背景技术

本发明的目的在于通过食疗补钙,提供一种美味可口的补钙饮料,将鸡蛋壳通过现代工艺溶解到具有营养保健功效的山药葛根醋中,变成有机酸钙便于人体吸收,同时又添加了胶原蛋白促进钙的吸收,同时使鸡蛋壳这种废弃物充分的利用。
本发明的目的及解决其主要技术问题是采用以下技术方案来实现的:一种具有补钙功能的饮料,以山药和葛根发酵醋为主要,蛋壳提供钙源,胶原蛋白作为促钙因子,经过调配、均质、灭菌灌装加工而成,其特征在于:该补钙功能饮料按重量配方配比:含有钙源的山药葛根醋45-90份,胶原蛋白粉1-10份,黄原胶0.1-0.3份,阿斯巴甜0.1-0.3份,木糖醇1-3份,添加纯净水至100份;其中所述的山药葛根醋是将山药和葛根按照1/1-3的比例混合打浆,以重量计按照1份混合液,2-3份纯净水加曲发酵而成;所述的蛋壳为鸡蛋壳或鸭蛋壳;
这种具有补钙功能的饮料的制备工艺,按下列步骤制备:
A.山药葛根醋发酵:将山药和葛根按照1/1-3的比例混合打浆,以重量计按照1份混合液,加入2-3份纯净水,以山药葛根混合液的总重量计,添加10-15%的白糖,0.1-0.3%的酵母曲密封发酵5-10天,当酒精度达到8-10vol%时,添加0.1-0.3%的醋酸菌粉,通氧发酵10-20天,酸度达到9-10°时完成发酵;
B.高压浸泡:将山药葛根醋40-80份,蛋壳5-10份放入到不锈钢密封罐中,在压力为0.5-1Mpa的气压条件下,每隔1小时搅拌一次,反应3-5小时,然后过滤得到含有钙源的山药葛根醋原液;
C.调配:按照配方配比:含有钙源的山药葛根醋45-90份,胶原蛋白粉1-10份,黄原胶0.1-0.3份,阿斯巴甜0.1-0.3份,木糖醇1-3份,添加纯净水至100份;
D.均质灭菌灌装:采用均质机将调配好的饮料均质30-50min,采用巴士杀菌,在60-70℃的温度下灭菌20-30min后热灌装。
所述成份功效原理:
山药富含18种氨基酸和10余种微量元素,及其它矿物质,所以有健脾胃、补肺肾、补中益气、健脾补虚,固肾益精、益心安神等作用,李时珍《本草纲目》中有“健脾补益、滋精固肾、治诸百病,疗五劳七伤”之说。具有健脾补肺、益胃补肾、固肾益精、聪耳明目、助五脏、强筋骨、长志安神、延年益寿的功效;葛根中含有丰富的大豆异黄酮和葛根素,为天然植物雌激素,可通过补充体内雌激素促进机体对钙的利用,维持成骨细胞和破骨细胞活性间的动态平衡,达到补钙效果,辅以中草药有效防治骨质疏松;同时大豆异黄酮可预防中老年女性更年期因雌激素分泌不足引起的一系列不适症状如潮红、潮热、失眠、烦躁,减少心血管疾病的发生,以提高女性生活质量。胶原蛋白不仅具有滋润皮肤,延缓衰老、美容、消皱、养发等功效,研究表明,胶原蛋白是很好的促钙因子,它可以促进骨钙的吸收,因此服用胶原蛋白不仅可以美容,同时可以促进钙的吸收。
本发明与现有技术相比具有明显的优点和有益效果。由以上技术方案可知:
(1)将蛋壳应用到补钙饮料的开发中,充分的利用了蛋壳中的碳酸钙,将其变为有机酸酸钙,便于人体吸收利用,增加了蛋壳这种废弃资源的循环再生利用的途径;
(2)本发明所公开的补钙功能饮料,以废弃物蛋壳为钙源,具有保健功能的山药葛根通过微生物发酵转化为风味丰富的保健醋,采用高压浸泡溶解蛋壳,同时添加了促进钙吸收的促钙因子,更有利于人体吸收利用。

具体实施方式
以下结合附图及较佳实施例,对依据本发明提出的一种具有补钙功能的饮料及其制备工艺具体实施方式、特征及其功效,详细说明如后。
一种具有补钙功能的饮料,以山药和葛根发酵醋为主要,蛋壳提供钙源,胶原蛋白作为促钙因子,经过调配、均质、灭菌灌装加工而成,其特征在于:该补钙功能饮料按重量配方配比:山药葛根醋40-80份,蛋壳5-10份,胶原蛋白粉1-10份,黄原胶0.1-0.3份,阿斯巴甜0.1-0.3份,木糖醇1-3份,添加纯净水至100份;其中所述的山药葛根醋是将山药和葛根按照1/1-3的比例混合打浆,以重量计按照1份混合液,2-3份纯净水加曲发酵而成;所述的蛋壳为鸡蛋壳或鸭蛋壳;
这种具有补钙功能的饮料的制备工艺,按下列步骤制备:

实施例1:
(1)取10kg山药,30kg葛根,80kg的纯净水,加入12kg的白糖,取120g酵母粉温水活化后加入密封发酵5天,当酒精度为8vol%的时候,取120g醋酸菌粉温水活化后加入继续通氧发酵10天,当酸度达到9°时完成发酵,得到山药葛根醋;
(2)山药葛根醋40份,蛋壳5份放入到不锈钢密封罐中,在压力为0.5Mpa的气压条件下,每隔1小时搅拌一次,反应3小时,然后过滤得到含有钙源的山药葛根醋原液;
(3)按照配方配比:含有钙源的山药葛根醋45份,胶原蛋白粉1份,黄原胶0.1份,阿斯巴甜0.1份,木糖醇1份,纯净水52.8份;
(4)将调配好的饮料,采用均质机将调配好的饮料均质30min,采用巴士杀菌,在60℃的温度下灭菌30min后热灌装得到成品。
实施例2:
(1)取10kg山药,10kg葛根,40kg的纯净水,加入7.2kg的白糖,取110g酵母粉温水活化后加入密封发酵8天,当酒精度为9vol%的时候,取110g醋酸菌粉温水活化后加入继续通氧发酵15天,当酸度达到9°时完成发酵,得到山药葛根醋;
(2)山药葛根醋50份,蛋壳8份放入到不锈钢密封罐中,在压力为0.8Mpa的气压条件下,每隔1小时搅拌一次,反应4小时,然后过滤得到含有钙源的山药葛根醋原液;
(3)按照配方配比:含有钙源的山药葛根醋58份,胶原蛋白粉1份,黄原胶0.1份,阿斯巴甜0.1份,木糖醇1份,纯净水39.8份;
(4)将调配好的饮料,采用均质机将调配好的饮料均质40min,采用巴士杀菌,在65℃的温度下灭菌25min后热灌装得到成品。
实施例3:
(1)取10kg山药,20kg葛根,60kg的纯净水,加入13.5kg的白糖,取270g酵母粉温水活化后加入密封发酵10天,当酒精度为10vol%的时候,取270g醋酸菌粉温水活化后加入继续通氧发酵20天,当酸度达到10°时完成发酵,得到山药葛根醋;
(2)山药葛根醋80份,蛋壳10份放入到不锈钢密封罐中,在压力为0.8Mpa的气压条件下,每隔1小时搅拌一次,反应5小时,然后过滤得到含有钙源的山药葛根醋原液;
(3)按照配方配比:含有钙源的山药葛根醋90份,胶原蛋白粉5份,黄原胶0.2份,阿斯巴甜0.2份,木糖醇3份,纯净水1.6份;
(4)将调配好的饮料,采用均质机将调配好的饮料均质30min,采用巴士杀菌,在70℃的温度下灭菌20min后热灌装得到成品。
以下是依据《保健食品检验与评价技术规范》中增加骨密度功能的评价检验方法进行动物实验,主要考察本发明对大鼠模型的股骨干重,骨钙含量,骨密度。
1、实验动物:清洁级健康SD雌性大鼠40只,体重150-200g。
2、实验方法:40只SD雌性大鼠随机分为四组,每组10只,即假手术组,模型对照组,补钙饮料实验组(100mL/kg.d),碳酸钙对照组(100mg/kg.d)。实验动物进行双侧去卵巢手术后一周各组实施灌胃给予相应药物或等剂量生理盐水,连续60天。
3、实验结果
由表中数据可知,模型组与假手术组大鼠比较,股骨干重、骨钙含量、骨密度均显著降低(P<0.01);本发明饮料组和碳酸钙组与模型组大鼠比较,股骨干重、骨钙含量、骨密度显著增加,具有统计学意义(P<0.01),而本发明补钙饮料组略高于碳酸钙组,说明本发明具有补钙,增加骨量的作用。

Claims (2)
1.一种具有补钙功能的饮料,以山药和葛根发酵醋为主要,蛋壳提供钙源,胶原蛋白作为促钙因子,经过调配、均质、灭菌灌装加工而成,其特征在于:该补钙功能饮料按重量配方配比:含有钙源的山药葛根醋45-90份,胶原蛋白粉1-10份,黄原胶0.1-0.3份,阿斯巴甜0.1-0.3份,木糖醇1-3份,添加纯净水至100份;其中所述的山药葛根醋是将山药和葛根按照1/1-3的比例混合打浆,以重量计按照1份混合液,2-3份纯净水加曲发酵而成;所述的蛋壳为鸡蛋壳或鸭蛋壳。
2.根据权利要求1的一种具有补钙功能的饮料的制备工艺,其特征在于按下列步骤制备:
A.山药葛根醋发酵:将山药和葛根按照1/1-3的比例混合打浆,以重量计按照1份混合液,加入2-3份纯净水,以山药葛根混合液的总重量计,添加10-15%的白糖,0.1-0.3%的酵母曲密封发酵5-10天,当酒精度达到8-10vol%时,添加0.1-0.3%的醋酸菌粉,通氧发酵10-20天,酸度达到9-10°时完成发酵;
B.高压浸泡:将山药葛根醋40-80份,蛋壳5-10份放入到不锈钢密封罐中,在压力为0.5-1Mpa的气压条件下,每隔1小时搅拌一次,反应3-5小时,然后过滤得到含有钙源的山药葛根醋原液;
C.调配:按照配方配比:含有钙源的山药葛根醋45-90份,胶原蛋白粉1-10份,黄原胶0.1-0.3份,阿斯巴甜0.1-0.3份,木糖醇1-3份,添加纯净水至100份;
D.均质灭菌灌装:采用均质机将调配好的饮料均质30-50min,采用巴士杀菌,在60-70℃的温度下灭菌20-30min后热灌装。
