Abstract
本发明属于保健食品技术领域,为了解决现有莜麦在实际食用过程中,操作繁杂、不易加工制作的问题,提供了一种抗疲劳莜麦熟食成型面及制备方法。由莜麦粉、高筋小麦粉、红薯粉、螺旋藻粉、食用盐、苦瓜汁、沙棘汁、蓝莓汁、水按一定比例混合制备而成。上述原料复配后,提高了莜麦面的抗疲劳、改善亚健康体质等保健功效。本发明所制备的抗疲劳莜麦熟食成型面口感细腻滑爽,麦香味浓郁,同时还有淡淡的沙棘和蓝莓的味道,使不喜莜麦味的食用者也能够接受其味道;且易于保存,易于携带,将其再次浸泡软化后同样能够成型。适合小型作坊供市场或者工业化生产。

本发明属于保健食品技术领域,具体涉及一种抗疲劳莜麦熟食成型面及制备方法。
背景技术
莜麦,别名:油麦,拉丁文名:Avena chinensis (Fisch. ex Roem. et Schult.)Metzg。禾本科、燕麦属一年生植物,学名为“裸粒类型燕麦”或“裸燕麦”,原产中国的燕麦品种。秆丛生,叶鞘基生者长于节间,常被微毛,叶片质软,圆锥花序开展,分枝纤细,剌状粗糙。小穗具小穗轴坚韧,无毛,弯曲,颖近相等,外稃革质较软,基盘无毛,直立或反曲;先端芒尖,与稃体分离。花果期6-8月。
莜麦的营养价值很高,蛋白质含量平均达15.6%,高出大米100%、玉米75%、小麦面粉66%、小米60%,8种氨基酸组成较平衡,赖氨酸含量还高于大米和小麦面粉;脂肪和热能都很高,脂肪是大米的5.5倍,小麦面粉的3.7倍。
莜麦是营养丰富的粮食作物,在禾谷类作物中蛋白质含量最高,且含有人体必需的8种氨基酸,其组成也较平衡。莜麦营养丰富,耐饥抗寒,在内蒙西部被誉为一宝,也是坝上地区三宝的第一宝。莜麦含糖分少;蛋白多,是糖尿病患者较好的食品。又因脂肪中含有较多的亚油酸,是老年人常用的疗效食品。
莜面具有医药保健作用,用于产妇催乳、婴儿发育不良以及老年体弱症。莜麦含高蛋白低糖,是糖尿病人的极好食品,脂肪中较多的亚油酸可降低胆固醇在心血管中的积累,降血脂,对动脉粥样硬化性冠心病、高血压均有疗效。据1981~1985年中国农科院与北京市心脑血管研究中心、北京市海淀医院等18家医疗单位5轮动物试验和3轮997例临床观察研究证明:高血脂患者连续3个月,日进食100克燕麦片后,临床可见,胆固醇、 β脂蛋白、甘油三脂及体重都明显降低,对于因肝、肾病变、糖尿病等引起的继发性高血脂症也有同样明显疗效。莜面属低热食品,食后易引起饱感,长期食用具有减肥功效。此外,莜面中含有丰富的维生素B1、B2、E、叶酸等,可以改善血液循环、缓解生活工作带来的压力;含有的钙、磷、铁、锌、锰等矿物质也有预防骨质疏松、促进伤口愈合、防止贫血的功效。
普通莜麦米:外壳坚硬、含有芒刺,煮后三生三熟,不但口感不好,在实际食用过程中,原始民间操作比较繁琐。且对肠胃消化以及营养吸收产生影响,因此不可以多食,每人每天的量不能超过20-30g。而随着人们生活节奏的加快,越来越多的人没有时间和经历来制作繁琐操作工序的莜麦。
莜麦的最大特色是它的吃法 -“三生三熟”。所谓“三生三熟”,就是说,从生莜麦到做成能吃的莜麦面制品,要经历三次生三次熟的过程。莜麦收割下来,拉到场上脱粒,脱下来的籽粒自然是生的,不能吃。这就是“一生”。要将莜麦磨成粉,须先将麦粒炒熟。支一口大铁锅,将脱好的莜麦倒入锅内,下架文火,用锅铲徐徐翻动,颇类似于街头的糖炒栗子。等到莜麦粒炒到黄熟微焦,飘出香味,这就成了 " 一熟 ",将炒熟的麦粒磨成莜麦面,这就又成了生的了。这就是“二生”。莜麦面粉从外观上看,除了颜色略暗外,和普通小麦磨成的面粉没什么大区别。莜麦面粉在吃的时候,要先和成面,而最特别的是,和面时不能用凉水,得用开水(当地人叫滚水)。舀适量的莜麦面粉在面盆里,兑上一半的滚水,就可以和面了。由于是滚水和面,所以这就成了“二熟”。和好的面,要趁热制成莜麦面制品上笼屉去蒸。莜麦面制品形式多种多样,最省力偷懒的,是用一个木制的压榨机,将面团挤压成许多条面条,这叫做“压饸饹”;讲究一点的,用手将莜麦面团在案板上搓成细细的面条,称之为“莜麦面鱼鱼”,或者是将一小团面放置在硬而且光滑的板子上,用手掌推成一个椭圆型的面片,然后用手指卷成圆筒,立在笼屉上,大小如拇指一般,称之为“窝窝”。不管是压饸饹,鱼鱼还是窝窝,现又成了生的了(三生)。接下来就是添水加柴,烧火猛蒸。当蒸笼中白烟升腾,屋中弥漫着莜麦面那特有的气味时,莜麦面蒸熟了(三熟)。这时,莜麦面才真正能吃。
申请号为201510757254.2,发明名称为一种莜麦面的加工方法的专利公开了一种莜麦面的加工方法,将莜麦面与水按照重量比为 1 :1 的比例置于和面机中开机,按照 50公斤面粉 /3 ~ 5 分钟搅拌,制成面团 ;将上述步骤的面团置于面团打快机中,转速为100 ~ 200 转 / 分,5 ~ 10 秒,面团打成直径为3 ~5cm 的小块 ;小块面团平铺在的蒸箱的每个盛物盘中,待锅炉气压表升到 0.08 ~ 0.1MPa 时,放气 35 ~ 45 分钟,即可熟透 ;熟化好的面团置于莜麦面成型机中成型 ;冷却 :成型好的莜麦面半成品下方设鼓风机对其强制制冷,经过风冷降温,截断,即得莜麦面成品。但是该专利所述方法获得的莜麦面风干后,食用时再泡软后是难以成型的,因此食用时难成型,不利于蒸煮,难以形成面条等可食物。
发明内容
本发明为了解决现有莜麦在实际食用过程中,操作繁杂、不易加工制作的问题,提供了一种抗疲劳莜麦熟食成型面及制备方法。
本发明由如下技术方案实现的:一种抗疲劳莜麦熟食成型面,由以下重量份的原料混合制备而成:莜麦粉55-70份、高筋小麦粉10-20份、红薯粉3-8份、螺旋藻粉3-8份、食用盐0.5-1.5份、苦瓜汁8-12份、沙棘汁5-15份、蓝莓汁5-15份、水25-35份。
优选配比为:莜麦粉60份、高筋小麦粉15份、红薯粉5份、螺旋藻粉5份、食用盐1份、苦瓜汁10份、沙棘汁10份、蓝莓汁10份、水30份。
制备所述的一种抗疲劳莜麦熟食成型面的方法,包括如下步骤:
(1)混料、熟化:将莜麦粉、高筋小麦粉、红薯粉、螺旋藻粉和食用盐按比例加入搅拌机中,50-100rpm搅拌20-30min混合均匀,苦瓜汁、沙棘汁、蓝莓汁和水按比例混合后加热至沸腾,浓缩至固体混合粉料的22%-28% ml/g,然后将煮沸的浓缩液加入到搅拌机中进行粉体的熟化,控制搅拌机中温度为80-90℃,搅拌速度为50-100rpm,边搅拌边加浓缩液,熟化20-30min;
(2)压面成型:熟化后的面团立即送入压面机中压成1-3mm厚的面片;
(3)烘干:将压制好的面片送入热风循环干燥箱中,控制干燥箱中温度为70-90℃,干燥30-40min即可。
所述步骤(2)中的面片送入压条机中压制成面条后烘干。
本发明中苦瓜清热解毒:苦瓜能泄去心中烦热,排除体内毒素。苦瓜最好的吃法还是凉拌。凉拌能够很好地保留苦瓜中所含有的维生素。能增强皮层活力,使皮肤变得细嫩健美。用鲜苦瓜捣汁或煎汤,对肝火赤目、胃脘痛、湿热痢疾,皆为辅助食疗佳品;散热解暑。苦瓜性味甘苦寒凉,能清热、除烦、止渴。
红薯粉:红薯有补虚乏,益气力,健脾胃,强肾阴的功效。红薯蒸、切、晒、收,充作粮食,称做薯粮,使人长寿少疾。《本草纲目拾遗》说,红薯能补中、和血、暖胃、肥五脏。《金薯传习录》说它有6种药用价值:治痢疾和泻泄;治酒积和热泻;治湿热和黄疸;治遗精和白浊;治血虚和月经失调;治小儿疳积。《陆川本草》说,红薯能生津止渴,治热病口渴。
螺旋藻粉:自由基是人体衰老和疾病的根源之一,超氧化物歧化酶(SOD)可以催化歧化反应清除自由基。螺旋藻可以减轻运动引起的氧自由基损伤,保护细胞膜结构,有抗运动疲劳作用。螺旋藻里的Y—亚麻酸可以降低人体所含的胆固醇,从而可以有效降低高血压和预防心脏病减低胆固醇。螺旋藻中存在螺旋藻多糖、镁、铬等多种降糖物质,可通过多种途径(如促进胰岛素分泌、减缓糖吸收、促进物质代谢,抗氧化等)调节血糖代谢。由于螺旋藻中的藻多糖和藻蓝蛋白均能增强骨髓细胞的增殖活力,促进胸腺、脾脏等免疫器官的生长和促进血清蛋白的生物合成,因此螺旋藻具有免疫增强作用。螺旋藻可以提高应急能力,而且对糖尿病、高血压症、脂肪肝、肾损害均有一定的防治和保护作用。螺旋藻中藻多糖、β-胡萝卜素、藻蓝蛋白均有此作用,因此螺旋藻在抗肿瘤、防癌方面显示出重要作用。螺旋藻中含有大量不饱和脂肪酸,其中亚油酸和亚麻酸占总脂肪酸的45%,两者是构成细胞膜线粒体内磷脂的重要成分,可以防止总胆固醇和甘油三脂在肝脏、血管中大量堆积,避免损害心血管的正常生理功能。
沙棘汁:止咳祛痰,消食化滞,活血散瘀。用于咳嗽痰多、消化不良、食积腹痛、跌扑瘀肿、瘀血经闭。沙棘果和油具有很高的药用价值,可降低胆固醇,治愈心绞痛等作用,还有防治冠状动脉粥样硬化性心脏病的作用;有祛痰、止咳、平喘和治疗慢性气管炎的作用;能治疗胃和十二指肠溃疡以及消化不良等,对慢性浅表性胃炎、萎缩性胃炎、结肠炎等病症疗效显著;对烧伤、烫伤、刀烧、冻伤有很好的治疗作用;对妇女宫颈糜烂有良好的治疗效果。
蓝莓汁:蓝莓中花青素可以保护眼睛蓝莓中含量非常高的花青苷色素对人体的眼睛具有很好地保养的作用,它可以缓解眼睛疲劳、改善人的视力,蓝莓不仅含有维生素A,其主要成分是花青素,可直接加速视网膜、视紫质的合成与再生,让眼睛绽放活力光彩!日本生物医学博士中川和宏撰文:医学临床报告显示,蓝莓中的花青素可以促进视网膜细胞中的视紫质再生,预防近视,增进视力。蓝莓中富含丰富维生素、矿物质和纤维元素等营养成分,多多食用蓝莓可以提高人体免疫力,提高人体素质。蓝莓中丰富的维生素C具有预防癌症,抵抗心脏病的功效。蓝莓果胶丰富,可以稀释人体脂肪,保护人体心脑血管的健康。另外,蓝莓中还有丰富的抗氧化剂,可以延缓人体的衰老。蓝莓中的花色苷有很强的抗氧化性,可抗自由基、延缓衰老、防止细胞的退行性改变,对于抑制血小板聚集,预防大脑病变、动脉硬化等病症具有一定的效果,同时还可以强化毛细血管、改善血液循环、减弱血小板的黏滞性、防止血凝块产生、增强心脑功能、增强儿童骨质密度、防止便秘。
上述原料复配后,提高了莜麦面的抗疲劳、改善亚健康体质等保健功效。本发明所制备的抗疲劳莜麦熟食成型面口感细腻滑爽,麦香味浓郁,同时还有淡淡的沙棘和蓝莓的味道,使不喜莜麦味的食用者也能够接受其味道;且易于保存,易于携带,将其再次浸泡软化后同样能够成型。
将莜麦面先熟化再成型,由于熟化后的莜麦面密度增加,再经过挤压,所制得的莜麦面成品筋度提高,达到不断裂,不粘结效果,有韧性有弹性,将其再次浸泡软化后同样能够成型,适合小型作坊供市场或者工业化生产。
具体实施方式
实施例1:一种抗疲劳莜麦熟食成型面,由以下重量的原料混合制备而成:莜麦粉55g、高筋小麦粉10g、红薯粉3g、螺旋藻粉3g、食用盐0.5g、苦瓜汁8g、沙棘汁5g、蓝莓汁5g、水25g。
制备所述的一种抗疲劳莜麦熟食成型面的方法,包括如下步骤:
(1)混料、熟化:将莜麦粉、高筋小麦粉、红薯粉、螺旋藻粉和食用盐按比例加入搅拌机中,50-100rpm搅拌20-30min混合均匀,苦瓜汁、沙棘汁、蓝莓汁和水按比例混合后加热至沸腾,浓缩至固体混合粉料的22%-28% ml/g,然后将煮沸的浓缩液加入到搅拌机中进行粉体的熟化,控制搅拌机中温度为80-90℃,搅拌速度为50-100rpm,边搅拌边加浓缩液,熟化20-30min;
(2)压面成型:熟化后的面团立即送入压面机中压成1-3mm厚的面片;
(3)烘干:将压制好的面片送入热风循环干燥箱中,控制干燥箱中温度为70-90℃,干燥30-40min即可。
实施例2:一种抗疲劳莜麦熟食成型面,由以下重量的原料混合制备而成:莜麦粉60g、高筋小麦粉15g、红薯粉5g、螺旋藻粉5g、食用盐1g、苦瓜汁10g、沙棘汁10g、蓝莓汁10g、水30g。制备方法为:将熟化后的面团压制成面片后再送入压条机中压制成面条然后烘干,其余制备方法同实施例1所述制备方法。
实施例3:一种抗疲劳莜麦熟食成型面,由以下重量的原料混合制备而成:莜麦粉70g、高筋小麦粉20g、红薯粉8g、螺旋藻粉8g、食用盐1.5g、苦瓜汁12g、沙棘汁15g、蓝莓汁15g、水35g。制备方法同实施例1所述制备方法。
实施例4:一种抗疲劳莜麦熟食成型面,由以下重量的原料混合制备而成:莜麦粉65g、高筋小麦粉20g、红薯粉6g、螺旋藻粉6g、食用盐1.2g、苦瓜汁11g、沙棘汁8g、蓝莓汁9g、水33g。制备方法同实施例2所述制备方法。

1.一种抗疲劳莜麦熟食成型面,其特征在于:由以下重量份的原料混合制备而成:莜麦粉55-70份、高筋小麦粉10-20份、红薯粉3-8份、螺旋藻粉3-8份、食用盐0.5-1.5份、苦瓜汁8-12份、沙棘汁5-15份、蓝莓汁5-15份、水25-35份。
2.根据权利要求1所述的一种抗疲劳莜麦熟食成型面,其特征在于:莜麦粉60份、高筋小麦粉15份、红薯粉5份、螺旋藻粉5份、食用盐1份、苦瓜汁10份、沙棘汁10份、蓝莓汁10份、水30份。
3.制备权利要求1或2所述的一种抗疲劳莜麦熟食成型面的方法,其特征在于:包括如下步骤:
(1)混料、熟化:将莜麦粉、高筋小麦粉、红薯粉、螺旋藻粉和食用盐按比例加入搅拌机中,50-100rpm搅拌20-30min混合均匀,苦瓜汁、沙棘汁、蓝莓汁和水按比例混合后加热至沸腾,浓缩至固体混合粉料的22%-28% ml/g,然后将煮沸的浓缩液加入到搅拌机中进行粉体的熟化,控制搅拌机中温度为80-90℃,搅拌速度为50-100rpm,边搅拌边加浓缩液,熟化20-30min;
(2)压面成型:熟化后的面团立即送入压面机中压成1-3mm厚的面片;
(3)烘干:将压制好的面片送入热风循环干燥箱中,控制干燥箱中温度为70-90℃,干燥30-40min即可。
