g蜂皇浆冻干粉,9.0g黑米粉,9.0g黑豆粉,2.0g维生素B1,2.0g维生素B12,2.0g硫酸亚铁,28g糊精,5.3g丁基羟基茴香醚,10.7g抗坏血酸;
对比实施例1:30g亚麻水溶粉,18g蜂皇浆冻干粉,24g糊精,4.0g丁基羟基茴香醚,8.0g抗坏血酸;
对比实施例2:30g亚麻水溶粉,18g蜂皇浆冻干粉,5.0g维生素B1,24g糊精,4.0g丁基羟基茴香醚,8.0g抗坏血酸;
对比实施例3:30g亚麻水溶粉,18g蜂皇浆冻干粉,6.0g黑米粉,6.0g黑豆粉,5.0g维生素B12,24g糊精,4.0g丁基羟基茴香醚,8.0g抗坏血酸;
对比实施例4:30g亚麻水溶粉,24g糊精,4.0g丁基羟基茴香醚,8.0g抗坏血酸;
按照上文的方法制成样品1,样品2,样品3,对比样品1,对比样品2,对比样品3,对比样品4;
实验一:为了验证本发明的营养食品能够减缓脑萎缩,增加脑部容积,做如下实验;
实验方法:
征集志愿者脑萎缩70名志愿者(男性35名、女性35名),分成7组,各组10人,各组服用样品,一天一服,受测者分别于第0个月、第3个月、第9个月通过MRI检测脑部容积,结果如下所示:

由上述结果可知,本发明的配方对脑容量具有明显的增益效果,缺少部分成分的配方脑容量的增益不明显。
本发明中的α-亚麻酸对脑神经传导和突触的生长发育具有增益效果;蜂皇浆中的乙酰胆碱能够促进激活脑神经传导功能,提高信息传递速度,增强大脑记忆能力,全面改善脑功能;配合维生素B1能抑制胆碱酯酶的活性,增强自身合成乙酰胆碱的能力;亚铁盐与维生素B12配合,促进红细胞的发育和成熟,使肌体造血机能处于正常状态,维护神经系统健康,增大脑供氧能力;综合使用后的配方能够增益亚麻的健脑效果,增强大脑记忆能力,减缓脑萎缩,增加脑部容积,全面改善脑功能,延缓衰老。

1.用于健脑的亚麻营养食品,其特征在于,按照质量份数包括:23-36份亚麻水溶粉,14-22份蜂皇浆,6-18份富含胱氨酸的谷物粉,2-8份维生素B1,2-8份维生素B12,2-8份亚铁盐,20-28份糊精,8-16份抗氧化剂。
2.根据权利要求1所述的用于健脑的亚麻营养食品,其特征在于,所述富含胱氨酸的谷物粉按照质量份数包括:3-9份黑米粉,3-9份黑豆粉。
3.根据权利要求1所述的用于健脑的亚麻营养食品,其特征在于,所述富含胱氨酸的谷物粉按照质量份数包括:3-9份黄豆粉,3-9份燕麦粉。
4.根据权利要求1所述的用于健脑的亚麻营养食品,其特征在于,还包括:4-10份红豆,3-9份薏米。
5.根据权利要求1所述的用于健脑的亚麻营养食品,其特征在于,所述抗氧化剂包括:丁基羟基茴香醚,抗坏血酸。
6.根据权利要求5所述的用于健脑的亚麻营养食品,其特征在于,所述丁基羟基茴香醚与抗坏血酸的质量比为1:2。
7.用于健脑的亚麻营养食品的制造方法,其特征在于,包括如下步骤:
步骤一,按照质量份数准备材料,质量份数如下:23-36份亚麻水溶粉,14-22份蜂皇浆冻干粉,6-18份富含胱氨酸的谷物粉,2-8份维生素B1,2-8份维生素B12,2-8份亚铁盐,20-28份糊精,8-16份抗氧化剂;
步骤二,先用蛋白酶将蜂皇浆冻干粉中的蛋白质水解为可溶物,再用糊精包埋蜂皇浆;
