本发明提供了一种蛹虫草维生素饮料及其制备方法,以特定比例的蛹虫草、玉竹、苦瓜干和橘皮4种具有药用功效的物质为主要原料,提供饮料的营养价值和保健功能;添加了营养成分维生素B6、维生素B12、牛磺酸和烟酸,提高饮料的营养成分;并添加了DL‑苹果酸、果胶和香精等食品添加剂改善口感;本发明采用的提取工艺,采用合适的工艺、水量、温度和提取时间,既能保证充分的提取原料的营养元素,也可以防止过度提取而提取出原料的有害成分,最大程度利用了原料的营养成分,保留了原料的原有营养价值和风味口感。本发明制备得到的蛹虫草维生素饮料具有清热排毒、开胃去油腻、滋阴养颜的功效,是日常饮用的清润饮品。

本发明属于保健饮品技术领域,尤其是一种蛹虫草维生素饮料及其制备方法。
背景技术
目前市场上出现的饮料大部分是纯净水、碳酸饮料、果汁饮料和茶饮料,这些饮料具有解渴、营养和方便的功能,但是不具有保健功能。随着人们对生活水平的追求的提高,越来越多的保健饮品受到了人们的喜爱。但是目前市场上的保健饮品的功能比较单一或者口感欠佳,不能满足市场上的需求。
蛹虫草,又名北冬虫夏草、北虫草,隶属真菌界子囊菌门、子囊菌纲、肉座菌目、麦角菌科、虫草属,是虫草属真菌的模式种,其化学成分和功能与著名的药用真菌冬虫夏草极其相似,某些活性成分如虫草素、核苷等物质含量还高于冬虫夏草。
蛹虫草具有分布广泛、可人工培育、富含虫草菌素和虫草多糖的优点,是虫草属中药用虫草菌的佼佼者。蛹虫草含有虫草酸、虫草素、黄酮类、多糖、腺苷等多种生物活性物质以及丰富的蛋白质和氨基酸,不仅具有保肺益肾、止血化痰、调节身体机能的功效,在结核咳血、阳痿遗精、腰膝酸痛、神精衰弱、糖尿病,升白血球和防癌抗癌方面也有辅助治疗功效,其独特的药理作用已日益引起药学界的高度重视。
蛹虫草可以直接食用,其有效成分多糖、腺苷和虫草酸也可以通过泡酒、代茶饮、煲汤等方式溶出,使机体将这些成分吸收。市场上虽然已经有以虫草为原料配制的酒品、茶品等饮料出现,但以虫草为原料配制的维生素功能性饮料比较少见。

优选地,所述食品添加剂选自,但不限于,阿斯巴甜、DL-苹果酸、果胶、食用香精中的一种或多种。

优选地,所述蛹虫草维生素饮料还包括白砂糖、果葡糖浆中的一种或多种。

一种制备上述的蛹虫草维生素饮料的方法,包括以下步骤:
(1)按重量份称取蛹虫草、玉竹、苦瓜干和橘皮,清洗干净,脱水30分钟;
(2)第一次提取,加入5-6倍量的水,在温度为50-60℃下,提取60-70min,然后,升温至60-70℃,提取30-40min,过滤,得到提取液A;
(3)第二次提取,加入5-6倍量的水,在温度为60-70℃下,提取50-60min,过滤,得到提取液B;
(4)合并提取液A和B;
(5)合并后的提取液的温度降至30-38℃后,加入维生素、食品添加剂、牛磺酸、饮用水,均合30-35min,得蛹虫草维生素饮料;
(6)将经过步骤(5)得到的蛹虫草维生素饮料在38-40℃下,进行罐装;
(7)罐装后,灭菌,冷却。
优选地,步骤(7)中的灭菌温度为110-120℃灭菌时间为10-15min。
优选地,步骤(7)中冷去步骤是将灭菌后的蛹虫草调制酒放置于水通道中15-20min。
蛹虫草,是一种名贵的药用真菌,与青藏野生冬虫夏草同属于真菌门虫草属,有相似的药用和滋补功效。蛹虫草性质平和,不寒不燥,对于大多数人来说都可以放心食用。现代科学论证蛹虫草不仅具有特殊的营养价值,而且有明显的药用价值。具备四大虫草成分:虫草素、虫草酸、虫草多糖和虫草SOD。蛹虫草还含有丰富的蛋白质、氨基酸、维生素、微量元素等。虫草多糖和SOD等多种生物活性物质的药用价值最为显著。虫草酸(甘露醇)可以显著地降低颅压,促进机体新陈代谢,因而使脑溢血和脑血栓病症得到缓解。中医认为,虫草酸(甘露醇)入肺肾二经,既能补肺阴,又能补肾阳,主治肾虚,阳痿遗精,腰膝酸痛,病后虚弱,久咳虚弱,劳咳痰血,自汗盗汗等,是唯一的一种能同时平衡、调节阴阳的中药。虫草素是一种具有抗菌活性的核苷类物质,对核多聚腺苷酸聚合酶有很强的抑制作用。并有降血糖的作用。蛹虫草酸和蛹虫草素能够综合调理人体内环境,增加体内巨噬细胞的作用,对增强和调节人体免疫作用、提高人体抗病能力有一定的作用。虫草多糖是一种高度分枝的半乳甘露聚糖,它能促进淋巴细胞转化,提高血清IgG的抗体含量和机体的免疫功能,增强机体自身抗癌抑癌的能力。SOD(超氧化物歧化酶)可以消除机体内超氧自由基,具有抗衰老、抗癌抑癌的作用。此外,蛹虫草还含有丰富的硒(Se)。蛹虫草具有补益肝肾、补精髓、止血化痰的作用。主治眩晕耳鸣、健忘不寐、腰膝酸软、阳痿早泄、久咳虚喘等。
玉竹为百合科多年生草本植物。根茎可供药用,中药名亦为玉竹。玉竹含有有甾体皂苷、黄酮、生物碱、多糖、甾醇、鞣质、维生素、矿物质、及多种微量元素。玉竹味甘,性微寒。入肺、胃经。具有养阴、润燥、清热、生津、止咳等功效。其用作滋补药品时,主治热病伤阴、虚热燥咳、心脏病、糖尿病、结核病等症,并可作高级滋补食品、佳肴和饮料,具有保健作用。
苦瓜干来源于葫芦科植物苦瓜Momordica charantia Linn.的干燥成熟果实,为椭圆形或长圆形片块。苦瓜果实,其可以入药,含苦瓜甙,5-羟基色胺和多种氨基酸如谷氨酸、丙氨酸、β-丙氨酸、苯丙氨酸、脯氨酸、α-氨基丁酸、瓜氨酸、半乳糖醛酸、果胶。又含脂肪酸为棕榈酸,硬脂酸,油酸,亚油酸、亚麻酸、桐酸、大量维生素C,具有清解暑热,清肝明目,清热解毒,健胃等功效,能够治疗中暑,痢疾,目赤疼痛等病症。
橘皮,又称为陈皮,为芸香科植物橘及其栽培变种的成熟果皮。橘皮含挥发油,其中主要为柠檬烯,还有α-侧柏烯、α-蒎烯、β-蒎烯、β-月桂烯、桧烯、辛醛、α-水芹烯、α-松油烯、对-聚伞花烯、芳樟醇、麝香草酚、香茅醛等多种成分。此外,橘皮中含橙皮甙、新橙皮甙、柑橘素;黄酮化合物、枸橼醛、β-谷甾醇、对羟福林等物质,具有祛痰平喘、抗炎抗过敏、抗病原微生物的作用。
橘皮性味锌、苦、温,中医认为,橘皮的功效为理气健胃、燥湿化痰。现代医学认为,橘皮中的挥发油能增强心脏的收缩力,但大剂量这有抑制作用;能扩张冠状动脉、可增强冠状动脉血流量的作用;能降低毛细管通透性,具有维生素P的作用;能扩张支气管,具有平喘作用;有刺激性,能促进消化液分泌与排除肠内积气。
橘皮含有的维生素C远高于果肉,维生素C也称为L-抗坏血酸,在体内起着抗氧化的作用,降低胆固醇、预防血管破裂或渗血;维生素C和维生素P配合,可以增强对环血病的治疗效果;经常饮用橘皮,对患有动脉硬化或维生素C缺乏症者有益。
本发明的有益效果:
本发明选用人们日常调理食用的原料配制,以特定比例的蛹虫草、玉竹、苦瓜干和橘皮4种具有药用功效的物质为主要原料,提供饮料的营养价值和保健功能;添加了营养成分维生素B6、维生素B12、牛磺酸和烟酸,提高饮料的营养成分;并添加了DL-苹果酸、果胶和香精等食品添加剂改善口感;本发明采用的提取工艺,采用合适的工艺、水量、温度和提取时间,既能保证充分的提取原料的营养元素,也可以防止过度提取而提取出原料的有害成分,最大程度利用了原料的营养成分,保留了原料的原有营养价值和风味口感。
本发明制备得到的蛹虫草维生素饮料具有清热排毒、开胃去油腻、滋阴养颜的功效,是日常饮用的清润饮品。
具体实施方式
为了使本发明的目的、技术方案和优点更加清楚明白,以下结合实施例,对本发明进行进一步详细说明。应当理解,此处所描述的具体实施例仅用于解释本发明,并不能用于限定本发明。
蛹虫草:符合卫计委2014年10号公告中蛹虫草的规定;
苦瓜干:符合DB11/691的规定;
橘皮、玉竹:符合《中华人民共和国药典》2010年版一部的规定;
烟酸:符合GB14757的规定;
维生素B6:符合GB 14753的规定;
维生素B12:符合《中华人民共和国药典》2010年版二部中维生素B12的规定;
牛磺酸:符合GB 14759的规定;
白砂糖:符合GB13104的规定;
果葡糖浆:符合GB/T 20882、GB 15203的规定;
阿斯巴甜(含苯丙氨酸):符合GB 22367的规定;
DL-苹果酸:符合GB 25544的规定;
果胶:符合GB 25533的规定;
香精:符合GB 12488的规定。
实施例1
一种普通型蛹虫草维生素饮料,每1000份包括以下按重量份计的原料:
上述的普通型蛹虫草维生素饮料的制备方法,包括以下步骤:
(1)按重量份称取蛹虫草、玉竹、苦瓜干和橘皮,清洗干净,脱水30分钟;
(2)第一次提取:加入5倍量的水,在温度为60℃,提取60min,然后,升温至70℃,提取30min,过滤,得到提取液A;
(3)第二次提取加入5倍量的水,在温度为70℃,提取50min,过滤,得到提取液B;
(4)合并提取液A和B;
(5)合并后的提取液的温度降至38℃后,加入烟酸、维生素B6、维生素B12、牛磺酸、白砂糖、果葡糖浆、阿斯巴甜、DL-苹果酸、果胶、香精和饮用水,均合30min,得蛹虫草维生素饮料;
(6)将经过步骤(5)得到的蛹虫草维生素饮料保存在40℃,进行罐装;
(7)罐装后,在110℃下,灭菌10min后,罐装瓶通过20m的冷水通道,冷却15min。
实施例2
一种无糖型蛹虫草维生素饮料,每1000份包括以下按重量份计的原料:
上述无糖型蛹虫草维生素饮料的制备方法,同实施例1的制备方法。
实施例3
一种无糖型蛹虫草维生素饮料,每1000份包括以下按重量份计的原料:
上述无糖型蛹虫草维生素饮料的制备方法,同实施例1的制备方法。
实施例4
一种无糖型蛹虫草维生素饮料采用实施例2的原料,通过以下方法进行制备:
(1)按重量份称取蛹虫草、玉竹、苦瓜干和橘皮,清洗干净,脱水30分钟;
(2)第一次提取,加入5倍量的水,在温度为50℃下,提取70min,然后,升温至60℃,提取40min,过滤,得到提取液A;
(3)第二次提取,加入5倍量的水,在温度为60℃下,提取60min,过滤,得到提取液B;
(4)合并提取液A和B;
(5)合并后的提取液的温度降至35℃后,加入烟酸、维生素B6、维生素B12、牛磺酸、果葡糖浆、阿斯巴甜、DL-苹果酸、果胶、香精和饮用水,均合30min,得蛹虫草维生素饮料;
(6)将经过步骤(5)得到的蛹虫草维生素饮料保存在40℃,进行罐装;
(7)罐装后,在110℃下,灭菌10min后;通过冷水通道冷却15min。
对比例1
采用实施例2的无糖型蛹虫草维生素饮料的原料,通过以下方法进行制备:
上述的普通型蛹虫草维生素饮料的制备方法,包括以下步骤:
(1)按重量份称取蛹虫草、玉竹、苦瓜干和橘皮,清洗干净;脱水30分钟;
(2)第一次提取,加入5倍量的水,在温度为70℃下,提取90min,过滤,得到提取液A;
(3)第二次提取,加入5倍量的水,在温度为70℃下,提取50min,过滤,得到提取液B;
(4)合并提取液A和B;
(5)合并后的提取液的温度降至38℃后,加入烟酸、维生素B6、维生素B12、牛磺酸、果葡糖浆、阿斯巴甜、DL-苹果酸、果胶、香精和水,均和30min,得蛹虫草维生素饮料;
(6)将经过步骤(5)得到的蛹虫草维生素饮料保存在40℃,进行罐装;
(7)罐装后,在110℃下,灭菌10min后;通过冷水通道冷却15min。
将实施例1-4和对比例1生产的蛹虫草维生素饮料进行检测,检测结果如表1-2所示。

1.一种蛹虫草维生素饮料,其特征在于,每1000份包括以下按重量份计的原料:
蛹虫草 1-2份
玉竹 0.5-1份
苦瓜干 1-2份
橘皮 0.5-1份
维生素 0.0005-0.012份
食品添加剂 0.1-2.7份
余量为饮用水。
2.根据权利要求1所述的蛹虫草维生素饮料,其特征在于,所述的维生素选自烟酸、维生素B6、维生素B12中的一种或多种。
3.根据权利要求1所述的蛹虫草维生素饮料,其特征在于,按重量份计,还包括牛磺酸0.4-0.5份。
4.根据权利要求1所述的蛹虫草维生素饮料,其特征在于,所述食品添加剂选自阿斯巴甜、DL-苹果酸、果胶、食用香精中的一种或多种。
5.根据权利要求1-4中任一项所述的蛹虫草维生素饮料,其特征在于,还包括白砂糖、果葡糖浆中的一种或多种。
6.根据权利要求5所述的蛹虫草维生素饮料,其特征在于,所述蛹虫草维生素饮料为普通型蛹虫草维生素饮料,每1000份包括以下按重量份计的原料:
蛹虫草 1-2份
玉竹 0.5-1份
苦瓜干 1-2份
橘皮 0.5-1份
烟酸 0.005-0.01份
维生素B6 0.0005-0.001份
维生素B12 0.0005-0.001份
牛磺酸 0.4-0.5份
白砂糖 0.3-0.5份
果葡糖浆 0.5-1份
阿斯巴甜 0.1-0.3份
DL-苹果酸 1.5-1.6份
果胶 0.5-0.6份
食用香精 0.1-0.2份
余量为饮用水。
7.根据权利要求5所述的蛹虫草维生素饮料,其特征在于,所述蛹虫草维生素饮料为无糖型蛹虫草维生素饮料,每1000份包括以下按重量份计的原料:
蛹虫草 1-2份
玉竹 0.5-1份
苦瓜干 1-2份
橘皮 0.5-1份
烟酸 0.005-0.01份
维生素B6 0.0005-0.001份
维生素B12 0.0005-0.001份
牛磺酸 0.4-0.5份
果葡糖浆 25-30份
阿斯巴甜 0.2-0.3份
DL-苹果酸 1.5-1.6份
果胶 0.5-0.6份
食用香精 0.1-0.2份
余量为饮用水。
8.一种制备上述任一项权利要求所述的蛹虫草维生素饮料的方法,其特征在于,包括以下步骤:
(1)按重量份称取蛹虫草、玉竹、苦瓜干和橘皮,清洗干净,脱水30分钟;(2)第一次提取,加入5-6倍量的水,在温度为50-60℃下,提取60-70min,然后,升温至60-70℃,提取30-40min,过滤,得到提取液A;
(3)第二次提取,加入5-6倍量的水,在温度为60-70℃下,提取50-60min,过滤,得到提取液B;
(4)合并提取液A和B;
(5)合并后的提取液的温度降至30-38℃后,加入维生素、食品添加剂、牛磺酸、饮用水,均合30-35min,得蛹虫草维生素饮料;
(6)将经过步骤(5)得到的蛹虫草维生素饮料在38-40℃下,进行罐装;
(7)罐装后,灭菌,冷却。
9.根据权利要求8所述的方法,其特征在于,步骤(7)中的灭菌温度为110-120℃灭菌时间为10-15min。
10.根据权利要求8所述的方法,其特征在于,步骤(7)中冷去步骤是将灭菌后的蛹虫草调制酒放置于水通道中15-20min。
