Abstract
本发明公开了一种解暑粥,其配方包括以下重量份数的各组分:粳米400~500份、小米100~150、绿豆80~100、甜玉米粒100~150、百合花6~10、桃花2~3、菊花2~3、金银花1~2、荷叶1~2,β-环状糊精0.75~1,白砂糖30~80。本发明还公开了该解暑粥的制备方法。本发明的配方中各中食材的选取和用量会直接影响到粥的色泽、香气、滋味,经过申请人的精心调配,谷香与花的香气不会互相覆盖,香味浓郁、醇厚,能促进人的食欲,又能舒缓人的压力。本发明的解暑粥的营养丰富、制作方法简单、操作性强、适合于规模化生产,具有良好的市场前景。

技术领域
本发明属于食品加工技术领域,特别涉及一种解暑粥及其制备方法。
背景技术
在炎热的夏季,血管扩张,血液流于皮肤表面,胃肠道血液相对减少,很多人到了夏天出现没有力气、食欲不好,容易发生头重倦怠、食欲不振等不适,甚至引起中暑,伤害健康。在夏季喝粥一方面可以补充水分,另外通过喝粥增加药物同时进行调制增加营养成分,协调机体,所以喝粥对人是药食同补,而且效果非常好的食品。
为保证胃肠正常工作,就要在饮食上对机体起到滋养补益的作用,增强人体抵抗力,有效地抗御暑热的侵袭,避免发生中暑。这是夏季防病保健的重要措施。吃解暑保健粥则是饮食调理措施之一。
绿豆粥、莲子粥、绿豆百合粥、荷叶莲子粥等都是人们熟知的解暑粥,但是随着生活水平的提高,人们的保健意识不断加强,要求解暑粥在具有清热解暑功能外,还要味道宜人兼顾营养补充功能。因此,克服传统解暑粥功能单一的不足,开发一种营养丰富、配比合理,同时具有清热解暑功能的解暑粥,是当今饮食潮流的发展方向。
发明内容
本发明要解决的技术问题是克服现有的缺陷,提供一种解暑粥,其配方包括以下重量份数的各组分
粳米400~500份、小米100~150份、绿豆80~100份、甜玉米粒100~150份、百合花6~10份、桃花2~3份、菊花2~3份、金银花1~2份、荷叶1~2份,β-环状糊精0.75~1份,白砂糖30~80份。
进一步的,该解暑粥可以由以下重量份数的各组分组成:
粳米500份、小米120份、绿豆90份、甜玉米粒120份、百合花8份、桃花2份、菊花2份、金银花1份、荷叶1份,β-环状糊精0.8份,白砂糖50份。
该解暑粥的制备方法,包括以下步骤:
1)、将粳米、小米、绿豆、甜玉米粒清洗,去除霉变、虫蛀的原料,将百合花、桃花、菊花、金银花、荷叶清洗,去除灰尘和杂物;
2)将百合花、桃花、菊花、金银花、荷叶按重量份数切碎后加入温水浸泡,然后开水煎煮,过滤,将滤液浓缩,冷却至室温,然后向浓缩液中加入乙醇,用乙醇提取后将乙醇回收,进行再次浓缩,制得浸膏备用;
3)将粳米、小米、绿豆、甜玉米粒和β-环状糊精倒入蒸煮锅内煮熟,加入步骤(2)中获得的浸膏和白砂糖搅拌均匀,即得。
进一步的,在步骤(2)中,将百合花、桃花、菊花、金银花、荷叶按重量份数切碎后加入温水浸泡时的温水的水温是45~60℃,浸泡时间是12~18min。
进一步的,在步骤(2)中,用开水煎煮的次数为两次,每次煎煮的时间为1.5~2小时。
进一步的,在步骤(2)中,使用乙醇提取的时间为10~12小时。
进一步的,在步骤(2)中,两次浓缩时均浓缩至70℃下相对密度为1.3~1.5。
实际制作过程中,可以一次性多配置一些浸膏,浸膏在冰箱中可以存放数月。根据原材料的质量和获得的浸膏的质量就可以方便的将需要的百合花、桃花、菊花、金银花、荷叶的量和实际添加的浸膏的质量对应起来。
粳米是大米的一种,其粥有“世间第一补”之美称。粳米的糙米比精白米更有营养,它能降低胆固醇,减少心脏病发作和中风的概率。
小米含多种维生素、氨基酸、脂肪、纤维素和碳水化合物,营养价值非常高,一般粮食中不含的胡萝卜素,小米也有,特别是它的维生素B1含量居所有粮食之首,所含的铁量很高、磷也丰富,是具有补血、健脑的作用。此外,小米含有大量的碳水化合物,对缓解精神压力、紧张、乏力等有很大的功效。
绿豆,清热解毒,消暑除烦,止渴健胃,利水消肿。主治暑热烦渴,湿热泄泻,水肿腹胀,疮疡肿毒,丹毒疖肿,痄腮,痘疹以及金石砒霜草木中毒者。绿豆的籽粒和水煎液中含有生物碱、香豆素、植物甾醇等生理活性物质,对人类和动物的生理代谢活动具有重要的促进作用。绿豆汤豆色鲜艳、清凉解暑,为夏令消暑佳品。
甜玉米是一种营养丰富、利用率高、适口性好、经济效益高的新型玉米,集中了水果和谷物的优质特性,是一种兼具休闲型与保健型的现代食品,具有甜、粘、甜、香的特点,著有“水果玉米”、“蔬菜玉米”之称,以易于咀嚼和消化吸收快而备受消费者的喜爱,煮熟以后可以长期保持原有风味。甜玉米具有调中开胃,益肺宁心,清湿热,利肝胆,延缓衰老等功能。具有独特的天然口味,青甜鲜香,饮用方便,富含生长基因、多种氨基酸和微量元素
百合花含有多种生物碱、以及淀粉、蛋白质、脂肪和钙、磷、维生素B1、维生素B2、泛酸、胡萝卜素等。根据中医理论,百合花味甘微苦性平,有润肺、清火安神、治咳嗽、眩晕、夜寝不安的功能。《本草纲目》说:“百合之花,夜合朝开,以治肝火上浮。夜不成寝,甚有捷效。不仅取其夜合之义,盖干凉泄降,故有以清浮阳而清虚火也。
桃花味甘辛,性微温,入肺经,现代药理学研究发现,桃花中含有山奈酚、香豆精、三叶豆甙等有机化合物,这些物质能疏通经络,扩张末梢毛细血管,改善血液循环,滋润皮肤。还有胡萝卜素,维生素B1、维生素B2、钾、铁、锌等微量元素。
荷叶,内含多种生物碱、荷叶黄酮、多种有机酸、槲皮素、异斛皮甙、莲甙、微量元素、蛋白质、氨基酸等,入选中国卫生部“既是食品又是药品”的植物名录。传统医学认为荷叶性寒,具有清暑利湿、减肥降脂、清心去热、止血利水的活性,民间广泛用作食物和药物,临床医学上也常常以粗加工的复方制剂用于肥胖症和高血脂的治疗,疗效明显。
菊花和金银花具有良好的保健价值,可以具有清热解毒、平肝、降血压。药用价值早已为现代医学所证实。
与现有技术相比,本发明的优点和有益效果是:
一、本发明中粳米、小米、绿豆、甜玉米粒、百合花、桃花、菊花、金银花、荷叶的用量会直接影响到粥的色泽、香气、滋味。经过申请人的精心调配,谷香与花的香气不会互相覆盖,香味浓郁、醇厚,能促进人的食欲,又能舒缓人的压力。
二、本发明的解暑粥,选料科学,具有合适的营养搭配比例,在解暑粥的煮制过程中添加的β-环状糊精可以提高α糊化的程度,增加粥的口感和营养;在制作浸膏的过程中用乙醇提取花瓣中的甙类、碱类等物质,比起普通粥中仅用水煮方法,更能够高效的利用、百合花、桃花、菊花、金银花、荷叶等药食同材的物质中的宝贵营养物质。
三、本发明的解暑粥,工艺合理、制作简单、操作性强、适合于规模化生产,具有良好的市场前景。
四、本发明的配方不仅可发挥组分的各自功效,又可体现上述组分的协同功效,利于人们接受、强化了清凉解暑,静心安神的效果。
具体实施方式
以下结合本发明的优选实施例对本发明进行说明,应当理解,此处所描述的优选实施例仅用于说明和解释本发明,并不用于限定本发明。
实施例1
一种解暑粥,其配方包括以下重量份数的各组分:
粳米400份、小米150、绿豆80、甜玉米粒150、百合花6、桃花3、菊花2、金银花2、荷叶1,β-环状糊精1,白砂糖30。
该解暑粥制备方法,包括以下步骤:
1)、将粳米、小米、绿豆、甜玉米粒清洗,去除霉变、虫蛀的原料,将百合花、桃花、菊花、金银花、荷叶清洗,去除灰尘和杂物。
2)将百合花、桃花、菊花、金银花、荷叶按重量份数切碎后加入52℃温水中浸泡12min,然后开水煎煮2次,每次1.5小时,合并两次滤液后浓缩至70℃下相对密度为1.3~1.5,冷却至室温后,加入乙醇提取12小时,回收乙醇,浓缩至相对密度为1.3~1.5的浸膏备用。
3)将粳米、小米、绿豆、甜玉米粒和β-环状糊精倒入蒸煮锅内煮熟,加入步骤(2)中获得的浸膏和白砂糖搅拌均匀,即得。
实施例2
一种解暑粥,其配方包括以下重量份数的各组分:
粳米500份、小米100、绿豆100、甜玉米粒100、百合花10、桃花2、菊花3、金银花1、荷叶2,β-环状糊精0.75,白砂糖80。
该解暑粥的制备方法,包括以下步骤:
1)、将粳米、小米、绿豆、甜玉米粒清洗,去除霉变、虫蛀的原料,将百合花、桃花、菊花、金银花、荷叶清洗,去除灰尘和杂物。
2)将百合花、桃花、菊花、金银花、荷叶按重量份数切碎后加入60℃温水中浸泡12min,然后开水煎煮2次,每次1.8小时,合并两次滤液后浓缩至70℃下相对密度为1.3~1.5,冷却至室温后,加入乙醇提取11小时,回收乙醇,浓缩至相对密度为1.3~1.5的浸膏备用。
3)将粳米、小米、绿豆、甜玉米粒和β-环状糊精倒入蒸煮锅内煮熟,加入步骤(2)中获得的浸膏和白砂糖搅拌均匀,即得。
实施例3
一种解暑粥,其配方包括以下重量份数的各组分:
粳米450份、小米120、绿豆80、甜玉米粒150、百合花10、桃花3、菊花2、金银花2、荷叶1,β-环状糊精0.75,白砂糖40。
本实施例的解暑粥的制备方法,包括以下步骤:
1)、将粳米、小米、绿豆、甜玉米粒清洗,去除霉变、虫蛀的原料,将百合花、桃花、菊花、金银花、荷叶清洗,去除灰尘和杂物。
2)将百合花、桃花、菊花、金银花、荷叶按重量份数切碎后加入45℃温水中浸泡18min,然后开水煎煮2次,每次2小时,合并两次滤液后浓缩至70℃下相对密度为1.3~1.5,冷却至室温后,加入乙醇提取12小时,回收乙醇,浓缩至相对密度为1.3~1.5的浸膏备用。
3)将粳米、小米、绿豆、甜玉米粒和β-环状糊精倒入蒸煮锅内煮熟,加入步骤(2)中获得的浸膏和白砂糖搅拌均匀,即得。
实施例4
一种解暑粥,其配方包括以下重量份数的各组分:
粳米500份、小米120、绿豆90、甜玉米粒120、百合花8、桃花2、菊花2、金银花1、荷叶1,β-环状糊精0.8,白砂糖50g。
本实施例的解暑粥的制备方法,包括以下步骤:
1)、将粳米、小米、绿豆、甜玉米粒清洗,去除霉变、虫蛀的原料,将百合花、桃花、菊花、金银花、荷叶清洗,去除灰尘和杂物。
2)将百合花、桃花、菊花、金银花、荷叶按重量份数切碎后加入55℃温水中浸泡16min,然后开水煎煮2次,每次1.6小时,合并两次滤液后浓缩至70℃下相对密度为1.3~1.5,冷却至室温后,加入乙醇提取12小时,回收乙醇,浓缩至相对密度为1.3~1.5的浸膏备用。
3)将粳米、小米、绿豆、甜玉米粒和β-环状糊精倒入蒸煮锅内煮熟,加入步骤(2)中获得的浸膏和白砂糖搅拌均匀,即得。

1.一种解暑粥的制备方法,其配方包括以下重量份数的各组分:粳米500份、小米120份、绿豆90份、甜玉米粒120份、百合花8份、桃花2份、菊花2份、金银花1份、荷叶1份,β-环状糊精0.8份,白砂糖50份,
其特征在于,包括以下步骤:
1)、将粳米、小米、绿豆、甜玉米粒清洗,去除霉变、虫蛀的原料,将百合花、桃花、菊花、金银花、荷叶清洗,去除灰尘和杂物;
2)将百合花、桃花、菊花、金银花、荷叶按重量份数切碎后加入温水浸泡,然后开水煎煮,过滤,将滤液浓缩,冷却至室温,然后向浓缩液中加入乙醇,用乙醇提取后将乙醇回收,进行再次浓缩,制得浸膏备用;
3)将粳米、小米、绿豆、甜玉米粒和β-环状糊精倒入蒸煮锅内煮熟,加入步骤(2)中获得的浸膏和白砂糖搅拌均匀,即得;
在步骤(2)中,将百合花、桃花、菊花、金银花、荷叶按重量份数切碎后加入温水浸泡时的温水的水温是45~60℃;
在步骤(2)中,将百合花、桃花、菊花、金银花、荷叶按重量份数切碎后加入温水浸泡的浸泡时间是12~18min;
在步骤(2)中,用开水煎煮的次数为两次,每次煎煮的时间为1.5~2小时;
在步骤(2)中,使用乙醇提取的时间为10~12小时;
在步骤(2)中,两次浓缩时均浓缩至70℃下相对密度为1.3~1.5。
