本发明公开了一种利用杂粮制成的快餐食品,其主要包括蔬菜(一)、杂粮(二)、维生素(三)、调味料(四)、氨基酸(五),所述的蔬菜(一)为卷心菜、葱、胡萝卜、香菇等真空冷冻蔬菜干;所述的杂粮(二)为小麦米粉、玉米粉、面粉等、辅助食用油、调味料、I+G搅拌均匀制成面糊、将面糊平铺厚度为1‑3厘米、用传统烹饪方式双面煎熟至干脆、切成长8‑10厘米宽3‑5厘米条状或菱形;所述的维生素(三)为复合维生素群和复合微量元素群片剂(每日摄取科学标准量);所述的氨基酸(五)为复合18种氨基酸片剂(每日摄取科学标准量)分别独立包装最终制成快餐食品;食用方法简单可以直接热水冲泡、微波、水煮等、携带食用方便等优点,该配方制得的口感醇厚、营养丰富、蔬菜种类多、适应现代化快节奏的快餐食品。

技术领域
本发明涉及食品快餐领域,具体地说是涉及一种杂粮快餐食品。
背景技术
由于生活节奏加快,现在的年轻人会频繁食用快餐食品,而且食物越来越精细,市场上的快餐食品主食多为如精白米、精白面等,因为细粮主要含大量的可被人吸收的淀粉,几乎不含有微量元素,长期食用会导致人体吸收营养不全面,现有技术中用杂粮制备的食品多以一种杂粮为主料再配以其他辅料而成,存在营养单一并且有异味的缺点,爱吃杂粮的人们因为自制杂粮加工费时费力,一年中吃的次数有限,很难达到补充营养的效果,这样急需一种可以营养均衡并且去除杂粮异味的杂粮食品,杂粮含有丰富的膳食纤维和蛋白质,添加多种蔬菜和人体必需的维生素群和氨基酸群及时的补充营养促进人体正常新陈代谢。
发明内容
1.本发明的目的是克服上述现有技术的不足,提供一种利用杂粮制成的快餐食品,提高杂粮口感、蔬菜搭配多种口味、科学补充人体必需的维生素和氨基酸提高儿童智力、清热排毒、保持身体健康预防亚健康、携带方便、可用于旅行、救灾、应急存储。
本发明可以通过如下措施达到:
2.一种利用杂粮制成的快餐食品,主要包括蔬菜(一)、杂粮(二)、维生素(三)、调味料(四)、氨基酸(五),其特征在于包含以下重量的组分:所述蔬菜(一)20%-30%包含卷心菜15%-20%、葱2%-5%、胡萝卜20%-30%、香菇10%-15%、黄瓜3%-5%、香菜3%-5%、海白菜3%-5%、紫菜3%-5%;所述的杂粮(二)为60%-70%包含小麦米粉20%-30%、玉米粉10%-15%、黑米粉10%-15%、黄豆粉10%-15%、面粉20%-30%、绿豆粉10%-15%,辅助食用油10%-15%、调味料1%-2%、I+G 0.3%-0.4%;所述的维生素(三)为复合维生素群和复合微量元素群片剂(每日摄取科学标准量);所述的调料(四)为牛羊肉汤汁3%-5%;所述的氨基酸(五)为复合18种氨基酸片剂(每日摄取科学标准量);整体制作过程无菌操作,分别独立包装后微波消毒,按标记顺序复合摆放封装最终制成快餐食品。
3.所述的蔬菜(一)包含卷心菜、葱、胡萝卜、香菇、黄瓜、香菜、海白菜、紫菜为真空冷冻干成品蔬菜,微波消毒,混合后真空独立包装。
4.所述的杂粮(二)为:
(1)精选小麦米、玉米、黑米、绿豆分别经清洗微波消毒、浸泡冷水两小时、沥干水磨成400-500目细粉、常温发酵48小时备用;
(2)精选黄豆、经清洗微波消毒、磨成400-500目粉、温度70-90℃,时间为2-3分钟炒熟;
(3)将(1)和(2)、面粉、清水10%-15%、I+G、食用油加入调味料为精盐0.2%-1.2%、姜粉0.02%-0.08%、八角粉0.01%-0.06%、花椒0.02%-0.12%、胡椒粉0.01%-0.06%、食用碱0.01%-0.06%、搅拌均匀制成面糊,将面糊平铺厚度为1-3厘米、用传统烹饪方式双面煎熟至干脆,温度控制在80℃-90℃,时间为2-3分钟,切成长8-10厘米宽3-5厘米条状或菱形,常温冷却,真空独立包装。
5.所述的调料(四)包含牛肉10%-15%、羊肉10%-15%、牛肝3%-5%、清油10%-15%、料酒2%-3%、耗油2%-3%、番茄10%-15%、柠檬2%-3%、其他为水,用传统烹饪熬煮汤汁方式加工制熟可为液态或固态,微波消毒,真空独立包装。
6.本发明由于采用复合叠加方式包装,适合放入更多种蔬菜等食材,复合维生素和复合氨基酸精细化营养成分的比例,满足人们对各种营养成分的需求,大幅度减少蔬菜加工和运输过程中营养流失和叶面氧化,改变人们的吃饭习惯以多吃蔬菜为主,杂粮精细加工口感进一步提升,食用方法简单适合社会各类人群,避免人们分别做饭浪费的时间和能源,尤其行动不便的老人,降低做饭的难度,也适合作为病号饭补充营养,食品科学定量减少肥胖,食用方便,减少外卖包装,低碳环保节能。

1.一种利用杂粮制成的快餐食品,主要包括蔬菜(一)、杂粮(二)、维生素(三)、调味料(四)、氨基酸(五),其特征在于包含以下重量的组分:所述蔬菜(一)20%-30%包含卷心菜15%-20%、葱2%-5%、胡萝卜20%-30%、香菇10%-15%、黄瓜3%-5%、香菜3%-5%、海白菜 3%-5%、紫菜3%-5%;所述的杂粮(二)为60%-70%包含小麦米粉20%-30%、玉米粉10%-15%、黑米粉10%-15%、黄豆粉10%-15%、面粉20%-30%、绿豆粉10%-15%,辅助食用油10%-15%、调味料1%-2%、I+G 0.3%-6.4%;所述的维生素(三)为复合维生素群和复合微量元素群片剂 (每日摄取科学标准量);所述的调料(四)为牛羊肉汤汁3%-5%;所述的氨基酸(五)为复合18种氨基酸片剂(每日摄取科学标准量);整体制作过程无菌操作,分别独立包装后微波消毒,按标记顺序复合摆放封装最终制成快餐食品。
上述的一种利用蔬菜和杂粮制成的快餐食品制备方法如下:
2.所述的蔬菜(一)中分别精选卷心菜15-20%、葱2-5%、胡萝卜20%-30%、香菇15%、黄瓜5%、香菜3-5%、海白菜3-5%、紫菜3-5%、经清洗保证无农药残留、微波消毒、放入2-5%盐水浸泡两个小时上色、沥干水分、放入真空冷冻干燥机、初使加热板温度为-12℃、时间 12小时、后升温0℃、时间3小时、在升温30℃直至干燥终点、真空包装。
3.所述的杂粮(二)为:
(1)精选小麦米、玉米粉、黑米、绿豆分别经清洗微波消毒、浸泡冷水两小时、沥干水磨成400-500目细粉、常温发酵48小时备用;
(2)精选黄豆、经清洗微波消毒、磨成400-500目粉、温度70-90℃炒熟;
(3)将(1)和(2)、面粉、清水10-15%、调味料为精盐0.2%-1.2%、姜粉0.02%-0.08%、八角粉0.01%-0.06%、花椒0.02%-0.12%、胡椒粉0.01%-0.06%、食用碱0.01%-0.06%、I+G、食用油10%-15%搅拌均匀制成面糊、将面糊平铺厚度为1-3厘米、用传统烹饪方式双面煎熟至干脆、切成长8-10厘米宽3-5厘米条状或菱形、真空独立包装。
4.所述的调料(四)为牛肉10%-15%、羊肉10%-15%牛肝3%-5%、清油10%-15%、料酒 2%-3%、耗油2%-3%、番茄10%-15%、柠檬2%-3%、制作步骤为取牛肉、羊肉、牛肝、清洗切丁3-5厘米的肉丁、加入牛棒骨、盐0.5%-0.8%、姜0.5%-0.8%、花椒0.5%-0.8%、八角 0.5%-0.8%、桂皮0.5%-0.8%、料酒2%-3%、耗油2%-3%用传统烹饪熬煮调料方式加开水中熬煮8-12小时、过滤出棒骨、加入番茄汁、柠檬汁、清油淀粉2%-3%熬制粘稠,常温冷却,制成可为液态或固态,微波消毒,真空独立包装。
5.所述的维生素(三)为人体必需复合维生素群和复合微量元素群片剂包括:维生素A 1000-1500国际单位(A)、维生素C 5-20毫克(B)、维生素D 50-120国际单位(C)、维生素E 2-6国际单位天(然)来源或30国际单位合成来源(D)、维生素K 5-25微克(E)、维生素B10.5 毫克(F)、维生素B2 0.5毫克(G)、维生素B3 6毫克(H)、维生素B5 3毫克(I)、维生素B60.7 毫克(J)、维生素B9 120微克(K)、维生素B12 0.2微克(L)、维生素H 100微克(M)、钙300毫克(N)、铬60微克(O)、铜0.6毫克(P)、碘30微克(Q)、铁5毫克(R)、镁50-100毫克(S)、锰0.7毫克(T)、磷300毫克(U)、钾1000毫克(V)、硒20微克(W)、锌5毫克(X)。
6.所述的氨基酸(五)为复合氨基酸群片剂包含:亮氨酸10毫克(a)、组氨酸2毫克(b)、甘氨酸7毫克(c)、谷氨酸10毫克(d)、赖氨酸15毫克(e)、精氨酸10毫克(f)、胱氨酸1毫克(g)、苏氨酸9毫克(h)、蛋氨酸8毫克(i)、脯氨酸9.毫克(j)、酪氨酸7毫克(k)、门冬氨酸8.1毫克(l)、缬氨酸10毫克(m)、色氨酸2.毫克(n)、异量氨酸8毫克(o)、苯丙氨酸6 毫克(p)、丝氨酸8毫克(q)、丙氨酸5毫克(i)避光密封独立包装制成。
7.因本发明中蔬菜和杂粮中含有一部分维生素和氨基酸、所以实际生产重量为标注量三分之一。
8.将上述的独立包装食材、按照制作顺序放入包装盒或袋中制成快餐食品,具体重量按产品要求,产品重量不影响食材比例,携带方便、吃法可以把蔬菜和杂粮混合后热水冲泡、也可蒸煮、微波、搭配喜好食材,开封既食,复合维生素氨基酸群可以单独温水服用、饭前饭后都可以。

1.一种利用杂粮制成的快餐食品,主要包括蔬菜(一)、杂粮(二)、维生素(三)、调料(四)、氨基酸(五),其特征在于包含以下重量的组分:所述蔬菜(一)20%-30%包含卷心菜15%-20%、葱2%-5%、胡萝卜20%-30%、香菇10%-15%、黄瓜3%-5%、香菜3%-5%、海白菜3%-5%、紫菜3%-5%;所述的杂粮(二)60%-70%包含小麦米粉20%-30%、玉米粉10%-15%、黑米粉10%-15%、黄豆粉10%-15%、面粉20%-30%、绿豆粉10%-15%,辅助食用油10%-15%、调味料1%-2%、I+G 0.3%-0.4%;所述的维生素(三)为复合维生素群和复合微量元素群片剂(每日摄取科学标准量);所述的调料(四)为牛羊肉汤汁3%-5%;所述的氨基酸(五)为复合18种氨基酸片剂(每日摄取科学标准量);整体制作过程无菌操作,分别独立包装后微波消毒,按标记顺序复合摆放封装最终制成快餐食品。

(1)精选小麦米、玉米、黑米、绿豆分别经清洗微波消毒、浸泡冷水两小时、沥干水磨成400-500目细粉、常温发酵48小时备用;
(2)精选黄豆、经清洗微波消毒、磨成400-500目粉、温度70-90℃,时间为2-3分钟炒熟;
(3)将(1)和(2)、面粉、清水10%-15%、I+G、食用油加入调味料为精盐0.2%-1.2%、姜粉0.02%-0.08%、八角粉0.01%-0.06%、花椒粉0.02%-0.12%、胡椒粉0.01%-0.06%、食用碱0.01%-0.06%、搅拌均匀制成面糊,将面糊平铺厚度为1-3厘米、用传统烹饪方式双面煎熟至干脆,温度控制在80℃-90℃,时间为2-3分钟,切成长8-10厘米宽3-5厘米条状或菱形,常温冷却,真空独立包装。
