本发明公开了一种发酵干豆渣片的制作方法,其特征在于包括以下步骤:1、取新鲜豆渣在铁锅中用柴火焙炒至八分熟;2、将炒好的豆渣置于无风无阳光照射下自然冷却至不烫手。3、加入1%的甜酒曲酵母至冷却了的豆渣并充分拌匀;4、用双手将拌好的豆渣捏成放置不自动松散的圆球形,大小以双手能握住为宜;5、将捏成球形的豆渣放置室内阴凉、干净、干燥处,关闭门窗,常温下自然发酵。发酵时间春秋一般为3‑4天,冬季稍长为5‑6天,夏季稍短为2‑3天。发酵过程中豆渣会慢慢长出一层白色绒毛,表面颜色由原来的微白色变为微黄色,用刀切开可见切面光滑、不沾刀,颗粒细腻,闻起来有微微的香气,切片成型不松散。6.将球形豆渣切片烘干即可。

本发明涉及一种食用发酵干豆渣片的制作方法。
背景技术
豆渣主要含蛋白质、脂肪、糖类、粗纤维、黄酮和一些矿物质钙、镁、钾、钠、锰、锌、铁等营养物质,具有防治便秘、降脂、降糖、减肥的功能,但因其口感较差,且难以成型,不方便烹饪,且保存时间较短,受到人们的摒弃。
发明内容
本发明的目的是提供一种发酵干豆渣片的制作方法,解决口感差、不易成型且保存时间不长的缺点。
本发明的技术解决方案是:1.将新鲜豆渣放在锅中焙炒至八分熟,豆渣量的多少依锅的大小而定,一般以盛满锅体积的2/5为宜;2.将炒好的豆渣置于无风无阳光照射下自然冷却至不烫手;3.加入1%的甜酒曲酵母至冷却了的豆渣并充分拌匀;4.将拌好的豆渣捏成放置不自动松散的圆球形,大小以双手能握住为宜;5.将捏成球形的豆渣放置室内阴凉、干净、干燥处,关闭门窗,常温下自然发酵。发酵时间春秋一般为3-4天,冬季为5-6天,夏季为2-3天。发酵过程中豆渣会慢慢长出一层白色绒毛,表面颜色由原来的微白色变为微黄色,用刀切开可见切面光滑、不沾刀,颗粒细腻,闻起来有微微的香气,切片成型不松散。此时,发酵过程完成;6.将球形豆渣切片烘干即可。

1.一种发酵干豆渣片的制作方法,其特征在于:将新鲜豆渣放在锅中焙炒至八分熟;将炒好的豆渣置于无风无阳光照射下自然冷却至不烫手;加入1%的甜酒曲酵母至冷却了的豆渣并充分拌匀;将拌好的豆渣捏成放置不自动松散的圆球形;将捏成球形的豆渣放置室内阴凉、干净、干燥处,关闭门窗,常温下自然发酵;发酵时间春秋一般为3-4天,冬季为5-6天,夏季为2-3天;将球形豆渣切片烘干即可。
