本发明涉及食品,具体是一种有养颜功效口感又好的银杏紫薯黄豆保健食品。
背景技术
紫薯是红薯中的一个新品种,含花青素,其食用方法是蒸煮食用或制成淀粉,也有人将其做成发酵食品,但只是具营养价值,缺乏特殊保健功能,另外,口感也不好。
发明内容
针对现有技术的不足,本发明提供一种有养颜功效口感又好的银杏紫薯黄豆保健食品。
实现本发明目的的技术方案是:
一种有养颜功效口感又好的银杏紫薯黄豆保健食品,由下述按重量份配比计的原料经发酵制成:
银杏仁10-15
紫薯55-59
黄豆70-79
根霉孢子粉0.1-0.3
罗汉果香甜晶2-3
淮山粉5-10。
所述银杏仁,含粗蛋白、粗脂肪、还原糖、核蛋白、矿物质、粗纤维和多种维生素等多种营养物质,具通畅血管,改善大脑功能,养颜抗衰老,扩张血管,促进血液循环,益脾定喘咳的功效。
所述罗汉果香甜晶,保留了罗汉果的药用价值,口感清甜,有一种特殊的香气,甜度约为蔗糖的8-10倍。
所述根霉孢子粉为一种发酵菌,为现有技术。
本保健食品的制作方法,包括如下步骤:
(1)将紫薯洗净,去皮,切成块状,蒸熟;
(2)浸泡黄豆:将黄豆洗净,加入3倍的水量浸泡;
(3)将浸泡好的黄豆煮熟;
(4)将煮熟的黄豆再次浸泡发酵12-15小时后,煮沸杀菌;
(5)将步骤(1)的紫薯与步骤(4)的黄豆混合,急速冷却,冷却后拌入银杏仁、根霉孢子粉、罗汉果香甜晶和淮山粉;
(7)装袋封口、打孔;
(8)在27-32℃环境中发酵1-2天,即得到布满菌丝的白色块状食材。
所得食材保鲜期4-5天,应趁鲜食用,或烘干加工成休闲食品。
本产品不仅营养丰富,易消化吸收,口感香甜,而且还含有银杏仁、罗汉果和淮山的活性成份,具有增强人体免疫力的功效。
具体实施方式
一种有养颜功效口感又好的银杏紫薯黄豆保健食品,其配方原料及用料重量份配比为:
银杏仁15,紫薯55,黄豆75,根霉孢子粉0.2,罗汉果香甜晶2,淮山粉5。
其制备方法是:
(1)称取紫薯,洗净、去皮,切成长5cm、宽3cm的块状,蒸熟,备用;
(2)浸泡黄豆:称取黄豆洗净,加入3倍的水量浸泡;
(3)将浸泡好的黄豆用大火煮沸35分钟,捞出,沥干水分;
(4)将黄豆再次浸泡发酵13小时;
(5)将黄豆用大火煮沸30分钟,杀菌,捞出,沥干水分;
(6)将步骤(1)的紫薯与步骤(5)的黄豆混合,急速冷却至35℃以下,冷却后拌入银杏仁、根霉孢子粉、罗汉果香甜晶和淮山粉;
(7)装入袋中封口,装袋量为袋容积的4/5,以便发酵,并在袋面上每隔1.5厘米,用针或牙签扎一小孔;
(8)静置,让其在30℃的温度条件下,自然发酵28小时后即成。

1.一种有养颜功效口感又好的银杏紫薯黄豆保健食品,其特征是:由下述按重量份配比计的原料经发酵制成:
银杏仁10-15
紫薯55-59
黄豆70-79
根霉孢子粉0.1-0.3
罗汉果香甜晶2-3
淮山粉5-10。
2.根据权利要求1所述的保健食品,其特征是:采用包括如下步骤的方法制成:
(1)将紫薯洗净,去皮,切成块状,蒸熟;
(2)浸泡黄豆:将黄豆洗净,加入3倍的水量浸泡;
(3)将浸泡好的黄豆煮熟;
(4)将煮熟的黄豆再次浸泡发酵12-15小时后,煮沸杀菌;
(5)将步骤(1)的紫薯与步骤(4)的黄豆混合,急速冷却,冷却后拌入银杏仁、根霉孢子粉、罗汉果香甜晶和淮山粉;
(7)装袋封口、打孔;
(8)在27-32℃环境中发酵1-2天,即得到布满菌丝的白色块状食材。
