本发明公开了一种有保护心脑血管功效口感又好的葛根紫薯玉米保健食品,由按重量份配比计的葛根粉10-15,紫薯55-59,玉米碎粒70-79,根霉孢子粉0.1-0.3,罗汉果香甜晶2-3经发酵制成。本产品不仅营养丰富,易消化吸收,口感香甜,而且还含有葛根、罗汉果的活性成份,具有增强人体免疫力的功效。

本发明涉及食品,具体是一种有保护心脑血管功效口感又好的葛根紫薯玉米保健食品。
背景技术
紫薯是红薯中的一个新品种,含花青素,其食用方法是蒸煮食用或制成淀粉,也有人将其做成发酵食品,但只是具营养价值,缺乏特殊保健功能,另外,口感也不好。
发明内容
针对现有技术的不足,本发明提供一种有保护心脑血管功效口感又好的葛根紫薯玉米保健食品。
实现本发明目的的技术方案是:
一种有保护心脑血管功效口感又好的葛根紫薯玉米保健食品,由下述按重量份配比计的原料经发酵制成:
葛根粉10-15
紫薯55-59
玉米碎粒70-79
根霉孢子粉0.1-0.3
罗汉果香甜晶2-3。
所述葛根粉,是由葛根分离出的淀粉,为现有技术。葛根含有12%的黄酮类物质,包括大豆甙、大豆甙元、葛根素等,黄酮类物质具有扩张血管、疏通血管、保护心脑血管及增强机体抗病能力、抗衰延年的作用。
所述罗汉果香甜晶,保留了罗汉果的药用价值,口感清甜,有一种特殊的香气,甜度约为蔗糖的8-10倍。
所述根霉孢子粉为一种发酵菌,为现有技术。
本保健食品的制作方法,包括如下步骤:
(1)将紫薯洗净,去皮,切成块状,蒸熟;
(2)浸泡玉米碎粒:将玉米碎粒洗净,加入3倍的水量浸泡;
(3)将浸泡好的玉米碎粒煮熟;
(4)将煮熟的玉米碎粒再次浸泡发酵12-15小时后,煮沸杀菌;
(5)将步骤(1)的紫薯与步骤(4)的玉米碎粒混合,急速冷却,冷却后拌入葛根粉、根霉孢子粉及罗汉果香甜晶;
(7)装袋封口、打孔;
(8)在27-32℃环境中发酵1-2天,即得到布满菌丝的白色块状食材。
所得食材保鲜期4-5天,应趁鲜食用,或烘干加工成休闲食品。
本产品不仅营养丰富,易消化吸收,口感香甜,而且还含有葛根、罗汉果的活性成份,具有增强人体免疫力的功效。
具体实施方式
一种有保护心脑血管功效口感又好的葛根紫薯玉米保健食品,其配方原料及用料重量份配比为:
葛根粉15,紫薯55,玉米75,根霉孢子粉0.2,罗汉果香甜晶2,
其制备方法是:
(1)称取紫薯,洗净、去皮,切成长5cm、宽3cm的块状,蒸熟,备用;
(2)浸泡玉米碎粒:称取玉米碎粒洗净,加入3倍的水量浸泡;
(3)将浸泡好的玉米碎粒用大火煮沸35分钟,捞出,沥干水分;
(4)将玉米碎粒再次浸泡发酵13小时;
(5)将玉米碎粒用大火煮沸30分钟,杀菌,捞出,沥干水分;
(6)将步骤(1)的紫薯与步骤(5)的玉米碎粒混合,急速冷却至35℃以下,冷却后拌入葛根粉、根霉孢子粉及罗汉果香甜晶;
(7)装入袋中封口,装袋量为袋容积的4/5,以便发酵,并在袋面上每隔1.5厘米,用针或牙签扎一小孔;
(8)静置,让其在30℃的温度条件下,自然发酵28小时后即成。

1.一种有保护心脑血管功效口感又好的葛根紫薯玉米保健食品,其特征是:由下述按重量份配比计的原料经发酵制成:
葛根粉10-15
紫薯55-59
玉米碎粒70-79
根霉孢子粉0.1-0.3
罗汉果香甜晶2-3。
2.根据权利要求1所述的保健食品,其特征是:采用包括如下步骤的方法制成:
(1)将紫薯洗净,去皮,切成块状,蒸熟;
(2)浸泡玉米碎粒:将玉米碎粒洗净,加入3倍的水量浸泡;
(3)将浸泡好的玉米碎粒煮熟;
(4)将煮熟的玉米碎粒再次浸泡发酵12-15小时后,煮沸杀菌;
(5)将步骤(1)的紫薯与步骤(4)的玉米碎粒混合,急速冷却,冷却后拌入葛根粉、根霉孢子粉及罗汉果香甜晶;
(7)装袋封口、打孔;
(8)在27-32℃环境中发酵1-2天,即得到布满菌丝的白色块状食材。
