本发明属于食品加工技术领域,涉及一种发酵人参维他命汽水的制备方法。
背景技术
人参五加科人参属多年生草本植物人参的干燥根。有“百草之王”之称,为大地精华之物,有着悠久的防治疾病的历史,其效果更为古今中外无数医者所肯定。人参始载于我国历史上第一部记载药物的著作《神农本草经》,被列为上品,有“补五脏、定魂魄、安精神、除邪气、止惊悸、益智、明目,久服轻身延年”的功效。现代药理研究表明人参具有滋补、抗疲劳、扩张血管、提高免疫力及抗肿瘤等作用。随着生活水平的提高,人们对未病先防、营养保健越来越重视,人参为国家卫生部批准的新资源食品,因此更加受到人们的青睐。
维生素是维持身体健康所必需的一类有机化合物。这类物质在体内既不是构成身体组织的原料,也不是能量的来源,而是一类调节物质,在物质代谢中其重要作用。这类物质由于体内不能合成或合成量不足,所以虽然需要量很少,但必须经常由食物供给。如果长期缺乏某种维生素,就会引起生理机能障碍而发生某种疾病。一般由食物中取得。现阶段发现的有几十种,如维生素A、维生素B、维生素C等。
本发明方法制备的发酵人参维他命汽水产品在人参发酵的基础上,还添加多种维生素做为原料。将人参与维生素相结合,可以为老年人或者其他特殊人群提供所需的活性物质和营养素,起到清凉解暑、提神醒脑、促进新陈代谢、缓解疲劳、延缓衰老、提高免疫力等作用。
发明内容
本发明的目的在于提供一种发酵人参维他命汽水的制备方法,此款饮料制品具有缓解疲劳、提高机体免疫力、抗肿瘤和延缓衰老等营养保健功效。
本发明是通过以下技术手段来实现的:
一种发酵人参维他命汽水的制备方法,制备过程包括如下步骤:
(1)将人参进行预处理,切片或粉碎后加入其质量6~10倍,浓度为3%~10%的蔗糖溶液,杀菌,冷却后接入发酵剂发酵;
(2)将人参发酵液进行离心,得到上清液,加入0.1~1倍的水,按体积添加0.01%~0.1%酸味剂、2%~8%甜味剂、0.0002%~0.0005%维生素B、0.01%~0.05%牛磺酸、0.05%~0.1%稳定剂,并搅拌均匀,然后预热均质;
(3)将均质好的溶液进行杀菌后灌入瓶中,压入食用二氧化碳后立即封口压盖即可。
步骤(1)中所述的人参为鲜人参、干人参、红参、白参、人参果实、人参茎叶、人参须的一种或几种的混合物。
步骤(1)中所述的发酵剂为从食品原料中筛选出的双歧杆菌、嗜酸乳杆菌、干酪乳杆菌、卷曲乳杆菌、保加利亚乳杆菌、德氏乳杆菌乳亚种、发酵乳杆菌、格氏乳杆菌、瑞士乳杆菌、约氏乳杆菌、副干酪乳杆菌、植物乳杆菌、罗伊氏乳杆菌、鼠李糖乳杆菌、唾液乳杆菌、嗜热链球菌中的一种或多种,接种量为3%~5%,发酵至pH达到3.7~4.6。
步骤(2)中所述的酸味剂为柠檬酸,甜味剂为蔗糖,维生素包括维生素B2、维生素B6和维生素B12。
步骤(2)中所述的稳定剂为CMC、黄原胶、PGA、果胶、瓜尔豆胶、卡拉胶、阿拉伯胶、三聚磷酸钠中的一种或多种。
步骤(3)中所述的二氧化碳的含量,20℃时体积倍数是饮料体积的2~5倍。
有益效果:本发明最终制得的发酵人参维他命汽水人参皂苷含量>0.05%,饮料颜色澄清透明,酸甜可口,参香浓郁,口味极佳。人参中的主要活性物质为人参皂苷,经筛选的菌种发酵后,产生更多的稀有人参皂苷,具有提神醒脑、清凉解暑、缓解疲劳、提高机体免疫力、提高机体应激性、抗肿瘤、延缓衰老等功效,同时避免传统人参制品易上火的弊端。将人参与维生素相结合,能够提供机体所必需的营养素,调节物质代谢,具有广阔的市场前景。
具体实施方式
以下实施例是对本发明的进一步说明,而不是对本发明的限制。
实施例1
1)发酵。
将100g红参进行预处理,粉碎后加入其质量1000mL、浓度为8%的蔗糖溶液,巴氏杀菌,冷却后接入20g鼠李糖乳杆菌20g嗜热链球菌的混合菌种发酵,发酵至pH达到4.0。
2)调配均质。
将人参发酵液进行离心,得到上清液,加入200mL水,按体积添加0.2g柠檬酸、20g蔗糖、0.002g维生素B2、0.001g维生素B6、0.003mg维生素B12、0.4g牛磺酸、0.6g果胶、0.4g瓜尔豆胶,并搅拌均匀,然后预热均质。
3)灌装充气。
将均质好的溶液进行杀菌后灌入瓶中,压入2L食用二氧化碳后立即封口压盖即可。
实施例2
1)发酵。
将200g鲜人参进行预处理,粉碎后加入其质量1600mL、浓度为6%的蔗糖溶液,超高温瞬时杀菌,冷却后接入16g罗伊式乳杆菌和38g嗜酸乳杆菌发酵,发酵至pH达到3.8。
2)调配均质。
将人参发酵液进行离心,得到上清液,加入400mL水,按体积添加0.32g柠檬酸、48g蔗糖、0.0016g维生素B2、0.0032g维生素B6、0.0048mg维生素B12、0.5g牛磺酸、1gCMC、0.7g阿拉伯胶,并搅拌均匀,然后预热均质。
3)灌装充气。
将均质好的溶液进行杀菌后灌入瓶中,压入2.4L食用二氧化碳后立即封口压盖即可。
实施例3
1)发酵。
将500g干人参进行预处理,粉碎后加入其4500mL,浓度为4%的蔗糖溶液,高压蒸汽杀菌,冷却后接入70g双歧杆菌、70g嗜酸乳杆菌和60g干酪乳杆菌发酵,发酵至pH达到4.2。
2)调配均质。
将人参发酵液进行离心,得到上清液,加入500mL水,按体积添加1g柠檬酸、300g蔗糖、0.01g维生素B2、0.01g维生素B6、0.03mg维生素B12、2g牛磺酸、2g黄原胶、1.2g三聚磷酸钠,并搅拌均匀,然后预热均质。
3)灌装充气。
将均质好的溶液进行杀菌后灌入瓶中,压入2.4L食用二氧化碳后立即封口压盖即可。

(1)将人参进行预处理,切片或粉碎后加入其质量6~10倍,浓度为3%~10%的蔗糖溶液,杀菌,冷却后接入发酵剂发酵;
(2)将人参发酵液进行离心,得到上清液,加入0.1~1倍的水,按体积添加0.01%~0.1%酸味剂、2%~8%甜味剂、0.0002%~0.0005%维生素B、0.01%~0.05%牛磺酸、0.05%~0.1%稳定剂,并搅拌均匀,然后预热均质;
(3)将均质好的溶液进行杀菌后灌入瓶中,压入食用二氧化碳后立即封口压盖即可。
