本发明涉及食品添加剂技术领域,具体涉及一种肉制品抗氧化剂。
背景技术
肉制品在储藏的过程中容易发生肉质变质的现象,其除了受微生物的作用而发生腐败变质外,还会和空气中的氧气发生氧化反应,导致肉制品中的油脂酸败、褪色、褐变、风味变劣及维生素破坏等,甚至产生有害物质,从而降低肉制品质量和营养价值,误食这类肉制品有时甚至会引起食物中毒,危及人体健康。防止肉制品发生氧化变质的方法有物理法和化学法等。物理法是指对食品原料、加工环节及成品采用低温、避光、隔氧或充氮包装等方法。化学法是指在食品中添加抗氧化剂,该种方法在实际生产中被普遍应用。抗氧化剂是添加于食品后阻止或延迟食品氧化,提高食品质量的稳定性和延长贮藏期的物质。随着人们生活水平的提高,对食品添加的毒理学评价和食用安全性提出了更高的要求,新型的抗氧化剂应该是高效、安全、营养的物质。

本发明采取的技术方案是:
一种肉制品抗氧化剂,由以下重量份原料制备而成:桂皮提取物20-30份、香叶提取物20-30份、百里香提取物10-20份、没石子酸10-15份、维生素C1-5份、姜油5-10份。
优选地,所述肉制品抗氧化剂,由以下重量份原料制备而成:桂皮提取物23-27份、香叶提取物23-27份、百里香提取物13-17份、没石子酸11-14份、维生素C2-4份、姜油6-8份。
优选地,所述肉制品抗氧化剂,由以下重量份原料制备而成:桂皮提取物25份、香叶提取物25份、百里香提取物15份、没石子酸12.5份、维生素C3份、姜油7份。
