Abstract
本发明涉及一种固体饮料,特别是涉及一种具有调节胃肠功能的无花果沙棘复合固体饮料及其制备方法。所述制作方法包含以下步骤:(1)无花果汁的制备;(2)沙棘果汁的压榨;(3)果汁浓缩;(4)调配和配制;(5)干燥和包装。本发明利用酶水解无花果并在低温条件下加工沙棘鲜果汁,最大限度地保留并利用了无花果和沙棘的有效成分,加强了二者合用调理胃肠道功能的协同作用。本发明的固体饮料酸甜适口,分散均匀,复水性好,携带方便。
Description
技术领域
本发明涉及一种固体饮料,特别是涉及一种具有调节胃肠功能的无花果沙棘复合固体饮料及其制备方法。
背景技术
随着社会的发展和生活节奏的加快,人们生活质量的日益提高,饮食习惯发生了极大的变化,源于社会、工作和生活的压力增加,由此引起的胃肠道的不适和疾病严重影响着人们的身心健康、工作和生活质量。现有的调节胃肠道功能的保健食品和饮料主要集中在以益生菌和膳食纤维为原料开发的产品上。如益生菌酸奶、各种含有益生菌的保健咀嚼片、各种膳食纤维固体饮料等。《中国药典》2015版一部收载中成药健胃消食片为消食剂,具有健胃消食之功效。主治脾胃虚弱所致的食积,症见不思饮食,嗳腐酸臭,脘腹胀满;消化不良见上述证候者。成分为太子参,陈皮,山药,麦芽(炒),山楂 。这些产品对人们的胃肠道健康保健发挥了极大的作用。但这些产品也存在着各种不足之处:含有益生菌的产品不易保存携带;含膳食纤维的产品产生效果时,服用量要求较大;健胃消食片等保健药品不能长期服用。
发明内容
本发明的目的在于提供一种具有调节胃肠道功能的无花果沙棘复合固体饮料及其制备方法。制备的产品,口感细腻、无花果香味浓郁、营养丰富、回味悠长,食疗价值高,便于携带和服用,易于被人体吸收,并具有调节胃肠道的功能。
无花果(Ficus carica L.)为桑科植物无花果的聚花果,具有广泛的营养价值和药用价值。现代研究表明,无花果含有18种氨基酸(10种为人体所必需)、多种维生素和矿物质,特别是富含黄酮、多糖、SOD等具有防治心血管疾病和老年性痴呆症的生理活性物质,还含具有抗癌功效的呋喃香豆素内酯、补骨脂素、佛手柑内酯等物质。国内外大量研究资料表明,无花果具有多种药理作用,如抗癌、抗肿瘤、镇痛、抑菌、抗病毒、调节机体代谢、调节免疫、消除疲劳、抗衰老等多种作用。无花果可加工成系列保健食品。无花果营养丰富,风味诱人,既可入药,又能食用。无花果属浆果类,成熟时柔软多汁,不耐贮运,因此,一般需制成干果。《云南中草药》记载其功能主治:"健胃止泻,祛痰理气。治食欲不振,消化不良,肠炎,痢疾,咽喉痛,咳嗽痰多,胸闷。"用于食欲不振,脘腹胀痛,痔疮便秘,消化不良,痔疮,脱肛,腹泻、乳汁不足,咽喉肿痛,热痢,咳嗽多痰等症。
沙棘系蒙古族、藏族习用药材。为胡颓子科植物沙棘Hippophae rhamnoides L.的干燥成熟果实,富含多种营养成分和生物活性物质,既可食用,又可药用,且营养价值颇高,临床治疗效果显著。《中国药典》 2015年版一部记载其【功能与主治】为健脾消食,止咳祛痰。活血散瘀。用于脾虚食少,食积腹痛,咳嗽痰多,胸痹心痛,瘀血经闭,跌扑瘀肿。 沙棘果实含有多种维生素,如维生素A、维生素B1、维生素B2、维生素B12、维生素E、维生素F、维生素K、维生素P。尤为重要的是沙棘果实中维生素C的含量颇高,单位含量580-800mg/100g,是猕猴桃的3倍,苹果的20倍,西红柿的80倍。沙棘是世界上迄今所发现的富含维生素最多的珍贵植物。被誉为“天然的维生素宝库”和“绿色黄金”。
无花果和沙棘虽然富含营养,有很高的保健价值,但二者单独直接食用或加工成产品时,无花果比较甜腻、无悦人的风味,沙棘由于含有较高的单宁和有机酸、酸涩不能入口,且健胃消食,调理胃肠功能的作用不能充分发挥,因此,都不易单独使用。本发明以无花果、沙棘为原料生产复合固体饮料,这不仅增强了营养和保健功能,而且在风味上相互得到弥补,更加强了调理胃肠道功能的作用。
固体饮料是指以糖、乳或乳制品、蛋或蛋制品、果汁或食用植物抽取物等为主要原料,添加适量的辅料或食品添加剂而制成的粉末状或块状饮品。虽然我国固体饮料起步较晚,但近些年来发展相当迅速,主要原因是 (与传统的液体饮料相比)固体饮料具有如下一些优点:质量显著减少,体积显著变小,携带方便;风味自然,速溶性好,应用范围广,饮用方便;易于保持卫生;包装简易,运输方便。
由于无花果和沙棘成熟季节不一,所以,本发明的原料选用无花果干果和沙棘鲜果。
本发明的一种无花果实际复合固体饮料及其制备方法,通过以下技术方案实现:
(1)无花果汁的制备 称取一定量的干无花果,清洗干净后,按无花果与水质量比为1:3~7加去离子水,浸泡1-3 小时后,用打浆机打浆,打浆的果肉在80-90℃下加热浸提5-25分钟后,迅速冷却至常温,用压榨机压榨取汁,筛网孔径大小为150目。过滤后的无花果汁,加入0.1%-0.3%的果胶酶, 果胶酶的酶活力≥100000U/g。在40-45℃下保温处理3-6 小时后,在85-100℃下钝化酶3-5 min,迅速冷却至常温,取上清液备用;
(2)沙棘果汁提取 取沙棘鲜果,清洗干净后直接压榨取汁,压榨过滤后的沙棘汁,在4℃下采用自然澄清法澄清,取澄清后的无花果汁和沙棘果汁分别用减压浓缩装置浓缩,浓缩真空度-0.05-0.08 MPa,浓缩无花果汁时温度在55-90℃ , 浓缩沙棘果汁时温度在50℃以下。浓缩至无花果汁和沙棘果汁可溶性固形物分别到20%-25%和15%-20%为止;
(3)调配和配制 将浓缩好的无花果汁和沙棘果汁以3~5:1的体积比在配料罐中搅拌成混合果汁;再按质量份数比进行配制:混合果汁2-5份,蔗糖1-2份,糊精1-2份,甜蜜素0.001-0.003份。将称量好的蔗糖 (经80-100目细筛),糊精 (经80目细筛)、甜蜜素加入混合果汁,充分搅拌,成浆液状;
优选地,本发明提供一种较佳配比:混合果汁3份,蔗糖1份,麦芽糊精1份,甜蜜素0.002份;
进一步地,本发明的制备过程中,为了能使高血脂和高血糖的人群饮用,可使用低聚木糖、低聚果糖中的一种或两种的混合物代替蔗糖;
进一步地,在本发明中,甜蜜素作为甜味剂,还可以是安赛蜜、三氯蔗糖、甜菊糖苷中的一种或几种的混合物;
(4)搅拌好的浆液状物料在50℃以下真空干燥,或在低温在冷冻后,再用真空冷冻干燥机干燥,条件为:-20℃~-50℃温度,真空度(0.01-0.025) MPa。干燥后水分含量≤5%。对得到的干粉进行粉碎并过60目筛。过筛后的粉末按包装要求用镀塑铝箔袋迅速计量包装。
本发明的食用方法:食用时,温水冲调即可。
有益效果:
本发明的主要原料为无花果和沙棘,二者均为食药同源品种,但二者单用时调理胃肠道功能的作用都不强,而且口感粗糙、食味不佳。本发明利用酶水解无花果并在低温条件下加工沙棘鲜果汁,最大限度地保留并利用了无花果和沙棘的有效成分,加强了二者合用调理胃肠道功能的协同作用。
本发明的固体饮料酸甜适口,分散均匀,溶解性好,携带方便。
下面结合具体实施例对本发明作进一步详细说明。
具体实施方式
实施例1:
一种无花果固体饮料及其制备方法,其制备方法包括以下工序:
(1)无花果汁的制备 称取一定量的干无花果,清洗干净后,按无花果与水质量比为1:5加去离子水,浸泡2 小时后,用打浆机打浆,打浆的果肉在85℃下加热浸提20分钟后,迅速冷却至常温,用压榨机压榨取汁,筛网孔径大小为150目。过滤后的无花果汁,加入0.3%的果胶酶,在45℃下保温处理4 小时后,在90℃下钝化酶4 min,迅速冷却至常温,取上清液备用;
(2)沙棘果汁提取 取沙棘鲜果,清洗干净后直接压榨取汁,压榨过滤后的沙棘汁,在4℃下采用自然澄清法澄清;
(3)取澄清后的无花果汁和沙棘果汁分别用减压浓缩装置浓缩,浓缩真空度-0.08MPa,浓缩无花果时,温度在60℃,浓缩沙棘果汁时温度在45℃。浓缩至无花果汁和沙棘果汁可溶性固形物分别到20%和18%为止;
(4)调配 将浓缩好的无花果汁和沙棘果汁以4:1的体积比在配料罐中进行调配,再加入蔗糖粉(过80目筛),麦芽糊精粉(过80目筛)、甜蜜素,按混合果汁:蔗糖粉:麦芽糊精粉:甜蜜素=3:1:1:0.002(质量比)进行添加,并充分搅拌。搅拌好的浆液在50℃以下真空干燥,真空度-0.025 MPa。干燥后水分含量≤5%。对得到的干粉进行粉碎并过60目筛。过筛后的粉末按包装要求用镀塑铝箔袋包装成10g/袋。
本实例为含糖型口服固体饮料。
实施例2:
一种无花果固体饮料及其制备方法,其制备方法包括以下工序:
(1)无花果汁的制备 称取一定量的干无花果,清洗干净后,按无花果与水质量比为1:4加去离子水,浸泡2 小时后,用打浆机打浆,打浆的果肉在85℃下加热浸提20分钟后,迅速冷却至常温,用压榨机压榨取汁,筛网孔径大小为150目。过滤后的无花果汁,加入0.3%的果胶酶,在45℃下保温处理4 小时后,在85℃下钝化酶5 min,迅速冷却至常温,取上清液备用;
(2)沙棘果汁提取 取沙棘鲜果,清洗干净后直接压榨取汁,压榨过滤后的沙棘汁,在4℃下采用自然澄清法澄清;
(3)取澄清后的无花果汁和沙棘果汁分别用减压浓缩装置浓缩,浓缩真空度-0.08MPa,浓缩无花果时,温度在70℃,浓缩沙棘果汁时温度在40℃。浓缩至无花果汁和沙棘果汁可溶性固形物分别到20%和18%为止;
(4)调配 将浓缩好的无花果汁和沙棘果汁以4:1的体积比在配料罐中进行调配,再加入低聚木糖粉(过80目筛),麦芽糊精粉(过80目筛)、甜蜜素,按混合果汁:低聚木糖粉:麦芽糊精粉:安赛蜜=3:1:1:0.002(质量比)进行添加,并充分搅拌。搅拌好的浆液在50℃以下真空干燥,真空度-0.025 MPa。干燥后水分含量≤5%。对得到的干粉进行粉碎并过60目筛。过筛后的粉末按包装要求用镀塑铝箔袋包装成10g/袋。
Claims (2)
1.一种具有调节胃肠功能的无花果沙棘复合固体饮料及其制备方法,其特征在于,所述的无花果沙棘复合固体饮料是由无花果和沙棘,经无花果提取、沙棘果汁的压榨、果汁浓缩、调配和配制、干燥和包装制成的固体饮料。
2.根据权利要求1所述的一种具有调节胃肠功能的无花果沙棘复合固体饮料及其制备方法,其特征在于,所述的无花果沙棘复合固体饮料采用如下制备方法制得:
(1)无花果汁的制备 称取一定量的干无花果,清洗干净后,按无花果与水质量比为1:3-7加纯化水,浸泡1-3 小时后,用打浆机打浆,打浆的果肉在80-90℃下加热浸提5-25 分钟后,迅速冷却至常温,用压榨机压榨取汁,筛网孔径大小为150目;过滤后的无花果汁,加入0.1%-0.3%的果胶酶,果胶酶的酶活力≥100000U/g,在40-45℃下保温处理3-6 小时后,在85-100℃下钝化酶3-5 min,迅速冷却至常温,取上清液备用;
(2)沙棘果汁压榨 取沙棘鲜果,清洗干净后直接压榨取汁,压榨过滤后的沙棘汁,在4℃下采用自然澄清法澄清;
(3)果汁浓缩 取澄清后的无花果汁和沙棘果汁分别用减压浓缩装置浓缩,浓缩真空度-0.05-0.08 MPa,浓缩无花果汁时温度在55-90℃ ,浓缩沙棘果汁时温度在50℃以下,浓缩至无花果汁和沙棘果汁可溶性固形物分别到20%-25%和15%-20%为止,
(4)调配和配制 将浓缩好的无花果汁和沙棘果汁以3-5:1的体积比在配料罐中搅拌成混合果汁;再按质量份数比进行配制:混合果汁2-5份,蔗糖1-2份,糊精1-2份,甜蜜素0.001-0.003份,将称量好的蔗糖 (经80-100目细筛),糊精 (经80目细筛)、甜蜜素加入混合果汁,充分搅拌,成浆液状;
优选地,本发明提供一种较佳配比:混合果汁3份,蔗糖1份,麦芽糊精1份,甜蜜素0.002份;
进一步地,本发明的制备过程中,为了能使高血脂和高血糖的人群饮用,可使用低聚木糖、低聚果糖中的一种或两种的混合物代替蔗糖;
进一步地,在本发明中,甜蜜素作为甜味剂,还可以是安赛蜜、三氯蔗糖、甜菊糖苷中的一种或几种的混合物;
(5)干燥和包装 搅拌好的浆液状物料在50℃以下真空干燥,或在低温冷冻后,再用真空冷冻干燥机干燥,条件为:-20℃~-50℃温度,真空度(0.01-0.025) MPa,干燥后水分含量≤5%,对得到的干粉进行粉碎并过60目筛;过筛后的粉末按包装要求用计量包装。
