本发明涉及一种抗动脉粥样硬化的营养锅边片,属于健康食品领域。
背景技术
动脉粥样硬化是血管疾病中常见而又最重要的一种,动脉粥样硬化患者动脉管壁增厚、变硬、失去弹性且管腔缩小。人体的动脉分为3层,由里到外称为内膜、中膜和外膜;动脉中层、外膜的硬化是由高血压病引起的,称为动脉硬化;动脉内膜上的脂质沉积似粥状,因此称为动脉粥样硬化。血液中的脂类包括胆固醇、三酰甘油、磷脂和游离脂肪酸,其中胆固醇和三酰甘油的浓度升高与动脉粥样硬化的发生、发展密切相关。当人们患有高脂血症时,人体对血脂的调节发生了障碍,血脂成分中胆固醇和三酰甘油的浓度升高,同时由于高血压、病毒感染、过度吸烟、情绪波动以及精神紧张等原因引起动脉内膜损伤,致使血脂渗透进动脉并沉积。
动脉粥样硬化患者不宜摄入过多热量,在平衡膳食的基础上,需控制总热量和脂肪的摄入,限制膳食饱和脂肪酸和胆固醇的摄入,需保证充足的膳食纤维和多种维生素。锅边作为广受消费者喜爱的传统美食,具有原料简单易得、制作方法简便等优点,且其烹饪简单可口、易消化,因此十分适合老年人食用。
膳食纤维所产生的生理热量很低且其持水力强、有助于调节肠道微生物菌群;长期补充膳食纤维可降低血液胆固醇和甘油三酯的含量,具有预防动脉粥样硬化的作用。
发明内容
本发明的目的在于提供一种抗动脉粥样硬化的营养锅边片,适合动脉粥样硬化患者或者脉粥样硬化高危人群食用。
为实现上述目的,本发明采用如下技术方案:
一种抗动脉粥样硬化的营养锅边片,包括以下重量份原料:大米粉75-92份、刺梨果渣膳食纤维1-10份、米糠膳食纤维1-10份、荞麦粉5-10份、植物油1-5份。
优选的,一种抗动脉粥样硬化的营养锅边片,包括以下重量份原料:大米粉79份、刺梨果渣膳食纤维10份、米糠膳食纤维4份、荞麦粉5份、植物油2份。
本发明的另一目的是提供一种制备上述抗动脉粥样硬化的营养锅边片的方法,其具体制作方法为:
(1)刺梨果渣膳食纤维的提取:将榨取果汁后剩余的刺梨果渣加水混匀并调节pH4.5-5.5,加入1wt%-5wt%纤维素酶,35-45℃下酶解6-12h;2000-4000rpm离心15-30min,取上清液,浓缩干燥得到可溶性刺梨果渣膳食纤维;
(2)米糠提取物的制备:将米糠微波加热至脂肪酶和过氧化物酶失活使米糠稳定,稳定后的米糠溶于5-10倍体积的水中,充分搅拌水提水溶性膳食纤维,浓缩干燥所得水溶性米糠膳食纤维;
(3)称取上述重量份的大米粉、刺梨果渣膳食纤维、米糠膳食纤维、荞麦粉以及植物油,加水调和并搅拌至各物质充分溶解;
(4)将步骤(3)所得溶液分批平摊至受热面,加热后将锅边片切成3cm-5cm见方后充氮包装即可。
本发明的优点在于:
刺梨:刺梨是我国特有的果树资源,含有丰富的维生素C、超氧化物歧化酶、黄酮类等营养物质而具有极高的营养、保健价值。刺梨具有增强机体对传染的抵抗力、防癌抗癌、治疗坏血病、排铅、抗衰老、治疗脚气、口腔溃疡、促进人体正常发育、治疗夜盲症、健脾助消化解疼痛以及降三高等作用。
米糠:糠中平均含蛋白质15%,脂肪16%-22%,糖3%-8%,水分10%,热量大约为125.1KJ/g。脂肪中主要的脂肪酸大多为油酸、亚油酸等不饱和脂肪酸,并含高量维生素、植物醇、膳食纤维、氨基酸及矿物质等。
荞麦:荞麦的谷蛋白含量很低,主要的蛋白质是球蛋白。荞麦所含的必需氨基酸中的赖氨酸含量高而蛋氨酸的含量低,氨基酸模式可以与主要的谷物(如小麦、玉米、大米的赖氨酸含量较低)互补。荞麦的碳水化合物主要是淀粉。因为颗粒较细小,所以和其他谷类相比,具有容易煮熟、容易消化、容易加工的特点。荞麦含有丰富的膳食纤维,其含量是一般精制大米的10倍;荞麦含有的铁、锰、锌等微量元素也比一般谷物丰富。B族维生素、维生素E、铬、磷、钙、铁、赖氨酸、氨基酸、脂肪酸、亚油酸、烟碱酸、烟酸、芦丁等
首先,刺梨是我国特有的果树资源,含有丰富的维生素C、超氧化物歧化酶、黄酮类等营养物质而具有极高的营养、保健价值;而加工后的刺梨果渣仍富含十分丰富的营养价值,但其利用率却很低。其次,米糠含有丰富的蛋白质、维生素、膳食纤维、矿物质等营养物质,是我国一种产量巨大的可再生资源。本发明提取刺梨果渣以及米糠中的可溶性膳食纤维,长期补充膳食纤维可降低血液胆固醇和甘油三酯的含量,具有预防动脉粥样硬化的作用。
其次,本发明将可溶性膳食纤维融入广受欢迎的小吃锅边的制作中,提升了锅边的营养价值。
具体实施方式
实施例1
一种抗动脉粥样硬化的营养锅边片,包括以下重量份原料:大米粉79份、刺梨果渣膳食纤维10份、米糠膳食纤维4份、荞麦粉5份、植物油2份。
其具体制作方法为:
(1)刺梨果渣膳食纤维的提取:将榨取果汁后剩余的刺梨果渣加水混匀并调节pH5.5,加入1wt%纤维素酶,35℃下酶解6h;2000rpm离心15min,取上清液,浓缩干燥得到可溶性刺梨果渣膳食纤维;
(2)米糠提取物的制备:将米糠微波加热至脂肪酶和过氧化物酶失活使米糠稳定,稳定后的米糠溶于5倍体积的水中,充分搅拌水提水溶性膳食纤维,浓缩干燥所得水溶性米糠膳食纤维;
(3)称取上述重量份的大米粉、刺梨果渣膳食纤维、米糠膳食纤维、荞麦粉以及植物油,加水调和并搅拌至各物质充分溶解;
(4)将步骤(3)所得溶液分批平摊至受热面,加热后将锅边片切成3cm见方后充氮包装即可。
实施例2
一种抗动脉粥样硬化的营养锅边片,包括以下重量份原料:大米粉75份、刺梨果渣膳食纤维8份、米糠膳食纤维10份、荞麦粉6份、植物油1份。
其具体制作方法为:
(1)刺梨果渣膳食纤维的提取:将榨取果汁后剩余的刺梨果渣加水混匀并调节pH4.5,加入5wt%纤维素酶,45℃下酶解12h;4000rpm离心30min,取上清液,浓缩干燥得到可溶性刺梨果渣膳食纤维;
(2)米糠提取物的制备:将米糠微波加热至脂肪酶和过氧化物酶失活使米糠稳定,稳定后的米糠溶于10倍体积的水中,充分搅拌水提水溶性膳食纤维,浓缩干燥所得水溶性米糠膳食纤维;
(3)称取上述重量份的大米粉、刺梨果渣膳食纤维、米糠膳食纤维、荞麦粉以及植物油,加水调和并搅拌至各物质充分溶解;
(4)将步骤(3)所得溶液分批平摊至受热面,加热后将锅边片切成5cm见方后充氮包装即可。
实施例3
一种抗动脉粥样硬化的营养锅边片,包括以下重量份原料:大米粉92份、刺梨果渣膳食纤维1份、米糠膳食纤维1份、荞麦粉5份、植物油1份。
其具体制作方法为:
(1)刺梨果渣膳食纤维的提取:将榨取果汁后剩余的刺梨果渣加水混匀并调节pH5,加入4wt%纤维素酶,40℃下酶解10h;3000rpm离心20min,取上清液,浓缩干燥得到可溶性刺梨果渣膳食纤维;
(2)米糠提取物的制备:将米糠微波加热至脂肪酶和过氧化物酶失活使米糠稳定,稳定后的米糠溶于8倍体积的水中,充分搅拌水提水溶性膳食纤维,浓缩干燥所得水溶性米糠膳食纤维;
(3)称取上述重量份的大米粉、刺梨果渣膳食纤维、米糠膳食纤维、荞麦粉以及植物油,加水调和并搅拌至各物质充分溶解;
(4)将步骤(3)所得溶液分批平摊至受热面,加热后将锅边片切成4cm见方后充氮包装即可。
实施例4
SPF级Wistar大鼠60只,雄性,体质量190-220g;适应性喂食一周后,空白组继续喂食正常饲料,动脉粥样硬化模型组和试验组喂食高脂饲料。第3-12周喂食试验组本发明产品,喂食模型组高脂饲料,空白组正常饲料。
IL-6检测:取全部动物主动脉根部、胸主动脉以及腹主动脉中断,清晰固定,常规石蜡包埋,HE染色,光学显微镜观察。采用SP法免疫组化染色。12W试验结束后,各组动物禁食12h,采腹主动脉血5mL,离心取上清,ELISA法测定大鼠血清中CRP水平, SOD(超氧化物歧化酶)水平。试验结果见表1.

与正常对照组相比,模型组的IL-6百分比、CRP显著增高,SOD显著降低;经10周连续取食本发明可一定程度降低IL-6、CRP水平。

Claims (2)
1.一种抗动脉粥样硬化的营养锅边片,其特征在于:包括以下重量份原料:大米粉75-92份、刺梨果渣膳食纤维1-10份、米糠膳食纤维1-10份、荞麦粉5-10份、植物油1-5份。
2.一种制备权利要求1所述的抗动脉粥样硬化的营养锅边片的方法,其特征在于:其制作方法为:
(1)刺梨果渣膳食纤维的提取:将榨取果汁后剩余的刺梨果渣加水混匀并调节pH4.5-5.5,加入1wt%-5wt%纤维素酶,35-45℃下酶解6-12h;2000-4000rpm离心15-30min,取上清液,浓缩干燥得到可溶性刺梨果渣膳食纤维;
(2)米糠提取物的制备:将米糠微波加热至脂肪酶和过氧化物酶失活使米糠稳定,稳定后的米糠溶于5-10倍体积的水中,充分搅拌水提水溶性膳食纤维,浓缩干燥所得水溶性米糠膳食纤维;
(3)称取上述重量份的大米粉、刺梨果渣膳食纤维、米糠膳食纤维、荞麦粉以及植物油,加水调和并搅拌至各物质充分溶解;
(4)将步骤(3)所得溶液分批平摊至受热面,加热后将锅边片切成3cm-5cm见方后充氮包装即可。
