Abstract
本发明公开了一种开胃明目豆渣发酵乳,由以下重量份原料制成:豆渣800-820、密蒙花2.2-2.3、益母草1.8-2、菟丝子1.2-1.5、荷蒂1.9-2、苦瓜20-22、番茄10-12、腰果仁10-12、阿拉伯胶4-5、PGA0.7-0.8、海藻酸钠2.5-2.7、脱脂乳粉900-920、白砂糖800-820、发酵剂100-110、玉米蛋白粉适量、大蒜素适量。本发明的豆渣发酵乳豆香和奶香味浓郁,乳黄色,经微波处理后使得水溶性膳食纤维较高,加入大蒜素极大的降低了豆渣内脂肪氧化酶的活性,再经过后续多次煮沸,彻底去除了豆腥味,得到的发酵乳口感柔和,营养丰富,香气十足。

本发明涉及食品加工技术领域,尤其涉及一种开胃明目豆渣发酵乳及其制备方法。
背景技术
豆渣是一种富含营养价值、尚未得到充分开发利用的食品资源,我国是世界上种植大豆的主要国家之一,国内大豆资源丰富,豆制品行业得到蓬勃发展,豆渣是各类大豆制品加工过程中所产生的副产物,约占黄豆干重的15%-20%,其中富含膳食纤维、蛋白质、脂肪、异黄酮以及矿质元素钙、钾等成分,我国每年要产生大约几千万吨湿豆渣,由于其水分含量高、难以贮藏保存、色泽较暗、豆腥味严重、口感较差等因素,国内外对豆渣的开发利用成都都很低。。
发明内容
本发明目的就是为了弥补已有技术的缺陷,提供一种开胃明目豆渣发酵乳及其制备方法。
本发明是通过以下技术方案实现的:
一种开胃明目豆渣发酵乳,由以下重量份原料制成:
豆渣800-820、密蒙花2.2-2.3、益母草1.8-2、菟丝子1.2-1.5、荷蒂1.9-2、苦瓜20-22、番茄10-12、腰果仁10-12、阿拉伯胶4-5、PGA0.7-0.8、海藻酸钠2.5-2.7、脱脂乳粉900-920、白砂糖800-820、发酵剂100-110、玉米蛋白粉适量、大蒜素适量。
所述的一种开胃明目豆渣发酵乳的制备方法,包括以下步骤:
(1)将豆渣与水按照1:10g/ml的比例混合后充分搅拌2-3min,大火催至沸腾,立即停火自然冷却;
(2)待豆渣液冷却至常温,向内按25mg/L料液的比例添加大蒜素,调节PH为5.5,在微波功率450W下微波90S,再按50mg/L料液的比例加入玉米蛋白粉后均质处理得原浆备用;取阿拉伯胶、PGA及海藻酸钠混匀后得稳定剂;
(3)将密蒙花、益母草、菟丝子、荷蒂加6-7倍水大火煎煮1-2小时后压滤去渣得中药液;
(4)将苦瓜切细用沸水烫煮30-35s,捞出烘干备用;取番茄切片,入锅炒至5分熟后盛出备用,将腰果仁浸入2%的淡盐水内1-2h后捞出入蒸笼蒸煮5-6min取出备用;
(5)将原浆与中药液、5分熟番茄混合后加入脱脂乳粉、白砂糖及发酵剂、稳定剂及剩余各原料在43℃下发酵8-9h,再置于90℃下杀菌10min后倒入苦瓜干及腰果仁,搅匀后置于0-4℃下冷藏4-5h即得。
本发明的优点是:本发明的豆渣发酵乳饮料营养丰富,香气怡人,豆香和奶香味浓郁,乳黄色,经微波处理后使得水溶性膳食纤维较高,加入大蒜素极大的降低了豆渣内脂肪氧化酶的活性,再经过后续多次煮沸,彻底去除了豆腥味,得到的发酵乳口感柔和,营养丰富,香气十足;此外,本发明加入了多种中药成分,具有健脾开胃、滋补肝肾、固精缩尿、降火消肿、益气解乏的功效。
具体实施方式
一种开胃明目豆渣发酵乳,由以下重量份(千克)原料制成:
豆渣800、密蒙花2.2、益母草1.8、菟丝子1.2、荷蒂1.9、苦瓜20、番茄10、腰果仁10、阿拉伯胶4、PGA0.7、海藻酸钠2.5、脱脂乳粉900、白砂糖800、发酵剂100、玉米蛋白粉适量、大蒜素适量。
所述的一种开胃明目豆渣发酵乳的制备方法,包括以下步骤:

1.一种开胃明目豆渣发酵乳,其特征在于由以下重量份原料制成:
豆渣800-820、密蒙花2.2-2.3、益母草1.8-2、菟丝子1.2-1.5、荷蒂1.9-2、苦瓜20-22、番茄10-12、腰果仁10-12、阿拉伯胶4-5、PGA0.7-0.8、海藻酸钠2.5-2.7、脱脂乳粉900-920、白砂糖800-820、发酵剂100-110、玉米蛋白粉适量、大蒜素适量。
2.根据权利要求1所述的一种开胃明目豆渣发酵乳的制备方法,其特征在于包括以下步骤:
(1)将豆渣与水按照1:10g/ml的比例混合后充分搅拌2-3min,大火催至沸腾,立即停火自然冷却;
(2)待豆渣液冷却至常温,向内按25mg/L料液的比例添加大蒜素,调节PH为5.5,在微波功率450W下微波90S,再按50mg/L料液的比例加入玉米蛋白粉后均质处理得原浆备用;取阿拉伯胶、PGA及海藻酸钠混匀后得稳定剂;
