Abstract
本发明提供一种葡萄保鲜剂,所述葡萄保鲜剂由以下质量份数的各组分组成:蔗糖酯5‑6份、山梨酸钠1‑1.5份、硬脂酸钠0.6‑0.8份、蔗糖0.2‑0.4份、柠檬酸钠0.1‑0.3份、谷氨酸钠0.1‑0.3份、氯化钾0.1‑0.3份、酒石酸钠0.03‑0.05份、维生素E 0.008‑0.012份、水180‑190份。本发明的葡萄保鲜剂制备方法简单、配方合理、成本低廉,使用时操作方便、保鲜效果好,在贮藏期间外观新鲜度和口感得到很好的保持,营养物质流失率小于2%。使用后,葡萄保鲜期长达7个半月。

技术领域
本发明涉及一种葡萄保鲜剂。
背景技术
随着科技的发展,人们生活水平的逐渐提高,人们对不同地区不同季节生产的水果的需求量逐渐加大。使得人们对难贮存的水果的保鲜贮存和运输提出了越来越高的要求。现有的水果保鲜技术一般是制作保鲜膜,保鲜膜在常温或低温保鲜、长效保鲜、运输保鲜方面确实有一定进展。但也存在一些不足,主要为释放期较短,保鲜作用不均匀,难以保证效果;制法复杂繁锁;制作成本较高,原料来源窄;有些原料组分对人体有危害。
发明内容
为了解决现有技术中存在的问题,本发明提供了一种葡萄保鲜剂。
本发明提供一种葡萄保鲜剂,所述葡萄保鲜剂由以下质量份数的各组分组成:蔗糖酯5-6份、山梨酸钠1-1.5份、硬脂酸钠0.6-0.8份、蔗糖0.2-0.4份、柠檬酸钠0.1-0.3份、谷氨酸钠0.1-0.3份、氯化钾0.1-0.3份、酒石酸钠0.03-0.05份、维生素E 0.008-0.012份、水180-190份。
作为优选,所述葡萄保鲜剂由以下质量份数的各组分组成:蔗糖酯5.5份、山梨酸钠1.2份、硬脂酸钠0.7份、蔗糖0.3份、柠檬酸钠0.2份、谷氨酸钠0.2份、氯化钾0.2份、酒石酸钠0.04份、维生素E
0.01份、水185份。
本发明还提供上述葡萄保鲜剂的制备方法,是将配方量的蔗糖酯、山梨酸钠、硬脂酸钠、蔗糖、柠檬酸钠、谷氨酸钠和水混合,升温至45-50℃,之后搅拌12-15min,加入配方量的氯化钾、酒石酸钠、维生素E搅拌5-8min,冷却至室温即可。
本发明还提供上述葡萄保鲜剂在葡萄保鲜中的应用。
作为优选,所述应用是将葡萄放入葡萄保鲜剂中,浸泡30-40s取出即可。
本发明的葡萄保鲜剂制备方法简单、配方合理、成本低廉,使用时操作方便、保鲜效果好,在贮藏期间外观新鲜度和口感得到很好的保持,营养物质流失率小于2%。使用后,葡萄保鲜期长达7个半月。
具体实施方式
以下的实施例便于更好地理解本发明,但并不限定本发明。下述实施例中的实验方法,如无特殊说明,均为常规方法。下述实施例中所用的试验材料,如无特殊说明,均为市售。
实施例1
本发明的葡萄保鲜剂的配方为:
蔗糖酯5.5g、山梨酸钠1.2 g、硬脂酸钠0.7
g、蔗糖0.3 g、柠檬酸钠0.2 g、谷氨酸钠0.2 g、氯化钾0.2 g、酒石酸钠0.04
g、维生素E 0.01 g、水185 g。
本发明的葡萄保鲜剂的制备方法为:
将配方量的蔗糖酯、山梨酸钠、硬脂酸钠、蔗糖、柠檬酸钠、谷氨酸钠和水混合,升温至48℃,之后搅拌13min,加入配方量的氯化钾、酒石酸钠、维生素E搅拌6min,冷却至室温即可。
实施例2
本发明的葡萄保鲜剂的配方为:
蔗糖酯5g、山梨酸钠1.5g、硬脂酸钠0.8g、蔗糖0.2g、柠檬酸钠0.3g、谷氨酸钠0.3g、氯化钾0.1g、酒石酸钠0.03g、维生素E
0.012g、水180g。
本发明的葡萄保鲜剂的制备方法为:
将配方量的蔗糖酯、山梨酸钠、硬脂酸钠、蔗糖、柠檬酸钠、谷氨酸钠和水混合,升温至45℃,之后搅拌15min,加入配方量的氯化钾、酒石酸钠、维生素E搅拌8min,冷却至室温即可。
实施例3
本发明的葡萄保鲜剂的配方为:
蔗糖酯6g、山梨酸钠1g、硬脂酸钠0.6g、蔗糖0.4g、柠檬酸钠0.1g、谷氨酸钠0.1g、氯化钾0.3g、酒石酸钠0.05g、维生素E
0.008g、水190g。
本发明的葡萄保鲜剂的制备方法为:
将配方量的蔗糖酯、山梨酸钠、硬脂酸钠、蔗糖、柠檬酸钠、谷氨酸钠和水混合,升温至50℃,之后搅拌12min,加入配方量的氯化钾、酒石酸钠、维生素E搅拌5min,冷却至室温即可。

1.一种葡萄保鲜剂,其特征在于:所述葡萄保鲜剂由以下质量份数的各组分组成:蔗糖酯5-6份、山梨酸钠1-1.5份、硬脂酸钠0.6-0.8份、蔗糖0.2-0.4份、柠檬酸钠0.1-0.3份、谷氨酸钠0.1-0.3份、氯化钾0.1-0.3份、酒石酸钠0.03-0.05份、维生素E 0.008-0.012份、水180-190份。
2.根据权利要求1所述的葡萄保鲜剂,其特征在于:所述葡萄保鲜剂由以下质量份数的各组分组成:蔗糖酯5.5份、山梨酸钠1.2份、硬脂酸钠0.7份、蔗糖0.3份、柠檬酸钠0.2份、谷氨酸钠0.2份、氯化钾0.2份、酒石酸钠0.04份、维生素E 0.01份、水185份。
3.权利要求1或2所述的葡萄保鲜剂的制备方法,其特征在于:是将配方量的蔗糖酯、山梨酸钠、硬脂酸钠、蔗糖、柠檬酸钠、谷氨酸钠和水混合,升温至45-50℃,之后搅拌12-15min,加入配方量的氯化钾、酒石酸钠、维生素E搅拌5-8min,冷却至室温即可。
4.权利要求1或2所述的葡萄保鲜剂在葡萄保鲜中的应用。
