本发明涉及一种面条,具体涉及一种菌菇杂粮面条。
背景技术
面条作为一种速食产品深受人们欢迎和喜爱,由于市面上的面条多以小麦粉为原料制作而成,其品种单一、营养口味也单一,且在烹煮过程中易出现糊水、断条、口感不够纯正、柔软等缺陷,同时由于传统面条在加工过程中往往为了克服原料其本身的缺点而加入增白剂、食用明矾等以增加其白度、面筋强度和光滑度,由于加入了增白剂、食用明矾的食物会妨碍大脑对钙和铁的吸收,尤其是对少年儿童的大脑发育会产生严重的危害,对中老年人的大脑也有不同程度的损伤,本发明一种菌菇杂粮面条充分发挥了菌菇、杂粮的保健作用,营养丰富,食用时口感爽滑、柔韧劲道、富含弹性。

一种菌菇杂粮面条,由下列重量份的原料组成:杂粮面粉200-400份、蛋黄15-25份、食盐4-6份、菌菇粉60-70份、果胶2-4份、味精1-3份、小麦粉60-70份、谷朊粉8-10份、瓜尔豆胶1-3份、淀粉20-40份、水100-200份。
进一步,由下列重量份的原料组成:杂粮面粉200份、蛋黄15份、食盐4份、菌菇粉60份、果胶2份、味精1份、小麦粉60份、谷朊粉8份、瓜尔豆胶1份、淀粉20份、水100份。
进一步,由下列重量份的原料组成:杂粮面粉300份、蛋黄20份、食盐5份、菌菇粉65份、果胶3份、味精2份、小麦粉65份、谷朊粉9份、瓜尔豆胶2份、淀粉30份、水150份。
进一步,由下列重量份的原料组成:杂粮面粉400份、蛋黄25份、食盐6份、菌菇粉70份、果胶4份、味精3份、小麦粉70份、谷朊粉10份、瓜尔豆胶3份、淀粉40份、水200份。
本发明的有益效果是:本发明生产的菌菇杂粮面条,添加高粱、荞麦、黄豆等杂粮,对食欲不振、消化不良有调节作用,具有健脾祛湿、调理肠胃的功效,而菌菇具有增强免疫力、抗肿瘤、抗病毒、抗辐射、抗衰老、防治心血管病、保肝、健胃、减肥等功效,适合广大人群食用。
