本发明涉及酱油,具体地说是一种保健生抽。
背景技术
生抽是酱油的一种,是以大豆或黑豆、面粉为主要原料,人工接入种曲,经天然露晒,发酵而成的,颜色比较淡并且呈红褐色。生抽是用来做一般的烹调用的,味道较咸。生抽主要是用来调味,颜色淡,故做一般的炒菜或者凉菜的时候用得比较多。以优质黄豆和面粉为原料,经发酵成熟后提取而成。色泽淡雅醇香,酱香浓郁,味道鲜美。目前,生抽营养元素比较单一,生抽是日常用品,在生抽中添加有益营养元素,可提高生抽品质,满足人们的需求。
发明内容
本发明之目的是提供一种添加牛蒡、番石榴、余甘子、灵芝、天麻营养成分的保健生抽。
技术方案:一种保健生抽,由如下原料重量份制成:大豆50份,小麦20份,母种0.2份,食盐水200份,牛蒡提取液5份、番石榴提取液2份、余甘子肉提取液5份,灵芝提取液1份,天麻提取液1份;所述母种为米曲霉、黑曲霉、啤酒酵母三种混合,其重量比1.5:1:1;所述食盐水波美度为15°Be′。
一种保健生抽制备方法如下:
(1)取牛蒡粉碎,加水为牛蒡的110%进行煮沸1小时,过滤得牛蒡提取液;
(2)取番石榴粉碎,加水为番石榴的110%进行煮沸1小时,过滤得番石榴提取液;
(3)取余甘子肉粉碎,加水为余甘子肉的100%进行煮沸1小时,过滤得余甘子提取液;
(4)取灵芝粉碎成30目筛,加水为灵芝的150%进行煮沸1小时,过滤得灵芝提取液;
(5)取天麻粉碎成30目筛,加水为天麻的160%进行煮沸1小时,过滤得天麻提取液;
(6)干燥大豆、小麦粉碎成粒径小于1mm,将牛蒡提、番石榴、余甘子、灵芝、天麻提取液加入到大豆、小麦粉中,用蒸汽蒸料1小时,取出蒸料,冷却至35℃时加入母种搅拌,上培养床,室温26℃,培养50小时,出料,风干,置于日光浴温室中,加入食盐水,搅拌均匀,密封发酵180天;
发酵完成后,将生抽醪液分装于过滤袋中,压榨取汁,原汁为生抽初产品;
(7)初产品放入初品罐中,沉淀15天以上,除去沉淀物,分装,灭菌,得生抽成品。
有益效果:本发明具有滋补强壮、消食健脾之功效,特别适合糖尿病人食用。
本发明采用的部分原料介绍如下:
(1)牛蒡,(学名:ArctiumlappaL.),又名:恶实、大力子、东洋参,又名东洋牛鞭菜等。一千多年前日本从中国引进并改良成食物,在日本占据台湾时曾在台南要求当地农民大量种植,主要原因是台南有曾文溪畔松沙土质、北回归线气候加上有名阿里山延脉造就其当地牛蒡得天独厚的珍贵性,台湾已作为蔬菜食用多年,有牛蒡发祥地之称。属桔梗目,菊科二年生草本植物,基生叶宽卵形,长达30厘米,宽达21厘米,头状花序多数或少数在成伞房花序或圆锥状伞房花序,瘦果倒长卵形或偏斜倒长卵形,两侧压扁,浅褐色。花果期6-9月。牛蒡根含有人体必需的各种氨基酸,且含量较高,尤其是具有特殊药理作用的氨基酸含量高,如具有健脑作用的天门冬氨酸占总氨基酸的25%-28%,精氨酸占18%-20%,且含有Ca、Mg、Fe、Mn、Zn等人体必需的宏量元素和微量元素。本发明采用的为牛蒡根。
(2)番石榴,拉丁文名:PsidiumguajavaLinn.桃金娘科、番石榴属乔木,高达13米;树皮平滑,灰色,片状剥落;嫩枝有棱,被毛。叶片革质,长圆形至椭圆形,先端急尖或钝,基部近于圆形,上面稍粗糙,下面有毛,常下陷,网脉明显;萼管钟形,有毛,萼帽近圆形,不规则裂开;白色;子房下位,与萼合生,花柱与雄蕊同长。浆果球形、卵圆形或梨形,顶端有宿存萼片,果肉白色及黄色,胎座肥大,肉质,淡红色;种子多数。番石榴味道甘甜多汁,果肉柔滑,果心较少无籽。可以补充人体所缺乏的营养成分,可以强身健体提高身体素质。比起苹果,番石榴所含有的脂肪少38%,卡路里少42%。番石榴营养丰富,其中丰富的维生素C对治疗糖尿病具有很好地药效。本发明采用的为番石榴果实。
(3)余甘子,拉丁学名PhyllanthusemblicaL.属大戟科叶下珠属植物,其果鲜食酸甜酥脆而微涩,回味甘甜,故名余甘,又名喉甘子、油柑子、庵罗果、牛甘果等。余甘子果实味酸微涩,清热凉血,消食健脾,生津止渴。主治血热血瘀,消化不良,腹胀,咳嗽,喉痛,口干及维生素C缺乏症。在藏药中,余甘子主治培根病、赤巴病、血病、高血压病等。研究结果表明,余甘子具有抗炎,抗氧化,抗衰老,保肝等作用。
(4)灵芝,又称林中灵、琼珍(学名:GanodermaLucidumKarst)。灵芝药用在我国已有2000多年的历史,被历代医药家视为滋补强壮、扶正固本的神奇珍品。主含氨基酸、多肽、蛋白质、真菌溶菌酶,以及糖类(还原糖和多糖)、麦角甾醇、三萜类、香豆精甙、挥发油、硬脂酸、苯甲酸、生物碱、维生素B2及C等;孢子还含甘露醇、海藻糖。
(5)天麻,(学名:GastrodiaelataBl.),又名赤箭、独摇芝、离母、合离草、神草、鬼督邮、木浦、明天麻、定风草、白龙皮等,是兰科天麻属多年生草本植物。据研究,天麻对治疗糖尿病周围神经病变疗效较好。

实施例1:一种保健生抽,由如下原料重量份制成:大豆50份,小麦20份,母种0.2份,食盐水200份,牛蒡提取液5份、番石榴提取液2份、余甘子肉提取液5份,灵芝提取液1份,天麻提取液1份;所述母种为米曲霉、黑曲霉、啤酒酵母三种混合,其重量比1.5:1:1;所述食盐水波美度为15°Be′。
一种保健生抽制备方法如下:
(1)取牛蒡粉碎,加水为牛蒡的110%进行煮沸1小时,过滤得牛蒡提取液;
(2)取番石榴粉碎,加水为番石榴的110%进行煮沸1小时,过滤得番石榴提取液;
(3)取余甘子肉粉碎,加水为余甘子肉的100%进行煮沸1小时,过滤得余甘子提取液;
(4)取灵芝粉碎成30目筛,加水为灵芝的150%进行煮沸1小时,过滤得灵芝提取液;
(5)取天麻粉碎成30目筛,加水为天麻的160%进行煮沸1小时,过滤得天麻提取液;
(6)干燥大豆、小麦粉碎成粒径小于1mm,将牛蒡提、番石榴、余甘子、灵芝、天麻提取液加入到大豆、小麦粉中,用蒸汽蒸料1小时,取出蒸料,冷却至35℃时加入母种搅拌,上培养床,室温26℃,培养50小时,出料,风干,置于日光浴温室中,加入食盐水,搅拌均匀,密封发酵180天;发酵完成后,将生抽醪液分装于过滤袋中,压榨取汁,原汁为生抽初产品;
(7)初产品放入初品罐中,沉淀15天以上,除去沉淀物,分装,灭菌,得生抽成品。
上述牛蒡、番石榴、余甘子肉、灵芝、天麻切片晒干;牛蒡、番石榴、余甘子肉可粉碎成50目筛。
实施例2:一种保健生抽,由如下原料重量份制成:大豆60份,小麦40份,母种0.5份,食盐水300份,牛蒡提取液8份、番石榴提取液1份、余甘子肉提取液3份,灵芝提取液10份,天麻提取液5份;所述母种为米曲霉、黑曲霉、啤酒酵母三种混合,其重量比1.5:1:1;所述食盐水波美度为13°Be′。
实施例3:一种保健生抽,由如下原料重量份制成:大豆30份,小麦25份,母种0.1份,食盐水250份,牛蒡提取液5份、番石榴提取液3份、余甘子肉提取液10份,灵芝提取液6份,天麻提取液3份;所述母种为米曲霉、黑曲霉、啤酒酵母三种混合,其重量比2:1:1;所述食盐水波美度为16°Be′。
本发明之牛蒡、番石榴、余甘子、灵芝、天麻均对糖尿病具有一定的辅助作用,可作为糖尿病患者食用。
Claims (2)
1.一种保健生抽,其特征在于由如下原料重量份制成:大豆50份,小麦20份,母种0.2份,食盐水200份,牛蒡提取液5份、番石榴提取液2份、余甘子肉提取液5份,灵芝提取液1份,天麻提取液1份;所述母种为米曲霉、黑曲霉、啤酒酵母三种混合,其重量比1.5:1:1;所述食盐水波美度为15°Be′。
2.一种权利要求1所述的一种保健生抽制备方法如下:
(1)取牛蒡粉碎,加水为牛蒡的110%进行煮沸1小时,过滤得牛蒡提取液;
(2)取番石榴粉碎,加水为番石榴的110%进行煮沸1小时,过滤得番石榴提取液;
(3)取余甘子肉粉碎,加水为余甘子肉的100%进行煮沸1小时,过滤得余甘子提取液;
(4)取灵芝粉碎成30目筛,加水为灵芝的150%进行煮沸1小时,过滤得灵芝提取液;
(5)取天麻粉碎成30目筛,加水为天麻的160%进行煮沸1小时,过滤得天麻提取液;
(6)干燥大豆、小麦粉碎成粒径小于1mm,将牛蒡提、番石榴、余甘子、灵芝、天麻提取液加入到大豆、小麦粉中,用蒸汽蒸料1小时,取出蒸料,冷却至35℃时加入母种搅拌,上培养床,室温26℃,培养50小时,出料,风干,置于日光浴温室中,加入食盐水,搅拌均匀,密封发酵180天;发酵完成后,将生抽醪液分装于过滤袋中,压榨取汁,原汁为生抽初产品;
(7)初产品放入初品罐中,沉淀15天以上,除去沉淀物,分装,灭菌,得生抽成品。
