- 고추류, 당류, 조미료, 양념 및 과실농축액으로 구성되는 비빔양념 소스를 포함하는 것을 특징으로 하는, 과실농축액을 포함하는 기능성 국수용 소스 조성물
- 제 1항에 있어서, 비빔양념 소스의 고추류는 전체 중량대비 고추장 21∼23w%, 고춧가루 4∼6w%, 캡시컴 0.04∼0.06%와, 당류는 설탕 4∼6w%, 올리고당 7∼9w%와, 조미료는 식초 8∼10w%, 간장 4∼6w%, 소금 2∼4w%와, 양념은 다진마늘 6∼8w%, 다진양파 9∼11w%, 참깨 1∼3w%와, 과실농축액은 매실청 14∼16w%, 레몬농축액 2∼4w% 및 사과농축액 1∼3w%으로 구성되는 것을 특징으로 하는 과실농축액을 포함하는 기능성 국수용 소스 조성물
- 고추류, 당류, 조미료, 양념 및 과실농축액을 첨가하고 혼합하여 비빔양념 소스를 제조하는 단계와, 비빔양념 소스를 유리용기에 담아 열수 중탕법으로 95℃에서 50분간 살균하는 단계와, 용량별로 포장하는 단계로 구성되는 것을 특징으로 하는 과실농축액을 포함하는 기능성 국수용 소스 조성물의 제조방법
- 분말 소스는 멸치 14∼16w%, 다시마 1∼2w%, 건표고버섯 2∼4w%, 양파 29∼31w%, 무 29∼31w%, 마늘 8∼10w%, 생강 5∼7w% 및 통후추 0.2∼0.4w%로 구성되는 것을 특징으로 하는 국수용 소스 조성물
- 분말소스는 재료를 칭량하여 삼베포에 나누어 담고, 추출기에서 추출한 추출물을 분리하여 냉각시킨 후 냉장 보관하는 단계와, 추출물을 농축하여 동결건조기에서 동결건조한 후 분쇄하는 단계와, 분말소스에 소금을 첨가하여 소포장하는 단계로 구성되는 것을 특징으로 하는 국수용 소스 조성물의 제조방법
