本发明属于食品技术领域,具体涉及一种含食用菌提取物的能量补充食品。其包括以下重量份原料组成:食用菌提取物35~50份、适糖米提取物15~20份、黑芝麻粉10~13份、薏米仁粉8~10份、低聚果糖糖浆15~18份、西洋参提取物8~10份、钠盐8份、钾盐9份。本发明以超临界二氧化碳喷爆技术结合乙醇超声波方法提取食用菌中多糖和氨基酸,以压热法提高适糖米的高抗性淀粉含量,将这二者作为能量补充的原料,其富含丰富的氨基酸和多种维生素,够快速补充能量、迅速提升机体状态,改善疲劳,而抗性淀粉在增加饱腹感的同时能够促进胰岛素分泌,适合体力劳动者和糖尿病患者补充能量食用。

技术领域
本发明属于食品技术领域,具体涉及一种含食用菌提取物的能量补充食品。
背景技术
许多特殊工作岗位的人员 :如急救科医生、抢险队员、救火队员、运动员、航天员、飞行员、潜水员、运动员、高温高湿环境作业人员等岗位的人员都是需要经常从事高负荷脑力、体力活动的人员,该制剂促进体能贮备、补充体能、促进体能恢复,可望为从事特殊岗位工作的人员的日常保健提供一种有效的手段。这些特殊岗位都是高强度的脑力、体力劳动,因此日常的身体保健工作非常有必要,因而提供一种能迅速被吸收并且提供能量的天然无添加食品,以达到补充体能的能量补充是十分有意义的。
另外,对于糖尿病患者,由于其胰岛素缺乏或胰岛素抵抗,导致血糖不能进入细胞内,血糖虽然升高,但细胞内却缺乏糖,由此出现“细胞饥饿”,而产生饥饿感,但是目前市面上,大多数能量补充的食品都是富含高糖份的碳水化合物,这并不适合于糖尿病患者的食用,因此开发一种适合于糖尿病患者的增加饱腹感的能量食品是十分必要的。
发明内容
本发明的目的在于提供一种含食用菌提取物的能量补充食品。本发明以食用菌提取物和适糖米提取物作为主要原料,其富含丰富的氨基酸和多种维生素,够快速补充能量、迅速提升机体状态,改善疲劳,增加饱腹感。
为实现上述目的,本发明采用如下技术方案:
所述一种含食用菌提取物的能量补充食品,其包括以下重量份原料组成:食用菌提取物35~50份、适糖米提取物15~20份、黑芝麻粉10~13份、薏米仁粉8~10份、低聚果糖糖浆15~18份、西洋参提取物8~10份、钠盐8份、钾盐9份。
其中食用菌提取物的制备方法为:
(1)称取食用菌原料磨成粉,过100目筛,控制含水率为20~40%;
(2)将步骤(1)得到的食用菌混合粉与液态二氧化碳混合,液态二氧化碳全部淹没食用菌混合粉,压力80MPa~90MPa保持3h后,泄压喷爆;
(3)向步骤(2)产物加入 50-75wt.% 的食用乙醇溶液,食用菌混合粉和食用乙醇溶液的重量比为 1:5-10,在超声功率 100-150W、频率 20-50kHz、温度 25-30℃条件下超声提取 12-20min,过滤,得到食用菌提取物。
其中食用菌原料为由以下重量份原料组成:猴头菇粉 10~15 份,香菇粉 10~15份,草菇粉 10~15份,木耳粉 8~10 份,银耳粉9~10 份。
其中适糖米提取物的制备方法为:称取适糖米,再加入两倍质量的水淹没,常温浸泡1~3小时,然后加热至90℃,然后在90℃搅拌下保持1~1.5h,再在100~110℃下进行压热处理 20~40min,冷却至室温,4℃冷藏 24 小时,50~70℃下烘干,粉碎,过80目筛,得到适糖米提取物;
所述含食用菌提取物的能量补充食品的制备方法,具体为:将食用菌提取物和适糖米提取物混合,加入相当于适糖米提取物质量的二分之一的水,混合搅拌10~20min,然后再加入其它原料,在90℃下加热搅拌20min,然后制成压缩食品。
猴头菇的营养成分丰富,每百克含蛋白质26.3克,脂肪4.2克,是名副其实的高蛋白、低脂肪食品,另外还富含各种维生素和无机盐。它含有17种氨基酸,其中有8种为人体必需氨基酸。现代医学研究证明,猴头菇中含有的多肽、多糖和脂肪族的酞胺物质。香菇中含有多种药用组分,尤其是它含有抗病毒、抗肿瘤、调节免疫功能和刺激干扰素形成等功能的香菇多糖(LNT)和能增强人体免疫力的水溶性水质素这两种药用生理活性物质。
适糖米是选用云南高海拔哀牢山区种植基地,采用绿色有机标准种植的稻谷,经去壳、蒸熟,干燥和粉碎制、灭菌备而得。适糖米营养丰富,糖份含量低,具有多种氨基酸及矿物质元素,富含高于普通大米20-50倍的抗性淀粉,具有抗消化、延缓葡萄糖的释放与吸收功能,食用后饱腹耐饥饿,可稳定糖尿病人餐后血糖值,促进胰岛素分泌,预防糖尿病并发症。
本发明的显著优点在于:
(1)本发明采用超临界二氧化碳喷爆技术结合乙醇超声波方法提取食用菌的有效成分,瞬间由高压突然降到常压,原料内部的二氧化碳突然气化、膨胀,发生喷爆,体积增大3倍以上,从而使食用菌组织细胞破裂呈海绵状,体积增大,一些结构组织如纤维束等被破坏,内含物暴露,有利于其多糖和氨基酸的溶出,提高了功能物质的提取得率;由于猴头菇、香菇粉、草菇粉、木耳粉和银耳粉中均含有丰富的氨基酸和多糖物质,其中如酪氨酸、天冬氨酸、谷氨酸等是神经递质如去甲肾上腺素、肾上腺素、多巴胺的前体物,这些神经递质对调节能量合成、提高骨骼肌和心肌活动能力有重要作用。
(2)本发明通过压热的方法极大提高了适糖米中高抗性淀粉含量,可达30wt%,由于高抗性淀粉具有抗消化、延缓葡萄糖的释放与吸收功能,食用后饱腹耐饥饿,可稳定糖尿病人餐后血糖值,促进胰岛素分泌,预防糖尿病并发症。
(3)本发明食品制备工艺简单,作为压缩食品,携带方便,口感美味,适用人群广泛。
具体实施方式
为进一步公开而不是限制本发明,以下结合实例对本发明作进一步的详细说明。
食用菌提取物的制备方法为:
(1)称取食用菌原料磨成粉,过100目筛,控制含水率为20~40%;
(2)将步骤(1)得到的食用菌混合粉与液态二氧化碳混合,液态二氧化碳全部淹没食用菌混合粉,压力80MPa~90MPa保持3h后,泄压喷爆;
(3)向步骤(2)产物加入 50-75wt.% 的食用乙醇溶液,食用菌混合粉和食用乙醇溶液的重量比为 1:5-10,在超声功率 100-150W、频率 20-50kHz、温度 25-30℃条件下超声提取 12-20min,过滤,得到食用菌提取物。

所述一种含食用菌提取物的能量补充食品,其包括以下重量份原料组成:食用菌提取物40份、适糖米提取物180份、黑芝麻粉11份、薏米仁粉8份、低聚果糖糖浆17份、西洋参提取物9份、钠盐8份、钾盐9份。
其中食用菌原料为由以下重量份原料组成:猴头菇粉 12份,香菇粉 12份,草菇粉12份,木耳粉 9份,银耳粉9份。
所述含食用菌提取物的能量补充食品的制备方法,具体为:将食用菌提取物和适糖米提取物混合,加入相当于适糖米提取物质量的二分之一的水,混合搅拌13min,然后再加入其它原料,在90℃下加热搅拌20min,然后制成压缩食品。
实施例3
所述一种含食用菌提取物的能量补充食品,其包括以下重量份原料组成:食用菌提取物50份、适糖米提取物20份、黑芝麻粉13份、薏米仁粉10份、低聚果糖糖浆18份、西洋参提取物10份、钠盐8份、钾盐9份。
其中食用菌原料为由以下重量份原料组成:猴头菇粉15 份,香菇粉15 份,草菇粉15份,木耳粉10份,银耳粉10份。
所述含食用菌提取物的能量补充食品的制备方法,具体为:将食用菌提取物和适糖米提取物混合,加入相当于适糖米提取物质量的二分之一的水,混合搅拌20min,然后再加入其它原料,在90℃下加热搅拌20min,然后制成压缩食品。
药效试验结果:
以某体育大学 30 名男子普通大学生(平均年龄 20.8±0.65 岁)为研究对象,随机分为三组,每组十名;要求受试者在实验前一天无大运动量运动,为控制试验前饮食一致,试验前空腹来到实验室取安静时静脉血,排空尿,分别食用本发明压缩性食品(实验组1)、市售能量谷物饼干(实验组2)以及空白饼干(实验组3),然后试车、调整车的座位高度、运动前进行运动负荷 ( 在 Monark 功率计上运动 ),先作准备活动 1min(0 负荷 ),然后以 50W功率开始,逐步递增负荷,3 分钟左右达到 70%Hrmax(由预试验测定得出),此后即不再增加负荷量,持续蹬车 90 分钟。每 30min 提供每人 30g 本发明食品、30g 市售能量谷物饼干及 30g 空白饼干。运动中心率采用 Polar 表监测。控制实验室的气温及湿度。
测试指标 :运动中每半小时取耳血 1 次,测乳酸。运动结束后即刻、第 3、6、9、12、15 分钟测量恢复心率、取耳血测乳酸。第二天清晨取静脉血,测量血清丙二醛(MDA)含量、血清超氧化物歧化酶(SOD)活力、血清谷胱甘肽过氧化物酶(GSHPx)活力。
测试方法 :血乳酸采用 YSI1500SPORT LACTATE ANALYZER 测定,方法为酶电极法 ;血清谷胱甘肽过氧化物酶(GSHPx)活力按照间接法测定,血清超氧化物歧化酶(SOD)活力采用黄嘌呤氧化酶法测定,血清丙二醛(MDA)含量参照硫代巴比妥酸法测定。测定仪器均为 721 型分光光度计。
结果统计:数据处理采用 SPSS10.0 软件,所有数据用均值 ± 标准差来表示,采用方差及配对T 检验方法。
实验结果:
血乳酸浓度的比较:
由表 1 中血乳酸浓度的数据可见,三组受试者运动 40min、运动 80min、运动后即刻的血乳酸浓度与安静组有显著差别;运动结束后 3min、6min、9min 时,本发明实验组受试者的血乳酸显著低于阳性对照组和阴性对照组。

Claims (6)
1.一种含食用菌提取物的能量补充食品,其特征在于:包括以下重量份原料组成:食用菌提取物35~50份、适糖米提取物15~20份、黑芝麻粉10~13份、薏米仁粉8~10份、低聚果糖糖浆15~18份、西洋参提取物8~10份、钠盐8份、钾盐9份。
2.根据权利要求1所述的一种含食用菌提取物的能量补充食品,其特征在于:其中食用菌提取物的制备方法为:
(1)称取食用菌原料磨成粉,过100目筛,控制含水率为20~40%;
(2)将步骤(1)得到的食用菌混合粉与液态二氧化碳混合,液态二氧化碳全部淹没食用菌混合粉,压力80MPa~90MPa保持3h后,泄压喷爆;

4.根据权利要求1所述的一种含食用菌提取物的能量补充食品,其特征在于:其中其中适糖米提取物的制备方法为:称取适糖米,再加入两倍质量的水淹没,常温浸泡1~3小时,然后加热至90℃,然后在90℃搅拌下保持1~1.5h,再在100~110℃下进行压热处理 20~40min,冷却至室温,4℃冷藏 24 小时,50~70℃下烘干,粉碎,过80目筛,得到适糖米提取物。
5.一种制备如权利要求1所述的一种含食用菌提取物的能量补充食品的方法,其特征在于:将食用菌提取物和适糖米提取物混合,加入水,混合搅拌10~20min,然后再加入其它原料,在90℃下加热搅拌20min,然后制成压缩食品。
6.根据权利要求5所述的的一种含食用菌提取物的能量补充食品的制备方法,其特征在于:加入水的质量为适糖米提取物质量的二分之一。
