一种富硒葛根米面包,本发明通过对米粉和馅料添加富硒酵母,使富硒葛根米面包获得理想的有机硒含量100ug—500ug/kg,从此人类可方便、习惯、持续的从主食中获取有机硒;通过对米粉和馅料添加壳聚糖,使富硒葛根米面包获得理想的壳聚糖含量150ug-—800ug/kg。通过对米粉和馅料添加葛根粉,使富硒葛根米面包获得理想的葛根素含量50ug—300ug/kg。硒和壳聚糖与葛根素相结合产生协同作用,更有效地排解食品中的铅、镉、汞、坤等有害重金属与农药残留,使食品更加洁净。富硒葛根米面包不仅制作精良、营养丰富、食后清口、久有回味、食用方便、开包即食,还极具大米风味,含有大量的人体必需的氨基酸、维生素和微量元素。富硒葛根米面包是目前唯一的稻米主食类富硒营养食品。长期食用本发明富硒葛根米面包,补硒补葛根素补壳聚糖,排铅解毒,可显著降低环境污染对人体所造成的伤害,尤其是对儿童效果更显著。

背景技术
环境污染在改变人类的饮食需求,传统的米饭或米面食品,在功能、口味、营养等方面不能适合在雾霾中煎熬的人们。人们为了避免环境污染对身体的伤害,不得不改变生活方式和饮食习惯,选择和追求能对抗环境污染的食品,比如具排铅解毒的富硒食品。
硒对人体的重要性已经通过大量的实验被证实。近二十年来随着人们对微量元素硒(Se)的深入研究, 逐渐认识到了硒对生命的重要性:硒——抗癌之王:能防癌抗癌;心脏守护神;天然解毒剂:排铅排毒;治疗心脑血管疾病;能保肝护肝;延缓衰老;保护视力;提高人体免疫力。硒被国内外医药界和营养学界尊称为“生命的火种”。
随着营养科学技术与生物医学技术的发展, 微量元素对人体的重要性已逐渐被证实, 微量元素硒作为一种人体必需的营养元素已引起人们的高度重视。1996 年, 国际硒与人体健康研讨会宣布, 硒是维持人体正常生命活动的必需元素, 缺硒可能引起人体重要器官功能失调导致多种疾病的发生。
将富硒酵母作为硒源具有以下优点:
(1) 富硒酵母中的硒取代含硫氨基酸中的硫,形成硒代氨基酸,进一步组成硒蛋白质。

壳聚糖(chitosan)是由自然界广泛存在的几丁质(chitin)经过脱乙酰作用得到的,化学名称为聚葡萄糖胺(1-4)-2-氨基-B-D葡萄糖,自1859年,法国人Rouget首先得到壳聚糖后,这种天然高分子的生物官能性和相容性、血液相容性、安全性、微生物降解性等优良性能被各行各业广泛关注,在医药、食品、化工、化妆品、水处理、金属提取及回收、生化和生物医学工程等诸多领域的应用研究取得了重大进展。针对患者,壳聚糖降血脂、降血糖的作用已有研究报告。壳聚糖在食品工业中是一种天然、无毒的保鲜剂、絮凝剂,且可吸附水中镉、汞、铜等重金属离子。
壳聚糖难被人体胃肠消化吸收,当人把它们摄入体内后,它们可与相当于自身质量许多倍的甘油三酯、脂肪酸、胆汁酸和胆固醇等脂类化合物生成络合物,该络合物不被胃酸水解,不被消化系统吸收,从而阻碍人体吸收这类物质,使之穿肠而过排出体外。因此,壳聚糖类可以降脂,减少食品热量,可用作保健食品添加剂。Agullo等研究表明,壳二、三聚糖不仅具有非常爽口的甜味和调解血压、消除脂肪肝、降低胆固醇和增强免疫力的功能,而且还具有提高食品的保水性及水分调节作用,可作为糖尿病和肥胖病的保健食品添加剂。
壳聚糖,又称可溶性甲壳质、几丁聚糖、甲壳胺、壳多糖等,是自然界中发现的唯一带正电荷的碱性多糖体,是一种含有氨基的带阳离子的天然高分子动物食物纤维,具有重要的生理药理意义。被国际多个科研机构誉为继糖类、蛋白质、脂肪、维生素、矿物质之后的“人体第六大生命要素”。
人类自古以来吃的是自然生长的五谷杂粮,大量昆虫以多种方式提供壳聚糖给蔬菜、粮食,人体在自然状态下获取壳聚糖,从而形成了昆虫——植物——人类食物链。现代社会由于环境污染和大量农药化肥的使用,农田里的昆虫已经非常稀少,正常的食物链被掐断,人类在自然状态下获取壳聚糖已经不可能。所以必须外源性补充壳聚糖,维持酸碱平衡,防止重大疾病的发生。
葛根,葛根内含12%的黄酮类化合物,如葛根素、大豆黄酮苷、花生素等营养成分,还有蛋白质、氨基酸、糖、和人体必需的铁、钙、铜、硒等矿物质。在《本草纲目》《神农本草经》、《证类本草》、《华佗遗书》、《中华药典》、《药王全书》、《传世藏书》等中医八大经典中都有详细介绍。
《本草纲目》记载,葛粉具有清热降火、滋阴解毒、升阳生津、开胃进食之功效,对治疗和预防胸膈烦热、中风头痛、高血压、冠心病、降血脂、抗癌、消癌肿、减肥胖、抗衰老等均有特殊功效。同时,经现代科学检测,葛根含大豆甙元(daidzein),大豆甙(daidzin),葛根素(puerarin),4'-甲氧基葛根素(4’-methoxypuerarin),大豆甙元-4’,7-二葡萄糖甙(daidzein-4’,7-diglucoside),大豆甙元-7-(6-O-丙二酰基)-葡萄糖甙[daidzein-7-(6-O-malonyl)-lucoside],染料木素(genistein),刺芒柄花素(for-mononetin),大豆甙元-8-C-芹菜糖基(l→6)-葡萄糖甙[daidzein-8-C-apiosyl(1→6)-glucoside],染料木素-8-C-芹菜糖基(1→6)-葡萄糖甙[genistein-8-C-apiosyl(1→6)-glucoside],葛根素木糖甙 (puerarinxyloside,PG-2),3’-羟基葛根素(3’-hydroxypuerarin,PG-1),3’-甲氧基葛根素(3’-methoxypuerarin,PG-3),4’-O-葡萄糖基葛根素(4’-O-glucosyl puerarin,PG-6),葛根酚(puerarol),葛根甙(pueroside)A、B,刺芒柄花素-7-葡萄糖甙(formononetin-7-glucoside),羽扇烯酮(lupenone),β-谷甾醇(β-sitosterol),二十二烷酸(docosanoic acid),二十四烷酸(tetracosanoic acid),l-二十四烷酸甘油酯(glucerol-1-monotetracosanoate),尿囊素(allantoin),β-谷甾醇-β-D-葡萄糖甙(β-sitosteryl-β-D-glucoside),6,7-二甲氧基香豆精(6,7-dimethoxycoumarin),5-甲基海因(5-methylhydantoin)及以槐花二醇(sophoradiol),广东相思子三醇(cantoniensistriol),大豆皂醇(soyasapogenol)A、B ,葛根皂醇(kudzusapogenol)C、A和葛根皂醇B甲酯(kudzusapogenol B methylester)为甙元的三萜皂甙。葛藤亦含有大豆甙元,大豆甙,葛根素和β-谷甾醇。甘葛藤根含大豆甙,葛根素,4'-甲氧基葛根素,大豆甙元及痕量大豆甙元-4,7'-二葡萄糖甙。葛根含人体必需的硒、锌、铁、钙、维生素B1、B2等微量元素及多种氨基酸,是营养价值很高的天然食品。
葛根,主要有降脂、降压、降火、清热解毒、解酒、升阳解肌、解痉镇痛、透疹止泻、增加脑和冠状血糖、改善脑微循环等功效,是防治高血压、高血脂、冠心病、心绞痛、糖尿病、脑血栓、肠胃病等多种疾病的药品的重要原料,同时对女性美容健身等具有特殊功效,修护肌肤的效果,98%以上用户反映食用后,全身皮肤显著变的细腻、润滑、有光泽、皮肤弹性增加,斑疹疮痘逐渐减少和消失、脸部皱纹明显减少。葛根素能够显著减少食量(抗饥饿),显著防治瘦素抵抗,显著减肥。

本发明的目的在于提供一种富含硒、葛根素、壳聚糖、营养丰富、排铅解毒、口味独特、方便食用的富硒葛根米面包。
本发明的技术方案:
一种富硒葛根米面包,由以下重量份原料组成:富硒米粉与富硒米糠超微粉混合物膨化预处理粉
25-35 份,葛根粉5—10份,高筋面包面粉50—60份,酵母1.2-1.8份,富硒酵母0.3-0.5份,壳聚糖0.5-1.5份,白糖5-10 份,大骨精粉0.5-1.5,食盐0.5份,奶黄油3-5份,水适量;
所述的葛根粉,由葛根粉碎加工而成。
所述富硒米粉和富硒米糠超微粉与葛根粉混合物经富硒酵母发酵、膨化预处理后作为富硒葛根米面包的外皮层。
所述的壳聚糖,用于补充人体内所需壳聚糖,增加人体内膳食纤维,排解人体内有害重金属,吸附排解水和产品中的镉、铅、汞、坤重金属离子,降低产品中的重金属含量。
所述的富硒酵母和壳聚糖产生协同作用,更有效地排解食品中的有害重金属与农药残留。
所述的富硒米糠为富硒米加工时的副产物,含硒量为0.1mg—5.0mg/kg,通过超微粉碎机粉碎,获得富硒米糠超微粉,富硒米糠超微粉比富硒米粉硒含量更高,且含有理想的膳食纤维。
所述一种富硒葛根米面包的加工方法,包括以下步骤:选择优质富硒大米——生产用水经紫外线杀菌过虑处理——富硒大米去除砂石杂质——洗米——浸泡——沥水——冷冻——粉碎——富硒米糠超微粉碎——富硒米粉和富硒米糠超微粉膨化预处理粉与高筋面包面粉及葛根粉混合搅拌——加壳聚糖——加大骨精粉——加糖——加盐——配水至富硒葛根米粉面包粉适宜的含水率——加酵母——加富硒酵母——搅拌均匀——发酵——和面——二次发酵——成型——加奶黄油烤制——富硒葛根米面包成品包装——入库保存。
所述的加富硒酵母发酵,优选含硒量2000mg/kg富硒酵母,发酵环境温度25℃—35℃,发酵环境湿度80%—90%,发酵时间25—60分钟。
本发明的有益效果:本发明通过对米粉和馅料添加富硒酵母,使富硒葛根米面包获得理想的有机硒含量100ug—500ug/kg,从此人类可方便、习惯、持续的从主食中获取有机硒;通过对米粉和馅料添加壳聚糖,使富硒葛根米面包获得理想的壳聚糖含量150ug-—800ug/kg。通过对米粉和馅料添加葛根粉,使富硒葛根米面包获得理想的葛根素含量50ug—300ug/kg。硒和壳聚糖与葛根素相结合产生协同作用,更有效地排解食品中的铅、镉、汞、坤等有害重金属与农药残留,使食品更加洁净。富硒葛根米面包不仅制作精良、营养丰富、食后清口、久有回味、食用方便、开包即食,还极具大米风味,含有大量的人体必需的氨基酸、维生素和微量元素。富硒葛根米面包是目前唯一的稻米主食类富硒营养食品。长期食用本发明富硒葛根米面包,补硒补葛根素补壳聚糖——排铅解毒,可显著降低环境污染对人体所造成的伤害,尤其是对儿童效果更显著。
本发明富硒葛根米面包中加入富硒米糠超微粉,可显著提高产品中的硒与膳食纤维含量,富硒稻谷的利用率可达到100%。
本发明富硒葛根米面包中加入适量葛根素、硒与壳聚糖协同作用,可显著提高产品的抗氧化成分,对降低人体血脂、血压、血糖有明显作用,同时具有显著的美容养生及产品保鲜功效。

富硒葛根米面包的加工方法,包括以下步骤:选择优质富硒大米——生产用水经紫外线杀菌过虑处理——富硒大米去除砂石杂质——洗米——浸泡——沥水——冷冻——粉碎——富硒米糠超微粉碎——富硒米粉和富硒米糠超微粉膨化预处理粉与高筋面包面粉及葛根粉混合搅拌——加壳聚糖——加大骨精粉——加糖——加盐——配水至富硒葛根米粉面包粉适宜的含水率——加酵母——加富硒酵母——搅拌均匀——发酵——和面——二次发酵——成型——加奶黄油烤制——富硒葛根米面包成品包装——入库保存。
Claims (5)
1.一种富硒葛根米面包,由以下重量份原料组成:富硒米粉与富硒米糠超微粉混合物膨化预处理粉 25-35 份,葛根粉5—10份,高筋面包面粉50—60份,酵母1.2-1.8份,富硒酵母0.3-0.5份,壳聚糖0.5-1.5份,白糖5-10 份,大骨精粉0.5-1.5,食盐0.5份,奶黄油3-5份,水适量。
2.根据权利要求1所述的富硒葛根米面包,其特征是:所述壳聚糖,用于补充人体内所需壳聚糖,增加人体内膳食纤维,排解人体内有害重金属,吸附排解水和产品中的镉、铅、汞、坤重金属离子,降低产品中的重金属含量。
3.根据权利要求1—2所述的富硒葛根米面包,其特征是:所述富硒米糠为富硒米加工时的副产物,含硒量为0.1mg—5.0mg/kg,通过超微粉碎机粉碎,获得富硒米糠超微粉,富硒米糠超微粉比富硒米粉硒含量更高,且含有理想的膳食纤维。
4. 根据权利要求1—3所述的富硒葛根米面包,其特征是:所述富硒葛根米面包的加工方法,包括以下步骤:选择优质富硒大米——生产用水经紫外线杀菌过虑处理——富硒大米去除砂石杂质——洗米——浸泡——沥水——冷冻——粉碎——富硒米糠超微粉碎——富硒米粉和富硒米糠超微粉膨化预处理粉与高筋面包面粉及葛根粉混合搅拌——加壳聚糖——加大骨精粉——加糖——加盐——配水至富硒葛根米粉面包粉适宜的含水率——加酵母——加富硒酵母——搅拌均匀——发酵——和面——二次发酵——成型——加奶黄油烤制——富硒葛根米面包成品包装——入库保存。
5. 根据权利要求1—4所述的富硒葛根米面包,其特征是:所述的加富硒酵母发酵,优选含硒量2000mg/kg富硒酵母,发酵环境温度25℃—35℃,发酵环境湿度80%—90%,发酵时间25—60分钟。
