狗肉,在中国某些地区,又叫“香肉”或“地羊”。它在所有的家养动物中历史最早,是从狼驯化而来的,狼驯化为狗,是人类历史上的创举。我国民间有“天上的飞禽,香不过鹌鹑;地上的走兽,香不过狗肉”之说。民间还有“狗肉滚三滚,神仙站不稳”的谚语。由于狗肉闻起来气味醇厚。芳香四溢,所以又叫香肉。
藕粉是莲藕加工而成的纯天然淀粉,藕粉的作用与功效是益胃健脾、养血补益,治肺热咳嗽、烦躁口渴、脾虚泄泻,莲藕粉营养价值高(1)本发明原料复配合理,充分发挥健脾开胃、食疗保健的作用, 藕粉味甘、性平、生熟均可食用,主治热渴,散淤血,生肌;熟藕性温味甘,有益胃健脾、养血补益、止泻功能;主治肺热咳嗽、烦躁口渴、脾虚泄泻、食欲不振及各种血症。 藕粉能止血散瘀:藕含有大量的单宁酸,有收缩血管作用,可用来止血。藕还能凉血,散血,中医认为其止血而不留瘀,是热病血症的食疗佳品。。

一种健脾开胃发酵狗肉,其是由下述重量份的原料制得:鲜荷花0.2-0.4,葫芦茶0.1-0.2、野茶花0.1-0.3,橘红花0.6-1,月见草0.1-0.3、糯米1-3、魔芋粉0.1-0.3、黑豆1-4、腐乳粉1-3、燕麦2-4、柠檬酸0.01-0.03、藕粉1-3、普鲁兰多糖0.3-0.5、壳聚糖0.2-0.4、明胶0.1-0.2、白糖1-2、蜂蜜2-4、食盐4-6、生抽1-3、狗肉350-450。
所述的一种健脾开胃发酵狗肉,
(1)按重量份取糯米、魔芋粉、黑豆、藕粉、燕麦,清洗干净后,加水浸泡3-5h,过滤后破碎成浆,然后加入上述原料重量5-6倍的纯净水,加热熬制10-30分钟后,冷却,加入腐乳粉,在温度为28-30℃、相对湿度为80-90%的条件下发酵2-3天,取出后在温度为4-6℃、相对湿度70-95%的条件下放置2-3天,得一次发酵液备用;
(2)将鲜荷花、葫芦茶、野茶花,橘红花,月见草混合并绞碎后,搅拌均匀后,与一次发酵液混合均匀后,在温度为27-32℃、相对湿度为70-80%的条件下发酵1-2天,过滤,得二次发酵液备用;
(3)将狗肉与二次发酵液和白糖、蜂蜜、食盐、生抽混匀,放入真空滚揉机中缓慢滚揉,再在24-28℃、相对湿度70-80%的条件下挂晾发酵2-3天,然后在最后在17-20℃、相对湿度70-80%的条件下自然挂晾干燥3-5天,所得发酵狗肉备用;
(4)将柠檬酸加适量水搅拌均匀,再加入壳聚糖,充分地搅拌、静止,再加入其余原料混匀后,得到浆液,将其喷涂到发酵狗肉表面,快速风干即得。
本发明的优点是:
(1)本发明原料复配合理,充分发挥健脾开胃、食疗保健的作用, 藕粉味甘、性平、生熟均可食用,主治热渴,散淤血,生肌;熟藕性温味甘,有益胃健脾、养血补益、止泻功能;主治肺热咳嗽、烦躁口渴、脾虚泄泻、食欲不振及各种血症。 藕粉能止血散瘀:藕含有大量的单宁酸,有收缩血管作用,可用来止血。藕还能凉血,散血,中医认为其止血而不留瘀,是热病血症的食疗佳品。藕粉能清热凉血:莲藕生用性寒,有清热凉血作用,可用来治疗热性病症;莲藕味甘多液、对热病口渴、衄血、咯血、下血者尤为有益; 藕粉能益血生肌:莲藕的营养价值很高,富含铁、钙等微量元素,植物蛋白质、维生素以及淀粉含量也很丰富,有明显的补益气血,增强人体免疫力作用。故中医称其:“主补中养神,益气力”; 藕粉能通便止泻、健脾开胃:莲藕中含有黏液蛋白和膳食纤维,能与人体内胆酸盐,食物中的胆固醇及甘油三酯结合,使其从粪便中排出,从而减少脂类的吸收。莲藕散发出一种独特清香,还含有鞣质,有一定健脾止泻作用,能增进食欲,促进消化,开胃健中,有益于胃纳不佳,食欲不振者恢复健康。

一种健脾开胃发酵狗肉,其是由下述重量份的原料制得:鲜荷花0.2,葫芦茶0.1、野茶花0.1,橘红花0.6,月见草0.1、糯米1、魔芋粉0.1、黑豆1、腐乳粉1、燕麦2、柠檬酸0.01、藕粉1、普鲁兰多糖0.3、壳聚糖0.2、明胶0.1、白糖1、蜂蜜2、食盐4、生抽1、狗肉350。

1.一种健脾开胃发酵狗肉,其特征在于:其是由下述重量份的原料制得:鲜荷花0.2-0.4,葫芦茶0.1-0.2、野茶花0.1-0.3,橘红花0.6-1,月见草0.1-0.3、糯米1-3、魔芋粉0.1-0.3、黑豆1-4、腐乳粉1-3、燕麦2-4、柠檬酸0.01-0.03、藕粉1-3、普鲁兰多糖0.3-0.5、壳聚糖0.2-0.4、明胶0.1-0.2、白糖1-2、蜂蜜2-4、食盐4-6、生抽1-3、狗肉350-450。
2.根据权利要求1所述的一种健脾开胃发酵狗肉,其特征在于:
(1)按重量份取糯米、魔芋粉、黑豆、藕粉、燕麦,清洗干净后,加水浸泡3-5h,过滤后破碎成浆,然后加入上述原料重量5-6倍的纯净水,加热熬制10-30分钟后,冷却,加入腐乳粉,在温度为28-30℃、相对湿度为80-90%的条件下发酵2-3天,取出后在温度为4-6℃、相对湿度70-95%的条件下放置2-3天,得一次发酵液备用;
(2)将鲜荷花、葫芦茶、野茶花,橘红花,月见草混合并绞碎后,搅拌均匀后,与一次发酵液混合均匀后,在温度为27-32℃、相对湿度为70-80%的条件下发酵1-2天,过滤,得二次发酵液备用;
(3)将狗肉与二次发酵液和白糖、蜂蜜、食盐、生抽混匀,放入真空滚揉机中缓慢滚揉,再在24-28℃、相对湿度70-80%的条件下挂晾发酵2-3天,然后在最后在17-20℃、相对湿度70-80%的条件下自然挂晾干燥3-5天,所得发酵狗肉备用;
