技术领域
本发明涉及一种保健型冲剂,特别是利用榴莲内核制作具有滋阴补肾保健型冲剂的方法,属于保健食品加工技术领域。
背景技术
榴莲为木棉科植物榴莲的全草。《本草纲目》中记载,“榴莲可供药用,味甘温、无毒、主治暴痢和心腹冷气”。榴莲可用于精血亏虚须发早白、衰老、风热、黄疸、疥癣、皮肤瘙痒等症。具有滋阴强壮、疏风清热、利胆退黄、杀虫止痒、补身体。
榴莲的营养价值很高,除含有很高的糖份外,含淀粉11%,糖分13%,蛋白质3%,还有多种维生素,脂肪,钙,铁和磷等。榴莲属热性水果,因而吃过榴莲后九个小时内禁忌喝酒。榴莲全身都是宝,果核可煮和烤着吃,味道像煮得半熟的甜薯,煮榴莲的水能治疗皮肤敏感性的疮痒等。
榴莲内核营养丰富也有一定的药用价值,民间就有用榴莲内核煲汤的做法。相对榴莲果肉,榴莲的核质较温和,晒干煮汤有补肾、健脾的作用。
本发明经过多次研究和检测结果榴莲内核皮薄肉白煮熟后像甜薯,外表形状像芋艿淀粉含量高达20.5%、粗蛋白质2.5%,具有一种重要物质多聚糖占4.9%,多聚糖能增强人体的免疫机制和对疾病的抵抗能力,是一种清热解毒、健脾、强身的保健食物。加工厂在加工罐头和饮品时将榴莲内核作为垃圾处理,很好的资源没有得到充分的利用对生物资源造成浪费,更是对环境造成极大的污染。
肾经草在“湖南药物志”是记载,别名为毛葶玉风花,分布于长江流域及以南各省区。为双子叶植物药,兰科植物多年生草木,它的块茎长圆形或圆柱形,肉质形状很像百合。肾经草有多种生理活性的维生素,可用来调节生理机能,肾经草味甘、性平、无毒归肾经、经常服用能治肝、护肾、治疗头晕目眩、视力病退、腰膝酸软、遗精消渴、肾孟肾炎、白带过多等症状。
发明内容
本发明提供一种具有滋阴补肾保健型冲剂的制作方法,该方法将榴莲内核和肾经草进行打浆,分离、酶解、过滤、喷雾干燥等技术,最大程度地保护滋阴补肾保健型冲剂的色泽和风味、营养及有效成分,同时使产品利于保存和实现工业化生产。
本发明一种具有滋阴补肾保健型冲剂的制作方法采用以下技术方案实施:
1.先将榴莲内核和采集来的肾经草除去杂物和泥土霉变虫咬部分,用清水漂洗干净后,浸泡在乳酸溶液中进行灭菌,严格掌握好处理时间,灭菌后用清水冲洗干净沥干进行破碎,送入切片机械内将榴莲内核和肾经草切片。
2. 将切片后的榴莲内核和肾经草逐步加入等重量的纯净水一起送入打浆机内进行打浆,打浆后的混合浆汁方便酶解和分离。
3. 用离心分离机对打浆后的榴莲内核和肾经草混合浆汁进行固液分离,截留住混合浆汁中的大直径的残渣,有效的分离得到无渣混合液,使混合液利于酶解和浸渍。将残渣作为饲料移出室外,制作工艺过程短,费用低是一种较为经济的加工方法。
4. 在制作过程中采用了生物酶解技术,运用淀粉酶对榴莲内核和肾经草混合液中含大量的淀粉进行酶解糖的转化,使淀粉大分子物质酶解转化成小分子的单糖,水解生成人体容易吸收的葡萄糖和麦芽糖,提高了消化吸收性能和营养物质。酶解后粘度下降,过滤阻力减小,过滤速度加快,实现了混合液高度的澄清。
5. 本发明采用了酶解和微滤技术的结合,微滤将混合液选用膜分离,采用膜分离对细菌以及浮悬物进行过滤,以达到净化、分离浓缩的目的。最大程度地保护了混合液的色泽和风味、营养物质和有效成分。
6.压力式喷雾干燥造粒机是采用压力式雾化器借助隔膜泵的压力将混合液的物料雾化咸细微液滴,使表面积显著增大。经与热风进行充分热交换得以快速干燥,从而得到粉体或细小的滋阴补肾保健型颗粒冲剂产品。
本发明的有益效果:本发明将废弃的榴莲内核充分利用,采用酶解、膜分离技术把榴莲内核和肾经草内含的淀粉,通过淀粉酶的酶解转化,转化成小分子的单糖,水解生成人体容易吸收的葡萄糖和麦芽糖,提高了消化吸收性能和营养物质的冲剂产品。即增加甜度又节约成本,做到废弃物再利用。携带方便,利于保存,食用简单,将两者结合为一体起到互补的作用。
具体实施方式
(1)、原料灭菌:先将榴莲内核和采集来的肾经草除去杂物和泥土霉变虫咬部分,用清水漂洗干净后,浸泡在4%的乳酸溶液中进行灭菌,浸泡7~10min,灭菌后用清水洗去榴莲内核和肾经草上的药液沥干进行破碎,送入切片机械内将榴莲内核和肾经草切成厚度为0.3~0.5cm的片状;
(2)、原料打浆:将榴莲内核和肾经草的切片加入等重量的纯净水一起送入打浆机内进行打浆,电机转速1800~2800 r/min,功率1.5~2.5kw,得到大量的营养物质和糖分混合浆汁;
(3)、固液分离:用离心分离机对打浆后的混合浆汁进行固液分离,除去悬浮物和细小的残渣,离心机转速控制在1500~2000r/ min范围内,离心时间为3~6min,得到无渣的混合液;
(4)、 加酶水解:将固液分离后的混合液中加入淀粉酶,淀粉酶用量为混合液重量的0.2~0.3%,酶解反应温度40~60℃,反应时间1~4h;
(5)、膜分离:将酶解处理的榴莲内核和肾经草混合液放入微滤分离机内,选用微滤孔径0.5~1.3μm的微孔滤膜,温度控制在55~65℃,操作压力0.1~0.6MPa下进行微滤;
(6)、喷雾干燥:将膜分离后的混合液送入压力式雾化干燥机内进行干燥,雾化干燥温度控制在45~60℃、在喷雾压力4000~5000KPa下进行雾化干燥,将雾化干燥后的冲剂进行质检,包装。
Claims (1)
1.一种具有滋阴补肾保健型冲剂的制作方法,其特征是按照下列步骤进行:
(1)、原料灭菌:先将榴莲内核和采集来的肾经草除去杂物和泥土霉变虫咬部分,用清水漂洗干净后,浸泡在4%的乳酸溶液中进行灭菌,浸泡7~10min,灭菌后用清水洗去榴莲内核和肾经草上的药液沥干进行破碎,送入切片机械内将榴莲内核和肾经草切成厚度为0.3~0.5cm的片状;
(2)、原料打浆:将榴莲内核和肾经草的切片加入等重量的纯净水一起送入打浆机内进行打浆,电机转速1800~2800 r/min,功率1.5~2.5kw,得到大量的营养物质和糖分混合浆汁;
(3)、固液分离:用离心分离机对打浆后的混合浆汁进行固液分离,除去悬浮物和细小的残渣,离心机转速控制在1500~2000r/ min范围内,离心时间为3~6min,得到无渣的混合液;
