Abstract
本发明公布了一种具有解酒功能的蜂蜜饮料及其制备方法。本发明以蜂蜜、恒顺香醋、玉米肽、B族维生素和维生素C为原料。先将维生素B1、维生素B2、维生素B6、维生素B12、烟酸、泛酸、叶酸、生物素、维生素C按一定的质量比,充分溶解定容至100mL得到维生素水溶液,再与蜂蜜、恒顺香醋、玉米肽以一定的质量比混合,搅拌均匀,经过120℃,10秒灭菌,无菌灌装得到具解酒功能的蜂蜜饮料。本发明产品具有良好的色泽和风味、酸甜可口,解酒功效良好。

技术领域
本发明涉及一种食品制造技术领域,特别是一种具有解酒功能的蜂蜜饮料及其制备方法。
背景技术
醉酒是因为饮酒过量,乙醇在体内的吸收率大于氧化代谢率,较多乙醇经血液循环进入人体,导致中枢神经系统障碍;乙醇代谢中产生大量乙醛,乙醛作为一种强力肌肉毒素,在组织和脏器内大量积累,损伤脏器;酒精代谢中产生大量自由基,刺激神经系统,导致自律神经平衡失调,引起心脏加速和血液中的水分和电解质平衡失调,对肝脏等多个器官造成损伤。最终造成头痛、晕眩、局部皮肤过敏,肠胃不适等酒后症状。
解酒和缓解酒后不适症状主要从加强乙醇的首过代谢、抑制乙醇的肠胃吸收,增强代谢和增强机体清除自由基能力三个方面考虑。
蜂蜜中约含有60%~80%的葡萄糖和果糖,易消化吸收、保证能量供给、抗疲劳,并且果糖能促进酒精分解吸收,减缓头痛症状。此外还含有蛋白质、多肽、矿物质、酶类、有机酸和维生素等,营养丰富。可提高人体免疫力、抗肿瘤,调节心血管系统,刺激肝组织再生、保护肝脏。
恒顺香醋主要成分是醋酸,此外还有有机酸、糖类、酯类以及各种氨基酸、多肽、蛋白质、矿物质等微量成分。醋酸等有机酸可促进糖代谢,可促进人体三羧酸循环顺利进行。有研究表明,恒顺香醋具有降血压、降血脂、增强肾功能、清除自由基的功效,可抗菌、利尿、保肝。
玉米肽可显著提高血清中的丙氨酸及亮氨酸,有助于产生稳定的辅酶NAD+,而人体内酒精代谢的重要酶乙醇脱氢酶(ADH)是以NAD+为辅酶的,ADH的活性影响乙醇在肠胃的首过代谢,从而抑制血液中乙醇的升高。
维生素B族,包括维生素B1、维生素B2、维生素B6、维生素B12、烟酸、泛酸、叶酸、生物素等,是维持人体正常机能与代谢不可或缺的水溶性维生素,B族维生素全是辅酶,参与能量代谢,可以解除酒精和尼古丁等毒素,保护肝脏。还可以帮助维持心脏、神经系统功能、维持消化系统及皮肤的健康,能增强体力、滋补强身。B族维生素之间有协同作用,也就是说一次摄取全部B族维生素,要比分别摄取效果更好。细胞活动的增加,对维生素B的需求跟着增加,各种维生素B的作用是相辅相成的。B1:B2:B6按1:1:1比例摄取,协同作用效果更好。而如果机体缺乏维生素B,细胞功能马上降低,可引起代谢障碍。
维生素B1对神经组织和精神状态有良好的影响,维生素B2进入人体磷酸化后可结合蛋白质成为一种调节氧化-还原过程的脱氢酶,脱氢酶是维持组织细胞呼吸的重要物质,缺乏易代谢紊乱。维生素B6是机体内许多重要酶系统的辅酶,帮助脑和免疫系统发挥正常的生理机能,可活化体内很多种酶,也是一种温和的利尿剂。维生素B12的主要生理功能是参与制造骨髓红细胞,防止恶性贫血;防止大脑神经受到破坏。烟酸在体内构成脱氢酶的辅酶,在代谢中起重要作用。泛酸可参与肾上腺、激素的制造及抗体的形成,并协助维生素的利用和能量的转化,可构成辅酶A,是酰基转移酶的辅酶。叶酸的辅酶形式是四氢叶酸,促进体内的一碳代谢。生物素是人体内多种酶的辅酶,参与体内的脂肪酸和碳水化合物的代谢,促进蛋白质的合成,还参与维生素B12、叶酸、泛酸的代谢,促进尿素合成与排泄。
维生素C是一种抗氧化剂,可以保护身体免于自由基的威胁。
目前很多解酒产品采用中草药成分,而中草药一般具有一定的毒副作用。再就是目前大部分解酒产品只是从清热解毒,养肝护肝等方面考虑的,未从醉酒和解酒机理方面全面考虑。
发明内容
本发明的目的是克服现有产品存在的上述不足,从醉酒和解酒机理方面着手开发一种以蜂蜜为原料,配以恒顺香醋、玉米肽、B族维生素和维生素C的具有解酒功能的蜂蜜饮料。本发明原料来源广泛、无毒无害,产品具有良好的色泽和风味、酸甜可口,配方合理、工艺简单,解酒功效良好。
为了达到上述目的,本发明采用的技术方案为,将蜂蜜、恒顺香醋、玉米肽和维生素水溶液混合均匀,经过120℃,10秒灭菌,无菌灌装得到具解酒功能的蜂蜜饮料。
(1)维生素水溶液的制备:
各种维生素按如下配比混合,充分溶解于水中,定容到100mL,为维生素水溶液:
维生素B1 0.025~0.5 g/100mL
维生素B2 0.025~0.5 g/100mL
维生素B6 0.025~0.5 g/100mL
维生素B12 0.0001~0.1 g/100mL
烟酸 0.1~3.0 g/100mL
泛酸 0.07~2.0 g/100mL
叶酸 0.01~0.1 g/100mL
生物素 0.01~0.1 g/100mL
维生素C 0.5~7.0 g/100mL
(2)将恒顺香醋、玉米肽、制备好的维生素水溶液按比例添加到蜂蜜中,搅拌混合均匀,蜂蜜、恒顺香醋、玉米肽和维生素水溶液的质量百分比:
蜂蜜
50%~70%
恒顺香醋
10%~30%
玉米肽
5%~15%
维生素水溶液 10%~20%
(3)将上述制备好的混合液,经过120℃,10秒灭菌,无菌灌装得到具解酒功能的蜂蜜饮料。
本发明具有如下优点:
1. 本发明从醉酒和解酒机理方面着手开发解酒功能的蜂蜜饮料,配方合理、工艺简单,产品解酒功效良好。
2. 本发明采用原料无毒无害,发明产品具有良好的色泽和风味、酸甜可口。
3. 本发明产品食用方便。
具体实施方式
为了达到上述目的,本发明采用的技术方案为,将蜂蜜、恒顺香醋、玉米肽和维生素水溶液混合均匀,经过120℃,10秒灭菌,无菌灌装得到具解酒功能的蜂蜜饮料。
(1)维生素水溶液的制备:
各种维生素按如下配比混合,充分溶解于水中,定容到100mL,为维生素水溶液:
维生素B1 0.1g/100mL
维生素B2 0.1g/100mL
维生素B6 0.1g/100mL
维生素B12 0.0005g/100mL
烟酸 2.0g/100mL
泛酸 1.0g/100mL
叶酸 0.04g/100mL
生物素 0.03g/100mL
维生素C 2.0g/100mL。
(2)将恒顺香醋、玉米肽、制备好的维生素水溶液按比例添加到蜂蜜中,搅拌混合均匀,蜂蜜、恒顺香醋、玉米肽和维生素水溶液的质量百分比:蜂蜜60%,恒顺香醋 20%,玉米肽10%,维生素水溶液10%。混合均匀后经过120℃,10秒灭菌,无菌灌装得到具解酒功能的蜂蜜饮料。
Claims (4)
1.一种蜂蜜解酒饮料的制备方法,该方法包括以下步骤:
(1)维生素水溶液的制备:
各种维生素按如下配比混合,充分溶解于水中,定容到100mL,为维生素水溶液:
维生素B1
0.025~0.5 g/100mL
维生素B2
0.025~0.5 g/100mL
维生素B6
0.025~0.5 g/100mL
维生素B12
0.0001~0.1 g/100mL
烟酸
0.1~3.0 g/100mL
泛酸
0.07~2.0 g/100mL
叶酸
0.01~0.1 g/100mL
生物素
0.01~0.1 g/100mL
维生素C
0.5~7.0 g/100mL
(2)将恒顺香醋、玉米肽、制备好的维生素水溶液按比例添加到蜂蜜中,搅拌混合均匀,蜂蜜、恒顺香醋、玉米肽和维生素水溶液的质量百分比:
蜂蜜
50%~70%
恒顺香醋
10%~30%
玉米肽
5%~15%
维生素水溶液
10%~20%
(3)将上述制备好的混合液,经过120℃,10秒灭菌,无菌灌装得到具解酒功能的蜂蜜饮料。
2.根据权利要求1所述的制备方法,其特征在于,所述步骤(1)维生素水溶液由维生素B1、维生素B2、维生素B6、维生素B12、烟酸、泛酸、叶酸、生物素、维生素C按一定质量比混合均匀制得。
3.根据权利要求1所述的制备方法,其特征在于,所述步骤(2)蜂蜜解酒饮料的配料为:蜂蜜、恒顺香醋、玉米肽、维生素水溶液。
4.根据权利要求1所述的制备方法,其特征在于,所述步骤(3)采用120℃,10秒灭菌,无菌灌装。
