本发明公开了一种朝鲜蓟复合饮料及其制备方法,所述复合饮料的原料包括朝鲜蓟、猕猴桃、人参、茯苓、龙眼、苹果、蛇皮果、枸杞、芦荟、柠檬、葡萄糖酸锌、柠檬酸钠和山梨酸钾。本发明实施例中通过多种水果与朝鲜蓟混合制成的饮料,具有多种营养物质,同时饮料风味独特,酸甜适中。

技术领域
本发明涉及饮料的技术领域,特别涉及一种朝鲜蓟复合饮料及其制备方法。
背景技术
朝鲜蓟,又名洋蓟、食托菜蓟、菜蓟、法国洋蓟、球洋蓟,是一种在地中海沿岸生长的菊科菜蓟属植物,香港一般按其意大利语音译作雅枝竹或亚枝竹。它的花蕾可以用来煮菜,最初经由意大利料理而传入华人社会。现在在中国大陆的上海、浙江、湖南、北京、云南、陕西省、山东省等地均有分布。朝鲜蓟在食用时口感介于鲜笋和蘑菇之间,有消渴解酒的功效,营养丰富,健身养颜,食用价值极高,有“蔬菜之皇”的美誉。
朝鲜蓟能够提高肝脏的活力促进排除肝脏中的毒素(如消化蛋白质所产生的氨)促进肝脏细胞的再生增进胆汁的分泌和脂肪的消化(调节体内的胆固醇)朝鲜蓟所含有的其他疗效成份有:类黄酮、苦味素这些疗效物质都有辅助朝鲜蓟保护肝脏和促进肝脏排毒的功能。而黄酮类化合物具有有益的生理效应。对恶性细胞有相当功效。对血管紫癜有缓解作用。常食朝鲜蓟有治疗慢性肝炎、降低胆醇以及治疗消化不良,改善胃肠功能、增加胆汁分泌和缓解便秘、腹泻、恶心、呕吐等的功效,刺激胆汁的分泌,有防止动脉硬化、保护心血的功能。
现有技术中,以朝鲜蓟为原来的饮料虽具有很高的营养价值,但是口感、风味都不是很好。
发明内容
本发明的目的在于提供一种朝鲜蓟复合饮料及其制备方法,解决了现有技术中朝鲜蓟饮料口感,风味不好的问题。
第一方面,本发明的实施例提供了一种朝鲜蓟复合饮料,所述复合饮料的原料包括朝鲜蓟、猕猴桃、人参、茯苓、龙眼、苹果、蛇皮果、枸杞、芦荟、柠檬、葡萄糖酸锌、柠檬酸钠和山梨酸钾。
从朝鲜蓟中分离提取出的多酚化合物抗氧化能力,发现多酚化合物的抗氧化能力主要由芳环上羟基的个数来决定,含羟基越多,抗氧化能力越强。此外,位于邻位和对位的第二个羟基也能增加其抗氧化能力。试验结果表明,1g干燥的朝鲜蓟提取物对DPPH和FRAP的EC50值分别与29.2mg和62.6mgVC,及77.9mg和159mgVE相当,且具有较好的抗低密度脂蛋白氧化的作用,表明朝鲜蓟提取物具有很强的抗氧化作用。因而提取物的抗氧化作用是其具有保肝和促进肝再生作用的主要原因。
猕猴桃,也称奇异果。果形一般为椭圆状,早期外观呈绿褐色,成熟后呈红褐色,表皮覆盖浓密绒毛,可食用,其内是呈亮绿色的果肉和一排黑色或者红色的种子。因猕猴喜食,故名猕猴桃;亦有说法是因为果皮覆毛,貌似猕猴而得名,是一种品质鲜嫩,营养丰富,风味鲜美的水果。猕猴桃除含有猕猴桃碱、蛋白水解酶、单宁果胶和糖类等有机物,以及钙、钾、硒、锌、锗等微量元素和人体所需17种氨基酸外,还含有丰富的维生素C、葡萄酸、果糖、柠檬酸、苹果酸、脂肪。猕猴桃可以作为一种饮料治疗坏血病。它含有的维生素C有助于降低血液中的胆固醇水平,起到扩张血管和降低血压的作用。它还加强心脏肌肉。猕猴桃具有抗糖尿病的潜力。它含有铬,有治疗糖尿病的药用价值。它刺激孤立组细胞分泌胰岛素,因此,可以降低糖尿病患者的血糖。猕猴桃的功效还包括提升免疫功能,治疗肝脏疾病,消化不良,贫血,泌尿系统问题,呼吸系统疾病,脑疾病等。它还增加红血球生产,加强牙齿和指甲。
人参为多年生草本植物,喜阴凉,产于中国东北、朝鲜、韩国、日本、俄罗斯东部。人参的别称为黄参、地精、神草、百草之王,是闻名遐迩的“东北三宝”之一。人参的肉质根为著名强壮滋补药,适用于调整血压、恢复心脏功能、神经衰弱及身体虚弱等症,也有祛痰、健胃、利尿、兴奋等功效。
茯苓为多孔菌科真菌茯苓的干燥菌核。多于7~9月采挖,挖出后除去泥沙,堆置“发汗”后,摊开晾至表面干燥,再“发汗”,反复数次至现皱纹、内部水分大部散失后,阴干,称为“茯苓个”;或将鲜茯苓按不同部位切制,阴干,分别称为“茯苓块”和“茯苓片”,主要用于治疗水肿尿少,痰饮眩悸,脾虚食少,便溏泄泻,心神不安,惊悸失眠等症。
龙眼,果近球形,通常黄褐色或有时灰黄色,外面稍粗糙,或少有微凸的小瘤体;种子茶褐色,光亮,全部被肉质的假种皮包裹。中国的西南部至东南部栽培很广,以广东最盛,福建次之;云南及广西南部亦见野生或半野生于疏林中。亚洲南部和东南部也常有栽培。龙眼是中国南部和东南部著名果树之一,常与荔枝相提并论。龙眼含丰富的葡萄糖、蔗糖和蛋白质等,含铁量也比较高,可提高热能、补充营养。因其假种皮富含维生素和磷质,有益脾、健脑的作用,故亦入药。
苹果是水果的一种,是蔷薇科苹果亚科苹果属植物,其树为落叶乔木。苹果的果实富含矿物质和维生素,是人们经常食用的水果之一。苹果是美容佳品,既能减肥,又可使皮肤润滑柔嫩。苹果是种低热量食物,每100克只产生60千卡热量;苹果中营养成份可溶性大,易被人体吸收,故有“活水”之称,有利于溶解硫元素,使皮肤润滑柔嫩。苹果中还有铜、碘、锰、锌、钾等元素,人体如缺乏这些元素,皮肤就会发生干燥、易裂、奇痒。
蛇皮果,又名沙叻,是东南亚著名水果。它是水果中钾含量最高的品种之一,果胶含量也很丰富,对人脑十分有益,有“记忆之果”的美誉。
枸杞为人们对商品枸杞子、植物宁夏枸杞、中华枸杞等枸杞属下物种的统称。人们日常食用和药用的枸杞子多为宁夏枸杞的果实“枸杞子”。枸杞具有养肝,滋肾,润肺。枸杞叶:补虚益精,清热明目的功效。
芦荟具有杀菌作用,抗炎作用,湿润美容作用,健胃下泄作用,强心活血作用,免疫和再生作用,免疫与抗肿瘤作用,解毒作用,抗衰老作用,镇痛、镇静作用,防晒作用。
柠檬富含维生素C、糖类、钙、磷、铁、维生素B1、维生素B2、烟酸、奎宁酸、柠檬酸、苹果酸、橙皮苷、柚皮苷、香豆精、高量钾元素和低量钠元素等,对人体十分有益。维生素C能维持人体各种组织和细胞间质的生成,并保持它们正常的生理机能。人体内的母质、粘合和成胶质等,都需要维生素C来保护。当维生素C缺少了,细胞之间的间质—胶状物也就跟着变少。这样,细胞组织就会变脆,失去抵抗外力的能力,人体就容易出现坏血症,它还有更多用途,如预防感冒、刺激造血和抗癌等作用。
葡萄糖酸锌为白色结晶性或颗粒性粉末;无臭,味微涩。在沸水中极易溶解,在水中溶解,在无水乙醇、三氯甲烷或乙醚中不溶。临床上适用于小儿厌食症、各种皮肤痤疮、复发性阿弗口腔溃疡等缺锌性疾病。
柠檬酸钠别名枸橼酸钠,是一种有机化合物,外观为白色到无色晶体。无臭,有清凉咸辣味。柠檬酸钠在食品、饮料工业中用作酸度调节剂、风味剂、稳定剂;在医药工业中用作抗血凝剂、化痰药和利尿药。
山梨酸钾,是无色至白色鳞片状结晶或结晶性粉末,无臭或稍有臭味。山梨酸钾能有效地抑制霉菌,酵母菌和好氧性细菌的活性,还能防止肉毒杆菌、葡萄球菌、沙门氏菌等有害微生物的生长和繁殖,但对厌氧性芽孢菌与嗜酸乳杆菌等有益微生物几乎无效,其抑止发育的作用比杀菌作用更强,从而达到有效地延长食品的保存时间,并保持原有食品的风味。其防腐效果是同类产品苯甲酸钠的5-10倍。
进一步地,所述复合饮料的原料重量配比为:朝鲜蓟30-50份、猕猴桃10-20份、人参5-10份、茯苓5-12份、龙眼5-10份、苹果20-25份、蛇皮果5-10份、枸杞2-8份、芦荟3-5份、柠檬2-5份、葡萄糖酸锌1-2份、柠檬酸钠1-2份和山梨酸钾1-2份。
进一步地,所述复合饮料的原料重量配比为:朝鲜蓟40份、猕猴桃15份、人参8份、茯苓9份、龙眼8份、苹果23份、蛇皮果8份、枸杞5份、芦荟4份、柠檬3份、葡萄糖酸锌1.5份、柠檬酸钠1.5份和山梨酸钾1.5份。
第二方面,本发明的实施例提供了所述制备方法包括如下步骤:
步骤一:将朝鲜蓟、猕猴桃、人参、茯苓、龙眼、苹果、蛇皮果、枸杞、芦荟和柠檬清洗干净后沥干;
步骤二:将步骤一中得到的原料混合,放入打浆机中打浆,得到原料浆;
步骤三:将所述原料浆压滤去渣,得到滤液;
步骤四:在所述滤液中加入葡萄糖酸锌、柠檬酸钠和山梨酸钾;
步骤五:将步骤四中得到的物质进行脱气均质,得到所述朝鲜蓟复合饮料。
进一步地,所述步骤S03中压滤使用的滤布的目数为100目。
进一步地,所述打浆机打浆的时间为2h。
进一步地,在所述步骤五后,所述制备方法还包括:将所述朝鲜蓟复合饮料装袋,灭菌。
由以上技术方案可知,本发明实施例示出一种朝鲜蓟复合饮料及其制备方法,所述复合饮料的原料包括朝鲜蓟、猕猴桃、人参、茯苓、龙眼、苹果、蛇皮果、枸杞、芦荟、柠檬、葡萄糖酸锌、柠檬酸钠和山梨酸钾。本发明实施例中通过多种水果与朝鲜蓟混合制成的饮料,具有多种营养物质,同时饮料风味独特,酸甜适中。

本发明的实施例提供了一种朝鲜蓟复合饮料,所述复合饮料的原料包括朝鲜蓟、猕猴桃、人参、茯苓、龙眼、苹果、蛇皮果、枸杞、芦荟、柠檬、葡萄糖酸锌、柠檬酸钠和山梨酸钾。
进一步地,所述复合饮料的原料重量配比为:朝鲜蓟30-50份、猕猴桃10-20份、人参5-10份、茯苓5-12份、龙眼5-10份、苹果20-25份、蛇皮果5-10份、枸杞2-8份、芦荟3-5份、柠檬2-5份、葡萄糖酸锌1-2份、柠檬酸钠1-2份和山梨酸钾1-2份。
进一步地,所述复合饮料的原料重量配比为:朝鲜蓟40份、猕猴桃15份、人参8份、茯苓9份、龙眼8份、苹果23份、蛇皮果8份、枸杞5份、芦荟4份、柠檬3份、葡萄糖酸锌1.5份、柠檬酸钠1.5份和山梨酸钾1.5份。
通过多种水果与朝鲜蓟混合制成的饮料,风味独特,酸甜适中。
本发明的实施例提供了一种朝鲜蓟复合饮料的制备方法,如图1所示,所述制备方法包括如下步骤:
步骤S01:将朝鲜蓟、猕猴桃、人参、茯苓、龙眼、苹果、蛇皮果、枸杞、芦荟和柠檬清洗干净后沥干;
步骤S02:将步骤S01中得到的原料混合,放入打浆机中打浆,得到原料浆;
物料进入筛筒后,由棍棒的回转作用和导程角的存在,使物料沿着圆筒向出口端移动,轨迹为一条螺旋线,物料在刮板和筛筒之间的移动过程中受离心力作用而被擦破。汁液和肉质即原料浆,从筛孔中通过收集器送到下一工序,皮和籽从圆筒另一开口端排出,达到分离。
步骤S03:将所述原料浆压滤去渣,得到滤液;
压滤去渣的设备为压滤机,压滤机利用一种特殊的过滤介质,对对象施加一定的压力,使得液体渗析出来的一种机械设备,是一种常用的固液分离设备。压滤机由三部分组成:机架、压紧机构和过滤机构,过滤机构由滤板、滤框、滤布、压榨隔膜组成。
步骤S04:在所述滤液中加入葡萄糖酸锌、柠檬酸钠和山梨酸钾;
步骤S05:将步骤S04中得到的物质进行脱气均质,得到所述朝鲜蓟复合饮料。
所述脱气均质使用的设备为真空脱气罐,真空脱气罐又名真空脱气器、真空脱气机,用于经均质后的果汁在真空状态下进行脱气,以防止果汁氧化,延长果汁储存期。
进一步地,所述步骤S03中压滤使用的滤布的目数为100目。
进一步地,所述打浆机打浆的时间为2h。
进一步地,在所述步骤S05后,所述制备方法还包括:将所述朝鲜蓟复合饮料装袋,灭菌。
实施例1:
一种朝鲜蓟复合饮料的制备方法,所述制备方法包括如下步骤:
步骤S11:将重量分数为朝鲜蓟40份、猕猴桃15份、人参8份、茯苓9份、龙眼8份、苹果23份、蛇皮果8份、枸杞5份、芦荟4份和柠檬3份的原料清洗干净后沥干;
步骤S12:将步骤S11中得到的原料混合,放入打浆机中打浆2h,得到原料浆;
步骤S13:使用滤布的目数为100目的压滤机将所述原料浆压滤去渣,得到滤液;
步骤S14:在所述滤液中加入葡萄糖酸锌1.5份、柠檬酸钠1.5份和山梨酸钾1.5份;
步骤S15:将步骤S14中得到的物质进行脱气均质,得到所述朝鲜蓟复合饮料;
步骤S16:将所述朝鲜蓟复合饮料装袋,灭菌。
实施例2:
一种朝鲜蓟复合饮料的制备方法,所述制备方法包括如下步骤:
步骤S21:将重量分数为朝鲜蓟30份、猕猴桃10份、人参5份、茯苓5份、龙眼5份、苹果25份、蛇皮果0份、枸杞8份、芦荟5份和柠檬5份的原料清洗干净后沥干;
步骤S22:将步骤S21中得到的原料混合,放入打浆机中打浆2h,得到原料浆;
步骤S23:使用滤布的目数为100目的压滤机将所述原料浆压滤去渣,得到滤液;
步骤S24:在所述滤液中加入葡萄糖酸锌1份、柠檬酸钠1份和山梨酸钾1份;
步骤S25:将步骤S24中得到的物质进行脱气均质,得到所述朝鲜蓟复合饮料;
步骤S26:将所述朝鲜蓟复合饮料装袋,灭菌。
实施例3:
一种朝鲜蓟复合饮料的制备方法,所述制备方法包括如下步骤:
步骤S31:将重量分数为朝鲜蓟50份、猕猴桃20份、人参10份、茯苓12份、龙眼10份、苹果20份、蛇皮果5份、枸杞2份、芦荟3份和柠檬2份的原料清洗干净后沥干;
步骤S32:将步骤S31中得到的原料混合,放入打浆机中打浆2h,得到原料浆;
步骤S33:使用滤布的目数为100目的压滤机将所述原料浆压滤去渣,得到滤液;
步骤S34:在所述滤液中加入葡萄糖酸锌2份、柠檬酸钠2份和山梨酸钾2份;
步骤S35:将步骤S34中得到的物质进行脱气均质,得到所述朝鲜蓟复合饮料;
步骤S36:将所述朝鲜蓟复合饮料装袋,灭菌。
由以上技术方案可知,本发明实施例示出一种朝鲜蓟复合饮料及其制备方法,所述复合饮料的原料包括朝鲜蓟、猕猴桃、人参、茯苓、龙眼、苹果、蛇皮果、枸杞、芦荟、柠檬、葡萄糖酸锌、柠檬酸钠和山梨酸钾。本发明实施例中通过多种水果与朝鲜蓟混合制成的饮料,具有多种营养物质,同时饮料风味独特,酸甜适中。

1.一种朝鲜蓟复合饮料,其特征在于,所述复合饮料的原料包括朝鲜蓟、猕猴桃、人参、茯苓、龙眼、苹果、蛇皮果、枸杞、芦荟、柠檬、葡萄糖酸锌、柠檬酸钠和山梨酸钾。
2.根据权利要求1所述的一种朝鲜蓟复合饮料,其特征在于,所述复合饮料的原料重量配比为:朝鲜蓟30-50份、猕猴桃10-20份、人参5-10份、茯苓5-12份、龙眼5-10份、苹果20-25份、蛇皮果5-10份、枸杞2-8份、芦荟3-5份、柠檬2-5份、葡萄糖酸锌1-2份、柠檬酸钠1-2份和山梨酸钾1-2份。
3.根据权利要求2所述的一种朝鲜蓟复合饮料,其特征在于,所述复合饮料的原料重量配比为:朝鲜蓟40份、猕猴桃15份、人参8份、茯苓9份、龙眼8份、苹果23份、蛇皮果8份、枸杞5份、芦荟4份、柠檬3份、葡萄糖酸锌1.5份、柠檬酸钠1.5份和山梨酸钾1.5份。
4.一种权利要求1-3所述的朝鲜蓟复合饮料的制备方法,其特征在于,所述制备方法包括如下步骤:
步骤一:将朝鲜蓟、猕猴桃、人参、茯苓、龙眼、苹果、蛇皮果、枸杞、芦荟和柠檬清洗干净后沥干;
步骤二:将步骤一中得到的原料混合,放入打浆机中打浆,得到原料浆;
步骤三:将所述原料浆压滤去渣,得到滤液;
步骤四:在所述滤液中加入葡萄糖酸锌、柠檬酸钠和山梨酸钾;
步骤五:将步骤四中得到的物质进行脱气均质,得到所述朝鲜蓟复合饮料。
5.根据权利要求4所述的一种朝鲜蓟复合饮料的制备方法,其特征在于,所述步骤S03中压滤使用的滤布的目数为100目。
6.根据权利要求4所述的一种朝鲜蓟复合饮料的制备方法,其特征在于,所述打浆机打浆的时间为2h。
7.根据权利要求4所述的一种朝鲜蓟复合饮料的制备方法,其特征在于,在所述步骤五后,所述制备方法还包括:将所述朝鲜蓟复合饮料装袋,灭菌。
