Abstract
本发明公开了一种富锌酸奶,由以下重量份原料制成:鲜牛奶300‑900份、杏仁粉1‑5份、可可粉1‑5份、葵花子粉10‑30份、柠檬酸0.1‑0.5份、发酵剂0.5‑1.5份、稳定剂2‑10份、白砂糖30‑50份、水100‑300份。本发明独特地将富含锌元素的杏仁、可可粉、葵花子添加到酸奶中,有效地补充了消费人群的锌元素,同时还补充对大脑神经细胞有益的维生素B1、B2、B6,维生素E及钙、磷、铁、等元素,对改善脑部营养很有益处,特别适合孕妇和儿童食用。

本发明属于食品技术领域,具体涉及一种富锌酸奶。
背景技术
酸奶是以新鲜的牛奶为原料,经过巴氏杀菌后再向牛奶中添加有益菌(发酵剂),经发酵后,再冷却灌装的一种牛奶制品。酸奶的发酵过程使奶中糖、蛋白质有20%左右被水解成为小的分子(如半乳糖和乳酸、小的肽链和氨基酸等),奶中脂肪含量一般是3%-5%。经发酵后,乳中的脂肪酸可比原料奶增加2倍,这些变化使酸奶更易消化和吸收,各种营养素的利用率得以提高。酸奶能将牛奶中的乳糖和蛋白质分解,使人体更易消化和吸收;有促进胃液分泌、提高食欲、加强消化的功效;能抑制肠道内腐败菌的繁殖,并减弱腐败菌在肠道内产生的毒素;有降低胆固醇的作用,特别适宜高血脂的人饮用酸奶除了营养丰富外,还含有乳酸菌,所以具有保健作用。这些作用是:1.维护肠道菌群生态平衡,形成生物屏障,抑制有害菌对肠道的入侵。2.通过产生大量的短链脂肪酸促进肠道蠕动及菌体大量生长改变渗透压而防止便秘。3.酸奶含有多种酶,促进消化吸收。4.通过抑制腐生菌在肠道的生长,抑制了腐败所产生的毒素,使肝脏和大脑免受这些毒素的危害,防止衰老。

针对上述,本发明的目的是提供一种富锌酸奶,在补充营养的同时可以补充锌元素。

一种富锌酸奶,由以下重量份原料制成:鲜牛奶300-900份、杏仁粉1-5份、可可粉1-5份、葵花子粉10-30份、柠檬酸0.1-0.5份、发酵剂0.5-1.5份、稳定剂2-10份、白砂糖30-50份、水100-300份。
进一步地,所述的富锌酸奶,由以下重量份原料制成:鲜牛奶500-700份、杏仁粉2-4份、可可粉2-4份、葵花子粉15-25份、柠檬酸0.2-0.4份、发酵剂0.8-1.2份、稳定剂5-7份、白砂糖35-45份、水150-250份。
更进一步地,所述的富锌酸奶,由以下重量份原料制成:鲜牛奶600份、杏仁粉3份、可可粉3份、葵花子粉20份、柠檬酸0.3份、发酵剂1份、稳定剂6份、白砂糖40份、水200份。
本发明的优点是:本发明独特地将富含锌元素的杏仁、可可粉、葵花子添加到酸奶中,有效地补充了消费人群的锌元素,同时还补充对大脑神经细胞有益的维生素B1、B2、B6,维生素E及钙、磷、铁、等元素,对改善脑部营养很有益处,特别适合孕妇和儿童食用。

一种富锌酸奶,由以下重量份原料制成:鲜牛奶600份、杏仁粉3份、可可粉3份、葵花子粉20份、柠檬酸0.3份、发酵剂1份、稳定剂6份、白砂糖40份、水200份。

1.一种富锌酸奶,其特征在于由以下重量份原料制成:鲜牛奶300-900份、杏仁粉1-5份、可可粉1-5份、葵花子粉10-30份、柠檬酸0.1-0.5份、发酵剂0.5-1.5份、稳定剂2-10份、白砂糖30-50份、水100-300份。
2.根据权利要求1所述的富锌酸奶,其特征在于由以下重量份原料制成:鲜牛奶500-700份、杏仁粉2-4份、可可粉2-4份、葵花子粉15-25份、柠檬酸0.2-0.4份、发酵剂0.8-1.2份、稳定剂5-7份、白砂糖35-45份、水150-250份。
