背景技术
淮山,学名薯蓣,通称山药。是薯蓣科薯蓣属的一种植物,薯蓣(yù)始载于《神农本草经》,列为上品,原名“薯蓣”,淮山的食用价值:山药肉质细嫩,含有极丰富的营养保健物质,具有增强人体免疫功能,其所含有的胆碱和卵磷脂有助于提高人的记忆力,常食之可健身强体、延缓衰老,是人们所喜爱的保健佳品。淮山的药用价值:山药是山中之药、食中之药。不仅可做成保健食品,而且具有调理疾病的药用价值。随着人们物质生活水平的逐步提高,每天的饮食不规律,以及每天摄入的营养难以维持正常的生理需求,人们的饮食越来越注重营养与保健。因此,市场上出现了日益增多的各式各样的速食品,大多数的速食品都是低营养、高热量、高胆固醇的产品。对于大多数速食品的生产加工过程中营养成分流失严重,生产的保健膏不具备纯天然性,而且其保健效果也不是特别理想。而淮山是低热量、低糖、高纤维素以及维生素和矿物质含量积极丰富,目前对于淮山营养冲剂的营养品在市场尚未见到有相关报道。
发明内容
针对上述存在的不足,本发明提供了一种风味爽口、营养丰富的淮山保健膏及其制备方法,本发明能健脾开胃、通便排毒、增强体质、养血益精和美容养颜等多种功效,本发明为了实现上述目的,采用的技术方案如下:
一种淮山保健膏,其特征在于,所述淮山保健膏由以下重量份的原料制成:淮山100-150份、葛根淀粉30-50份、芝麻5-12份、苜蓿10-15份、火麻8-14份、芡实5-12份、干贝6-13份、乳酸菌1-5份、蔗糖15-30份、柠檬酸1.8-3份和山梨酸钾0.2-1份。
优选地,所述淮山保健膏由以下重量份的原料制成:淮山120份、葛根淀粉45份、芝麻10份、苜蓿12份、火麻10份、芡实10份、干贝10份、乳酸菌3份、蔗糖25份、柠檬酸2.5份和山梨酸钾0.5份。
一种淮山保健膏的制备方法,其特征在于,包括以下步骤:
a、按重量份数称取原料:淮山、葛根淀粉、芝麻、苜蓿、火麻、芡实、干贝、乳酸菌、蔗糖、柠檬酸和山梨酸钾;
b、将淮山去皮洗净切成片,然后将淮山放入柠檬酸中浸泡,再用水清洗1-2次后,加1-3倍的水磨成浆,备用;
c、将干贝用热水浸泡20分钟后磨碎,以及分别将芝麻、苜蓿、火麻炒熟磨成粉末,备用;
d、将芡实用清水洗净磨碎,放入蔗糖溶液中浸泡,再经纱网过滤得到滤液,备用;
e、将步骤b、c、d制备的原料加入葛根淀粉进行搅拌混合制成糊状原料,通过不断搅拌,对提高原料的粘性和糊化速度有很好的效果;
f、将步骤d制备得到的糊状原料用文火蒸熟、冷却和粉碎,再加入山梨酸钾和乳酸菌发酵2-5小时,再用小火熬膏10-20分钟,得到成品。
优选地,所述步骤d中浸泡的时间为1-3小时,再经40-60目纱网过滤。
优选地,所述步骤e中的搅拌步骤为,第一次搅拌时间为20分钟,然后在28-350C下静置2-5小时进行膨化,再进行第二次搅拌,搅拌8-15分钟,然后得到混合制成糊状。
优选地,所述步骤b将淮山放入柠檬酸中浸泡时间为10-20分钟,所述柠檬酸的酸度为0.8-1.5g/100 mL。
为了使芡实在浸泡时的营养成分的稳定,以及将回收的滤液加入葛根淀粉和其他原料混合后的粘度稳定性、糊化效果更好,本发明进一步优选地,所述步骤d中蔗糖溶液的浓度为10%-20%。
本发明制备的淮山保健膏采用的原料都是日常生活中经常食用的副食品,含有多种营养成分,具有很高的营养价值,其中:
淮山,学名薯蓣,又称山药、土薯、山薯蓣、怀山药、白山药。含有大量的黏液蛋白、维生素及微量元素,山药具有滋养强壮,助消化,敛虚汗,止泻之功效,能有效阻止血脂在血管壁的沉淀,预防心血疾病,取得益志安神、益肺止咳、延年益寿的功效。
芝麻,又名脂麻、胡麻(学名:Sesamum indicum),是胡麻的籽种,芝麻含有大量的脂肪和蛋白质,其中主要为油酸、亚油酸、棕榈酸、花生酸等的甘油脂;又含甾醇、芝麻素、芝麻酚、叶酸、烟酸、蔗糖、卵磷脂、蛋白质;还有膳食纤维、糖类、维生素A、维生素B1,B2、尼克酸、维生素E、卵磷脂、钙、铁、镁等营养成分,芝麻中含有丰富的维生素E,能防止过氧化脂质对皮肤的危害,抵消或中和细胞内有害物质游离基的积聚,可使皮肤白皙润泽,并能防止各种皮肤炎症。芝麻还具有养血的功效,可以治疗皮肤干枯、粗糙、令皮肤细腻光滑、红润光泽。除此之外,芝麻还具有补肝肾,益精血,润肠燥,通乳的功效。用于治疗身体虚弱、头晕耳鸣、高血压、高血脂、咳嗽、身体虚弱、头发早白、贫血萎黄、津液不足、大便燥结、乳少、尿血等症。
葛根淀粉,是由从葛根提取而来的,葛根具有退热生津、保肝养颜、增强免疫力、治疗心脑血管疾病等功效,葛根淀粉蕴藏于葛根之中,淀粉是葛根中最主要的营养物质,葛根含有葛根总黄酮,是治疗心脑血管疾病和高血脂的良药,葛根淀粉经过清洗、粉碎磨浆、筛分(过滤、离心或沉淀)、脱水、干燥工序制备得到。
苜蓿,是苜蓿属(Medicago)植物的通称,又名金花菜,每百克苜蓿含维生素C 118毫克、钙713毫克、铁9.7毫克、硒8.5毫克。苜蓿具有降低胆固醇、平衡血糖及荷尔蒙、促进脑下垂体功能;对贫血、关节炎、溃疡、出血性疾病、骨骼或关节疾病、消化系统和皮肤均有治疗效果。
火麻,中医药学上火麻果实称为“火麻仁”、“大麻仁”,(学名:Cannabis sativa)又叫大麻,具有增进食欲、减轻疼痛的功效,火麻可将体内多余的脂肪颗粒、胆固醇等有害物质排出体外,既能排毒又减肥,又可滋阴补肾。长期食用,它可以滋阴补虚、疏通血脉,治中风水肿、助消化、对妇女产后疾病和对老年人便秘、失眠、高血压、高血脂、糖尿病、胆固醇、排毒减肥等疾病有特殊的疗效。
干贝,又俗称瑶柱,性味甘咸平,具有滋阴补肾、健脾调中等功效。《本草从新》说它能“下气调中,利五脏,疗消渴”之效。瑶柱富含蛋白质、碳水化合物、氨基酸、核黄素和钙、磷、铁等多种营养成分,蛋白质含量高达61.8%,为鸡肉、牛肉、鲜对虾的3倍。具有滋阴补肾、和胃调中功能,能治疗头晕目眩、咽干口渴、虚痨咳血、脾胃虚弱等症,常食有助于降血压、降胆固醇、补益健身。
芡实,为睡莲科植物芡Euryale ferox Salisb.的干燥成熟种仁。具有益肾固精,补脾止泻,除湿止带之功效。
综上所述,本发明由于采用了上述方案,具有以下优点:
(1)、本发明制备的淮山保健膏营养丰富,具有健脾开胃,增强体质,清热降火,降血压血脂的功效,还具有高纤维,低甜度,低热量及促进人体消化吸收的功效,且无毒副作用,有益人体健康。采用价格低廉、富含蛋白质的淮山、芝麻、火麻、葛根淀粉和干贝等作为主要原料,替代了传统的高蛋白原材料,可明显降低生产成本,还可促进种植业发展,以及为农民增收增效和农业生态环境的改善提供广阔的空间。
(2)、本发明的制备方法操作简单,原料来源广,工艺时间短,其配方科学合理,生产效率高,制备过程中营养成分不易流失,功效非常稳定。
(3)本发明制备的淮山保健膏口感好,香味浓郁,香醇可口,更好地满足不同消费群体的需要。
具体实施方式
下面结合实施例对本发明一种淮山保健膏及其制备方法,作进一步说明。
一、制备实施例
实施例1:
一种淮山保健膏,由以下重量份的原料制成:淮山150份、葛根淀粉30份、芝麻5份、苜蓿10份、火麻8份、芡实5份、干贝6份、乳酸菌1份、蔗糖15份、柠檬酸1.8份和山梨酸钾0.2份。
本实施例提供一种淮山保健膏的制备方法,包括以下步骤:
a、按重量份数称取原料:淮山、葛根淀粉、芝麻、苜蓿、火麻、芡实、干贝、乳酸菌、蔗糖、柠檬酸和山梨酸钾;
b、将淮山去皮洗净切成片,然后将淮山放入酸度为 1.5g /100 mL的柠檬酸中浸泡10分钟,再用水清洗1-2次后,加1倍的水磨成浆,备用;
c、将干贝用热水浸泡20分钟后磨碎,以及分别将芝麻、苜蓿、火麻炒熟磨成粉末,备用;
d、将芡实用清水洗净磨碎,放入浓度为10%的蔗糖溶液中浸泡1小时,再经40目纱网过滤得到滤液,备用;
e、将步骤b、c、d制备的原料加入葛根淀粉进行搅拌混合制成糊状原料,所述步骤搅拌步骤为,第一次搅拌时间为20分钟,然后在280C下静置5小时进行膨化,再进行第二次搅拌,搅拌8分钟,然后得到混合制成糊状通过不断搅拌对提高原料的粘性和糊化速度有很好的效果;
f、将步骤d制备得到的糊状原料用文火蒸熟、冷却和粉碎,再加入山梨酸钾和乳酸菌发酵2小时,再用小火熬膏10分钟,得到成品。
实施例2:
一种淮山保健膏,由以下重量份的原料制成:淮山100份、葛根淀粉50份、芝麻12份、苜蓿15份、火麻14份、芡实12份、干贝13份、乳酸菌5份、蔗糖30份、柠檬酸3份和山梨酸钾1份。
本实施例提供一种淮山保健膏的制备方法,包括以下步骤:
a、按重量份数称取原料:淮山、葛根淀粉、芝麻、苜蓿、火麻、芡实、干贝、乳酸菌、蔗糖、柠檬酸和山梨酸钾;
b、将淮山去皮洗净切成片,然后将淮山放入酸度为 0.8g /100 mL的柠檬酸中浸泡20分钟,再用水清洗1-2次后,加3倍的水磨成浆,备用;
c、将干贝用热水浸泡20分钟后磨碎,并分别将芝麻、苜蓿、火麻炒熟磨成粉末,备用;
d、将芡实用清水洗净磨碎,放入浓度为20%的蔗糖溶液中浸泡3小时,再经60目纱网过滤得到滤液,备用;
e、将步骤b、c、d制备的原料加入葛根淀粉进行搅拌混合制成糊状原料,所述步骤搅拌步骤为,第一次搅拌时间为20分钟,然后在350C下静置2小时进行膨化,再进行第二次搅拌,搅拌15分钟,然后得到混合制成糊状通过不断搅拌,对提高原料的粘性和糊化速度有很好的效果;
f、将步骤d制备得到的糊状原料用文火蒸熟、冷却和粉碎,再加入山梨酸钾和乳酸菌发酵5小时,再用小火熬膏20分钟,得到成品。
实施例3:
一种淮山保健膏,由以下重量份的原料制成:淮山120份、葛根淀粉45份、芝麻10份、苜蓿12份、火麻10份、芡实10份、干贝10份、乳酸菌3份、蔗糖25份、柠檬酸2.5份和山梨酸钾0.5份。
本实施例提供一种淮山保健膏的制备方法,包括以下步骤:
a、按重量份数称取原料:淮山、葛根淀粉、芝麻、苜蓿、火麻、芡实、干贝、乳酸菌、蔗糖、柠檬酸和山梨酸钾;
b、将淮山去皮洗净切成片,然后将淮山放入酸度为 1.2g /100 mL的柠檬酸中浸泡15分钟,再用水清洗1-2次后,加2倍的水磨成浆,备用;
c、将干贝用热水浸泡20分钟后磨碎,并分别将芝麻、苜蓿、火麻炒熟磨成粉末,备用;
d、将芡实用清水洗净磨碎,放入浓度为15%的蔗糖溶液中浸泡2小时,再经50目纱网过滤得到滤液,备用;
e、将步骤b、c、d制备的原料加入葛根淀粉进行搅拌混合制成糊状原料,所述步骤搅拌步骤为,第一次搅拌时间为20分钟,然后在320C下静置4小时进行膨化,再进行第二次搅拌,搅拌12分钟,然后得到混合制成糊状通过不断搅拌,对提高原料的粘性和糊化速度有很好的效果;
f、将步骤d制备得到的糊状原料用文火蒸熟、冷却和粉碎,再加入山梨酸钾和乳酸菌发酵4小时,再用小火熬膏15分钟,得到成品。
二、毒性试验:
取昆明种小老鼠200只,雌雄各100只,体重为18-22g,随机分为两组,每组100只,其中A组为正常喂食试验组,B组用添加使用本发明制备的淮山保健膏作为喂食实验组,正常喂给量为2gm/10g,每日早晚各一次,连续喂食1个月,每天观察服药反应,结果表明B两组的小老鼠比A组的小老鼠生长的速度较快,体型较大,毛发细腻更有光泽,B组小老鼠行为无异常,无中毒症状,体型、粪便均无异常,一般体征良好,表明本发明的淮山保健膏安全、无毒副作用。
三、临床观察:
收治年龄20-60岁的200例有免疫力差、体质弱、上火、血脂高和便秘的患者进行重点观察,服用方式:每天1次,每次100g,1个月为1疗程,连服2-3个疗程,且服用期间,未出现不良反应,说明本发明所得产品安全无毒。观察结果显示本发明的淮山保健膏对上述症状的患者各方面均有明显的改善,患者的体质、免疫力有所增强,上火、血脂和便秘症状得到明显改善,精力充沛,面色润红,肠胃也有明显改善,不厌食,改善便秘和体质弱的效果超过95%。本发明的淮山保健膏口香味浓郁、滋味醇厚,滑爽,细腻,润泽,非常利于人体吸收,促进生理机能的改善,以达到调理疾病目的。
四、评价测试:
将实施例1至实施例3的淮山保健膏和市面销售的某品牌淮山保健膏(对照组)分别在进行了市场调研测评,每个实施例制备50份淮山保健膏和市面销售的某品牌淮山保健膏50份,随机请200名群众观察色泽、香味,品尝其口感、整体风味。最后群众对其色泽、香味,品尝其口感、整体风味等四个品质指标进行口味测评,统计持肯定意见的人数,调研测评结果见表 1。

从表 1 可以看出,本发明每个实施例制备的淮山营养剂用800C热水冲服,随机选取的200名参加调查群众中,对淮山保健膏整体风味持肯定意见,喜欢率均达到 90.0%以上,说明淮山保健膏投放市场,能够受到广大消费者接受及喜爱;而市面销售的某品牌淮山保健膏的色泽、香味、口感味以及整体风味均与本发明提供的淮山保健膏存在较大差异,这也说明了本发明提供的淮山保健膏色泽、香味、口感以及整体风味更佳,符合大众的需求。同时将本发明的实施例1-3制得的样品批次进行卫生指标和食品质量标准进行检测,检测结果如表2和表3所示。

Claims (7)
1.一种淮山保健膏,其特征在于,所述淮山保健膏由以下重量份的原料制成:淮山100-150份、葛根淀粉30-50份、芝麻5-12份、苜蓿10-15份、火麻8-14份、芡实5-12份、干贝6-13份、乳酸菌1-5份、蔗糖15-30份、柠檬酸1.8-3份和山梨酸钾0.2-1份。
2.根据权利要求1所述的一种淮山保健膏,其特征在于,所述淮山保健膏由以下重量份的原料制成:淮山120份、葛根淀粉45份、芝麻10份、苜蓿12份、火麻10份、芡实10份、干贝10份、乳酸菌3份、蔗糖25份、柠檬酸2.5份和山梨酸钾0.5份。
3.一种权利要求1或2所述的淮山保健膏的制备方法,其特征在于,包括以下步骤:
a、按重量份数称取原料:淮山、葛根淀粉、芝麻、苜蓿、火麻、芡实、干贝、乳酸菌、蔗糖、柠檬酸和山梨酸钾;
b、将淮山去皮洗净切成片,然后将淮山放入柠檬酸中浸泡,再用水清洗1-2次后,加1-3倍的水磨成浆,备用;
c、将干贝用热水浸泡20分钟后磨碎,以及分别将芝麻、苜蓿、火麻炒熟磨成粉末,备用;
d、将芡实用清水洗净磨碎,放入蔗糖溶液中浸泡,再经纱网过滤得到滤液,备用;
e、将步骤b、c、d制备的原料加入葛根淀粉进行搅拌混合制成糊状原料;
f、将步骤d制备得到的糊状原料用文火蒸熟、冷却和粉碎,再加入山梨酸钾和乳酸菌发酵2-5小时,再用小火熬膏10-20分钟,得到成品。
4.根据权利要求3所述的一种淮山保健膏的制备方法,其特征在于,所述步骤d中浸泡的时间为1-3小时,再经40-60目纱网过滤。
5.根据权利要求3所述的一种淮山保健膏的制备方法,其特征在于,所述步骤e中的搅拌步骤为,第一次搅拌时间为20分钟,然后在28-350C下静置2-5小时进行膨化,再进行第二次搅拌,搅拌8-15分钟,然后得到混合制成糊状。
6. 根据权利要求3所述的一种淮山保健膏的制备方法,其特征在于,所述步骤b将淮山放入柠檬酸中浸泡时间为10-20分钟,所述柠檬酸的酸度为0.8-1.5g /100 mL。
7.根据权利要求3所述的一种淮山保健膏的制备方法,其特征在于,特征在于,所述步骤d中蔗糖溶液的浓度为10%-20%。
