本发明公开了一种可稳定胃部平衡的山药片及其制备方法,其重量份的组分制成为:山药80~120份、小麦粉40~60份、马铃薯雪花全粉10~20份、水50~70份、植物油3~6份、食用盐2~5份、白砂糖3~6份、谷氨酸钠1~2份、碳酸钙2~3份。本发明生产的山药片安全卫生,在口感上保留了独特的风味,同时可健身强体、延缓衰老,具有营养丰富、滋补健身、养颜美容之功效,是不可多得的健康营养美食,可补肾强身,增强抵抗力,可以起到较好的保健养生功效,是一种药食两用的食品;与现有技术相比,其制备工艺简单,加工成本低,采用纯天然原料,产品保健营养价值高,且便于随身携带,适合各种人群食用。

技术领域
本发明主要涉及食品领域,尤其涉及一种可稳定胃部平衡的山药片及其制备方法。
背景技术
山药是一种常见的药食同源食材,其所含丰富的蛋白质、碳水化合物、钙、磷、铁、维生素、淀粉酶、胆碱、粘液汁酶以及薯蓣皂苷等多种营养成分,其中的淀粉酶又叫消化素,能分解淀粉等物质,补而不腻,香而不燥,是历代医家盛赞的理虚之要药,其中人类所需的18种氨基酸中,山药中含有16种。
山药肉质细嫩,含有极丰富的营养保健物质,其所含胆碱和卵磷脂有助于提高人的记忆力,常食之可健身强体、延缓衰老,是人们所喜爱的保健佳品。以山药为主、辅以魔芋做成的仿生食品,具有营养丰富、滋补健身、养颜美容之功效,是不可多得的健康营养美食,可补肾强身,增强抵抗力,可以起到较好的保健养生功效。但新鲜山药易氧化形成褐化,不易鲜存,且新鲜山药黏液易造成奇痒症状,食用不方便。目前市场上将山药加工成即食片的产品还不成熟,保存起来却十分不方便,目前山药的加工方法主要有晒干加工 成山药粉、利用硫磺熏蒸为蜜饯、加工为罐头等,这些加工方法由于加入各种添加剂,不但 改变了山药的原有味道,而且导致营养元素也大量流失。
发明内容
本发明的目的在于提供一种可稳定胃部平衡的山药片及其制备方法,以解决上述背景技术中提出的问题,一种药食两用的食品,具有健脾补肺、益胃补肾、固肾益精、聪耳明目、助五脏、强筋骨、长志安神、延年益寿的功效。
为实现上述目的,本发明提供如下技术方案:一种山药片,其原料为山药、小麦粉、马铃薯雪花全粉、水、植物油、食用盐、白砂糖、谷氨酸钠、碳酸钙,所述原料重量份的组分制成分别为:山药80~120份、小麦粉40~60份、马铃薯雪花全粉10~20份、水50~70份、植物油3~6份、食用盐2~5份、白砂糖3~6份、谷氨酸钠1~2份、碳酸钙2~3份。
小麦粉主要成分为碳水化合物和蛋白质,成分含量高,营养搭配均衡、全面,具有降糖减脂、增强机体免疫力等功效;马铃薯雪花全粉是一种低脂肪、低糖分,能最大程度保持马铃薯中原有的高含量的VB1、VB2、 VC和矿物质钙、钾、铁等营养成分的马铃薯制品,另外小麦粉和马铃薯雪花全粉可抑制山药褐变,添加的山药采用小麦粉和马铃薯雪花全粉混合的粉浆浸泡可避免在后续加工中产生褐变。
以山药、小麦粉、马铃薯雪花全粉混合制作的成品外形金黄纯正,且增加挤压成条及切片的强度与韧性,薯香浓厚、伴有山药香味、风味持久,香脆可口, 营养丰富,无防腐添加剂,有健脾益胃补肾强筋的好处,是可大量、长期食 用的绿色食品。
优选地,所述香辛料为辣椒粉。可增加山药片的风味。
一种山药片的制备方法,包括以下步骤:
步骤一:将小麦粉、马铃薯雪花全粉、水混合搅拌成粉浆,搅拌时间为10~18min,搅拌速度为80~120r/min;
步骤二:将山药削皮,在粉浆中浸泡5~10分钟,然后粉碎,再用胶体磨研磨,得到山药浆,山药浆的粒度为10~20目;
步骤三:将山药浆脱水,山药浆的水分含量为40~48%,得到山药面团;
步骤四:步骤四:将谷氨酸钠、碳酸钙混合后加入山药浆中,然后加入植物油、食用盐、白砂糖,使用食品搅拌机搅拌混合20~30分钟,得到山药面团混合物;由于谷氨酸含有γ~氨基丁酸,能促进脑的活化性,健脑益智,抗癫痫,促进睡眠,美容润肤,延缓脑衰老机能,能补充人体抑制性神经递质,具有良好的降血压功效。促进肾机能改善和保护作用。抑制脂肪肝及肥胖症,活化肝功能。每日补充微量的伽玛氨基丁酸有利于心脑血压的缓解,又能促进人体内氨基酸代谢的平衡,调节免疫功能;碳酸钙不仅具有补钙的作用且对山药面团混合物干燥具有良好的可操作性,保持山药片的脆感,植物油的使用防止山药复合片在干燥过程中的发裂,山药片的强度韧性也与原片接近,表面没有裂纹,在运输与储存中不会产生破碎;
步骤五 :将山药面团混合物挤压成直径为15~20mm的条状,再使用切刀切成厚度为3~4mm的片,干燥后得到山药片。
优选地,所述步骤五中干燥为自然干燥或热风干燥,热风干燥的温度为20~40℃,湿度为5%~15%。经过热风干燥其油脂含量仅为油炸型薯片的1/4 左右,因此口感清淡,食用更加健康。
优选地,为了增加山药片的多种口味,还包括步骤六:在山药片表面撒放香辛料。
本发明的有益效果在于:
本发明生产的山药片安全卫生,山药富含淀粉酶、粘液质糖蛋白、胆碱、维生素C、 B、甘露聚糖;还含有谷氨酸、酪氨酸、丙氨酸、脯氨酸等18种氨基酸和钙、铁、硒、镁等十余种微量元素,微量元素有效稳定胃部平衡。在口感上保留了独特的风味,同时可健身强体、延缓衰老,具有营养丰富、滋补健身、养颜美容之功效,是不可多得的健康营养美食,可补肾强身,增强抵抗力,可以起到较好的保健养生功效,是一种药食两用的食品;与现有技术相比,其制备工艺简单,加工成本低,采用纯天然原料,产品保健营养价值高,且便于随身携带,适合各种人群食用。
具体实施方式
实施例1
一种可稳定胃部平衡的山药片的制备方法,包括以下步骤:
步骤一:将40g小麦粉、10g马铃薯雪花全粉、50g水混合搅拌成粉浆,搅拌时间为12min,搅拌速度为80r/min;
步骤二:将80g山药削皮,在粉浆中浸泡5分钟,然后粉碎,再用胶体磨研磨,得到山药浆,山药浆的粒度为10目;
步骤三:将山药浆脱水,山药浆的水分含量为40~48%,得到山药面团;
步骤四:将1g谷氨酸钠、2g碳酸钙混合后加入山药浆中,然后加入3g植物油、2g食用盐、3g白砂糖,使用食品搅拌机搅拌混合20分钟,得到山药面团混合物;
步骤五 :将山药面团混合物挤压成直径为15mm的条状,再使用切刀切成厚度为3mm的片,干燥后得到山药片;
步骤六:在山药片表面撒放香辛料。
实施例2
一种可稳定胃部平衡的山药片的制备方法,包括以下步骤:
步骤一:将45g小麦粉、15g马铃薯雪花全粉、55g水混合搅拌成粉浆,搅拌时间为13min,搅拌速度为90r/min;
步骤二:将90g山药削皮,在粉浆中浸泡5分钟,然后粉碎,再用胶体磨研磨,得到山药浆,山药浆的粒度为10目;
步骤三:将山药浆脱水,山药浆的水分含量为40~48%,得到山药面团;
步骤四:将1g谷氨酸钠、2g碳酸钙混合后加入山药浆中,然后加入4g植物油、3g食用盐、4g白砂糖,使用食品搅拌机搅拌混合25分钟,得到山药面团混合物;
步骤五 :将山药面团混合物挤压成直径为15mm的条状,再使用切刀切成厚度为3mm的片,干燥后得到山药片;
步骤六:在山药片表面撒放香辛料。
实施例3
一种山药片的制备方法,包括以下步骤:
步骤一:将60g小麦粉、20g马铃薯雪花全粉、70g水混合搅拌成粉浆,搅拌时间为13min,搅拌速度为90r/min;
步骤二:将120g山药削皮,在粉浆中浸泡5分钟,然后粉碎,再用胶体磨研磨,得到山药浆,山药浆的粒度为10目;
步骤三:将山药浆脱水,山药浆的水分含量为40~48%,得到山药面团;
步骤四:将1g谷氨酸钠、2g碳酸钙混合后加入山药浆中,然后加入6g植物油、5g食用盐、6g白砂糖,使用食品搅拌机搅拌混合25分钟,得到山药面团混合物;
步骤五 :将山药面团混合物挤压成直径为20mm的条状,再使用切刀切成厚度为4mm的片,采用热风干燥后得到山药片;热风干燥的温度为20℃,湿度为5%;
步骤六:在山药片表面撒放香辛料。

1.一种可稳定胃部平衡的山药片,其特征在于,其原料为山药、小麦粉、马铃薯雪花全粉、水、植物油、食用盐、白砂糖、谷氨酸钠、碳酸钙,所述原料重量份的组分制成分别为:山药80~120份、小麦粉40~60份、马铃薯雪花全粉10~20份、水50~70份、植物油3~6份、食用盐2~5份、白砂糖3~6份、谷氨酸钠1~2份、碳酸钙2~3份。
2.根据权利要求1所述的一种可稳定胃部平衡的山药片,其特征在于,还包括2~5份香辛料,所述香辛料为辣椒粉。
3.一种可稳定胃部平衡的山药片的制备方法,包括以下步骤:
步骤一:将小麦粉、马铃薯雪花全粉、水混合搅拌成粉浆,搅拌时间为10~18min,搅拌速度为80~120r/min;
步骤二:将山药削皮,在粉浆中浸泡5~10分钟,然后粉碎,再用胶体磨研磨,得到山药浆,山药浆的粒度为10~20目;
步骤三:将山药浆脱水,山药浆的水分含量为40~48%,得到山药面团;
步骤四:将谷氨酸钠、碳酸钙混合后加入山药浆中,然后加入植物油、食用盐、白砂糖,使用食品搅拌机搅拌混合20~30分钟,得到山药面团混合物;
步骤五 :将山药面团混合物挤压成直径为15~20mm的条状,再使用切刀切成厚度为3~4mm的片,干燥后得到山药片。
4.根据权利要求1所述的一种可稳定胃部平衡的山药片的制备方法,其特征在于,所述步骤五中干燥为自然干燥或热风干燥,热风干燥的温度为20~40℃,湿度为10%~15%。
5.据权利要求1所述的一种可稳定胃部平衡的山药片的制备方法,其特征在于,还包括步骤六:在山药片表面撒放香辛料。
