背景技术
面食是中国北方大部分地区的主食,面食的主要原材料面粉是由小麦磨成的粉状物,用面粉制成的食物品种繁多,其丰富的烹饪制作方式也是我国饮食文化的重要标志。
面粉消费人群和地区的高覆盖率及相对较低的强化技术壁垒使得面粉成为营养强化的首选食物载体之一。
目前我国的面食加工主要以精制面粉为主,在营养方面其营养素不能满足人体需要,产品比较单一,主要以白面和玉米面为主,随着人们生活水平的提高,以及保健意识的加强,具有保健功能的主食越来越受人们的欢迎,如富含纤维素的全麦面粉;添加麦芽、维他命以及谷蛋白等的面包粉;添加有玉米淀粉的蛋糕粉;低速研磨、低温加工的石磨面粉等。
但针对正处于生长发育期的青少年来讲,虽然面粉中含有丰富的淀粉和蛋白质,但面粉通常无法提供足够的青少年身体生长所需的营养物质,如钙质、氨基酸和多种维生素等营养物质通常需要通过食用其他食物获得,特别是钙质,通常以饮食奶类作为主要的摄入渠道,摄入成本较高。
发明内容
针对上述问题,本发明提供一种适用于青少年的营养面粉,该面粉具有较为全面丰富的营养物质,可替代采用精制面粉加工的面食制品在营养方面存在的不足,特别适用于正处于生长发育期的青少年作为主食食用。
为实现上述目的,本适用于青少年的营养面粉的重量组份为:
本营养面粉的重量组份优先为:全麦面粉53、马铃薯粉18、熟芝麻粉9、小米粉8、玉米粉8、豌豆粉4。
作为本发明的进一步改进方案,所述的熟芝麻粉采用黑芝麻作为原材料。
一种适用于青少年的营养面粉,生产步骤如下:
①全麦面粉由全粒小麦经过磨粉、筛分步骤分级至适当颗粒大小;
②马铃薯粉以新鲜马铃薯为原料,经清洗、去皮、挑选、切片护色、脱水干燥后粉碎呈粉状;
③熟芝麻粉以黑芝麻或白芝麻为原料,经清洗、炒干后粉碎呈粉状;
④小米粉、玉米粉和豌豆粉分别由小米、玉米和豌豆粉碎成粉状;
⑤最后各原料按比例称重后混合均匀。
与现有技术相比,本适用于青少年的营养面粉由于采用全麦面粉作为第一基料、马铃薯粉作为第二基料,因此基料在富含淀粉、蛋白质、脂肪、糖类等营养物质的基础上富含维生素B1、B2、B6,烟碱酸(即维生素B3),氨基酸,多种维生素,钙、铁、锌等微量元素,营养价值高;由于采用熟芝麻粉作为第一辅料,因此钙、铁的含量较高,且含有丰富的卵磷脂,针对正处于生长发育期的青少年,不仅钙量丰富、适于长个儿,而且丰富的卵磷脂可以给大脑提供足够的营养物质,同时黑芝麻作为熟芝麻粉的原材料时针对青少年用脑过度造成的少白头具有黑发的作用;由于采用小米粉作为辅料,而小米因富含维生素B1、B12等,因此具有防止消化不良及口角生疮的功效,因此针对青少年学习压力大、青春期火气旺的特殊情况可以实现缓解;由于采用玉米粉作为辅料,而玉米中含有大量的卵磷脂、亚油酸、谷物醇、维生素E、纤维素等,因此针对青少年具有助消化、营养大脑的作用;由于采用豌豆粉作为辅料,而豌豆富含蛋白质、脂肪,以及碳水化合物、粗纤维、胡萝卜素、维生素B1、维生素B2、钙、磷、钠、铁等,因此针对青少年具有助消化、营养眼睛的作用。本营养面粉具有较为全面丰富的营养物质,可替代采用精制面粉加工的面食制品在营养方面存在的不足,特别适用于正处于生长发育期的青少年作为主食食用。
具体实施方式
由于全麦面粉含丰富的维生素B1、B2、B6,烟碱酸(即维生素B3),钙、铁、锌等微量元素,是市场常见面粉中营养价值最高的面粉,因此本发明采用全麦面粉作为第一基料。
由于马铃薯不仅含有丰富的淀粉、蛋白质、脂肪、糖类等,还含有人体必须的21种氨基酸和多种维生素及人体不可缺的有益微量元素(如钙、磷、铁、钾、钠、碘、镁、钼等),因此本发明将马铃薯粉作为第二基料。
由于熟芝麻粉中含钙量较多,且含铁量比猪肝、鸡蛋黄都高出数倍,同时含有丰富的卵磷脂和脂肪,特别适用于正在生长发育期的青少年,因此本发明将熟芝麻粉作为第一辅料。
本适用于青少年的营养面粉该营养面粉的重量组份为:
作为本发明的优选方案,本营养面粉的重量组份为:全麦面粉53、马铃薯粉18、熟芝麻粉9、小米粉8、玉米粉8、豌豆粉4。
作为本发明的一种实施方式,本营养面粉的重量组份为:全麦面粉50、马铃薯粉15、熟芝麻粉10、小米粉10、玉米粉10、豌豆粉5。
作为本发明的另一种实施方式,本营养面粉的重量组份为:全麦面粉55、马铃薯粉20、熟芝麻粉5、小米粉5、玉米粉7、豌豆粉3。
其中,全麦面粉由全粒小麦经过磨粉、筛分步骤分级至适当颗粒大小,保有与原来整粒小麦相同比例之胚乳、麸皮及胚芽等成分;马铃薯粉以新鲜马铃薯为原料,经清洗、去皮、挑选、切片护色、脱水干燥后粉碎呈粉状;熟芝麻粉以黑芝麻或白芝麻为原料,经清洗、炒干后粉碎呈粉状;小米粉、玉米粉和豌豆粉分别由小米、玉米和豌豆粉碎成粉状。最后各原料按比例称重后混合均匀,包装即可。
本适用于青少年的营养面粉由于采用全麦面粉作为第一基料、马铃薯粉作为第二基料,因此基料在富含淀粉、蛋白质、脂肪、糖类等营养物质的基础上富含维生素B1、B2、B6,烟碱酸(即维生素B3),氨基酸,多种维生素,钙、铁、锌等微量元素,营养价值高;由于采用熟芝麻粉作为第一辅料,因此钙、铁的含量较高,且含有丰富的卵磷脂,针对正处于生长发育期的青少年,不仅钙量丰富、适于长个儿,而且丰富的卵磷脂可以给大脑提供足够的营养物质,同时黑芝麻作为熟芝麻粉的原材料时针对青少年用脑过度造成的少白头具有黑发的作用;由于采用小米粉作为辅料,而小米因富含维生素B1、B12等,因此具有防止消化不良及口角生疮的功效,因此针对青少年学习压力大、青春期火气旺的特殊情况可以实现缓解;由于采用玉米粉作为辅料,而玉米中含有大量的卵磷脂、亚油酸、谷物醇、维生素E、纤维素等,因此针对青少年具有助消化、营养大脑的作用;由于采用豌豆粉作为辅料,而豌豆富含蛋白质、脂肪,以及碳水化合物、粗纤维、胡萝卜素、维生素B1、维生素B2、钙、磷、钠、铁等,因此针对青少年具有助消化、营养眼睛的作用。本营养面粉具有较为全面丰富的营养物质,可替代采用精制面粉加工的面食制品在营养方面存在的不足,特别适用于正处于生长发育期的青少年作为主食食用。

1.一种适用于青少年的营养面粉,其特征在于,该营养面粉的重量组份为:

3.根据权利要求1或2所述的适用于青少年的营养面粉,其特征在于,所述的熟芝麻粉采用黑芝麻作为原材料。
4.根据权利要求1所述的适用于青少年的营养面粉,其特征在于,生产步骤如下:
①全麦面粉由全粒小麦经过磨粉、筛分步骤分级至适当颗粒大小;
②马铃薯粉以新鲜马铃薯为原料,经清洗、去皮、挑选、切片护色、脱水干燥后粉碎呈粉状;
③熟芝麻粉以黑芝麻或白芝麻为原料,经清洗、炒干后粉碎呈粉状;
④小米粉、玉米粉和豌豆粉分别由小米、玉米和豌豆粉碎成粉状;
⑤最后各原料按比例称重后混合均匀。
