本发明公开了一种科拉蒂果罐头的制作方法,包括以下步骤:筛选油橄榄果清洗;脱苦脱涩;清洗;装罐;杀菌。本发明选用简单直接的方式去除油橄榄果的青涩味,口感良好,还保持了油橄榄本身的营养。

技术领域
本发明涉及油橄榄树种植领域,具体涉及的是一种科拉蒂果罐头的制作方法。
背景技术
科拉蒂原产意大利南部的巴厘省。是世界著名的油、果兼用品种,也是意大利政府决定推广的品种之一。科拉蒂抗寒力强。扦插容易生根,易于繁殖。结果枝长,萌发和愈伤力也强。1975~1976年分别由西班牙、意大利引种我国。在云南一般单株产果100~120千克,按工厂出油率27%计算,单株可产油27~30千克,是个很有推广前途的油、果兼用品种。
树型:树势中等,生长旺盛,树冠茂密。主枝及侧枝直立。果枝短细,呈水平状态。
叶:叶披针形,长而坚硬。叶面深灰绿色,叶背灰色。
花:花序长20~25毫米,每一花序着生20朵小花,每个花序能结3~7个果,白花结实率高。
果实:果实椭圆形。果大,黑色,成熟早,便于加工。单果重4~5克,每千克230个果。含油率32%。肉、核比4:1,既可油用,又可果用。但由于油橄榄果实中含有苦葡萄糖甙和单宁物质,具有很浓的苦涩味,难以直接鲜食,特别是油橄榄果罐头的生产过程中需要对油橄榄果进行脱苦、脱涩。
发明内容
本发明的目的在于克服现有技术存在的以上问题,提供一种科拉蒂果罐头的制作方法,有效的去除油橄榄果的青涩。
为实现上述技术目的,达到上述技术效果,本发明通过以下技术方案实现:
一种科拉蒂果罐头的制作方法,包括以下步骤:
步骤1)筛选油橄榄果:选取新鲜健康的果子个大的油橄榄果后,去除果梗;
步骤2)清洗:将筛选好的油橄榄果用清水清洗;
步骤3)脱苦脱涩:用甘草酸将油橄榄清洗后静置于碱性溶液中36小时,然后用清水冲洗后加入哆依果汁,并注入压缩空气氧化,每3小时通气30分钟,氧化3天后再在溶液A中静置24小时;
步骤4)清洗:将油橄榄果放入清水中清洗24小时,每2小时换一次水;
步骤5)装罐:将食品盐和水搅拌均匀后,将油橄榄果全部没入到溶剂中,然后装罐,封罐;
步骤6)杀菌。
作为优化的,所述步骤3的溶液A为鲜蛋清或者蛋清粉。
作为优化的,所述步骤3的碱性溶液为碳酸钙溶液或氢氧化钠溶液。
作为优化的,所述步骤6使用的是巴氏杀菌。
本发明的有益效果是:
本发明选用简单直接的方式去除油橄榄果的青涩味,口感良好,还保持了油橄榄本身的营养。

下面将并结合实施例,来详细说明本发明。
实施例1
一种科拉蒂果罐头的制作方法,包括以下步骤:
步骤1)筛选油橄榄果:选取新鲜健康的果子个大的油橄榄果后,去除果梗;
步骤2)清洗:将筛选好的油橄榄果用清水清洗;
步骤3)脱苦脱涩:用甘草酸将油橄榄清洗后静置于碳酸钙溶液中36小时,然后用清水冲洗后加入哆依果汁,并注入压缩空气氧化,每3小时通气30分钟,氧化3天后再在鲜蛋清中静置24小时;
步骤4)清洗:将油橄榄果放入清水中清洗24小时,每2小时换一次水;
步骤5)装罐:将食品盐和水搅拌均匀后,将油橄榄果全部没入到溶剂中,然后装罐,封罐;
步骤6)用巴氏杀菌对罐头进行杀菌处理。
实施例2

步骤4)清洗:将油橄榄果放入清水中清洗24小时,每2小时换一次水;
步骤5)装罐:将食品盐和水搅拌均匀后,将油橄榄果全部没入到溶剂中,然后装罐,封罐;
步骤6)用巴氏杀菌对罐头进行杀菌处理。

1.一种科拉蒂果罐头的制作方法,其特征在于,包括以下步骤:
步骤1)筛选油橄榄果:选取新鲜健康的果子个大的油橄榄果后,去除果梗;
步骤2)清洗:将筛选好的油橄榄果用清水清洗;
步骤3)脱苦脱涩:用甘草酸将油橄榄清洗后静置于碱性溶液中36小时,然后用清水冲洗后加入哆依果汁,并注入压缩空气氧化,每3小时通气30分钟,氧化3天后再在溶液A中静置24小时;
步骤4)清洗:将油橄榄果放入清水中清洗24小时,每2小时换一次水;
步骤5)装罐:将食品盐和水搅拌均匀后,将油橄榄果全部没入到溶剂中,然后装罐,封罐;
步骤6)杀菌。
2.根据权利要求1所述的科拉蒂果罐头的制作方法,其特征在于:所述步骤3的溶液A为鲜蛋清或者蛋清粉。
3.根据权利要求1所述的科拉蒂果罐头的制作方法,其特征在于:所述步骤3的碱性溶液为碳酸钙溶液或氢氧化钠溶液。
4.根据权利要求1所述的科拉蒂果罐头的制作方法,其特征在于:所述步骤6使用的是巴氏杀菌。
