Description

用于生产食品的包装部分的方法和通过该方法生产的部分
技术领域
本发明涉及一种用于生产食品的包装部分的方法和通过执行该方法而生产的包装部分。
背景技术
这种包装部分通常为这样的类型:包括限定出用于容纳食品的区域的杯状部和覆盖食品并封闭杯状部的盖子,盖子的导热的片状封口部被弯折到盖子的与容纳区域相反的外面上并密封到所述外面,食品被包含在容纳区域中并被盖子覆盖。
本发明更具体地应用于生产冷浇注(即在低于50℃的温度下浇注)的食品的密封包装部分,该食品非限制性地例如为包装为粘性液体或糊状状态的鲜奶酪或由重组方法或薄膜技术获得的奶酪(例如在WO2006/030128和WO2008/151820中描述的奶酪)、奶酪冰袋、酸奶衍生物或者具有活菌的任何其他鲜乳制品、肉汤块或黄油。
最普遍的情况是,冷浇注的食品在被包装为单独的部分时被简单地包装在围绕产品剂量弯折的柔性材料片中。以此方式包装的食品的例子是例如以品牌销售的黄油和鲜奶酪。这种类型的简单包装具有不密封、致使产品快速干燥以及由此造成的保存期限较短的缺点。
因此,本发明的目的是获得一种用于冷浇注的食品部分的密封包装,以便避免产品的干燥并有助于随时间更好地储存产品和改进产品的质量。产品的保存期限将会增加,且出口可能性扩大。
已知允许必须冷浇注的产品的密封包装的、用于生产食品的密封包装部分的方法。这些方法大致包括以下步骤:
-提供杯状部,该杯状部限定出用于容纳食品的内部区域,
-将食品冷浇注到所述杯状部的容纳区域中,
-用盖子覆盖食品,所述盖子被布置为使得所述杯状部的片状封口部在所述覆盖步骤之后朝向所述盖子的外侧被弯折,
-将所述片状封口部热封到所述盖子的朝向所述容纳区域定向的内面上。
对于密封步骤,金属密封夹是最常用的,该金属密封夹被加热并将片状封口部和盖子夹在它们之间,活化涂覆片状封口部的热封漆。
这种方法例如由EP1,072,535和EP2,284,082已知。该方法的一个缺点是其导致在所述部分的周边上形成领圈,使得所述部分在美学上不太令人愉快并且相对不太实用。该方法的另一个缺点是其需要大量的包装,这对于环境不友好。
还已知用于生产可被热浇注(通常在大于65℃的温度下浇注)的食品(例如熔化的奶酪)的密封包裹部分的方法,其使得能够获得不具有周边领圈的密封包装部分。这些方法通常包括以下步骤:
-提供金属杯状部,该金属杯状部限定出用于容纳食品的内部区域,
-将食品热浇注到杯状部的容纳区域中,
-用盖子覆盖食品,所述盖子布置为使得金属盖子的片状封口部在所述覆盖步骤之后朝向盖子的外侧延伸,
-将片状封口部弯折到盖子的与容纳区域相反的外面上,以及
-将片状封口部热封到所述外面上。
对于密封步骤,金属密封烙铁是最常用的,该金属密封烙铁被加热和压在片状封口部上,从而使片状封口部压靠盖子并活化涂覆片状封口部的热封漆。通过施加该压力和该加热,在该烙铁作用下进行接触的片状封口部和盖子被密封,且所述部分被向下填压,其说明了该填压赋予所述部分其最终形状。
期望能够将这种方法用于需要冷浇注的食品,以便获得不包括周边领圈的冷浇注食品的密封包装部分。
然而,将食品热浇注到包装中这个事实构成了这些已知方法的一个必要特征。实际上,食品在被浇注之后发出的热量被用作主要的热输入来使热封漆超过其熔化温度并由此允许其被活化。该热输入特别使得能够以足够短的时间密封这些部分以跟上工业生产的节奏。
因此,问题在于将热浇注步骤替换成冷浇注步骤。实际上,通过以低于热封漆的熔化温度的温度浇注包含在所述部分中的食品,食品不能有助于将所述漆加热超过其熔化温度;相反,食品甚至会吸收由密封烙铁贡献的大部分卡路里。因此,通过将上述方法中的热浇注步骤替换成冷浇注步骤,密封持续时间被显著地延长,且变得不可能跟上工业生产的节奏。另一个看到的缺点在于由密封烙铁导致的包含在包装中的食品的加热使得食品的感官质量恶化。
EP2,177,437中提出了上述问题的一种解决方案。其包括在密封期间通过感应对杯状部加热。
然而,该解决方案执行起来复杂且昂贵。此外,其没有完全解决食品加热的问题,并且导致损失感官质量的风险。
发明内容
因此,本发明的一个目的在于允许其中食品必须被冷浇注的包装食品部分的简单且便宜的密封,而不会在所述部分的外侧形成突出的领圈。其他目的在于避免在密封期间对包含在所述部分中的食品进行加热,和使得能够跟上工业生产的节奏。
为此,本发明涉及一种用于生产包装食品部分的方法,该方法包括以下步骤:
-提供杯状部,该杯状部限定出用于容纳食品的内部区域;
-在低于50℃的温度下将食品冷浇注到所述杯状部的容纳区域中,
-用隔热的盖子覆盖食品,所述盖子被布置为使得所述金属盖子的导热的片状封口部在所述覆盖步骤之后朝向所述盖子的外侧延伸,
-将所述片状封口部弯折到所述盖子的与所述容纳区域相反的外面上,和
-将所述片状封口部热封到所述外面上。
盖子隔热这个事实极大地限制了在密封期间卡路里朝向食品的泄漏,这使得能够实现减少密封持续时间和避免加热食品的双重目的。
根据本发明的具体实施例,所述方法还具有单独地或根据任何技术上可能的结合而考虑的一个或多个下述特征:
-所述密封步骤包括以下子步骤:
○将至少一个热的密封烙铁施加到所述片状封口部上,所述片状封口部插入到所述密封烙铁与所述盖子之间,和
○利用由所述或每个密封烙铁提供给热粘合材料的热来活化设置在所述片状封口部与所述盖子之间的接合面处的至少一种热粘合材料;
-用于施加所述或每个密封烙铁的步骤包括将两个密封烙铁相继地施加到所述片状封口部上;
-所述片状封口部包括朝向所述容纳区域定向的内面和背向所述容纳区域定向的外面,并且在其内面与外面之间具有第一表面传热系数,所述盖子包括朝向所述容纳区域定向的内面,并且在其内面与外面之间具有第二表面传热系数,第一表面传热系数与第二表面传热系数的比率大于或等于400,特别是大于或等于800;
-所述第一表面传热系数大于或等于107,特别是大于或等于1.3×107
-所述第二表面传热系数小于或等于2.5×104,特别是小于或等于1.7×104
-所述片状封口部具有大于或等于200W.m-1.K-1的导热系数;
-所述盖子具有小于或等于0.5W.m-1.K-1的导热系数;
-所述片状封口部主要由金属构成,且优选地超过70%由金属构成,所述金属特别是铝;
-所述盖子主要由塑料构成,且优选地超过90%由塑料构成,所述塑料特别是发泡塑料;
-所述塑料为聚合物,例如发泡型定向聚丙烯;
-所述盖子包括塑料层和沉积在塑料层的至少一个面上的金属层,所述金属层插入到所述热粘合材料与所述塑料层之间。
本发明还涉及一种包装食品部分,利用根据前述权利要求中任一项所述的生产方法获得。
“在本发明的上下文中,“部分”是指包装中的一定量的食品,该一定量的食品的质量在5g和250g之间”。
具体地,本发明还涉及一种上述类型的包装部分,其中,盖子是隔热的,且食品是单独或混合的基于鲜奶凝乳的产品或者是源自重组方法的奶酪。

具体实施方式
图1和图2中所示的包装部分10是包含食品12的包装食品部分。其包括杯状部14和盖子18,杯状部限定出用于容纳食品12的区域16,盖子覆盖食品12并封闭杯状部14。
食品12例如是单独或混合的基于鲜奶凝乳的产品或者源自重组方法的奶酪。
杯状部14具有底部19、从底部19的周边基本垂直于该底部伸出的周边侧壁20和从侧壁20的上边缘24延伸的片状封口部22,所述上边缘与将侧壁20连接到底部19的下边缘26相反。容纳区域16被限定在底部19与侧壁20之间。
在例示的实例中,底部19具有大致三角形的形状。替代地,底部19具有任何其他形状,例如盘形或矩形的形状。
每个片状封口部22从侧壁20的上边缘24延伸到自由边缘28。从自由边缘28到上边缘24的距离优选地小于从上边缘24到下边缘26的距离。
在该第一实施例中,杯状部14包括弯折到自身上的单个片材30,该片材形成底部19、侧壁20和片状封口部22。将该片材30弯折以形成杯状部14的实例例如在FR 2,888,571中给出。
片材30是导热的。具体地,片材30具有大于或等于200W.m-1.K-1的导热系数。为此,片材30主要由金属构成,且优选地超过70%由金属构成,所述金属特别是铝。
具体地,如图3中所示,片材30具有多层结构,该多层结构包括:主层32,其由金属特别是铝制成,限定出片材30的内面40,朝向容纳区域16定向;和外涂层34,其沉积在主层32的与所述内面40相反的面上并限定出片材30的外面36,背向容纳区域16定向。
主层32构成片材30的厚度中大于70%的厚度。其优选地具有介于10μm和12μm之间的厚度。
外涂层34通常包括非热粘合漆的层,例如硝化纤维漆的层。外涂层34具有介于2μm和4μm之间的厚度。
因此,片材30的在其外面36与其内面40之间考虑的厚度小于20μm,且特别是小于15μm。因此,片材30在其内面40与外面36之间具有第一表面传热系数,该第一表面传热系数大于或等于107,特别是大于或等于1.3×107
将注意的是,由于片材30构成了片状封口部22,因此所述内面40和外面36也构成了所述片状封口部22的内面和外面。
内面40由独立于片材30的内涂层38覆盖。该内涂层38包括热粘合层42,热粘合层限定了朝向容纳区域16定向的涂层38的内面44。
热粘合层42由热粘合材料构成,该热粘合材料适用于在其达到高于阈温的温度时与相容材料形成粘合剂。所述热粘合材料优选为低温热粘合材料,即所述特定温度低于75℃。然而,阈温保持大于58℃,以避免在食品12的通常保存温度下热粘合层42和食品12之间的任何相互作用。阈温通常是热粘合材料的熔化温度。
热粘合层42例如包括乙烯基层。
优选地,如所示的,除了热粘合层42,内涂层38还包括插入到热粘合层42与片材30之间的保护层46。该保护层46适用于保护片材30免受腐蚀。
保护层46例如包括乙烯基层。
替代地(未示出),内涂层38仅由热粘合层42形成,于是后者优选地适用于保护片材30免受腐蚀。
可包含在热粘合层42和/或保护层46的组成成分中的其他材料的实例为诸如漆的材料,该材料例如包括:增塑PVC型的聚合物;或PVC与乙烯、月桂酸乙烯酯或乙酸乙烯酯的共聚物;或诸如乙烯、丁二烯的烯烃类聚合物及它们的共聚物;或酯类聚合物,诸如PLA、乙酸乙烯酯、脂肪酸乙烯酯、丙烯酸脂肪酸醇和甲基丙烯酸脂肪醇;或基于对苯二甲酸与改性或未改性的乙二醇的聚合物;以及通过挤出下列物质获得的材料:通常为基于乙烯、丁二烯的聚烯烃的聚合物及其共聚物;和/或基于氯乙烯的乙烯基聚合物;和/或脂肪酸乙烯酯;和/或丙烯酸脂肪酸醇;和/或甲基丙烯酸脂肪醇,上述挤出通常以下述方式完成:使用处于粘性液态的原材料的流延技术、水性悬浮液或乳液形式的材料的流延技术,并涂布(例如喷涂或用刷子或丝带刷涂)聚合物的悬浮液或乳液以及水。
内涂层38的总厚度优选地介于4μm和6μm之间。
返回图1和图2,杯状部14还包括用于在片材20中引导撕裂的元件48。该引导元件48通常由至少一个附接在片材30的内面40上且密封至片材的内面的引导条构成。内面40上的所述引导条的一个实例布置在FR2,888,571中提供。
盖子18关于容纳区域16横跨底部19,即容纳区域16插入到盖子18和底部19之间。
盖子18是基本平坦的。
盖子18是隔热的。具体地,盖子18具有小于或等于0.5W.m-1.K-1的导热系数。为此,盖子18主要由塑料构成,且优选地超过80%或甚至超过90%由塑料构成,所述塑料特别是发泡塑料。所述塑料有利地是聚合物,例如定向聚丙烯(OPP)。
具体地,如图4中所示,盖子18具有多层结构,该多层结构包括:主层50和外涂层52,主层50由塑料制成,特别是由发泡塑料(例如发泡型OPP)制成。
主层50构成盖子18的厚度中超过90%,优选地超过99%的厚度。其特别地具有介于20μm和60μm之间的厚度,优选地介于30μm和40μm之间的厚度。
主层50限定出盖子18的朝向容纳区域16定向的内面54。
外涂层52沉积在主层50的与内面54相反的面上。其限定出盖子18的背向容纳区域16定向的外面56。
外涂层52包括金属层并有利地由所述金属层构成。该金属层使得能够形成保护食品12的光气屏障。其优选地主要由铝构成。
外涂层52有利地具有几个十分之一纳米的厚度。为此,金属层通过构成所述层的金属的真空蒸镀而沉积。因此,金属层对盖子18的导热系数的影响是可忽略的。
因此,盖子18的在其内面54和外面56之间考虑的厚度大于20μm,且特别是大于30μm。盖子18因此在其内面54和外面56之间具有第二表面传热系数,该第二表面传热系数小于或等于2.5×104,特别是小于或等于1.7×104
因此,第一表面传热系数与第二表面传热系数的比率大于或等于400,且特别是大于或等于800。第一传热系数与第二传热系数之间的该较大的差使得能够确保,如果热元件被施加到片状封口部22的外面36上,则卡路里会快速地从热元件传递到片状封口部22与盖子18之间的接合面,但是这些卡路里会慢得多地通过盖子18泄漏至食品12。
外面56被涂覆有独立于盖子18的热粘合涂层58。
该热粘合涂层58由热粘合材料构成,该热粘合材料适用于在其达到阈温之上的温度时与相容材料形成粘合剂。所述热粘合材料优选地是低温热粘合材料,即所述特定温度低于75℃。然而,阈温保持大于58℃以避免在食品12的通常保存温度下热粘合涂层58与食品12之间的任何相互作用。阈温通常是热粘合材料的熔化温度。
热粘合涂层58和热粘合层42的粘合材料是相容的材料。
返回图1和图2,片状封口部22弯折到盖子18的外面56上并通过热粘合涂层58和热粘合层42紧密地密封至所述外面56。片状封口部22特别是相对于侧壁20朝向杯状部14的内侧弯折。
现在将参照图5至图9描述用于生产包装部分10的方法。
首先,如图5中所示,片材30被弯折以形成杯状部14。为此,片材30例如如FR2,888,571中描述的那样被弯折。
接下来,如图6中所示,食品12被冷浇注(即在低于50℃的温度下冷浇注),食品被冷浇注到杯状部14的容纳区域16中。食品12特别是在以下温度下被浇注:介于0℃和30℃之间的温度,优选地介于0℃和20℃之间的温度,以及更具体地5℃和15℃之间的温度。

然后,如图9中所示,片状封口部22在压力作用下被热封到盖子18的外面56上。
如所示的,将片状封口部22密封到盖子18上优选地包括预密封步骤和最终的密封步骤。
预密封步骤包括将第一热的密封烙铁60施加到片状封口部22上,片状封口部22插入到所述第一烙铁60与盖子18之间,第一密封烙铁60使片状封口部22压靠盖子18。最终的步骤包括将第二热的密封烙铁62施加到片状封口部22上,片状封口部22插入到所述第二烙铁62与盖子18之间,第二密封烙铁62使片状封口部22压靠盖子18。所述施加是彼此相继的施加,优选具有小于2秒的时间间隔。
密封烙铁60、62中的每个包括热的金属构件64,即具有通常大于120℃的温度的金属构件64,该金属构件限定出与片状封口部的接触面65,所述接触面65大致具有盖子18的轮廓的形状。然而优选地,金属构件64处于低于140℃的温度,以防止金属构件在片状封口部22上的施加损坏盖子18的塑料。
为了防止金属构件64与盖子18发生接触(该接触可能损坏盖子18),在金属构件64的中心形成由凹部66,接触面65限定出所述凹部66的周边。
隔热插入件68被容置在所述凹部66中并与接触面65平齐。这防止了由密封烙铁60、62施加到片状封口部22上的压力导致密封部分10在其周边处变形。
该隔热插入件68由具有高熔点的热塑性或热固性材料构成,所述热塑性或热固性材料例如为酚醛塑料、含酚醛塑料的棉帆布或聚醚酮醚。
在将每个密封烙铁60、62施加于片状封口部22期间,热从密封烙铁60、62通过片状封口部22传递到热粘合涂层58和热粘合层42。该热传递是快速的,这是因为片状封口部22是导热的。盖子18是隔热的,其防止传递到热粘合涂层58和热粘合层42的热朝向食品12泄漏。该热在片状封口部22与盖子18之间的接合面处累积,导致热粘合涂层58和热粘合层42的温度快速上升直到热粘合材料成分的阈温以上。所述热粘合材料因此通过该热被活化并且在片状封口部22与盖子18之间形成粘合剂。正是该粘合剂使得片状封口部22密封到盖子18。
应该注意的是,利用两个密封烙铁60、62的相继施加而不是单个密封烙铁的施加使得能够大大减少每个密封烙铁60、62的施加持续时间,以便获得部分10的紧密密封。因此,能够加快包装部分10的生产节奏,直到达到等同于热浇注熔化奶酪部分的生产节奏的节奏。
上文提供的包装部分10的描述大部分能够应用于图10和图11中所示的包装部分100。因此,为了简化的原因,使用相同的标记来表示包装部分10和100共用的元件,并且在下文描述中省略了共用特征的描述。
包装部分100与包装部分10的区别主要在于,片材30不构成杯状部的底部19。与包装部分10不同,底部19在此实际上包括密封至片材30的基底102。然而,片材30仍然构成侧壁20和片状封口部22。
参照图12,基底102是大致平坦的。其具有朝向容纳区域16定向的内面104和背向容纳区域16定向的外面106。
外面106被涂覆独立于基底102的热粘合涂层108。
该热粘合涂层108由热粘合材料构成,该热粘合材料适用于在其达到阈温以上的温度时与相容材料形成粘合剂。所述热粘合材料优选地为低温热粘合材料,即所述特定温度低于75℃。然而,阈温保持大于58℃,以避免在食品12的通常保存温度下热粘合涂层108和食品12之间的任何相互作用。阈温通常是热粘合材料的熔化温度。
热粘合涂层108和热粘合层42的粘合材料是相容的材料。
在例示的实例中,基底102等同于盖子18。这使得能够便于包装部分100的生产。
片材30包括通过侧壁的下边缘26连接到侧壁20的边界区域110。该边界区域110被弯折并紧密密封到基底102的外面106上。
该实施例的两部分(片材30和基底102)式杯状体14使得能够赋予包装部分100初始形状。具体地,该实施例的两部分式杯状体14使得能够容易地赋予包装部分100如图10和图11中可见的回转圆柱形形状,该形状在用于包装部分10的情况下难以用单件式杯状体14生产。该实施例的杯状体14实际上使得能够获得在侧壁20上没有折痕的圆柱形部分并且在片材30中具有沿着侧壁20的上边缘24和下边缘26布置的撕裂引导条。
包装部分100和包装部分10之间的另一区别在于,包装部分100包括两个容置在容纳区域16中的抓握舌片112。所述舌片112中的第一舌片跨接侧壁20和盖子18同时密封至盖子18,第二舌片112跨接侧壁20和基底102同时密封至基底102。这些舌片112使得能够便于在撕裂侧壁20之后由消费者移除盖子18和基底102。
用于生产包装部分100的方法还大致等同于用于生产包装部分10的方法。这些方法之间的仅有的区别在于供应杯状部14的步骤,在此其包括以下步骤:
-例如通过围绕心轴卷绕片材30来弯折片材30,以形成管件,
-以基底102垂直于管件的轴线定向的方式将基底102插入到管件内部,直到变得与撕裂引导元件48平齐,
-将边界区域110弯折到基底102的外面106上,和
-将边界区域110热封到外面106上。
对于用于生产包装部分100的方法的其余部分的描述,请读者参见用于生产包装部分10的方法的描述,图14、图15、图16、图17和图18各自对应于图5、图6、图7、图8和图9。
由于上文所述的方法,因此能够容易地生产必须冷浇注的食品的紧密密封的包装部分,而无需使获得的包装部分具有周边领圈。
该方法可进一步容易被执行,其原因在于只需要对已经用于生产热浇注的食品的密封包装部分的现存的生产机器进行非常小的调整:实际上大部分现存的工具可重复使用,主要的必要调整在于增加反补偿杆以限制关于塑料使用的补偿的风险,修改供应盖子的成分材料的线轴,以及增加额外的密封单元。

Claims (15)

1.一种用于生产包装食品部分(10,100)的方法,该方法包括以下步骤:
-提供杯状部(14),该杯状部限定出用于容纳食品(12)的内部区域(16);
-在低于50℃的温度下将食品(12)冷浇注到所述杯状部(14)的容纳区域(16)中,
-用盖子(18)覆盖食品(12),所述盖子(18)被布置为使得所述杯状部(14)的导热的片状封口部(22)在所述覆盖步骤之后朝向所述盖子(18)的外侧延伸,
-将所述片状封口部(22)弯折到所述盖子(18)的与所述容纳区域(16)相反的外面(56)上,和
-将所述片状封口部(22)热封到所述外面(56)上,
其特征在于,所述盖子(18)是隔热的。
2.根据权利要求1所述的生产方法,其中,所述密封步骤包括以下子步骤:
-将至少一个热的密封烙铁(60,62)施加到所述片状封口部(22)上,所述片状封口部(22)插入到所述密封烙铁(60,62)与所述盖子(18)之间,和
-利用由所述或每个密封烙铁(60,62)提供给热粘合材料(46,58)的热来活化设置在所述片状封口部(22)与所述盖子(18)之间的接合面处的至少一种热粘合材料(46,58)。
3.根据权利要求2所述的生产方法,其中,用于施加所述或每个密封烙铁(60,62)的步骤包括将两个密封烙铁(60,62)相继地施加到所述片状封口部(22)上。
4.根据前述权利要求中任一项所述的生产方法,其中,所述片状封口部(22)包括朝向所述容纳区域(16)定向的内面(40)和背向所述容纳区域(16)定向的外面(36),并且在其内面与外面(36,40)之间具有第一表面传热系数,所述盖子(18)包括朝向所述容纳区域(16)定向的内面(54),并且在其内面与外面(54,56)之间具有第二表面传热系数,第一表面传热系数与第二表面传热系数的比率大于或等于400,特别是大于或等于800。
5.根据权利要求4所述的生产方法,其中,所述第一表面传热系数大于或等于107W.m- 2.K-1,特别是大于或等于1.3×107W.m-2.K-1
6.根据权利要求4或5所述的生产方法,其中,所述第二表面传热系数小于或等于2.5×104W.m-2.K-1,特别是小于或等于1.7×104W.m-2.K-1
7.根据前述权利要求中任一项所述的生产方法,其中,所述片状封口部(22)具有大于或等于200W.m-1.K-1的导热系数。
8.根据前述权利要求中任一项所述的生产方法,其中,所述盖子(18)具有小于或等于0.5W.m-1.K-1的导热系数。
9.根据前述权利要求中任一项所述的生产方法,其中,所述片状封口部(22)主要由金属构成,且优选地超过70%由金属构成,所述金属特别是铝。
10.根据前述权利要求中任一项所述的生产方法,其中,所述盖子(18)主要由塑料构成,且优选地超过90%由塑料构成,所述塑料特别是发泡塑料。
11.根据权利要求8所述的生产方法,其中,所述塑料为聚合物,例如发泡型定向聚丙烯。
12.根据结合权利要求2或3的权利要求8或9所述的生产方法,其中,所述盖子(18)包括塑料材料层(50)和沉积在所述塑料层(50)的至少一个面上的镀金属层(52),所述镀金属层(52)插入到所述热粘合材料(58)与所述塑料层(50)之间。
13.一种包装食品部分(10,100),利用根据前述权利要求中任一项所述的生产方法获得。
14.一种包装食品部分(10,100),包括限定出用于容纳食品(12)的区域(16)的杯状部(14)和覆盖食品(12)并封闭所述杯状部(14)的盖子(18),所述盖子(18)的导热的片状封口部(22)被弯折到所述盖子(18)的与所述容纳区域(16)相反的外面(56)上并且被密封到所述外面(56),食品(12)被包含在所述容纳区域(16)中并被所述盖子(18)覆盖,所述食品(12)是单独或混合的基于鲜奶凝乳的产品,
其特征在于,所述盖子(18)是隔热的。
15.一种包装食品部分(10,100),包括限定出用于容纳食品(12)的区域(16)的杯状部(14)和覆盖食品(12)并封闭所述杯状部(14)的盖子(18),所述盖子(14)的导热的片状封口部(22)被弯折到所述盖子(18)的与所述容纳区域(16)相反的外面(56)上并且被密封到所述外面(56),食品(12)被包含在所述容纳区域(16)中并被所述盖子(18)覆盖,
其特征在于,食品(12)是源自重组方法的奶酪,且所述盖子(18)是隔热的。
