背景技术
现有常规的贻贝干制品制作包括如下步骤:即在选取新鲜扇贝蛤,冲洗干净后,经过浸泡处理、蒸煮、冲洗和沥水、浸渍入味、整形、烘烤以及包装和杀菌后制成,如中国发明专利ZL 201210453681.8公开的“一种即食干扇贝的加工方法”。
目前,关于贮藏条件对干贝品质影响研究还比较有限。通常认为,干贝的水分含量较低,在贮藏时不易发生腐败变质。然而,贮藏时各种因素,如干贝贮藏过程中的微生物接触污染、产品油烧及变色等,都会使产品的色、香、味及营养成分发生变化。因此,适宜贮藏温度、湿度条件及前处理方式,对于保持或提升海产干制品的营养品质和风味特性至关重要。
发明内容
本发明的目的在于克服现有技术存在的不足,而提供一种能减少致病微生物污染,保障产品感官及综合品质的贻贝干制品的品质保障及微生物控制方法。
本发明的目的是通过如下技术方案来完成的,一种贻贝干制品的品质保障及微生物控制方法,所述的贻贝干制品加工过程是:选取新鲜扇贝蛤,冲洗干净后,经过浸泡处理、蒸煮、冲洗和沥水、浸渍入味、整形、烘烤以及包装和杀菌后制成贻贝干制品;所述的品质保障及微生物控制方法是:新鲜扇贝蛤在经过蒸煮之后,取出,冷却后再放入10—30℃的、主要由小分子糖醇类物质和抗氧化剂作为主要成分制成的前处理剂中,浸泡处理5—30分钟,然后捞起再进行后续加工处理;所述的前处理剂中浸泡的扇贝柱重量不多于前处理剂的重量。

本发明是在贻贝干制品加工前处理过程中,采用糖醇类物质进行处理,以调控干制品中的水分含量,提高干制品的口感及应用品质;采用多因素栅栏控制技术,以实现干制品中的微生物含量的有效控制。
