本发明涉及一种中老年用降血脂、补钙鲨鱼翅骨粉固体饮料及其制备工艺,属保健食品领域。
背景技术
鲨鱼是世界上最古老、最长寿的深海海洋生物之一,在地球上已生存了四亿年之久,它具有完善免疫系统,生命力极强,几乎不被疾病感染,即使受到外伤,伤口也能很快复原,鲨鱼患癌症的几率约为1/百万。我国鲨鱼药用始见于《本草经集注》,其软骨主要由软骨细胞和含有胶原纤维及大量蛋白多糖和细胞外基质构成,从鲨鱼软骨中提取的多糖在临床上主要用于治疗神经痛、偏头痛、腹腔手术后疼痛等。在欧、美、日等发达国家,鲨鱼软骨多糖作为保健食品或保健药品长期应用于防治冠心病、心绞痛、心肌梗死等疾病,无明显的毒副作用。近年来研究表明鲨鱼软骨中除富含钙、磷、镁等矿物质外,还含有多种粘多糖及硫酸软骨素,具有显著的抗凝血、降血脂、抗病毒和抗肿瘤等功用,是不可多得的天然食品资源。由于鲨鱼软骨粉具备促进人体软骨再生,抑制新生血管的天然功效,因此鲨鱼软骨粉是一种优良的补钙原料。近年来,鲨鱼翅骨粉保健食品开发得到快速发展,但仍存在保健产品原料单一、功能活性成分无法充分利用、产品食用不便等缺陷,制约鲨鱼翅骨粉保健食品产业可持续发展。
发明内容
为克服现有技术的不足,本发明的目的在于提供一种中老年用降血脂、补钙鲨鱼翅骨粉固体饮料及其制备工艺。
本发明上述目的是通过以下技术方案予以实现的:
本发明提供一种中老年用降血脂、补钙鲨鱼翅骨粉固体饮料及其制备工艺,其特征在于固体饮料原料组成及质量配比为:鲨鱼软骨粉40~50份、山楂粉20~30份、蓝莓粉10~15份、葡萄糖酸钙5~10份、木糖醇3~5份、灵芝多糖2~3份。
本发明提供一种中老年用降血脂、补钙鲨鱼翅骨粉固体饮料及其制备工艺,其特征在于通过以下步骤制备:
(1)配料:将鲨鱼软骨粉、山楂粉、蓝莓粉、葡萄糖酸钙、木糖醇、灵芝多糖按上述比例配料;
(2)粉碎:将原料用超微型粉碎机粉碎,过200目筛;
(3)混合:将粉碎后的原料混合均匀,混合均匀度≥95%;
(4)包装:分装后包装即得鲨鱼翅骨粉固体饮料。
本发明提供一种中老年用降血脂、补钙鲨鱼翅骨粉固体饮料,产品形状粉末状,粒度粗细均匀,色泽呈白色或淡黄色,微腥、无异味。产品中蛋白质含量≥20g/100g,总矿物质含量≥25g/100g,水分≤10g/100g,灰分≤3g/100g,铅(以Pb计)≤1.5mg/100g,砷(以As计)≤1.0mg/100g,汞(以Hg计)≤0.3mg/100g,菌落总数(cfu/g)≤100,大肠菌群(MPN/100g)≤0.3,沙门氏菌、志贺氏菌、金黄色葡萄球菌等致病菌不得检出。
本发明提供一种中老年用降血脂、补钙鲨鱼翅骨粉固体饮料及其制备工艺,通过动物试验进行鲨鱼翅骨粉固体饮料的毒理学试验及安全性评价。小鼠急性经口毒性试验结果表明,本鲨鱼翅骨粉固体饮料对小鼠急性经口最大耐受剂量大于高剂量组75mg/kg·bw;遗传毒性试验小鼠骨髓细胞微核试验和小鼠精子畸形试验两项试验结果均为阴性,表明该鲨鱼翅骨粉固体饮料无致突变作用;由大鼠30d喂养试验可知,大鼠体征行为正常、体态健康、血液及血液生化指标也无异常变化,因此75mg/kg·bw的剂量(人体推荐量的150倍)属于安全剂量;遗传毒性试验和大鼠30d喂养试验结果均为阴性,因此确定本鲨鱼翅骨粉固体饮料属无毒类食品,人可以安全放心食用。
本发明提供一种中老年用降血脂、补钙鲨鱼翅骨粉固体饮料及其制备工艺,其优势在于科学配伍鲨鱼软骨粉和多种补钙原料的相互之间的协同作用,能够起到快速补钙、降血脂等功效。本申请通过鲨鱼软骨粉与山楂粉、蓝莓粉、葡萄糖酸钙、木糖醇、灵芝多糖等原料彼此间存在复杂的相互作用关系,合理配比,取得了预料不到的技术效果,使鲨鱼翅骨粉固体饮料的关系发生实质性改变。根据《保健食品功能学评价程序和检验方法》对本申请产品进行了功能性评价,利用大鼠实验测定TC、TG、HDL-C等指标,饲喂本保健饮料三周后的造模试验组与对照组相比血脂含量下降38.23%,较对照组差异显著(p<0.01),说明产品具有较好的调节血脂活性;此外,试验结果表明,改变鲨鱼软骨粉和其他原料的组成及比例会显著降低产品的功效,结果差异显著(p<0.01),说明鲨鱼软骨粉和其他原料之间的协同作用起到了显著提升固体饮料功能活性的作用。

实施例1:
一种中老年用降血脂、补钙鲨鱼翅骨粉固体饮料及其制备工艺,通过以下步骤制备:
(1)配料:按鲨鱼软骨粉40份、山楂粉30份、蓝莓粉10份、葡萄糖酸钙10份、木糖醇3份、灵芝多糖3份比例配料;
(2)粉碎:将原料用超微型粉碎机粉碎,过200目筛;
(3)混合:将粉碎后的原料混合均匀,混合均匀度≥95%;
(4)包装:分装后包装即得鲨鱼翅骨粉固体饮料。
实施例2:
一种中老年用降血脂、补钙鲨鱼翅骨粉固体饮料及其制备工艺,通过以下步骤制备:
(1)配料:按鲨鱼软骨粉50份、山楂粉20份、蓝莓粉15份、葡萄糖酸钙5份、木糖醇5份、灵芝多糖2份比例配料;

(4)包装:分装后包装即得鲨鱼翅骨粉固体饮料。
