技术领域
本发明涉及一种方便食品,具体说是一种在面粉中掺有食用仙人掌、红橙、枸杞和硒元素的仙果硒非油炸方便面及其制作方法。
背景技术
随着我国经济技术的快速发展,人们的生活节奏加快,为了适应飞速发展的新形势,人们的饮食习惯也正朝着简单、方便和保健的方向变化。近些年出现的方便面就是一种深受人们喜爱的方便食品,它不但到处都能买到,食用时只用开水泡一下就可食用,既省时省事,又方便。然而以往的方便面,大多是采用油炸方法做成,不但含脂肪多,油炸时还会破坏一些营养成分,如果长期食用方便面就会产生饥饿感,造成营养不良,影响身体健康。广大流动人口、青年学生和老年人,都迫切希望有一种营养丰富又非油炸的方便面上市,满足人们日常生活的需要。
发明内容
为了克服现有方便面食品的上述缺陷,本发明的目的是提供一种仙果硒非油炸方便面及其制作方法,用以满足不同地区、不同人群的快餐需求。
为解决其技术问题,本发明采用的技术方案是:为实现其目的,本发明人经过长期的研究和实验,终于实验成功一种在面粉中掺有食用仙人掌、红橙、枸杞和硒元素的仙果硒非油炸方便面及其制作方法,从而完成本发明。这种方便面的特点是:在作为原料的面粉中掺有食用仙人掌、红橙、枸杞子、食用水、钙铁锌增量液和食品添加剂硒酸酯多糖或L-硒甲基硒代半胱氨酸与天然发酵甜味汁,经“新食面生产线” 一条龙自动化生产线生产而成。
其中一,选择仙人掌,是根据《本草纲目》中记载:它味甘性平,补脾健胃,益脚力,除久泻。具有行气活血、清热解毒、凉血止血之功效。又根据资料介绍:食用仙人掌,其肉质茎含有丰富的维生素B1、维生素B2、胡萝卜素,铁、锌等微量元素及强抗氧化的黄酮甙和人体需经常补充的各种氨基酸。如果经常食用,可以活血、健脑、强体。具体有如下功效:
1、降血糖:早在20世纪初,就有人发现仙人掌的提取物具有明显的降血糖作用。特别是对于2型糖尿病患者,能有效地的降低血糖浓度;
2、延缓衰老:仙人掌除含有机体必须的全部氨基酸,还含有较高的Zn、Mn、Sr、Cr、Cu、Co等微量元素。它们是酶和维生素必须的活性因子,因其参与核酸代谢,从而影响机体的生长发育及寿命。其次仙人掌中含较高维生素E、黄酮甙和多糖类物质,具有强抗氧化能力,延缓衰老;
3、降血脂;仙人掌所含的维生素能抑制脂肪、胆固醇的吸收,起到降低血脂的作用。
4.消炎作用;民间常有利用仙人掌治疗炎症、疼痛、皮肤瘙痒等症,是因从仙人掌中提取芳香族胺和糖类起作用。另外,仙人掌提取物对金黄色葡萄球菌、大肠杆菌等有抑制作用;
5、抗溃疡:仙人掌提取物能增加胃黏膜血流量,对应胃溃疡有明显的保护、治疗作用。
6、镇靜作用;仙人掌含有的三萜皂苷的镇痛作用,可以明显减轻病人痛苦。
其中二,选择红橙,是因红橙也叫血橙(blood orange)是橙(Citrus sinensis)的变种。它带有深红色似血颜色的果肉与汁液,能改善肤色,促进细胞再生。红橙有如下保健功效: (1)常吃可以防癌: 一个中等大小的橙子可以提供人一天所需的维生素C,提高身体抵挡细菌侵害的能力。橙子能清除体内对健康有害的自由基,抑制肿瘤细胞的生长。所有的水果中,柑橘类所含的抗氧化物质最高,包括60多种黄酮类和17种类胡萝卜素。黄酮类物质具有抗炎症、强化血管和抑制凝血的作用。类胡萝卜素具有很强的抗氧化功效。这些成分使橙子对多种癌症的发生有抑制作用; (2)橙子中的维生素C含量很高,一直都是很多人爱吃的水果。但对于女性来说,多吃橙子还有一个令她们意想不到的好处,就是减少胆结石的发病率。; 是因为雌激素会使胆固醇更多地聚集在胆汁中,导致其中胆固醇浓度过高而形成结石。而橙子对减少胆结石的发生会起到明显作用。因为橙子中的维生素C可以抑制胆固醇在肝内转化为胆汁酸,从而使胆汁中胆固醇的浓度下降,两者聚集形成胆结石的机会也就相应减少。此外,橙皮中所含有的果胶也可以促进食物通过胃肠道,使胆固醇更快地随粪便排出体外,以减少胆固醇的吸收。得了胆结石的人,除了吃橙子外,用橙皮泡水喝,也能起到不错的治疗效果; (3)橙又名“黄果”、“金环”,分酸、甜两种。饱食饮宴后,饮一杯酸橙汁,可解油腻,消积食,并有止渴醒酒等妙用。其果肉酸甜适度,富有香气。橙含有维生素A、B、C、D及柠檬酸、苹果酸、果胶等成分,维生素P、C均能增强毛细血管韧性;果胶能帮助尽快排泄脂类及胆固醇,并减少外源性胆固醇的吸收,故具有降低血脂的作用。橙子性味酸凉,具有行气化痰,健脾温胃,助消化,增食欲等药用功效。在发达国家追求天然食品,不添加任何水分,讲究原汁原味,常把橙子制成果汁,是每餐必备的上等饮品。橙皮又叫黄果皮,除含果肉中的成分外,胡萝卜素含量较多,可作为健胃剂、芳香调味剂。橙皮还含一定时的橙皮油,对慢性支气管炎有效。
其中三,选择枸杞子,是因枸杞子:甘,平,功能:养肝,滋肾,润肺,
枸杞子含甜菜碱(betane),阿托品(atropine),天仙子胺(gyoscyamine),
它的药用功能:枸杞多糖:枸杞多糖是一种水溶性多糖,是枸杞中最主要的活性成分,现有研究表明枸杞多糖具有促进免疫、抗衰老、抗肿瘤、清除自由基、抗疲劳、抗辐射、保肝、生殖功能保护和改善等作用;
甜菜碱:化学名称为1-羧基-N,N,N-三甲氨基乙内酯,在化学结构上与氨基酸相似,属于季胺碱类物质。甜菜碱是枸杞果、叶、柄中主要的生物碱之一。枸杞对脂质代谢或抗脂肪肝的作用主要是由于所含的甜菜碱引起的,它在体内起甲基供应体的作用;
枸杞色素:枸杞色素是存在于枸杞浆果中的各类呈色物质,是枸杞籽的重要生理活性成分。主要包括-胡萝卜素、叶黄素和其他有色物质。很多研究已经证明枸杞籽色素具有提高人体免疫功能、预防和抑制肿瘤及预防动脉粥样硬化等作用。胡萝卜素是枸杞色素的主要活性成分,具有抗氧化和作为维生素A的合成前体等重要的生理功能。
其中四,选择钙、铁、锌增量液和硒酸酯多糖或L-硒甲基硒代半胱氨酸,是作为食品添加剂和新型硒源类的食品营养素补充剂,补充微量元素和硒,同时增强细胞免疫、体液免疫及非特异性免疫:
据报道,硒酸酯多糖为有机硒化合物,具有多糖和人体必需的微量元素硒等多方面的生理功能:多糖具有免疫增强作用;硒可保护巯基不受氧化,实验证明,硒具有抗癌作用。并对心血管疾病、类风湿性疾病、免疫功能低下和肿瘤等有较好的预防和治疗作用;对糖尿病有辅助治疗作用;对重金属铅、镉、砷、铬、汞中毒有较好的解毒功效;
又据报道,L-硒甲基硒代半胱氨酸是一种以α-乙酰氨基丙烯酸甲酯和甲硒醇钠为主要原料,经加成、酶法拆分制得食品添加剂,L-硒-甲基硒代半胱氨酸(简称L-SeMC),
它的化学中文名称为:L-硒-甲基硒代半胱氨酸,
化学英文名称为:L-Se-methylselenocysteine,
简称:L-SeMC拉丁名:2-amino-3-(methylseleno) propionic acid
相对分子量:182.08(按1991年国际相对原子质量计),
熔点:167 - 170°C(分解),
比旋度(1%水溶液):-10.0~-15.0,
外观为白色晶体粉末,具蒜样气味。本品溶于水,微溶于甲醇、乙醇,在丙酮、乙醚中不溶。有引湿性,易氧化。;
L-硒甲基硒代半胱氨酸与我国现有的硒源类的食品营养强化剂相比较,主要体现以下优点:
1. L-硒-甲基硒代半胱氨酸与无机硒相比:
体现了有机硒毒性低的优点。在高浓度时对细胞形态的改变不大,对细胞生长有抑制作用但较温和,一般不引起DNA的断裂;
2. L-硒-甲基硒代半胱氨酸与其他有机硒及相比:具有结构明确,含量稳定、人体内代谢机理清晰等优点;
3. L-硒-甲基硒代半胱氨酸与L-硒代蛋氨酸相比较:
L-硒-甲基硒代半胱氨酸与L-硒代蛋氨酸是自然界仅有的两种含硒氨基酸,同时被称为第三代补硒品种,但L-硒-甲基硒代半胱氨酸与L-硒代蛋氨酸相比具有较高的食用安全性。
本发明原料成分的用量也是经过发明人大量摸索总结得出来的,各原料成分用量在下述重量份范围内都具有较好的保健功效:所述原料各成分的重量份配比为:面粉80-100份、仙人掌50-55份、红橙30-35份、枸杞子1-3份、钙铁锌增量液7-19份,食品添加剂硒酸酯多糖或L-硒甲基硒代半胱氨酸,和纯天然发酵甜味汁共1份,食用水80-100份。据实验,上述原料成分及用量配比,于我们试生产的仙果硒挂面完全一样,只是这些原料与面粉掺合混匀揉成面团后,是用购入现行挂面制作机械产出面条的。因此本专利业适用于制作挂面,但本专利不适用于油炸方便面,因仙果硒经高温油炸其营养保健因子,几乎损失殆尽。
本发明所述仙果硒非油炸方便面的制作方法,包括如下步骤:
一、备料:按重量份备齐如下原料:面粉80-100份,仙人掌50-55份,红橙30-35份,枸杞子1-3份,钙、铁、锌增量液7-19份,食品添加剂硒酸酯多糖或L-硒甲基硒代半胱氨酸和天然发酵甜味汁共1份,食用水80-100份;
二、制出仙果硒汁:将所备的面粉80-100份、仙人掌50-55份、红橙30-35份、枸杞子1-3份,在破粹机中破粹并打成浆体,再加入钙、铁、锌增量液7-18份和食品添加剂硒酸酯多糖或L-硒甲基硒代半胱氨酸和纯天然发酵甜味汁共1份,食用水80-100份;在搅拌机中搅拌5-10分钟,使其搅拌均匀,制成仙果硒汁待用;
三、制作面团:在所备80-100份面粉中,加入5份制成仙果硒汁,然后用揉面机揉成面团,待用;
四、制成方便面:在购入的“新食面生产线”中,将制成的面团经高压熟化,干燥消毒,成型和包装一条龙自动化生产线生产出仙果硒非油炸方便面成品。
与现有技术相比,本发明有如下特点和进步:
1、由于本发明的原料中除面粉外,还有仙人掌、红橙、枸杞子、硒酸酯多糖或L-硒甲基硒代半胱氨酸食用添加剂,因此本方便面所含营养丰富,含有包括硒、维生素A1.维生素D1、维生素B1、维生素B2和硒等多种人体需要的维生素和矿物质,能满足人体的生理需要,经常食用不会产生饥饿感,还能强身保健的功能;具有抗癌作用、并对心血管疾病、类风湿性疾病、免疫功能低下和肿瘤等有较好的预防和治疗作用;对糖尿病有辅助治疗作用;对重金属铅、镉、砷、铬、汞中毒有较好的解毒功效;
2、生产方法简单,没有油炸工序,所含油脂成分少,有利于人们减肥、保健;由于采用“新食面生产线”技术,不但生产速度快,质量好,还有很好的口感,适合不同人群食用;
3、保留了方便面的原有优点,食用时只要用开水浸泡3-5分钟即可,很适合流动人们和外出旅行人们食用,本发明所述方法也适用挂面制作。

下面结合具体实施对本发明的技术方案进一步说明:
实施例1:一种硒非油炸方便面的制作方法,包括如下步骤:
一,按重量份备齐如下原料:面粉80份,仙人掌50份,红橙30份,枸杞子1份、钙、铁、锌增量液7份,硒酸酯多糖和纯天然发酵甜味法汁1份以及食用水80份;
二,制出仙果硒汁:将所备的食用仙人掌50份、红橙30份、枸杞子1份在破粹机中破粹并打成浆体,再加入钙、铁、锌增量液7份和硒酸酯多糖,纯天然发酵甜味汁共1份,食用水80份,在搅拌机中搅拌5分钟,使其搅拌均匀,制成仙果硒汁待用;
三,制作面团:在所备80份面粉中,加入5份制成仙果硒汁,然后用揉面机揉成面团,待用;
四,制成方便面:在购入的“新食面生产线”中,将制成的面团经高压熟化,干燥消毒,成型和包装一条龙自动化生产线生产出仙果硒非油炸方便面成品。
实施例2:另一种硒非油炸方便面的制作方法,包括如下步骤:
一,按重量份备齐如下原料:面粉100份、仙人掌55份、红橙35份、枸杞子3份,钙、铁、锌增量液19份,L-硒甲基硒代半胱氨酸和纯天然发酵甜味汁共1份,食用水80-100份。
二.制出仙果硒汁:将所备的食用仙人掌55份,红橙35份,枸杞子3份,钙、铁、锌增量液19份,L-硒甲基硒代半胱氨酸和纯天然发酵甜味汁共1份,食用水80-100份,在搅拌机中搅拌8分钟,使其搅拌均匀,制成仙果硒汁待用;
三,制作面团:在所备100份面粉中,加入5份制成仙果硒汁,然后用揉面机揉成面团,待用;
四,制成方便面:在购入的“新食面生产线”中,将制成的面团经高压熟化,干燥消毒,成型和包装一条龙自动化生产线生产出仙果硒非油炸方便面成品。
实施例3:第三种硒非油炸方便面的制作方法,包括如下步骤:
一,备料:按重量份备齐如下原料:面粉90份,仙人掌53份,红橙33份,枸杞子2份,钙、铁、锌增量液10份, L-硒甲基硒代半胱氨酸和纯天然发酵甜味汁共1份,食用水90份;
二,制出仙果硒汁:将所备的面粉90份,仙人掌53份,红橙33份,枸杞子2份,在破粹机中破粹并打成浆体,再加入钙、铁、锌增量液10份, L-硒甲基硒代半胱氨酸和纯天然发酵甜味汁共1份,食用水90份;在搅拌机中搅拌8分钟,使其搅拌均匀,制成仙果硒汁待用;
三,制作面团:在所备90份面粉中,加入5份制成仙果硒汁,然后用揉面机揉成面团,待用;
四,制成方便面:在购入的“新食面生产线”中,将制成的面团经高压熟化,干燥消毒,成型和包装一条龙自动化生产线生产出仙果硒非油炸方便面成品。

(一)备料:按重量份备齐如下原料:面粉80-100份、仙人掌50-55份、红橙30-35份、枸杞子1-3份,钙铁锌增量液7-19份,食品添加剂硒酸酯多糖或L-硒甲基硒代半胱氨酸与纯天然发酵甜味汁共1份,食用水80-100份;
(二)制出仙果硒汁:将所备的面粉80-100份、仙人掌50-55份、红橙30-35份、枸杞子1-3份,在破粹机中破粹并打成浆体,再加入钙铁锌增量液7-19份,然后加入食品添加剂硒酸酯多糖或L-硒甲基硒代半胱氨酸与纯天然发酵甜味汁,食用水80-100份;并搅拌5-10分钟,使其均匀,制成仙果硒汁待用;
(三)制作面团:在所备80-100份面粉中,加入5份制成仙果硒汁,然后用揉面机揉成面团,待用;
