Abstract
本发明公开了一种含有黄精葛根的组合物及其保健饮料,该组合物由以下重量份的组分制成:黄精:5‑10份;枸杞:1‑5份;桑葚:1‑2份;覆盆子:1‑3份;葛根:5‑10份;茯苓:2‑5份;山药:2‑5份;鱼腥草:1‑2份。本发明组合物具有益气养血,调节免疫力的作用,且制备的保健饮料加工方法简单,可操作性强,不仅有饮料的色泽和口感,兼具良好的药理作用,裨益人体健康,非常适合大众饮用。
Description
技术领域
本发明属于营养食品技术领域,尤其是一种含有黄精葛根的组合物及其保健饮料,以及该保健饮料的制备方法。
背景技术
随着现代人工作节奏的加快,社会竞争越来越大,高度紧张、高度繁忙的脑力体力劳动对人们的身心及生命机能损害很大,使人的心理、机体超负荷运转,导致多种亚健康、亚病态现象的产生,这一现象逐渐倾向于年轻化,尤其对于年轻女性,面对各种心理压力、社会压力、家庭压力,严重影响女性的身心健康,有些女性因这些压力导致内分泌失调,免疫力下降,引起气血不足,气质血虚等状况,进而对生育产生一定的影响。以药治病,效果占三成,而七成效果要靠食疗。以药膳治病、防病是最理想有效的方法。现今市面上大多保健品含中药成分的存在不同分量的添加剂,而纯天然的产品越来越受到人们的青睐,因此需要发明一种纯天然的女性养生而且服用方便的保健饮料。
大量文献表明,黄精、桑葚、葛根具有滋阴益气的功能。《本经逢原》:黄精,宽中益气,使五藏调和,肌肉充盛,骨髓强坚,皆是补阴之功。《本草经疏》:桑椹甘寒益血而除热为凉血补血益阴之药。葛根是传统的药食两用型植物,研究表明,其含有丰富的葛根黄酮。《本草纲目》载:葛根,性凉、气平、味甘,具清热、降火、起阴气、排毒诸功效。是女性养生的佳品。
另有文献报道,覆盆子、山药益气养血,调节体虚。覆盆子归肝,肾经;含有机酸、糖类及少量维生素C,并没食子酸(ellagic acid),β-谷甾醇(β-sitosterol),覆盆子酸(fupenzic acid)。主治宫冷不孕,带下清稀,尿频遗溺,目昏暗。《本草述》:治劳倦、虚劳,肝肾气虚恶寒,肾气虚逆咳嗽、痿、消瘅、泄泻、赤白浊,鹤膝风,诸见血证及目疾。山药益气养血。手脚发凉常对女性“情有独钟”。中医认为,手脚冰凉与体质虚弱有密切关系,而山药具有很好的补中、益气、养血作用,特别适合手脚发凉症患者。
研究表明,枸杞、茯苓、鱼腥草对提高机体免疫力,消除疲劳具有重要的作用。《神农本草经》记载:“枸杞久服能坚筋骨、耐寒暑,轻身不老,乃中药中之上品。”研究表明,枸杞子富含枸杞多糖,对消除疲劳具有十分明显的作用。茯苓性味甘淡平,入心、肺、脾经。具有渗湿利水,健脾和胃,宁心安神的功效。其药性平和,利湿而不伤正气。所含茯苓酸具有增强免疫力,适量服食可作为春夏潮湿季节的调养佳品。鱼腥草味辛,性寒凉,归肺经。能清热解毒、消肿疗疮、利尿除湿、清热止痢、健胃消食,用治实热、热毒、湿邪、疾热为患的肺痈、疮疡肿毒、痔疮便血、脾胃积热等。现代药理实验表明,鱼腥草具有抗菌、抗病毒、提高机体免疫力、利尿等作用。
此外,现代药理学研究表明黄精的化学成分主要有:黄精多糖,蒽醌类化合物,生物碱,强心苷,木脂素,维生素和多种对人体有用的氨基酸等化合物。但是生黄精具有麻味,刺激咽喉,久闻其生味,有刺目之感。经过炮制后,可以消除其刺激性及副作用,但是传统炮制工艺加工黄精红,外观色泽和口感较差,硒含量会下降,多糖含量也明显下降。
发明内容
本发明的目的是克服现有技术的不足,提供一种黄精葛根保健饮料及其制备方法,以富硒黄精果脯和葛根皮代替生黄精和葛根,不仅实现功效互补,还起到调节风味的作用。
本发明的目的是通过以下方式实现的:
一种含有黄精葛根的组合物,该组合物由以下重量份的组分制成:
黄精:5-10份;枸杞:1-5份;桑葚:1-2份;覆盆子:1-3份;葛根:5-10份;茯苓:2-5份;山药:2-5份;鱼腥草:1-2份。
优选该组合物由以下重量份的组分制成:
黄精:6-10份;枸杞:4-5份;桑葚:1-2份;覆盆子:2-3份;葛根:6-8份;茯苓:3-4份;山药:3-4份;鱼腥草:1-2份。
所述的黄精为富硒黄精果脯。
所述的葛根为葛根皮或全葛根。
上述含有黄精葛根的组合物可以直接粉碎混合或者采用水或其他有机溶剂加热提取过滤,滤液浓缩即得。
上述含有黄精葛根的组合物用于制备益气养血,调节免疫力的作用的药物或保健食品。所述的保健食品包括饼干、饮料、即食冲调粉、糕点。
上述含有黄精葛根的饮料由以下重量份的组分制成:
黄精:5-10份;枸杞:1-5份;桑葚:1-2份;覆盆子:1-3份;葛根:5-10份;茯苓:2-5份;山药:2-5份;鱼腥草:1-2份;蔗糖:5-10份;水:50-100份。
优选含有黄精葛根的饮料由以下重量份的组分制成:
黄精:6-10份;枸杞:4-5份;桑葚:1-2份;覆盆子:2-3份;葛根:6-8份;茯苓:3-4份;山药:3-4份;鱼腥草:1-2份;蔗糖:5-6份;水:80-100份。
上述含有黄精葛根的饮料的制备方法包括以下步骤:
1.原料预处理:将原料分别洗净,绞碎;
2.煎煮:按照重量配比加入原料和水煎煮,煎煮1-2小时;
3.过滤:将煮好的饮料滤去固态物质;
4.杀菌消毒:将过滤后的饮料冷却并进行低温杀菌消毒。
所述的低温杀菌为60-65℃,杀菌时间为20min。最佳灭菌杀毒条件为65℃条件下,灭菌杀毒20min。
本发明采用黄精、葛根、枸杞、桑葚、覆盆子、茯苓、山药、鱼腥草为原料,按照适当的比例进行煎煮过滤,并进行低温杀菌消毒,即得黄精葛根保健饮料,该保健饮料加工方法简单且可操作性强,不仅有饮料的功效,且兼具良好的药理作用,相得益彰,裨益人体健康,非常适合大众,尤其是女性群体饮用的保健饮料。
与现有技术相比,本发明具有如下特点:
1.本发明产品的口感、风味良好。本发明的黄精采用富硒黄精果脯形式,不仅去除了黄精的苦味和杂味,渗出了芳香气味,同时保持了黄精固有的保健活性成分,保留了富硒黄精的药用功能,而且改善了传统炮制工艺制备黄精的外观色泽和口感;
2.本发明中使用的原料利用率高。原料选择葛根皮或全葛根,是对资源的整合和高效利用,避免葛根中的有效成分浪费。
3.本发明产品食用安全性高。对成品进行了杀毒灭菌,有效抑制了有害菌及杂菌的生长,延长了本发明产品的保质期,且不需要添加任何防腐剂,提升了本发明产品的食用安全性;
4.本发明中的原料科学配伍,功效性强。黄精葛根保健饮料选择了八位药食同源的材料进行配伍,这几种原料都属于滋补类药食两用之品,配伍后具有益气养血,调节免疫力的作用,同时,无化学成分添加,使产品呈现自然风味,适合普通人群泡饮。
5.本发明工艺流程简单,易于操作。相较于既有的生产工艺,本发明优化了生产工艺,降低了生产成本,特别是杀菌消毒条件显著影响产品稳定性及感官评定,本发明确定最佳灭菌杀毒条件(65℃,20min),生产出最佳产品。同时,产品携带方便,密封性好,风味不逸散。

具体实施方式
下面结合具体实例对本发明作更详细的阐述。其中,所采用的黄精为富硒黄精果脯采购于安徽省旌德胜仕达农业科技有限公司所采用的葛根为葛根皮或全葛根。
实施例一:
一、本例生产的黄精葛根保健饮料,按下列重量份的原料制备而成:
黄精:6份;枸杞:4份;桑葚:1份;覆盆子:2份;葛根:6份;茯苓:3份;山药:3份;鱼腥草:1份;蔗糖:5份;水:80份。
二、本例生产的黄精葛根保健饮料,按照下述步骤进行:
1.原料预处理:将原料分别洗净,绞碎;
2.煎煮:按照重量配比加入原料和注入相应的水煎煮,煎煮2小时;
3.过滤:将煮好的饮料通过滤网滤去饮料中的固态物质;
4.杀菌消毒:将过滤后的饮料冷却并进行低温杀菌消毒;低温杀菌消毒条件为65℃,20min。
5.抽检灌装:将经过杀菌消毒的饮料取一份作抽样检查原材料,若各项指标符合国家食品安全标准即可完成制备,瓶装或灌装出厂。
三、本例生产的黄精葛根保健饮料,按照下述方法评价:
感官审评:进行色泽、滋味、气味和状态审评。将制得的黄精葛根保健饮料取适量置于50ml烧杯中,在自然光下观察色泽和状态。嗅其气味,用温开水漱口,品其滋味。评价标准参考GB 16470-2014《食品安全国家标准保健食品》中关于感官的要求。
理化及微生物审评:检测指标为:总灰分、水分、重金属(铅、砷)、微生物(菌落总数、大肠菌群、霉菌及酵母菌、金色葡萄球菌、沙门氏菌),其中,总灰分的测定采用GB5009.4-2010《食品安全国家标准食品中灰分的测定》、水分的测定采用GB 5009.3-2010《食品安全国家标准食品中水分的测定》、铅的测定采用GB 5009.12《食品中铅的测定》、砷的测定采用GB/T 5009.11《食品中总砷及无机砷的测定》、微生物的测定采用GB/T4789.21《食品卫生微生物学检验冷冻饮品、饮料检验》。
四、本例生产的黄精葛根保健饮料,评价结果如下:

实施例二:
一、本例生产的黄精葛根保健饮料,按下列重量份的原料制备而成:
黄精:10份;枸杞:5份;桑葚:2份;覆盆子:2份;葛根:8份;茯苓:4份;山药:4份;鱼腥草:2份;蔗糖:6份;水:100份。
二、本例生产的黄精葛根保健饮料,按照下述步骤进行:
1.原料预处理:将原料分别洗净,绞碎;
2.煎煮:按照重量配比加入原料和注入相应的水煎煮,煎煮2小时;
3.过滤:将煮好的饮料通过滤网滤去饮料中的固态物质;
4.杀菌消毒:将过滤后的饮料冷却并进行低温杀菌消毒;低温杀菌消毒条件为65℃,20min。
5.抽检:将经过杀菌消毒的饮料取一份作抽样检查原材料,若各项指标符合国家食品安全标准即可完成制备,瓶装或灌装出厂。

5.抽检:将经过杀菌消毒的饮料取一份作抽样检查原材料,若各项指标符合国家食品安全标准即可完成制备,瓶装或灌装出厂。
三、本例生产的黄精葛根保健饮料,按照下述方法评价:

为研究本发明保健饮料的作用,采用自身对照及组间对照法,选择符合实验条件的志愿受试者120例,随机分为试验组和对照组,每组60人。试验组服用按照实施例方法制备的受试物,每日2次,每次1瓶(200ml),对照组服用安慰剂,用法与用量同试验组,连续服用30d。结果:试验组免疫力(采用常规血液学检查方法)均比试食前有显著改善(P≤0.05),且面色比试食前有明显改善,面色变红润。因此,该保健饮料能够益气补血,调节免疫力的作用。
以上仅为本发明较佳的实施例,故不能依此限定本发明实施的范围,对于所属领域的普通技术人员来说,在上述说明的基础上还可以做出其他不同形式的变化或变动。这里无法对所有的实施方式予以穷举。凡是属于本发明的技术方案所引申出的显而易见的变化或变动仍处于本发明的保护范围之列。

1.一种含有黄精葛根的组合物,其特征在于该组合物由以下重量份的组分制成:
黄精:5-10份;枸杞:1-5份;桑葚:1-2份;覆盆子:1-3份;葛根:5-10份;茯苓:2-5份;山药:2-5份;鱼腥草:1-2份。
2.根据权利要求1所述的含有黄精葛根的组合物,其特征在于该组合物由以下重量份的组分制成:
黄精:6-10份;枸杞:4-5份;桑葚:1-2份;覆盆子:2-3份;葛根:6-8份;茯苓:3-4份;山药:3-4份;鱼腥草:1-2份。
3.根据权利要求1所述的含有黄精葛根的组合物,其特征在于所述的黄精为富硒黄精果脯。
4.根据权利要求1所述的含有黄精葛根的组合物,其特征在于所述的葛根为葛根皮或全葛根。
5.根据权利要求1所述的含有黄精葛根的组合物,其特征在于该组合物用于制备益气养血,调节免疫力的作用的药物或保健食品。
6.根据权利要求5所述的含有黄精葛根的组合物,其特征在于所述的保健食品包括饼干、饮料、即食冲调粉、糕点。
7.一种含有黄精葛根的饮料,其特征在于该饮料由以下重量份的组分制成:
黄精:5-10份;枸杞:1-5份;桑葚:1-2份;覆盆子:1-3份;葛根:5-10份;茯苓:2-5份;山药:2-5份;鱼腥草:1-2份;蔗糖:5-10份;水:50-100份。
8.根据权利要求7含有黄精葛根的饮料,其特征在于该饮料由以下重量份的组分制成:
黄精:6-10份;枸杞:4-5份;桑葚:1-2份;覆盆子:2-3份;葛根:6-8份;茯苓:3-4份;山药:3-4份;鱼腥草:1-2份;蔗糖:5-6份;水:80-100份。
9.权利要求7或8所述的含有黄精葛根的饮料的制备方法,其特征在于该方法包括以下步骤:
1).原料预处理:将原料分别洗净,绞碎;
2).煎煮:按照重量配比加入原料和水煎煮,煎煮1-2小时;
3).过滤:将煮好的饮料滤去固态物质;
4).杀菌消毒:将过滤后的饮料冷却并进行低温杀菌消毒。
10.权利要求9所述的含有黄精葛根的饮料的制备方法,其特征在于所述的低温杀菌为60℃-65℃,杀菌时间为20min。
