本发明公开了一种香辣豆瓣酱,由以下原料组成:黄豆、豆豉、果胶、大蒜、红辣椒、香油、黑芝麻、柠檬汁、肉蔻、花生和黄酒,所述黄豆30‑50份,豆豉10‑20份,果胶10‑12份,大蒜2‑6份,红辣椒2‑4份,香油1‑3份,黑芝麻6‑12份,柠檬汁1‑5份,肉蔻10‑14份,芥块8‑12份,小虾干20‑30份,花生8‑10份,黄酒10‑20份。本发明通过采用茼蒿与红辣椒协助发酵,将茼蒿的蒿香味及红辣椒的辣味融入豆瓣酱中,通过添加花生、黑芝麻和小虾干,能够有效的增强豆瓣酱的口感,清香浓郁,风味独特,美味可口,营养价值高。

背景技术
众所周知,黄豆富含蛋白质、磷脂及各种人体必需氨基酸,营养价值极高,自古以来便是我国人民最喜爱的食物之一。豆瓣酱是黄豆经微生物发酵而成,其消除了黄豆中抑制营养的因子,产生多种具有香味的物质,因而更易被人体消化吸收,更重要的是增加了维生素 B12 的含量,因此,豆瓣酱深受人们的欢迎和喜爱。但现有的豆瓣酱制作复杂,且口味千篇一律,少有独特之处。
市面上的酱类食品越来越多,但分类却不是非常清楚,怎样在众多食品中选出美味又有利于人们身体的,成为了一个问题。而豆瓣酱就是人们常用酱料的一种,尤其是在寒冷的北方,天气寒冷,人们更加喜爱具有辣味的豆瓣酱,不仅仅能够提高人们的食欲,同时能够帮助人们抵御严寒。但市场上的豆瓣酱口味单一,不能够满足不同人们的需求。

本发明的目的在于针对现有技术的不足,现提供一种辣味浓郁、口感独特、营养价值高的香辣豆瓣酱。
