Abstract
一种多功能纳米晶膳食纤维饮品及其制备工艺,涉及一种食品加工工艺,其配方按如下重量比:微晶纤维素‑羧甲基纤维素钠复合物:1.0‑2.5%;微晶纤维素:0‑5.0%;纳米晶体纤维素:0.1‑1.0%;异麦芽糖酮醇:5‑30%;余量为水。所述多功能纳米晶膳食纤维饮品可以补充人们严重不足的膳食纤维、可起到润肠通便作用、可作为代餐食品起到减肥作用,且具有高耐受性、高稳定性等特性。
Description
技术领域
本发明涉及一种食品加工工艺,具体涉及一种多功能纳米晶膳食纤维饮品及其制备工艺。
背景技术
英国国家顾问委员会建议膳食纤维摄入量为人均25-30g/天,美国FDA推荐的总膳食纤维摄入量为人均20-35g/天(成人),澳大利亚有关机构指出,人均摄入膳食纤维25g/天,可明显减少冠心病的发病率和死亡率,中国营养学会2000年指出:我国成年人膳食纤维的适宜摄入量为30g/天左右。但据测算,我国人均每日的实际摄入量仅为14g左右,摄入量严重不足,且摄入量随食品精加工水平的提高呈逐步下降趋势。納优纤TM的研制成功,为扭转我国成年人膳食纤维摄入严重不足,提供了一个解决方案。
目前,市场上的膳食纤维产品,主要采用的是以低聚木糖、聚葡萄糖、魔芋精粉、大豆膳食纤维等其中单一成分与其他物料配合而成,或二种成分与其他物料配合而成的,其作用主要是润肠或通便,比较单一。
CN101606704B涉及一种具有多种功能作用的膳食纤维食品;采用主料有低聚木糖2%~10%、聚葡萄糖15%~50%、魔芋精粉3.3%~10%、大豆膳食纤维10%~50%、微晶纤维素10%~50%,辅料有柠檬酸0.5%~2%、阿斯巴甜0.2%~0.6%、粉末香精0.5%~1.8%配制加工而成的复合膳食纤维食品。
但该配方涉及的某些组分,如聚葡萄糖食用过多会造成腹胀、肠鸣、腹泻等不适现象,因而FAO/WHO都规定其最大使用量。
发明内容
本发明提供一种多功能纳米晶膳食纤维饮品,所述多功能纳米晶膳食纤维饮品可以补充人们严重不足的膳食纤维、可起到润肠通便作用、可作为代餐食品起到减肥作用,且具有高耐受性、高稳定性等优点。
本发明的技术方案如下:
一种多功能纳米晶膳食纤维饮品,其配方按如下重量比:
微晶纤维素-羧甲基纤维素钠复合物:1.0-2.5%;
微晶纤维素:0-5.0%;
纳米晶体纤维素:0.1-1.0%;
异麦芽糖酮醇:5-30%;
余量为水。
在一些实施例中,所述多功能纳米晶膳食纤维饮品,其配方按如下重量比:
微晶纤维素-羧甲基纤维素钠复合物:1.0-2.5%;
羧甲基纤维素钠:0-0.48%;
微晶纤维素:0-5.0%;
纳米晶体纤维素:0.1-1.0%;
瓜尔胶:0.05-0.2%;
异麦芽糖酮醇:5-30%;
余量为水。
在一些实施例中,所述多功能纳米晶膳食纤维饮品,其配方按如下重量比:
微晶纤维素-羧甲基纤维素钠复合物:1.0-2.5%;
羧甲基纤维素钠:0-0.48%;
微晶纤维素:0-5.0%;
纳米晶体纤维素:0.1-1.0%;
瓜尔胶:0.05-0.2%;
异麦芽糖酮醇:5-30%;
山梨酸钾:0-1.0%;
柠檬酸:0-1%;
余量为水。
所述纳米晶体纤维素的制备方法公开在CN201710049562.9,其他原料从市场上购买。
本发明另一方面提供一种多功能纳米晶膳食纤维饮品的制备工艺,其包括如下步骤:
S1:先将纯化水加入到高速分散罐,开启搅拌,转速200-300转/分,边分散边缓缓加入微晶纤维素-羧甲基纤维素钠复合物,直至将微晶纤维素-羧甲基纤维素钠复合物全部加完,调整转速到500-1000转/分以上,继续分散10-15分钟,调整转速到200-300转/分,缓缓将已称好的羧甲基纤维素钠、瓜尔胶、纳米晶体纤维素全部加入,调整转速到500-1000转/分以上,分散10-15分钟,制备得到胶体溶液;
S2、称取异麦芽糖酮醇、微晶纤维素、山梨酸钾或柠檬酸,加入打浆罐,开启打浆罐,转速50-100转/分,缓慢将微晶纤维素及其他添加剂全部投入打浆罐后,调整转速至300-500转/分,搅拌25-35分钟;
S3、将S2制得的混合物液体,通过高压均质机在10-20MPa条件下均质后既得多功能纳米晶膳食纤维饮品。
S1中,按1-2.5%固含量称取微晶纤维素-羧甲基纤维素钠复合物,当溶液PH值小于4时,按固含量0-0.48%称取羧甲基纤维素钠加入,按固含量0.1-1.0%称取纳米晶体纤维素,所述纳米晶体纤维素的粒径为纳米级、聚合度小于100;按固含量0.05-0.2%称取瓜尔胶;
S2中按固含量10-30%称取异麦芽糖酮醇,按固含量0-5.0%称取微晶纤维素、按固含量0-1.0%称取山梨酸钾、0-1.0%称取柠檬酸;
进一步地,在S2中可根据实际需要称取食用香精和色素适量;所述食用香精优选水溶性食用香精,诸如草莓、橙子、苹果、蓝莓、牛奶、咖啡;所述色素为市售水溶性色素;
所述打浆罐为锚式打浆罐;所述微晶纤维素的聚合度小于350;
本发明纳米膳食纤维饮品的主要功能是:1、食品精细化程度越来越高,补充人们严重进食不足的膳食纤维。2、利用纳米晶膳食微晶纤维素超大的比表面积(比普通膳食纤维的比表面积大1000倍),吸附裹挟肠内垃圾,起到润肠通便作用。3、膳食微晶纤维素不被人体吸收,但其吸水后膨胀会令人食后有饱腹感,可作为代餐食品起到减肥作用。4、配方中使用的异麦芽糖酮醇是当今最好的蔗糖替代品,异麦芽酮糖醇具有以下特性:
①适合糖尿病病人食用,不会引起血糖和胰岛素上升。
②非致龋齿性,口腔内的变形链球菌不能分解利用,不产生酸和葡聚糖,不会造成蛀牙,特别适合儿童食用。
③低热量,适合高血压、高血脂、肥胖及害怕肥胖的人群食用。
④高耐受性,很多甜味剂,如山梨醇、木糖醇、氢化葡萄糖浆、麦芽糖醇浆及很多低聚糖,如食用过多会造成腹胀、肠鸣、腹泻等不适现象,因而FAO/WHO都规定其最大使用量,但人体对异麦芽酮糖醇的耐受量却惊奇的大,每日摄入50g不会造成肠胃不适,因此经FAO/WHO联合食品添加剂专家委员会审查通过,对异麦芽酮糖醇的每日摄入量可不作规定。
⑤较合理的负溶解热,异麦芽酮糖醇负溶解热只有-39.4KJ/kg,因此不会在品尝中出现不适的冰凉口感。
⑥甜味纯正天然,可与其它强力甜味剂(如甜蜜素、甜菊糖)配合使用,掩盖其它强力甜味剂的不良味道。
⑦高稳定性,异麦芽酮糖醇为多元糖醇,没有还原性,非常稳定,在较强的酸、碱条件下也不水解,在很高温度下也不产生色素,与蔗糖相比,其稳定性在数值上大10倍以上;也不会和食品中其他成份发生化学反应,如与氨基酸发生美拉德反应。异麦芽酮糖醇不能被绝大多数微生物利用,因此,使用异麦芽酮糖醇生产的产品具有更长的货架期。
⑧非吸湿性,与蔗糖、葡萄糖或某些低聚糖相比异麦芽酮糖醇具有非常低的吸湿性。在25℃相对湿度为70%时,基本没有吸湿,便于包装和运输。
⑨异麦芽酮糖醇是一种优良的双歧杆菌增殖因子,虽然异麦芽酮糖醇不能被人体和绝大多数微生物的酶系所利用,但却可以被人体肠道中的双歧杆菌所分解利用,促进双歧杆菌的生长繁殖,维持肠道的微生态平衡,有利于人体的健康。
具体实施方式
一种多功能纳米晶膳食纤维饮品,其配方按如下重量比:
微晶纤维素-羧甲基纤维素钠复合物:1.0-2.5%;
羧甲基纤维素钠:0-0.48%;
微晶纤维素:0-5.0%;
纳米晶体纤维素:0.1-1.0%;
瓜尔胶:0.05-0.2%;
异麦芽糖酮醇:5-30%;
山梨酸钾:0-1.0%;
柠檬酸:0-1%;
余量为水。
一种多功能纳米晶膳食纤维饮品的制备工艺,其包括如下步骤:
S1:按1-2.5%固含量称取微晶纤维素-羧甲基纤维素钠复合物,按固含量0-0.48%称取羧甲基纤维素钠(溶液PH值小于4时才需要加),按固含量0.1-1.0%称取纳米晶膳食微晶纤维素(粒径为纳米级、聚合度<100),按固含量0.05-0.2%称取瓜尔胶;先将纯化水加入到高速分散罐,开启搅拌,转速200-300转/分,边分散边缓缓加入微晶纤维素-羧甲基纤维素钠复合物,直至将微晶纤维素-羧甲基纤维素钠复合物全部加完,调整转速到500-1000转/分以上,继续分散10-15分钟,调整转速到200-300转/分,缓缓将已称好的羧甲基纤维素钠、瓜尔胶、纳米晶体纤维素全部加入,调整转速到500-1000转/分以上,分散10-15分钟;
S2、按固含量5-30%称取异麦芽糖酮醇,按固含量0-5.0%称取微晶纤维素(粒径为纳米级、聚合度<100)、按固含量0-1.0%称取山梨酸钾、0-1.0%称取柠檬酸,按固含量0-1.0%称取柠檬酸并根据实际需要称取食用香精和色素适量,开启锚式打浆罐,转速50-100转/分,缓慢将微晶纤维素及其他添加剂全部投入锚式打浆罐后,调整转速至300-500转/分,搅拌25-35分钟;
S3、将S2制得的混合物液体,通过高压均质机在10-20MPa条件下均质后既得纳米晶膳食纤维饮品。
原料的选择:食品添加剂纳米晶体纤维素(粒径为纳米级、聚合度<100)、微晶纤维素-羧甲基纤维素钠复合物、微晶纤维素(聚合度<350)、水溶性食用香精选自草莓、橙子、苹果、蓝莓、牛奶、咖啡、市售水溶性色素。
选择52例肥胖且便秘患者,作为受试对象,其中男22例,女30例,年龄在18~60岁,我们按照《保健食品检验与评价技术规范》中通便功能人体试食试验方法进行人体试食试验,试食组服用本发明多功能纳米晶膳食纤维饮品,每人每天服用2次(早晚各1次),每次1袋(每袋10克),连续服用7天。人体试食试验结果表明:试食前后,试食组自身比较排便次数明显增加,排便状况和粪便性状积分明显下降,差异有显著性,试食后试食组与对照组比较,排便次数、排便状况和粪便性状任明显改善,差异有显著性,可判定该发明产品具有通便功能作用。
连续晚餐食用一个月,85%的受试对象体重下降3-5斤。

1.一种多功能纳米晶膳食纤维饮品,其配方按如下重量比:
微晶纤维素-羧甲基纤维素钠复合物:1.0-2.5%;
微晶纤维素:0-5.0%;
纳米晶体纤维素:0.1-1.0%;
异麦芽糖酮醇:5-30%;
余量为水。
2.如权利要求1所述多功能纳米晶膳食纤维饮品,其配方按如下重量比:
微晶纤维素-羧甲基纤维素钠复合物:1.0-2.5%;
羧甲基纤维素钠:0-0.48%;
微晶纤维素:0-5.0%;
纳米晶体纤维素:0.1-1.0%;
瓜尔胶:0.05-0.2%;
异麦芽糖酮醇:5-30%;
余量为水。
3.如权利要求1所述多功能纳米晶膳食纤维饮品,其配方按如下重量比:
微晶纤维素-羧甲基纤维素钠复合物:1.0-2.5%;
羧甲基纤维素钠:0-0.48%;
微晶纤维素:0-5.0%;
纳米晶体纤维素:0.1-1.0%;
瓜尔胶:0.05-0.2%;
异麦芽糖酮醇:5-30%;
山梨酸钾:0-1.0%;
柠檬酸:0-1%;
余量为水。
4.一种多功能纳米晶膳食纤维饮品的制备工艺,其包括如下步骤:

S2、称取异麦芽糖酮醇、微晶纤维素、山梨酸钾或柠檬酸,加入打浆罐,开启打浆罐,转速50-100转/分,缓慢将微晶纤维素及其他添加剂全部投入打浆罐后,调整转速至300-500转/分,搅拌25-35分钟;
S3、将S2制得的混合物液体,通过高压均质机在10-20MPa条件下均质后既得多功能纳米晶膳食纤维饮品。
5.如权利要求4所述多功能纳米晶膳食纤维饮品的制备工艺,S1中,按1-2.5%固含量称取微晶纤维素-羧甲基纤维素钠复合物,按固含量0.1-1.0%称取纳米晶体纤维素,按固含量0.05-0.2%称取瓜尔胶。
6.如权利要求4所述多功能纳米晶膳食纤维饮品的制备工艺所述纳米晶体纤维素的粒径为纳米级、聚合度<100。
7.如权利要求4所述多功能纳米晶膳食纤维饮品的制备工艺,当溶液PH值小于4时,按固含量0-0.48%称取羧甲基纤维素钠加入溶液中。
8.如权利要求4所述多功能纳米晶膳食纤维饮品的制备工艺,S2中按固含量5-30%称取异麦芽糖酮醇,按固含量0-5.0%称取微晶纤维素、按固含量0-1.0%称取山梨酸钾、0-1.0%称取柠檬酸。
