本发明公开了一种健康型酸菜鱼调味料,包括以下成分:植物油、盐、肉桂、紫苏叶、八角、砂仁、甘草、山柰、茴香、豆蔻壳、豆渣树根和辣椒。其中加入豆蔻壳和豆渣树根,对保持鱼的鲜嫩效果好;调味料经过炒制后,易于保存,保质期可以达到3年以上;本发明的调味料在使用时不加入任何化学防腐剂,安全健康,适合长期食用。

本发明涉及一种调味料,属于食品加工领域,尤其涉及一种健康型酸菜鱼调味料。
背景技术
随着现代社会的不断发展,人们对饮食的要求越来越高,传统的调味品已经不能满足烹饪需要,消费者对普通的单一调味品口味单一、缺乏层次感的缺点越来越不满意,复合型调味料越来越受到人们的欢迎。
本发明提供了一种健康型酸菜鱼调味料,不但具有独特的风味,鱼味道鲜嫩,口感好,去腥效果佳,而且不含任何化学添加剂,是一种新型健康的调味料。

基于背景技术存在的技术问题,本发明提出了一种健康型酸菜鱼调味料及其制备方法。
本发明的技术方案如下:
一种健康型酸菜鱼调味料,包括以下成分:植物油、盐、肉桂、紫苏叶、八角、砂仁、甘草、山柰、茴香、豆蔻壳、豆渣树根和辣椒。
优选的,所述的健康型酸菜鱼调味料,包括以下重量百分比的成分:植物油8-15%、盐4-10%、肉桂5-8%、紫苏叶3-5%、八角2-5%、砂仁1-4%、甘草2-5%、山柰3-6%、茴香4-8%、豆蔻壳5-8%、豆渣树根2-5%和辣椒余量。
优选的,所述的辣椒为晒干后的辣椒干,含水率低于15%。
豆蔻壳,中药名。为姜科植物白豆蔻Amomum kravanh Pierre ex Gagnep。或爪哇白豆蔻Amomum compactum Soland ex Maton的干燥成熟果实的果壳。主治化湿行气,温中止呕。适用于寒湿气滞、脘腹胀闷、胃呆、呕吐等症。其功用与豆蔻相同,但温性略减,力亦较弱。
豆渣树,中药名。为安息香科植物赤杨叶Alniphyllum fortunei(Hemsl.)Makino的根和叶。分布于西南及江苏、安徽、浙江、江西、福建、台湾、湖北、湖南、广东、海南、广西等地。具有祛风除湿,利水消肿之功效。常用于风湿痹痛,水肿,小便不利。主治风湿痹痛,水肿,小便不利。
豆渣树为落叶乔木,高15-20m。树皮暗灰色,有不规则纵裂纹,常有灰白色斑块。叶互生;柄长1-2cm,被星状柔毛至无毛;叶片椭圆形、长圆状椭圆形或倒卵状椭圆形,长7-15cm,宽4.5-8cm,先端急尖至渐尖,稀尾尖,基部宽楔形或楔形,边缘具细锯齿,两面被褐色星状毛,有时脱落变无毛,下面褐色或灰白色,有时具白粉;侧脉7-12对。总状花序或圆锥花序,顶生或腋生,花梗密被褐色星状毛;小苞片钻形,早落;花萼杯状,先端5裂齿;花白色带粉红色,长1.5-2cm,花冠裂片5,两面均被星状毛;雄蕊10,5长5短,花丝基部联合成长约8mm的管;子房密被黄色长绒毛,5室,花柱线形,柱头不明显5裂。蒴果长圆形,熟时纵裂成5果瓣。种子多数,长圆形,两端有不规则膜翅。花期4-7月;果期8-10月。生于海拔200-2200m的常绿阔叶林中。分布于西南及江苏、安徽、浙江、江西、福建、台湾、湖北、湖南、广东、海南、广西等地。
一种健康型酸菜鱼调味料的制备方法,包括以下步骤:将所有原料(植物油除外)粉碎后过120目筛,在低温植物油中炒熟,用棉布包装即可。
本发明的有益之处在于:
加入豆蔻壳和豆渣树根,对保持鱼的鲜嫩效果好;调味料经过炒制后,易于保存,保质期可以达到3年以上;本发明的调味料中不加入任何化学防腐剂,安全健康,适合长期食用。

一种健康型酸菜鱼调味料,包括以下重量百分比的成分:植物油12%、盐6%、肉桂7%、紫苏叶4%、八角3%、砂仁3%、甘草4%、山柰5%、茴香7%、豆蔻壳7%、豆渣树根3%和辣椒余量。
所述的辣椒为晒干后的辣椒干,含水率低于15%。
实施例2:
一种健康型酸菜鱼调味料,包括以下重量百分比的成分:植物油15%、盐4%、肉桂8%、紫苏叶3%、八角5%、砂仁1%、甘草5%、山柰3%、茴香8%、豆蔻壳5%、豆渣树根5%和辣椒余量。
所述的辣椒为晒干后的辣椒干,含水率低于15%。
实施例3:
一种健康型酸菜鱼调味料,包括以下重量百分比的成分:植物油8%、盐10%、肉桂5%、紫苏叶5%、八角2%、砂仁4%、甘草2%、山柰6%、茴香4%、豆蔻壳8%、豆渣树根2%和辣椒余量。
所述的辣椒为晒干后的辣椒干,含水率低于15%。

将实施例1中的豆蔻壳去除,其余配比和制备方法不变。

将实施例1中的豆渣树根去除,其余配比和制备方法不变。

以本发明实施例1-3和对比实施例1-3的调味料烧制的酸菜鱼随机各邀请100位群众进行品尝,对香味、腥味和口感鲜嫩感进行评判,得到如下满意人数:

2.如权利要求1所述的健康型酸菜鱼调味料,其特征在于,包括以下重量百分比的成分:植物油8-15%、盐 4-10%、肉桂 5-8%、紫苏叶 3-5%、八角 2-5%、砂仁 1-4%、甘草 2-5%、山柰 3-6%、茴香 4-8%、豆蔻壳 5-8%、豆渣树根 2-5%和辣椒 余量。
3.如权利要求1或2所述的健康型酸菜鱼调味料,其特征在于,所述的辣椒为晒干后的辣椒干,含水率低于15%。
4.如权利要求2所述的健康型酸菜鱼调味料,其特征在于,包括以下重量百分比的成分:植物油12%、盐 6%、肉桂 7%、紫苏叶 4%、八角 3%、砂仁 3%、甘草 4%、山柰 5%、茴香 7%、豆蔻壳 7%、豆渣树根 3%和辣椒 余量。
