本发明属于益生菌制品技术领域,涉及一种有利于口腔健康的益生菌固体饮料,配方包括如下质量比的成分:柠檬提取物20‑30wt%,菊粉10‑20wt%,唾液链球菌15‑20wt%,唾液乳杆菌15‑20wt%,嗜酸乳杆菌15‑20wt%。本发明选用的三种益生菌能通过抑制致病菌生长和繁殖、与致病菌竞争口腔黏膜表面的粘附位点等,保护口腔健康,预防口腔疾病;而菊粉能够改善产品风味,促进益生菌的增殖,还能吸走产品中的水分,益生菌抗逆性更佳,存活率更高,从而使产品具有更长的保质期;柠檬提取物气味清新,一方面使固体饮料具有独特的风味,另一方面可快速消散口腔异味,且富含维生素B和维生素C,能预防牙龈出血和口腔溃疡,强健牙龈。

技术领域
本发明涉及益生菌制品技术领域,特别涉及一种有利于口腔健康的益生菌固体饮料。
背景技术
益生菌是一种活的微生物,在给予足够剂量时对宿主的健康起有益作用。益生菌包括乳杆菌、双歧杆菌和酵母菌等,主要通过维持宿主体内菌群平衡、分泌抗菌物质和调节免疫应答等作用来保护机体健康。在生物医学领域,益生菌目前主要用于治疗胃肠道疾病。益生菌主要通过以下几种机制来预防和改善口腔疾病:
①分泌有机酸、过氧化氢和细菌素等多种抗菌物质,从而抑制致病菌的生长;
②与致病菌竞争黏膜表面的结合位点,抑制致病菌对口腔软硬组织的粘附;
③通过调节pH和氧化还原电势,改善周围环境;
④通过提高非特异性免疫和调节宿主的体液和细胞免疫来发挥益生作用。
口腔是一个完整复杂的生态系统,适宜的营养、温度和湿度为多种口腔微生物的定居、生长和繁殖提供了良好的环境和条件。口腔微生物种类达700多种,他们寄生在口腔淋膜、牙齿、舌头上以及唾液中,这些微生物共同保卫人体的口腔健康。当内在或外在因素变化造成口腔中微生态系统失去平衡时,就易引起常见的口腔疾病,如龋齿、牙周炎、牙龋炎和口腔异味等,且口腔疾病还能诱发心血管疾病、糖尿病等。
目前市场有口香糖和漱口水可清除口腔异味,但都是暂时性的,另部分漱口水还可用于治疗牙龈炎、牙周炎、口腔溃疡等口腔疾病,但治疗性漱口水都含有消炎、杀菌的药物成分,除杀死致病菌外,还会杀死有益菌,长期使用会导致口腔内正常菌群失调,还有可能引起过敏反应,反而不利于口腔健康。
本发明就是为了提供一种新的益生菌固体饮料来解决以上问题。
发明内容
本发明的主要目的在于提供一种口味独特且有利于口腔健康的益生菌固体饮料及其使用方法。
本发明通过如下技术方案实现上述目的:一种有利于口腔健康的益生菌固体饮料,配方包括如下质量比的成分:
具体的,配方中还包括1-10wt%的甜味剂。
进一步的,所述甜味剂为木糖醇。
具体的,配方中还包括1-5wt%的碳酸钙。
本发明技术方案的有益效果是:
1、本益生菌固体饮料选用的三种益生菌能通过抑制致病菌生长和繁殖、与致病菌竞争口腔黏膜表面的粘附位点等,保护口腔健康,预防口腔疾病;而菊粉能够改善产品风味,促进益生菌的增殖,还能吸走产品中的水分,益生菌抗逆性更佳,存活率更高,从而使产品具有更长的保质期;柠檬提取物气味清新,一方面使固体饮料具有独特的风味,另一方面可快速消散口腔异味,且富含维生素B和维生素C,能预防牙龈出血和口腔溃疡,强健牙龈。
2、甜味剂能够提升益生菌固体饮料的风味。
3、木糖醇甜度与蔗糖相当,溶于水可吸收大量热量,以固体形式食用时,会在口中产生愉快的清凉感,木糖醇还能抑制口腔细菌生长,破坏菌斑的形成,降低龋齿的发病率。
3、碳酸钙能够为牙齿补充钙质,坚固牙齿,防止松动,在菊粉的作用下能够加快钙质的吸收。
具体实施方式
本发明所用原料柠檬提取物由西安韵禾生物科技有限公司提供,菊粉由昆山拓丰贸易有限公司提供,唾液链球菌、唾液乳杆菌、嗜酸乳杆菌由润盈生物工厂(上海)有限公司提供,木糖醇、葡萄糖、蔗糖、碳酸钙由上海吉天食品有限公司提供。
唾液链球菌是口腔正常细菌,能产生两种细菌素:唾液素A和唾液素B,唾液素A是抑菌剂,唾液素B是杀菌剂,对导致口腔异味的相关细菌具有抑制作用,其作为有益菌直接用于口腔,对多种口腔细胞都有黏附性,更易在口腔内定植。
变形链球菌是龋齿的主要致病菌,而唾液乳杆菌能抑制变形链球菌,且其能在变形链球菌产生的低pH环境下生存。
具核梭杆菌是牙周病的主要致病菌,且具核梭杆菌还能产生导致口臭的硫化物;而嗜酸乳杆菌粘附能力较强,可与具核梭杆菌竞争相同的粘附位点,降低具核梭杆菌粘附率,且嗜酸乳杆菌可通过影响羟基磷灰石表面菌斑生物膜的组成而抑制致病菌的粘附。
木糖醇甜度与蔗糖相当,溶于水可吸收大量热量,以固体形式食用时,会在口中产生愉快的清凉感,木糖醇还能抑制口腔细菌生长,破坏菌斑的形成,降低龋齿的发病率。
碳酸钙能够为牙齿补充钙质,坚固牙齿,防止松动,在菊粉的作用下能够加快钙质的吸收。
下面结合具体实施例对本发明作进一步详细说明。
实施例1~9
按照表1所示质量配比配制益生菌固体饮料:

实施例1~9所得益生菌固体饮料从风味和口腔健康的效果两方面进行测试,测试参数和方法如下:
①风味评级:让100位用户品尝益生菌固体饮料,对风味感受进行评级,分数区间为1~10(6分及格),然后取平均值。
②有害菌检测:让10位用户试用益生菌固体饮料1个月,提取口腔样本培养计算使用前后有害菌数环比,然后取平均值。

由表2可知,本发明益生菌固体饮料风味能够被大多数用户接受,而且都能对口腔有害菌起到明显的抑制作用,加入甜味剂对风味有进一步提升。除此以外,根据观察,长期使用益生菌固体饮料对多种口腔疾病如龋齿、牙周炎、牙龈炎、口腔异味都具有改善和预防的功效。
以上技术效果得益于菊粉与柠檬提取物的配合:菊粉能够改善产品风味,促进益生菌的增殖,还能吸走产品中的水分,益生菌抗逆性更佳,存活率更高,从而使产品具有更长的保质期;柠檬提取物气味清新,一方面使固体饮料具有独特的风味,另一方面可快速消散口腔异味,且富含维生素B和维生素C,能预防牙龈出血和口腔溃疡,强健牙龈。
